Dough fermentation characteristics and quality characteristics of bread added with different concentration(0, 30, 40 and $50\%$ against water) of submerged-culture broth of Fomitopsis pinicola mycelium (CM) were investigated There were positive correlations between CM concentration and dough pH(r=0.98), acidity(r=-0.88), dough thickness(r=0.95) and dough strength(r=0.95). Baking loss rate was decreased with increasing of CM concentration. There was no significant difference between loaf volume index and CM concentration ($30\~40\%$, but the index of CM $50\%$ bread was lower than that of control. L* value of top crust in the CM $50\%$ bread was significantly lower than those of CM $0\~40\%$ bread, while the value of internal tissue was increased with increasing of CM concentration. In the CM $30\~40\%$ bread, hardness was lower, but there were no significant difference in cohesiveness, springiness, chewiness and brittleness compared with control. Appearance, color, taste, texture and overall acceptability of CM $30\~40\%$ bread were similar to those of control. In the results estimated by correlation analysis, the increased pH of the dough by adding CM allowed lowering hardness of the bread By adding CM in bread, retrogradations were delayed, and growth of mold was decreased during storage. In conclusion, the optimum concentration of CM in bread which showed anti-diabetic effect as well as not dropped quality characteristics were $30\~40\%$.
In order to seek the possibility of using rice flour and potato as thickening agent instead of roux, sensory evaluations of cream soups manufactured from 3 different thickening agents were conducted. The viscosity, moisture and lipid contents, and the color affecting the quality of the soup were investigated. The results were as follows: 1. As thickening agents for 200g of the cream soups, rice flour and potatoes at 20.5 and 20g, respectively, were needed in order to make soup with a similar concentration to that manufactured using 20g of roux. 2. In the sensory tests, the soup made with rice flour had the most preferred overall acceptability, with a significantly preferable taste. The soup made with rice flour had the strongest whiteness and savory taste, but that made with roux had the strongest viscosity and smooth feeling in the mouth feel. There was no difference between the samples with regard to nutty flavor. The whiteness, palatability, viscosity and smooth feel sensory properties were positively correlated with the overall acceptability. Among these properties, the palatability showed the highest correlation (r=0.538) with overall preference. 3. The cream soup made using potatoes as the thickening agent had a $76.20\%$ water content, whereas those made with rice flour and roux had 73.00 and $64.00\%$ respectively The fat content of the cream soup made with roux was $10.24\%$, which was twice as high as those of the rice flour and potato soups. 4. Among the 3 kinds of cream soup, the one made with rice flour had the whitest color.
Jeung-Pyun is a traditional fermented Korean food with rice flour, water, sugar, salt and unrefined rice wine(Takju). In order to investigate how the addition of soybean has an influence on Jeung-Pyun fermentation, changing to adding amount of soybean 0%, 5%, l0%. 15%, 20% based on rice weight, we carried out sensory evaluation and measured the physicochemical properties, instrumental characteristics and degree of gelatinization. The specific volume of Jeung-Pyun was increased as the more soybean was added. The pH of Jeung-Pyun batter was decreased as the fermentation time was longer, but it was increased as more soybean was added. The degree of gelatinization of Jeung-Pyun was decreased as storage day was longer, but it was high as more soybean was added compared to control(0%). In sensory evaluation, Jeung-Pyun added 5∼10% of soybean was good generally. Correlation coefficient between hardness and degree of gelatinization was high. In instrumental characteristics, hardness was increased only in control for room temperature storage(20$^{\circ}C$), but at 4$^{\circ}C$ it was less increased than control(0%) as more soybean was added. Cohesiveness was decreased generally as storage day was longer at 4$^{\circ}C$, but it was less decreased as more soybean was added. In brittleness at 4$^{\circ}C$, Jeung-Pyun of adding soybean was higher compared to control. In surface structure of Jeung-Pyun observerd by SEM. air pore size was small and distributed regularly as more soybean added. In conclusion. it can be suggested that the addition of soybean improve the quality of Jeung-Pyun.

Background: This study was conducted to compare the physicochemical properties of 12 different cultivars of Rehmannia glutinosa, a plant used in Korean traditional herbal medicine. Method and Results: We investigated the following 12 cultivars of R. glutinosa; Jihwang1, Goryeo, Daegyung, Gogang, Togang, Dagang, Wongang, Yeongang, Hwanggang, Dahwang, Segang and Chunggang. We measured water content, chromaticity, hardness, active components levels, and antioxidant activity. Our results showed that Togang has the lowest water content and the highest yield. The catalpol content was the highest in Togang (40.50 mg/g) and the lowest in Chunggang (22.17 mg/g). The aucubin content was the highest in Hwanggang (0.28 mg/g). Chunggang had the lowest aucubin content, but the highest level of verbascoside. Total flavonoid and total polyphenol were the highest in Daegyung and Chunggang, respectively. There was a strong correlation between the total flavonoid and total polyphenol (r = 0.89) content. Conclusions: There were significant differences in physicochemical properties among 12 cultivars. These properties will affect suitability for processing and final product quality. We therefore suggest the selection of appropriate cultivars for different uses.

The aim of this study was to analyze spatial and temporal patterns of bacterial pollution levels and the relationship between bacterial pollutants and environmental parameters at the main stream and tributaries of Nakdong River. Water quality data including total coliform and fecal coliform were compiled from a total of 50 monitoring sites (30 at the main stream and 20 at the tributaries) along with rainfall and discharge data for three consecutive years from 2012 to 2014. During the study periods, the geometric mean values of total coliforms and fecal coliforms in the main stream were 74 (22~465) CFU/100 mL and 8 (3~42) CFU/100 mL, respectively. The geometric mean values of total coliforms and fecal coliforms in the tributaries were 275 (36~5,145) CFU/100 mL and 6 (1~1,352) CFU/100 mL, respectively. High concentrations of fecal coliforms were observed at Gumi (M 10), Hyeonpung (M 19), Hapcheon (M 23), and Namji (M 25) in the main stream, whereas Gamcheon (T 6), Bakcheon (T 7), Geumho-gang (T 8), and Gyeseongcheon (T 16) were identified as pollution hot spots in the tributaries. Although bacterial pollution levels showed complex behavior across monitoring sites and time, the highest coliform concentrations were routinely observed in the monsoon season between July and September of each year, indicating that the pollution levels were strongly dependent on precipitation in addition to other physiochemical parameters. Statistically significant correlations were found between fecal coliform concentrations and precipitation (r=0.403, p<0.01), followed by SS (r=0.425, p<0.01), nutrient TP (r=0.388, p<0.01), organic matter COD (r=0.322, p<0.01), and PO4-P (r=0.317, p<0.01) in the main stream in the order of correlation coefficient from high to low.

To anticipate and respond to harmful algae produced in a big artificial lake like Daecheong reservoir, development of a regional analysis computer system using GIS or RS technique is needed in addition to biological and chemical research. The purpose of this study is to develop a cyanobacterial blooming prediction model to prevent harmful algae produced in Daecheong reservoir and construct an early forecasting system based on GIS. For this purpose this paper examines previous studies related to the relationship between cyanobacteria and environmental factors in Daecheong reservoir and selects precipitation and air temperature as two important environmental factors for the development of cyanobacterial blooming prediction model. Data used in this study are water quality and weather data for three water regions in Daecheong reservoir between 2000 and 2004. Based on qualitative correlation analysis between cyanobacteria and environmental factors, this paper presents a Rump model which enables us to predict cyanobacteria in water regions of Daecheong reservoir. Under this model the prediction of initial occurrence time and growth period of cyanobacteria are possible. The model is also applied to the GIS-based early forecasting system for cyanobacteria, and finally a GIS which can predict cyanobacteria produced in Daecheong reservoir and can manage the related data is developed.
Because of its stable quantity and quality, groundwater has long been a reliable source of drinking water for domestic users. Rapid economic growth and rising standards of living have in recent years put severe demands on drinking water supplies in Korea. Groundwaters that are currently being used for natural mineral water were hydrochemically evaluated and investigated in order to maintain their quality to satisfy strict health standards. There exist 15 natural mineral water plants in the Okcheon metamorphic belt. Characteristics of groundwaters are different from those of other areas in that electrical conductivity, hardness, contents of Ca, Mg and $HCO_3$are relatively high. The content of major cations is in the order of Ca>Mg, Na>K, whereas that of major anions shows the order of $HCO_3$>$SO_4$>Cl>F. The fact that the Ca-Mg-HCO$_3$type is mostly predominant among water types reflects that dissolution of carbonates that are abundantly present in the metamorphic rocks plays an important part in groundwater chemistry. Representative correlation coefficients between chemical species show Mg-$HCO_3$(0.92), Ca-$HCO_3$(0.88), Ca-Mg(0.80), Ca-Cl(0.78), Mg-$SO_4$(0.78), Ca-$SO_4$(0.71), possibly due to the effect by dissolution of carbonates, gypsum or anhydrite. Determinative coefficients between some chemical species represent a good relationship, especially for EC-(K+Na+Ca), Ca-$HCO_3$, Ca-Mg, indiacting that they are similar in chemical behaviors. According to saturation index, most chemical species are undersaturated with respect to major minerals, except for some silica phases. Groundwater is slightly undersaturated with respect to calcite and dolomite, whereas it is still greatly undersaturated with respect to gypsum, anhydrite and fluorite, Based on the Phase equilibrium in the systems $NA_2$O-$Al_2$$O_3$-$SiO_2$-$H_2$O and $K_2$O-$Al_2$$O_3$-$SiO_2$-$H_2$O, it is clear that groundwater is in equilibrium with kaolinite, evolved from the stability area of gibbsite during water-rock interaction. It is expected that chemical evolution of groundwater continue to proceed with increasing pH by reaction of feldspars, with calcite much less reactive.
Benthic animals are important indicators in benthic environmental quality assessment. This study investigated the environmental characteristics and the distribution pattern of benthic animals, and assessed the benthic ecosystem using AMBI (AZTI's marine biotic index) and WQI (water quality index) in the subtidal zone of Muan bay. Samplings were collected from 10 stations in the subtidal zone of Muan bay on summer. In the upper area of Muan bay, grain size was finer and organic content was higher than those of in the lower area. The pollution indicator organism such as Musculista senhousia, Theora fragilis and Lumbrineris longifolia were dominant at some stations. The benthic community was distinguished into three groups of upper, center and lower area of Muan bay, and which were coincided with the results by correlation analysis between organic matter content and benthic health assessment (WQI and AMBI). As a result of this study, the health condition of the subtidal zone in Muan bay were good. However, from the results that benthic animals were not evenly distributed, and also the opportunistic species appeared, the load of organic matter in Muan bay seems to be increasing.
In Jeju Island which has peculiarity for its geological features and hydrology system, hydrological factor analysis for the effective water management is necessary. Because in-situ hydro-meteorological data is affected by surrounding environment, the in-situ dataset could not be the spatially representative for the study area. For this reason, remote sensing data may be used to overcome the limit of the in-situ data. In this study, applicability assessment of MOD16 evapotranspiration data, Globas Land Data Assimilation System (GLDAS) based evapotranspiration/soil moisture data, and Advanced SCATterometer (ASCAT) soil moisture product which were evaluated their applicability on other study areas was conducted. In the case of evapotranspiration, comparison with total precipitation and flux-tower based evapotranspiration were conducted. And for soil moisture, 6 in-situ data and ASCAT soil moisture product were compared on each site. As a result, 57% of annual precipitation was calculated as evapotranspiration, and the correlation coefficient between MOD16 evapotranspiration and GLDAS evapotranspiration was 0.759, which was a robust value. The correlation coefficient was 0.434, indicating a relatively low fit. In the case of soil moisture, in the case of the GLDAS data, the RMSE value was less than 0.05 at all sites compared to the in-situ data, and a statistically significant result was obtained as a result of the significance test of the correlation coefficient. However, for satellite data, RMSE over than 0.05 were found at Wolgak and there was no correlation at Sehwa and Handong points. It is judged that the above results are due to insufficient quality control and spatial representation of the evapotranspiration and soil moisture sensors installed in Jeju Island. It is estimated as the error that appears when adjacent to the coast. Through this study, the necessity of improving the existing ground observation data of hydrometeorological factors is emphasized.

In this study, the cyclone/denuder/filter pack sampling system was used to measure the daily concentrations of water soluble inorganic compounds of fine ($D_{p}< 2.5\;{\mu}m$) and coarse ($D_{p}<10{\mu}m$m) size fractions of aerosol and related gases at Gosan super site during ABC-EAREX 2005. The mean concentrations for $HNO_{3},\;HNO_{2},\;NH_{3}$, were 0.39, 0.08, and $0.29\;{\mu}g/m^3$. respectively. Average concentrations of sulfate, nitrate, and ammonium in $PM_{2.5}$ were 3.39, 1.06, and $1.04\;{\mu}g/m^3$, which occupied about $26\%$ of total $PM_{2.5}$ mass. In particular, more than half of these ionic species were found in size of less than $2.5\;{\mu}m$. Gas phase nitric acid concentrations have shown high correlation coefficient with $HNO_{2}$(R=0.80) and $O_{3}$(R=0.78), implying the active photochemical reactions from its precursors. Equivalent molar ratios between major ion components, $NH_{4}\;^{+}/nss\;SO_4\;^{2-},(0.83\;for\;PM_{2.5},\;0.86\;for\;PM_{10})$, revealed that the existing forms of the secondary aerosols were probably $(NH_{4})_{2}SO_{4}\;and\;(NH_{4})_{3}H\;(SO_{4})_{2}$. Especially, $(NH_{4}\;^{+}+K^{+}+Ca^{2+}+Mg^{2+})/(NO_{3}\;^{-}+nss\;SO_{4}\;^{2-}) (0.99\;for\;PM_{2.5},\;1.05\;for\;PM_{10})$ indicated that some of them existed not only as $NH_{4}NO_{3}$ but also as $CaSO_{4}\;or\;KNO_{3}$, which pointed out the probability of influences from the abundant soil components during Asian dust (AD) periods. These neutralized types of secondary aerosols showed that pollutants could be aged and transported from a distance.
