홍국(Monascus nuruk) 분말을 첨가한 스폰지 케이크의 품질 특성 및 노화 억제 분석 (Quality Characteristics and Retarding Retrogradation of Sponge Cakes containing Red Yeast Rice(Monascus nuruk) Flour)

  • 본 연구에서는 소화와 혈액순환을 돕고, 항암, 향균, 콜레스테롤 생합성 억제, 혈압강하 등의 생리활성 기능을 함유한 홍국 분말을 스폰지 케이크에 첨가하여 가장 적합한 배합비율을 찾고자 하였으며, 홍국 스폰지 케이크의 품질 특성 및 노화 억제 영향을 살펴보았다. 홍국 분말은 동결 건조하여 40 mesh 체를 통과한 것을 사용하였고, 밀가루의 0%, 5%, 10%, 15% 및 20%로 첨가수준을 달리하여 control, RYR5, RYR10, RYR15 및 RYR20으로 스폰지 케이크를 제조하였다. 비중 측정 결과, RYR15가 0.57로 가장 낮은 비중을 나타내었으며, 굽기 손실율의 경우 대조군 및 첨가군 간에 유의적인 차이는 나타나지 않았다(p<0.05). 반죽 수율의 경우, RYR15가 96.61로 가장 높게 나타났다. 수분함량 측정결과, 대조군, RYR-5 및 RYR15가이 28.67%, 28.18% 및 26.82% 순으로 높은 수분함량을 나타내었다. 색도는 스폰지 케이크 외부의 L값(명도)의 경우 홍국 분말의 첨가량에 따라 L값이 증가하였고, 반면에 스폰지 케이크 내부의 L값은 첨가량에 따라 감소하는 경향을 보였다. a값(적색도)의 경우, 첨가량이 증가할수록 외부의 a값은 감소하였으며, 내부의 a값은 증가하는 경향을 보였다. b값(황색도)의 경우, 홍국 분말의 첨가량이 증가할수록 스폰지 케이크의 외부, 내부 모두 감소하는 경향을 보였다. pH의 경우, RYR5가 8.63으로 가장 높은 값을 나타내었으며, RYR15는 8.57로 가장 낮은 값을 나타내었다. 스폰지 케이크를 제조하여 60분간 방냉 후 조직감을 측정한 결과, 경도는 RYR15가 $163.33g/cm^2$로 가장 낮았으며, 탄력성은 시료간 유의적인 차이가 없었다(p<0.05). 응집성의 경우 RYR10이 133.06%으로 가장 높았다. 씹힘성의 경우, RYR10이 $391.63g{\cdot}cm$로 가장 높았으며, RYR15가 $169.92g{\cdot}cm$로 가장 낮았다. 노화 억제 분석을 위한 Avrami 방정식에서는 RYR15와 RYR20이 각각 0.0664와 0.4983으로 시료 중 가장 낮은 Avrami 지수(n)를 나타내었으며, 시간상수(1/k)는 RYR20이 200.00으로 가장 높게 나타났다. 관능 검사 결과, RYR15이 색(5.50), 향(4.95), 단맛(4.90), 씹힘성(4.75) 및 전반적인 기호도(4.60)에서 가장 높은 점수를 나타내었다.

큰느타리 버섯의 PE 포장 저장 중 선도에 미치는 예냉처리 효과 (Effects of Vacuum Precooling on Shelf Life of Pleurotus eryngii during PE Packaging Storage)

  • 큰느타리 버섯의 polyethylene film(PE) 포장 저장성에 미치는 감압예냉(VP) 효과를 조사하였다. VP는 $-1^{\circ}C$에서 품온이 $0^{\circ}C$가 될 때까지 40분간 행하였으며, 1 kg씩 PE포장하여 $-1^{\circ}C$에서 30일간 저장하였다. 저장 중 중량감소율은 예냉처리구에서 다소 낮았다. 저장 4일째까지의 예냉구 포장내 $O_2$ 농도는 2.44-14.50 % /kg-package/hr로 대조구의 2.01-8.19 %/kg-package/hr보다 현저하게 높았으며 저장 4일째까지의 평균 $CO_2$ 농도는 대조구 0.58 %/ kg-package/hr, 예냉구 0.47 g/kg/hr로 예냉구에서는 저장초기에 호흡율이 크게 억제되었다. 대조구에서는 저장 4일째 $CO_2/O_2$값의 peak을 나타낸 반면 예냉구에서는 이러한 현상이 보이지 않았다. 저장중 예냉구는 대조구에 비하여 백색도가 높고 적색 및 황색도가 낮았다. 예냉구는 대조구에 비하여 견고성, 경도 및 씹힘성은 유의적으로 높았으나 탄력성과 점착력은 비숫하였다. 30일간 저장한 경우 대조구에서는 주름 부위가 연화되는 현상이 나타났으나 예냉처리구에서는 이러한 현상들이 현저하게 적었다. 또, 버섯자루의 단면조직을 관찰한 결과 예냉구는 망상으로 된 도관이 선명하게 관찰되었으나 대조구에서는 도관이 연화 또는 붕괴되어 형태가 뚜렷하지 않는 곳이 많았다. 이상의 결과 새송이의 수확 후 감압예냉은 저장중 선도유지에 효과가 있으며 산업적 활용이 기대된다.

  • 전남(全南) 보성(寶城)지역 보덕(寶德) 광산의 에렉트럼 (은(銀)함량=32~73 atom. %)-황화광물 광화작용(鑛化作用)은 선캠브리아기(紀) 편마암(片麻岩)내의 단층(斷層) 열극을 충진한 석영맥(石英脈)으로 산출된다. 석영맥은 광물조성이 단순한 괴상(塊狀)이며, 구조(構造)적으로 2회에 걸쳐 형성되었다. 열수변질대(熱水變質帶) 견운모(絹雲母)에 대한 K-Ar 연령은 $155.9{\pm}2.3$ Ma로서 광화작용(鑛化作用)이 후기 쥬라기(紀)에 일어났음을 지시한다. 유체포유물(流體包有物) 연구에 의하면, 광화작용(鑛化作用)은 다양한 $CO_2$ 함량 ($X_{CO_2}=0.0{\sim}0.7$)과 저염도(低鹽度) (0.0~7.4 wt. % NaCl 상당농도(相當濃度))를 갖는 $H_2O-CO_2$계(系) 유체(流體)로부터 $200^{\circ}{\sim}370^{\circ}C$의 온도(溫度)범위에서 진행되었다. 광화유체(鑛化流體)의 불혼화(不混和) ($CO_2$비등(沸騰)) 증거는 광화용(鑛化用)시의 압력(壓力)이 약 1 kbar에 이르렀음을 지시한다. 금(金)-은(銀) 침전(沈澱)은 base-metal계(系) 황화광물(黃化鑛物) 보다는 후기, 약 $250^{\circ}C$ 근처에서 진행되었고, 유체(流體) 불혼화(不混和)에 따라 황화광물(黃化鑛物) 침전(沈澱) 및 $H_2S$ 일탈이 야기되면서 주로 냉각(冷却) 및 유황분압(硫黃分壓)의 감소에 기인하였다. 광화유체(鑛化流體)의 유황동위원소(硫黃同位元素) 조성 (${\delta}^{34}S_{{\Sigma}S}=1.7{\sim}3.3$‰)은 유황(硫黃)의 화성(火成)기원을 나타낸다. 한편, 광화유체(鑛化流體)의 산소(酸素)-수소(水素) 동위원소(同位元素) 조성 (${\delta}^{18}O_{water}=4.8{\sim}7.2$‰ ; ${\delta}D_{water}=-73{\sim}-76$‰)은, 보덕(寶德)광산의 심부(深部) 중온형(中溫型) 함금(含金) 광화유체(鑛化流體)는 동위원소적(同位元素的)으로 진화된 $H_2O-rich$ 순환천수(循環天水)와 심부(深部) magma 기원의 $H_2O-CO_2$ 유체(流體)와의 혼합물(混合物)로부터 기원했음을 지시한다.

과냉각 온도가 급속냉동-해동 처리된 돈육 등심의 저장성에 미치는 영향 (Effect of supercooling on the storage stability of rapidly frozen-thawed pork loins)

  • 본 연구는 초저온 액체 침지식 급속 냉동으로 동결된 돈육 등심에 적합한 급속 해동방법을 선정하고 과냉각 저장이 냉동-해동 돈육의 미생물학적, 이화학적 및 관능적 품질 변화에 미치는 영향을 살펴보았다. 4와 $10^{\circ}C$ 송풍식 해동과 4와 $10^{\circ}C$ 유수식 해동은 냉동 돈육 시료가 해동이 완료되는 약 290-750분 소요되었지만 27.12 MHz 라디오파 해동은 약 20분으로 가장 신속하게 돈육을 해동시켜 저장실험에 필요한 냉동 돈육의 급속 해동방법으로 선정하였다. 한편 $-1.5--5^{\circ}C$로 24시간 냉각 처리 후 돈육 횡단면의 미세구조 분석 결과, $-1.5^{\circ}C$에서 냉각 처리된 시료의 표면과 중심부는 동결에 의한 조직 손상이 발생하지 않았음을 확인하여 $-1.5^{\circ}C$를 과냉각 저장 온도로 선정하였다. 저장 중 대조구인 신선육과 비교하여 냉동-해동 처리된 돈육에서 발생한 드립감량은 유의적으로(p<0.05) 높은 경향을 보였지만 $-1.5^{\circ}C$과냉각 저장이 돈육의 드립감량 증가를 억제하였다. 또한 4와 $15^{\circ}C$ 저장과 비교하여 $-1.5^{\circ}C$ 과냉각 저장은 대조구와 냉동-해동 처리구의 TVBN과 TBARS 함량 증가, Hunter a* 값 감소와 b* 값 증가를 억제하는 효과를 보였다. $15^{\circ}C$ 저장 4일 후 대조구와 냉동-해동 처리구의 총 호기성 세균 수는 9 log CFU/g 이상으로 급격히 증가하였다. 반면 $-1.5^{\circ}C$ 저장 10일 후 대조구와 냉동-해동 처리구의 총 호기성 세균 수는 각각 5.62와 4.43 log CFU/g으로 관찰되었다. $-1.5^{\circ}C$ 저장 10일 동안 대조구와 냉동-해동 처리구의 대장균군과 효모 및 곰팡이 수는 저장 초기 수준으로 유지하거나 다소 감소하였다. 관능평가 결과에 있어서 4와 $15^{\circ}C$ 저장에 비해 $-1.5^{\circ}C$ 저장한 대조구와 냉동-해동 처리구는 모든 관능평가 항목에서 저장 중 유의적으로 높은 값을 유지하였다(p<0.05). 따라서 라디오파 유전가열 해동은 냉동 돈육 등심의 해동 과정 중 상전이 구간을 빠르게 통과함으로써 급속 해동이 가능하였으며 $-1.5^{\circ}C$ 과냉각 저장이 냉동-해동 처리된 돈육에 얼음결정 형성 없이 품질 유지 및 미생물 생장지연에 효과적인 것을 확인하였다.

  • 본 연구는 외화 낭비를 줄이기 위해 우리흑돈이 종료종모돈으로써 두록을 대체할 수 있는지 조사하고자 하였다. 본 논문에서는 랜드레이스 ${\times}$ 요크셔 ${\times}$ 두록(LYD)과 랜드레이스 ${\times}$ 요크셔 ${\times}$ 우리흑돈(LYW)의 두 삼원교잡종에서 등심의 육질 특성을 비교하기 위해 이화학적 분석을 실시하였다. 공시 동물은 180일령의 LYD 59두와 LYW 60두, 총 119두를 이용하였으며, 도축 후 24시간 동안 냉각시키고, 돈육에 대한 이화학적 분석, 육색, 지방산 조성 및 관능평가를 실시하였다. 일반 성분 결과 수분 및 보수력은 두 품종간의 유의한 차이를 나타내지 않았다. 지방 함량 및 가열감량은 LYW에서 LYD에 비해 유의적으로 높게 나타났고(p<0.05), 전단력 및 pH는 LYW가 LYD보다 유의적으로 낮게 나타났다(p<0.05). 육색지수를 확인한 결과 적색도($a^*$) 및 황색도($b^*$)가 LYW에서 유의적으로 높게 나타났다(p<0.05). 두 품종의 지방산 함량을 비교한 결과 Stearic acid(C18:0)가 LYD에 비해 LYW에서 유의적으로 높게 나타났다(p<0.05). 관능검사 결과 LYW가 LYD에 비해 육색과 풍미가 유의적으로 높게 나타났다(p<0.05). 이러한 결과는 LYD와 비교하여 LYW에서 특정 화학적 특징이 개선되었음을 나타낸다. 따라서 우리흑돈이 수입 종돈인 두록의 대체 종돈으로 사용 가능할 것으로 사료된다.

  • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70$\pm$1.32mmHg/min)compared to CF dialyzers(4.32$\pm$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CF 15-11 HFDs which failed APD test did not show changes in the UFR compared to normal dialyzers indicating that APD is a more sensitive test than UFR test to evaluate the integrity of the fibers. 30527 T00401030527 ^x For quantitative measurement of reflected light from a clinical diagnostic strip, a prototype old reflectance photometer was designed. The strip loader and cassette were made to obtain more accurate reflectance parameters. The strip was illuminated at 45˚c through optical fiber and the intensity of reflected light was determined at rectanguLat angle using a photodiode. The kubelka-munk coefficient and reflection optical density were determined ar four different wavelengths(500, 550, 570 and 610nm) for blood glucose strip. For higher concentration than 300mg/41 about glucose, a saturation state of abforbance was observed at 500, 550 and 570nm. The mice were divided into two groups. One group was injected with Photofrin II, intravenously (2.5mg/kg body weight). The other group received no Photofrin II. Mice from both groups were irradialed for approximately 15 minutes at 100, 300, or 500 mW/cm2 with the argon (488nm/514.5 nm), dye(628nm) and gold vapor (pulsed 628 nm) laser light. A photosensitizer behaved as an added absorber. Under our experimental conditions, the presence of Photolfrin II increased surface temperature by at least 40% and the temperature rise due to 300 mW/cm2 irradiation exceeded values for hyperthermia. Light and temperature distributions with depth were estimated by a computer model. The model demonstrated the influence of wavelength on the thermal process and proved to be a valuable tool to investigate internal temperature rise. 30536 T00401030536 ^x We investigated the structural geometry of thirty-eight Korean femurs. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. The results suggested that the femoral component suitable for Asians should be different from the currently-used components designed and manufactured mostly by European or American companies. 30537 T00401030537 ^x It is well known that nonlinear propagation characteristics of the wave in the tissue may give very useful information for the medical diagnoisis. In this paper, a new method to detect nonlinear propagation characteristics of the internal vibration in the tissue for the low frequency mechanical vibration by using bispectral analysis is proposed. In the method, low frequency vibration of f0( = 100Hz) is applied on the surface of the object, and the waveform of the internal vibration x (t) is measured from Doppler frequency modulation of silmultaneously transmitted probing ultrasonic waves. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms. Our department has developed an information system for routine hematology using down-sized computer system. We have used an IBM 486 compatible PC with 16MB main memory, 210 MB hard disk drive, 9 RS-232C port and 24 pin dot printer. The operating system and database management system were SCO UNIX and SCO foxbase, respectively. For program development, we used Xbase language provided by SCO foxbase. The C language was used for interface purpose. To make the system use friendly, pull-down menu was used. The system connected to our hospital information system via application program interface (API), so the information related to patient and request details is automatically transmitted to our computer. Our system interfaced with fwd complete blood count analyzers(Sysmex NE-8000 and Coulter STKS) for unidirectional data tansmission from analyzer to computer. The authors suggests that this system based on down-sized computer could provide a progressive approach to total LIS based on local area network, and the implemented system could serve as a model for other hospital's LIS for routine hematology. 30609 T00401030609 ^x To develop an artificial bone substitute that is gradually degraded and replaced by the regenerated natural bone, the authors designed a composite that is consisted of calcium phosphate and collagen.   • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70${\pm}$1.32mmHg/min)compared to CF dialyzers(4.32${\pm}$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms. The operating system and database management system were SCO UNIX and SCO foxbase, respectively. For program development, we used Xbase language provided by SCO foxbase. The C language was used for interface purpose. To make the system use friendly, pull-down menu was used. The system connected to our hospital information system via application program interface (API), so the information related to patient and request details is automatically transmitted to our computer. Our system interfaced with fwd complete blood count analyzers(Sysmex NE-8000 and Coulter STKS) for unidirectional data tansmission from analyzer to computer.
