농가부산물 ( 채소잎 ) Silage 조제시험 (Studies on Silage Preparation of Vegetable By-products)

  • 가을 김장철에 일시적으로 생산되는 채소잎으로 품질이 좋은 양질 Silage를 생산하기 위하여 본 시험을 실시 하였으며 시험구를 6개구로 설치하여 시험한 결과를 요약하면 1. 채소잎70%, 볏짚20,% 맥강10% 혼합구가 Silage질이 가장 좋았고 유기산 생성량도 많고 낙산 함량은 없었으며 타구에 비하여 가장 우수하였다. 2. 맥강을 첨가한구는 첨가치 않은 구에 비하여 기호성이 좋았고 조단백질 함량도 높았다. 3. 유기산 조성에의한 Silage품질은 총 산함량에 비하여 낙산 생성이 최하 $0{\sim}120%$ 정도로 나타냈고 반면 양질의 Silage 조제에 필요한 유기산 함량은 $53{\sim}90%$로 양호하였고 PH는 기대 한바 보다 높았다. 4. 외관상으로 볼 때 색깔, 냄새, 촉감 등이 양호한 편이고 기호성도 좋았다. 결론적으로 채소잎은 훌륭한 Silage의 재료이다.

추파(chufa) 괴경 첨가 식이가 흰쥐의 성장 및 혈액학치의 변화에 미치는 영향 (The Effect of Feeding of Tubers of Cyperus esculentus on Growth and Hematological Changes in Rats)

  • This study was conducted to investigate the growth rate and hematological changes of the rats when supplemented with the powdered tubers of chufa(Cyperus esculentus) for four weeks. Nutritional composition of the powdered tuber of chufa is crude lipid(22.3%), crude protein(7.0%), crude fiber(8.8%), ash(5.1%), nitrogen free extract(48.9%) and water(7.9%), respectively. Sixteen Sprague-Dawley male $rats(173.1\pm3.8$ g) were randomly divided into two groups, control group and chufa group. Rats in control group were fed with American Institute of Nutrition(AIN)-76 diet and rats in chufa group were fed with modified AIN-76 diet contained the powdered tubers of chufa at the proportion of 26% of total diet in order to substitute the oil content of AIN-76 diet. Final body weight, gain of body weight and feed intake of rats in chufa group were larger than those of rats in control group significantly. But feeding efficiency of rats in chufa group was less than that of rats in control group significantly. All hematological values such as hemoglobin concentration and hematocrit and serological values such as glucose, total protein, albumin, AST, ALT, cholesterol, high density lipoprotein-cholesterol and triglyceride were not significantly different between control and chufa group, respectively. Thus powdered tuber of chufa showed good tastefulness and did not provoke any adverse effect to the health indicators of rats. Therefore tuber of chufa would be used as new adequate feed resource for animals and possibly as suitable food resource for humans.

대서와 보라밸리 감자 두 품종의 이화학적 특성 (Physico-chemical Characteristics of Atlantic and Bora Valley Potato)

  • Comparisons of the physico-chemical characteristics between white Atlantic potatoes and violet Bora Valley potatoes were performed. According to the results, Bora Valley had 7% higher moisture content than Atlantic, but there were no differences in crude fat and crude ash contents. Bora Valley, however, had about 3% less crude protein content than Atlantic. In a vitamin C analysis by HPLC, the Atlantic and Bora Valley potatoes contained 14% and 39% vitamin C, respectively, indicating that Bora Valley contained about twice as much of the vitamin as Atlantic. In a vitamin C analysis by HPLC, the Atlantic and Bora Valley potatoes contained 14% and 39% vitamin C, respectively, The dietary fiber content of Bora Valley was 3.12 g per 100 g higher than that of the Atlantic variety. While Atlantic contained neither glucose nor fructose, both sugars were measured in the Bora Valley potatoes, and there was no difference in sucrose content between the cultivar.

인삼(Panax)속 식물의 일반성분, 무기성분, 아미노산 및 유리당 함량조성 (Comparison of Proximate Composition, Mineral Nutrient, Amino Acid and Free Sugar Contents of Several Panax Species)

  • Chemical components of Panax (P) species were compared. p. species used were Korean white ginseng, Korean, Chinese and Japanese red ginseng (P ginseng), American and Canadian ginseng (P. quinquefolium) , and sanchl ginseng (P. notoginseng). No significant difference in the proximate contents was observed among P. species. Ash, crude lipld and total sugar contents in root of P. notoginseng were found to be relatively lower than those of P. ginseng and P. quinquefolium, but the contents of crude protein and crude fiber were similar among those ginsengs. Mineral nutrient con tents showed a little difference among ginseng species. Total nitrogen contents were slightly higher in P. ginseng than P. quinquefolium and P. notoginseng and Fe and Cu were lower in Chinese and Japanese red ginsengs. Kinds and compositions of amino acids were similar but contents of amino acids were different among ginseng species. Total amino acid contents were 76.3∼83.9 mg/g in P. ginseng 53.8∼60.4 mg/g in p. quinquefolium and 54.9 mg/g in P notoginseng. Free sugar contents were lower in P. notoginseng than P. ginseng or P. quinquefolium. Sucrose accounted for 90∼92% of total free sugar contents with relatively high content in white ginsengs, while sucrose and maltose were 32-36% and 55∼60%, respectively, in red ginseng.

계분 발효사료가 육계의 성장과 영양소 이용율에 미치는 영향 (Effects of Dietary Levels of Fermented Poultry Manure on the Growth and Nutrient Availability of Broiler Chicks)

  • Dietary levels of fermented poultry manure(FPM) 0%, 5%, 10% and 20% were included in experimental diets. It is to examine the effects of diets containing different levels of FPM on the performance of broiler chicks, including the nutrient availabilities, compared with that of the commercial diet. In order to evaluate the nutritive value of FPM, feeding and metabolism trials were conducted with a total of 160 broiler chicks for a period of 4 weeks. Contents of CP, crude fat, crude ash, crude fiber and NFE of FPM were 19.43, 2.43, 15.44, 16.57 and 38.31 %, respectively. Although there were no statistical difference in the body weight gain among treatments, weight gain achieved by the group fed diets of 5% substitution of FPM was slightly better than others. The amount of feed intake was significantly higher for FPM included groups than for control group, especially in the group fed diets of 10% substitution of FPM. The feed efficiency tended to be better for the control group than the FPM groups. The feed efficiency tended to get worse as the levels of FPM increased. The digestibility of DM, CP and NFE tended to be similar among treatments, especially it was lower for the group fed diets of 20% substitution of FPM compared with that of another groups. In conclusion, up to 10% substitution of FPM to the diet can be utilized effectively as a broiler feed ingredient, without adversely affecting growth performance.

고추씨 함량이 고추장 성분에 미치는 영향 (Effect of the Red Pepper Seed Contents on the Chemical Composition of Kochujang)

  • 고추씨와 고추피의 비율(A=0 : 10, B=1 : 9, C=2 : 8, D=4 : 6, E=5 : 5)을 달리하여 담금한 고추장의 성분과 품질은 다음과 같다. 1. 아미노질소, 환원당, ethyl alcohol함량은 B와 A고추장이 높았고 고추씨의 함량이 높은 C, D, E 고추장은 낮았다. 2. 수분. 조단백. 조섬유, 식염은 각 시험구 간에 큰 차이가 없었으나 pH와 조지방은 D와 E고추장이 높았다. 3. 산성 protease와 당화 amylase역가는 B와 A 고추장이 높았다. 4. 3개월 숙성 고추장의 맛, 향, 색은 전반적으로 A와 B의 고추장이 좋았고 D와 E고추장은 나빴다. 특히 D와 E고추장은 색이 불량하였다.

생약재를 이용한 음료의 개발 및 기능성 평가 (Development of Drink from Composition with Medicinal Plants and Evaluation of Its Physiological Function)

  • The purpose of this study was to investigate the possibility of medicinal plants application as an edible functional food resource. We carried out to develop a traditional functional beverage by using hot-water extraction of 4 medicinal plants (Polygonatun sibiricum, Ophiopogonis radix, Lycii fructus, Schizandriae frutcus) and we examined the effects of drink on physiological response during exercise and recovery phase. The subjects were male baseball players, and exercise protocol was performed with 45 minutes treadmill running and 85% VO$_2$ max intensity. Brix, pH and titratable acidity of developed drink were 9.5%, 3.3 and 0.22%. The approximate nutritional composition of beverage was carbohydrate, 5.98%, total dietary fiber, 0.42%, crude protein, 0.70%, crude fat, 0.20% and crude ash, 0.20%. Developed. traditional functional beverage contained K (4.00 mg%), Na (3.68mg%), Ca (2.54mg%), Mg (1.60mg%) and Fe (0.29mg%). Developed beverage drinking group showed a lowest heart rate during exercise and recovery phase than the other two group (water group and ion beverage group). In the change of blood lactate concentration, developed beverage intake group showed a significant lowest values during exercise and recovery phase. And blood hematocrit values and osmolarity were lowest in the developed beverage intake group. In these results, exercise performance capacity was expected to improve most highly with the developed drink from composition with medicinal plants. Also developed beverage was effective in recovery of exercise-induced fatigue. Thus developed drink with medicinal plants can be used as a functional material improving decrease fatigue effects in beverage industry.

유과 제조 시 뽕잎 분말 첨가가 품질에 미치는 영향 (Effect of Mulberry Leaf(Morus alba Linne) Powder Addition on Quality of Yukwa)

  • The principal objective of this study was to evaluate the quality of Yukwa prepared with mulberry leaf (Morus alba Linne) powder. The moisture, crude protein, crude lipid, crude ash, dietary fiber, and rutin contents of used mulberry leaf powder were 6.65%, 19.50%, 3.26%, 18.24, 38.91 and 0.54%, respectively. The tested concentrations of mulberry leaf powder were 0, 3, 5, and 7%. The Yukwa were stored at $45^{\circ}C$ for 40 days. Yukwa dough prepared with mulberry leaf powder had a lower pH compared to the control group. As more mulberry leaf powder was added, the spread ratio, moisture content, and volume increased. As more mulberry leaf powder was added, L-value decreased while a and b values increased with increasing mulberry leaf powder content. The hardness of Yukwa made with 7% mulberry leaf powder was the highest among the samples. In the sensory tests, Yukwa with 5% mulberry leaf powder received the highest scores. The acid value and peroxide values were lower in Yukwa prepared with mulberry leaf powder than control. Yukwa prepared with mulberry leaf powder strongly inhibited oxidation of lipids. The thiobarbituric values were lower in Yukwa prepared with 5% mulberry leaf powder than in Yukwa prepared with 3% and 7% mulberry leaf powders and control Yukwa. These results suggest that mulberry leaf powder can be applied to Yukwa to achieve high quality and functionality.

국내산 대추품종의 품질특성 및 영양성분 비교 (Characteristics and nutritional compositions of two jujube varieties cultivated in Korea)

  • 대추의 품종에 따른 특성파악 및 활용을 위한 기초자료를 확보하기 위하여 현재 국내에서 가장 많이 재배되고 있는 품종인 복조대추와 국내산 재래종대추(약대추)의 외형특성과 이화학적 특성을 비교한 결과 재래종대추는 복조대추에 비하여 크기가 작고 경도가 낮았으며 당도, 조단백질, 조지방, 조회분, 식이섬유, 칼슘함량이 높았다. 한편, 복조생대추는 인과 비타민 C의 함량이 높게 나타났다. 따라서 재래종대추는 복조대추에 비하여 크기는 작으나 부드럽고 당도가 높으며 주요 일반영양성분 함량이 높은 것으로 판단된다.

Antidiabetic and Hypolipidemic Effects of Collybia confluens Mycelia Produced by Submerged Culture in Streptozotocin-Diabetic Rats

  • This investigation was undertaken to study the effects of oral administration (3 weeks) of Collybia confluens mycelial powder (CCMP) produced by a submerged culture on plasma glucose and other biochemical parameters in streptozotocin (STZ)-induced diabetic rats. Antidiabetic and hypolipidemic effects were proportionally increased with the increasing concentration of the CCMP for oral administration. The CCMP, at the dose of 400 mg/kg BW, substantially reduced the plasma glucose level by as much as 33.1 % as compared to the STZ-induced diabetic rats group. It also lowered the plasma total cholesterol, triglyceride, and low density lipoprotein (LDL) cholesterol by 22.9%, 19.9%, and 37.3%, respectively. The levels of total cholesterol and triglyceride in liver were reduced to the extent of by 13.5% and 18.8%, and the activity of alanine transaminase (ALT) and aspartate transaminase (AST) was decreased by 48.8% and 37.2%, respectively, under the influence of CCMP. The general components of CCMP were found to contain 26.18% carbohydrate, 3.67% crude ash, 4.02% crude fat, 22.55% crude protein, and 43.58% dietary fiber. The amino acid composition of the CCMP was also analyzed in detail.
