옥수수 가공방법 및 두께가 in situ 건물 분해율과 in vitro 메탄 발생에 미치는 영향 (Effects of Processing Methods of Corn and their Thickness on in situ Dry Matter Degradability and in vitro Methane Production)

  • 본 연구에서는 옥수수의 가공방법 및 옥수수의 두께의 차이가 반추위 in situ 소화율 및 in vitro 반추위 발효와 메탄 발생에 미치는 영향에 대하여 알아보고자 실시하였다. Micronized corn(2.5 mm thickness) 처리구는 다른 처리구들에 비하여 in situ 48시간 건물 분해율이 모든 배양시간대에서 높게(P<0.05) 나타났다. 반면, steam flaked corn(3.3 mm thickness) 처리구는 모든 배양시간대에서 가장 낮은(P<0.05) in situ 건물 분해율을 보였다. 반추위 내에서 미생물에 의해 분해되는 b fraction은 이와 상반되는 결과인 steam flaked corn(3.1 mm thickness)과 steam flaked corn(3.3 mm thickness) 처리구에서 높게(P<0.05) 나타났다. b fraction이 반추위를 통과하는 속도인 건물 분해상수 k값은 micronized corn(2.5 mm thickness) 처리구에서 가장 높게 (P<0.05) 나타났고 steam flaked corn(3.3 mm thickness) 처리구에서 가장 낮게 (P<0.05) 나타났다. 반추위내 시간당 통과속도를 0.05로 적용한 유효 건물 분해도는 건물 분해상수와 유사하게 micronized corn(2.5 mm thickness) 처리구에서 가장 높게 (P<0.05), steam flaked corn(3.3 mm thickness) 처리구에서 가장 낮게(P<0.05) 나타났다. In vitro 반추위 48시간 건물 소실율은 micronized corn(2.5 mm thickness) 처리구에서 가장 높은 경향을(P=0.088) 보인 반면 steam flaked corn 처리구들 사이에서는 두께에 따른 건물 소실율의 상관관계는 나타나지 않았다. 총 가스발생량 및 메탄 발생량에 있어서도 건물 소실율과 같은 결과인 micronized corn(2.5 mm thickness) 처리구에서 가장 높게 나타났으며(P=0.001), 총 휘발성지방산은 steam flaked corn(2.9 mm thickness)의 처리구에서 가장 높게 나타났으나(P=0.015) 나머지 처리구들에서는 유의적인 차이를 보이지 않았다. aectate: propionate의 비율 또한 steam flaked corn(2.9 mm thickness)의 처리구에서 가장 높게, micronized corn(2.5 mm thickness) 처리구에서 가장 낮게 나타났다(P=0.008). 본 연구의 결과를 종합하면 steam flaked corn 처리구들에서 in vitro 휘발성지방산 농도에 있어 in situ 반추위내 건물 분해상수와 유효 건물 분해도의 결과와 비교하여 상관관계가 나타나지 않은 결과로 유추해 보면 옥수수 가공방법에 의한 두께의 차이는 반추위 메탄 발생량에 영향을 미치지 않은 것으로 판단된다.

  • This experiment was carried out to compare chemical composition, TDN yield of corn-soybean intercropping and corn monocropping forage plants at different harvesting time and obtained the following results. 1. In both cropping systems, the content of chemical composition of forage were changed same pattern in growing stage. The content of crude protein in corn-soybean intercropping forage at yellow stage increased more than that of corn nonocropping forage, while the crude fat in corn monocropping forage plants increased than that of corn-soybean intercropping forage plants at mature stage. 2. The crude fiber, crude ash, ADF content of forage plants in both cropping system decreased same pattern in growing period, however, NFE content of forage increased with maturity. 3. TDN yield of corn-soybean intercropping and corn monocropping forage plants at yellow stage obtained similar results and TDN yield per 10a in intercropping and monocropping were 1006.lkg and 978.6kg, respectively. 4. Consequently, corn-soybean interaopping system could be increased crude protein yield without decreasing of dry matter yield in comparison with corn monocropping system for corn silage.

  • This experiment was carried out to compare chemical composition of corn-cowpea inter cropping and corn monocropping plants at different harvestion time and obtained the following results. 1. In both cropping systems, the contents of crude fat and nitrogen free extract (NFE) were significantly increased (P<0.01), while that of crude protein crude fiber and crude ash were decreased (P<0.01) with each harvesting time. 2. The acid detergent fiber (ADF) and crude fiber contents were decreased same patterns in growing period, however, according to maturing of corn ears the difference between ADF and crude fiber contents reduced. 3. At mature stage, crude protein yields per 10a in corn monocropping and corn-cowpea intercropping system were 127.6kg and 152.1kg, respectively. The difference of crude protein content between corn-cowpea intercropping and corn monocropping system was 19.2%. 4. TDN yields of each cropping system, at mature stage, obtained similar results and TDN yields per 10a of corn monocropping and corn-cowpea intercropping system were 1006.1kg and 990.1, respectively. 5. Conseqently, corn-cowpea intercropping system could be increased protein yield without decreasing of dry matter yield in comparison with corn monocropping system.

옥수수 전분과 찰옥수수 전분 첨가 비율에 따른 Gluten-free 제빵 특성 (Baking Properties of Gluten-free Rice Bread with Different Percentages of Corn Starch and Waxy Corn Starch)

  • The baking properties of gluten-free rice bread with different percentages of corn starch and waxy corn starch were investigated. The specific gravity and color (L, a, b) of the dough as well as the appearance, color (L, a, b) and texture of the rice bread were analyzed. Replacement of rice flour with 1, 2.5, 5, 7.5 and 10% corn starch did not have a significant effect on the specific gravity and color of the dough. The volume and specific volume of the rice bread showed an increasing trend as the amount of added corn starch increased. The chewiness, gumminess and hardness of the rice bread showed a decreasing trend as the amount of added corn starch increased. Replacement of rice flour with 1, 5 and 10% waxy corn starch did not have a significant effect on the specific gravity and color of the dough. The color of the rice bread showed an increasing trend as the amount of added waxy corn starch increased. These results suggest that replacement of rice flour with 7.5% corn starch or 1% waxy corn starch is effective for gluten-free rice bread.

분유, 계란 및 감자를 이용한 새로운 Value-added Com Dog 개발에 관한 연구 (Development of New Value-added Corn Dog Using Milk Powder, Egg and Potato)

  • 본 연구는 영양이 높고 우리나라에서 최근에 소비 감소경향을 나타내는 농 축산물인 감자와 분유, 계란을 이용해 고부가가치 핫도그를 개발하기 위해 핫도그 반죽의 점도, pH, 물성 검사, 관능검사를 실시하였다. 핫도그 반죽의 점도 측정 결과는 A0.05). 핫도그의 pH 측정 결과는 A0.05). 핫도그의 물성 검사 측정 결과에서 경도와 부서짐 성은 D군이 다른 군에 비해 유의성 있게 가장 높게 나타났다(p<0.05). 응집성과 탄력성은 A군이 가장 높게 나타났는데 B 및 C군에 비해 유의하게 높은 값이었다(p<0.05). 핫도그의 관능검사 측정 결과에서 색감과 조직감은 D군이 가장 높게 나타났으며 C군에 비해 유의하게 높은 값을 나타내었다(p<0.05). 향미와 전체적인 맛의 첨가에서도 D군이 가장 높게 나타났는데 B 및 C군에 비해 유의하게 높았다(p<0.05). 이취의 평가에서는 A와 D군이 가장 낮게 나타났으며 C군에 비해 유의하게 낮은 값이었다(p<0.05). 본 연구 결과에서 보는 바와 같이 영양 및 건강 기능성이 강화된 새로운 corn dog의 생산은 새로운 고 부가가치 축산제품의 개발뿐만 아니라 잉여 농 축산물의 소비 촉진에도 크게 기여할 것으로 사료된다.

Optimum Harvest Time for High Quality Seed Production of Sweet and Super Sweet Corn Hybrids

  • The production of sweet (su) and super sweet corns (sh2) has been economically feasible in Korea in recent years. Major factors limiting super sweet corn production are low germination and low seedling vigor. Since seed quality is closely related to seed maturity, the optimum harvest time for the seed production of sweet and super sweet corns was studied and the quality of seeds with varying maturities was investigated in 2001 and 2002 cropping seasons. The parents of the sweet corn seeds were Hybrid Early Sunglow and 'Golden Cross Bantam 70' and those of super sweet corn were Xtrasweet 82 and 'For­tune'. Seeds were harvested at 21, 28, 35, 42, 49, and 56 days after silking (DAS). As the seeds developed, seed weight of sweet corn increased and the seed moisture content decreased faster than that of super sweet corn. Germination rates of sweet corn seeds harvested 21 and 28 DAS at $25^{\circ}C$ and emergence rates in the cold soil test were significantly lower than those of seeds harvested after 42 DAS in both years. Although the germination rates of super sweet corn seeds with varying maturities showed similar patterns as sweet corn seeds at $25^{\circ}C$, the emergence rate of super sweet corn seeds in cold soil test continuously increased with seed maturity. This suggests that seed quality of super sweet corn should be tested in a cold soil test to estimate field emergence. As the seeds developed, leakage of total sugars and electrolytes from the both sweet and super sweet corn seeds decreased up to 42 or 49 DAS. The $\alpha-amylase$ activities of both sweet and super sweet corn seeds increased with seed maturity from 21 to 35 or 49 DAS depending on genotype and year. The optimum harvest time for the seed production of sweet corn was 42 DAS and 49 DAS for super sweet corn considering emergence rate and plumule dry weight in the cold soil test, leakage of sugars and electrolytes from the seeds, and $\alpha-amylase$ activity.

Determination of the energy contents and nutrient digestibility of corn, waxy corn and steam-flaked corn fed to growing pigs

  • Objective: The research was conducted to determine the digestible (DE) and metabolizable energy (ME) contents as well as the apparent total tract digestibility (ATTD) of nutrients in corn, waxy corn and steam-flaked corn fed to growing pigs. Methods: Eighteen growing pigs with initial body weight of $15.42{\pm}1.41kg$ were randomly allotted to three diets including a corn diet, a waxy corn diet and a steam-flaked corn diet in a completely randomized design. Each treatment contained six replicates. The experiment lasted for 12 days, which comprised 7-d adaptation to diets followed by a 5-d total collection of feces and urine. The energy contents and the nutrient digestibility in three ingredients were calculated using direct method. Results: Compared to normal corn, both the amylose and dietary fiber contents in waxy corn were numerically lower, but the starch gelatinization degree was numerically greater. Moreover, the DE and ME contents as well as the ATTD of neutral detergent fiber and acid detergent fiber (ADF) in waxy corn were significantly greater (p<0.05) than those in normal corn when fed to growing pigs. Furthermore, the steam-flaked corn had greater (p<0.05) DE and ME contents, and ATTD of ether extract and ADF compared to normal corn. Conclusion: Both variety and processing procedure have influence on chemical compositions, energy contents and nutrient digestibility of corn. The waxy corn and steam-flaked corn had greater degree of starch gelatinization and DE and ME contents compared to normal corn when fed to growing pigs.

찰옥수수 분말을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk with Prepared Glutinous Corn Flour)

  • This study was conducted to investigate the effective ratio of Sulgidduk to glutinous corn flour. We measured the moisture content, color differences, and texture of Sulgidduk with glutinous corn flour and conducted a sensory test. There was a significant difference between the moisture content of the glutinous corn Sulgidduk batches with added glutinous corn flour and the control group. As the proportion of glutinous corn flour increased, the lightness(L) significantly decreased, whereas the redness(a) and yellowness(b) significantly increased. When the amount of glutinous corn flour increased, there was a significant increase in the hardness and adhesiveness, but a significant decrease in the cohesiveness. The results of the sensory evaluation showed that roughness increased significantly when the amount of glutinous corn flour was increased. The moisture and softness decreased significantly as the glutinous corn flour concentration increased. These results indicated that adding $5{\sim}10%$ corn flour to the glutinous corn Sulgidduk produced the best quality.

The Effect of Extrusion Conditions on Water-extractable Arabinoxylans from Corn Fiber

  • The effect of feed moisture contents (30%, 40%, and 50%) and screw speed (200 rpm, 250 rpm, and 300 rpm) on the corn fiber gum (CFG) yield and soluble arabinoxylans (SAX) content of destarched corn fiber was investigated. The CFG yields and SAX contents of extruded, destarched corn fiber were higher than that of destarched corn fiber. In extruded, destarched corn fiber, increased screw speed and decreased feed moisture contents resulted in a higher SAX contents. The maximum yields of CFG obtained from extruded, destarched corn fiber were $79.1{\pm}19.0g/kg$ (30% feed moisture content) and $82.3{\pm}11.30g/kg$ (300 rpm screw speed). The highest SAX content was also observed at a screw speed of 300 rpm. The results of the present study show that water extraction and extrusion combined have the potential to increase CFG and SAX yields from corn fiber.
