In order to making the good quality soybean cheese, it is prepared byover growing cow's milk added soybean curd with Actinomucor elegans and the nold-overgrown curd soked in salt-brine/ethanol mixture. The physicochemical changes and sensory evaluation were investigated during the aging period. Crude protein, carbohydrate, crude fat ash contents of the pehtze were increased by elapsing the fermentation time, whereas moisture's decreased . Amino-N and ammonia -N contents of cow's milk added pehtze and soybean phetze were increased 17.25%, 7.23% and 16.16%, 8.42% respectively. Total nitrogen content of the pehtze was decreased by elaping the aging time but soaking solution's increased. Free amino acid content of soybean cheese was increased as a result of the proteolytic action of molds. As a result, sulfur containing amino acid such as methionine and cysteine of the cow's milk added soybean cheese were enriched 1.3 times more than the soybean cheese. Flavor, taste and texture of the cow's milk added soybean cheese were higher than soybean cheese.

Because ammonia from livestock production may substantially contribute to environmental pollution, emissions from all possible sources (housing systems, manure storage, manure application, outside grazing) should be reduced. The purpose of this study was to investigate the effect of different bedding materials on ammonia emissions in a cow house. By applying a combination of four treatment types: treatment $1-T_1$ (sawdust (50%)+sawdust pellets (50%)), treatment $2-T_2$ (sawdust (50%)+corn stalk pellets (50%)), treatment $3-T_3$ (sawdust (100%)), and treatment $4-T_4$ (sawdust (50%)+palm kernel meal pellets(50%)) as bedding materials in a cow house, the effects of such treatments on ammonia flux were assessed in approximately one month. The magnitude of ammonia emissions (mg $m^{-2}\;min^{-1}$) varied in the following order: $T_1$(2.226), $T_4$(2.052), $T_2$(1.845), and $T_3$(1.712). The patterns of pH had a decreasing trend for all bedding treatments during the experiment, and there was no significant relationship with ammonia flux. The results reveal that the most important factor influencing ammonia emissions is the physical structure of the bedding types.
Food allergy is defined as adverse reactions toward food mediated by aberrant immune mechanisms. Cow's milk allergy is one of the most common food allergies in childhood. This allergy is normally outgrown in the first year of life, however 15% of allergic children remain allergic. Cow's milk allergy seem to be associated with casein (${\alpha}_{s1}$-CN), ${\beta}$-lactoglobulin and whey protein. In addition to this, many other milk proteins are antigenic and capable of inducing immune responses. Various food processing affects the stability, structure and intermolecular interactions of cow milk proteins, as a result reduction the allergenic capacity. Heating, hydrolysis, chemical, proteolytic and other processes such as gamma-ray irradiation, high pressure, using probiotics treatments of milk to obtain hypoallergenic milk have been developed to reduce allergic reactions.
The objective of this study was to determine cow characteristics and farm management factors during the dry period associated with early postparturient intramammary infection (IMI) and subsequent clinical mastitis (CM). Data were collected three times: before drying off (P1), during the dry period (P2), and 5 to 14 days after calving (P3), using questionnaires and farm investigation. Milk samples were aseptically collected for bacterial identification at P1 and P3. Factors associated with IMI and CM were analyzed using multiple logistic regression models. The final model showed that IMI in early postpartum was significantly associated with full insertion of dry cow antibiotic, dry cows in barns with a combination of tie and free stalls, body condition score (BCS) in dry period and after calving, and milk yield before drying off. For IMI cows, factors significantly associated with clinical expression of mastitis were having daily barn cleaning, teat disinfected with alcohol before administration of dry cow therapy, BCS before drying off, milk yield before drying off, and days in milk at drying off. In conclusion, both cow and farm management factors are associated with the IMI rate and subsequent expression of clinical signs of mastitis in early postpartum cows.
Lysozyme activity in buffalo milk in relation to the period of lactation, parity of animal, weather conditions and udder infections was studied. Effect of storage and heat processing of milk on lysozyme activity was determined. Lysozyme activity was higher in buffalo milk than in cow milk. Buffalo colostrum showed lysozyme activity 5 times of that in mature milk. Lysozyme activity in buffalo milk was not influenced by the parity of animal and the stage of lactation, however, it increased during extreme whether conditions (winter and summer). Lysozyme in both cow and buffalo milk exhibited maximum activity at pH 7.4. Buffalo milk lysozyme was fully stable while the cow milk lysozyme was partly inactivated by pasteurization (low temperature-long time as well as high temperature-short time treatments). Lysozyme in buffalo milk was more stable than in cow milk during storage and heat treatment. A 10 to 50-fold increase in milk lysozyme activity was observed in mastitic cows. An assay of lysozyme activity in milk can be used to diagnose mastitis in cattle but not in buffaloes. Some buffaloes exhibited 1000 fold greater lysozyme activity and moderately raised somatic cell count in milk, but there was no sign of mastitis in these animals. A possible role of milk lysozyme in prevention of mastitis in buffaloes is discussed.
Background: Aging trials are conducted to determine characteristics associated with dry- and wet-aging processes of beef from delivered cows grown in Okinawa, i.e., dams that have finished giving birth (Okinawan delivered cow beef). Changes in free amino acids, hardness, and other factors were analyzed in round of Okinawan delivered cow beef during dry- and wet-aging processes along with a comparison with characteristics of beef imported from Australia. Results: Functional amino acids did not increase during both dry- and wet-aging processes. However, proteinogenic amino acids increased significantly (P < 0.05) and hardness tended to decrease during both dry- and wet-aging processes. On comparison between dry- and wet-aging processes by analysis of variance, drip and cooking losses were significantly lower during the dry-aging process than during the wet-aging process. However, there was no significant difference in free amino acids or hardness in this comparison. Conclusion: There was no significant difference between dry- and wet-aging methods for all studied variables related to free amino acids or hardness in this study.
This paper chose the methods of methylesterification of the use of methoxide, the mixture solution of methanol-benzen-sulfuric acid in transesterification of the fat in cow's milk and modified powder milk and separated by gas liquid chromatography with F.F.A.P., D.E.G.A. as liquid phase. Quantitative analysis of the fatty acid of milk fat in cow's milk and modified powder milk was determined by gas liquid chromatography using the method of temperature programming which should be used to obtain satisfactory separation of short chain fatty acid on the chromatogram. It was found that the fatty acid composition of cow's milk and modified powder milk are all the major fatty acid of milk fat obtained by GLC analysis. Main components was found to be from butyric acid to arachidonic acid showing Fig. 3, 4, 5 and Table 4, 5, 6, 7, 8, 9.
This was a study examining the fatliquoring of natural dyed cow skin with Coptis chinensis Franch. The K/S according to optimal dyeing condition, mordants and mordanting method was measured. And the surface, sections, tensile strength, elongation, stiffness and colorfastness according to post-dyeing fatliquoring were observed. The optimal conditions include 300%(o.w.f.), $50^{\circ}C$, 30 minites. Fe-simmordanting showed the highest dyeability. Coptis chinensis Franch showed a yellow color regardless of mordants and mordanting methods. Tensile strength and elongation increased in the case of simmordanting compared with untreated and the process of fatliquoring further increased. The softness significantly increased when fatliquored. Shrinkage was slightly reduced when dyed, but showed almost no change with fatliquoring. Lastly, color fastness increased overall with mordanting and partly increased with fatliquoring. The rubbing and light fastness were excellent Cu- mordanting, and drycleaning fastness also improved with Cr-mordanting.
We assessed whether the cow1 mutant defects are associated with growth of Tos17 and T-DNA insertional rice in blue light (BL). Growth of oscow1 mutants which encoded a member of the YUCCA protein family was retarded in BL. Root to shoot ratios of the mutants were reduced about 2 times lower in the absence of NAA and about 2.5 times lower in the presence of NAA; the shoot growth was not significantly changed by NAA addition. Photosynthetic activity of the mutants was however inhibited in high light. Pigment analysis showed significant difference between wild-type (Chl a:b = 3.02) and mutants (3.84). Carotenoid contents of the mutants were also decreased considerably, implying the involvement of cow1 in pigment formation. These findings lead us to suggest that the growth retardation of oscow1 mutant plants by BL results from the difference of photosynthetic activity in part.
