High Temperature-cooking conditions of cultured fishes(loach, crucian carp, bastard halibut, and jacopever) were optimized by response surface methodology(RSM), and plastein products were prepared using enzymatic hydrolysis. Four models were proposed with regard to effects of time(t), temperature(T), and water/fish meat (w/f) ratio on the amount of 0.3M TCA soluble fractions. The model coefficients were ranged from p<0.0001 for jacopever to p<0.0433 for bastared halibut. Cooking conditions for 60% hydrolysis were optimized at 1) 14$0^{\circ}C$ except for crucian carp(136$^{\circ}C$); 2) 10.08 hours(loach), 7.25 hours(crucian carp), 9.85 hours(ba-stard harlibut), and 9.37 hours(iacopever); 3) 1:1(w/f) ratio except for the crucian carp(1.1:1). When protein hydrolyzates were employed for the plastein synthesis, optimum plastein-reaction conditions were determined to be pH 9.0 with chymotrypsin for the loach and crucian carp hydrolyzates, pH 9.0 with papain for the bastard halibut hydrolyzate, and pH 11.0 with trypsin for the jacopever hydrolyzate. Plastein reaction could be performed in water at concentration up to 20%(w/f).

The purpose of the present study was to evaluate the sensory and instrumental quality of thawed beef steak prepared by searing and oven cooking. Beef purchased in the local market was divided into two groups; one group was cooked in a 180℃ oven until the internal temperature reached 60℃, and the other group was oven cooked until 35℃, then cooked in a 250℃ pan until the internal temperature reached 60℃. Despite a noticeable change in appearance due to the high temperature of the searing, there was no significant difference in juiciness, water content, and cooking loss between the searing-cooked and the oven-cooked steaks. However, in searing cooking, both scores of overall flavor and roast meat flavor were significantly higher than those of oven cooking. In the searing-cooked steak, the reducing sugar, which is a reactant of the Maillard reaction, was lower and Maillard-reaction products were higher than oven-cooked steak. From our results, it can be concluded that searing does not improve juiciness of the steak, but improves the flavor of beef steak due to higher levels of Maillard reaction products.

Comparing the effects of sodium tripolyphosphate (STPP) concentrations of 0.2% and 0.4% on beef semitendinosus is the objective of the current investigation. The samples were cooked at varied temperatures (45+60℃ and 45+70℃) and times (1.5+1.5 h and 3+3 h) using staged cooking. The colour properties, cooking loss, water retention, shear force, water-holding capacity, sarcoplasmic, and myofibrillar solubility, and total collagen were investigated. The cooking time and temperature affected the water-holding capacity, cooking loss, CIE L*, CIE a*, CIE b*, myofibrillar, and sarcoplasmic solubility, with lower temperature and short time having the lower detrimental effect. However, the significant effect can be intensified after the addition of STPP with higher water-holding capacity and tender meat obtained with 0.4% phosphate concentration at any cooking conditions. The STPP lowered the collagen content and increased the protein solubility of myofibrillar and sarcoplasmic, which this degradation is used as a good indicator of tenderness.
This study observed the effects of the double combination of temperatures-times (2 temperatures: 2 times combination, 2T2T) in sous vide cooking method on the physicochemical properties and collagen solubility (CS) of semitendinosus muscle from cattle and goat as a comparison to common sous vide treatment (1 temperature: 1 time combination, 1T1T). The new invention of sous vide cooking method (2T2T) cooked at the first temperature at $45^{\circ}C$ for 3 h, and the second temperature at $60^{\circ}C$, $65^{\circ}C$, and $70^{\circ}C$ for 3 h, and labeled as N45-60, N45-65, and N45-70, respectively. While, common sous vide treatment (1T1T) were cooked directly for 6 h at $60^{\circ}C$ (T60), $65^{\circ}C$ (T65), and $70^{\circ}C$ (T70). Results revealed that cooking with 2T2T treatment improved the water-holding capacity and reduced the cooking loss of both beef and goat meat. The $L^*$ values have no apparent changes between treatment in beef and goat meat, while $a^*$ values of N45-60 treated goat presented markedly higher values than other treatments but an only slight increase in beef at the same treatment (p>0.05). Again, 2T2T treatment tended to decrease mean shear force (SF) values for beef and goat meat with the lowest SF values recorded at N45-60, and the CS no or less influenced this value. Therefore, the application of innovative sous vides cooking method (2T2T) presented comparable values in the treated beef and goat meat as compared to common sous vide method (1T1T).
This research was conducted to evaluate the effects of cooking conditions on quality characteristics of Soo-Yuk, a traditional Korean food. The cooking conditions were as follows: boiled until the core temperature of a sample in $20^{\circ}C$ cold water reached at $75^{\circ}C$ (T1); boiled until the core temperature of a sample in $90^{\circ}C$ boiling water reached at $75^{\circ}C$ (T2); and boiled with sample from $20^{\circ}C$ to $100^{\circ}C$ and kept at $98^{\circ}C$ for 25 min (T3, Korean traditional method). The sample cooked at $90^{\circ}C$ water (T2) had the fast cooking time, and the highest cooking yield and moisture content. Soo-yuk boiled in $100^{\circ}C$ water (T3) showed the longest cooking time, the lowest cooking yield and moisture content, and the highest shear force. The instrumental color showed a significant difference among the cooking conditions. The sarcomere length of soo-yuk boiled in $100^{\circ}C$ water (T3) was the shortest, but the myofibrillar fragmentation index and thiamine content of the sample cooked at $90^{\circ}C$ (T2) were the highest. In sensory evaluation, the evaluation of soo-yuk boiled in $98^{\circ}C$ water (T3) was of superior flavor and overall acceptability.
돈육 등심의 각 가열처리조건에 따른 아질산염이 중량감소, pH, 발색율, 색도 및 지 지질산화에 미치는 영향을 연구한 결과 다음과 같은 결과를 얻었다. 고온에서 가열처리하든가 미세하게 간 돈육 시료는 중량감소가 컸으나 아질산염을 처리한 시료의 중량감소는 적었고 가열처리함에 따라 pH가 떨어졌는데 아질산염을 처리한 시료의 pH저하가 억제되었다. 아질산염을 처리함에 따라 발색율, lightness, redness, 및 Chroma값이 높아져서 변색이 억제되었고 가열처리를 하면 전반적으로 malonaldehyde의 함량이 높아졌으나 고온장시간의 가열처리에서는 시료의 malonaldehyde의 함량이 오히려 감소되었다. 또한 아질산염을 처리하면 과산화물 및 malonaldehyde의 함량이 줄어들어 산화방지에 효과를 나타냈는데 가열처리 온도가 높아지고 시간이 길수 그 효과는 적었다. 돈육을 가열처리하면 각 지질성분의 함량은 대체로 낮아졌는데 인지질성분은 주로 phosphatidyl choline과 phosphatidyl ethanolamine이었으며 이들의 생성은 가열처리를 함에 따라 감소되었다. 총지질을 구성하는 주요 지방산은 oleic acid와 palmitic acid였으며 인지질을 구성하는 주요지방산은 linoleic acid와 palmitic acid였고 인지질은 필수지방산 및 이중결합이 2개 이상인 불포화지방산의 조성이 높았는데 이들 지방산은 가열처리함에 따라 그 조성이 감소되었으며 아질산염을 처리하면 총지질 및 인지질을 구성하는 이중결합이 2개 이상인 불포화지방산의 산화가 억제되었다.
미강(쌀겨)의 유지, 단백질 및 vitamin을 효과적으로 활용하기 위한 연구로서, 미강(수분함량 9.5% 및 15. 6%)을 extrusion cooking 처리장치로서 주어진 specific dower consumption ($42.1{\sim}67.9w/kg$범위)extrusion temperature ($99{\sim}135^{\circ}C$범위) 조건에서 extrusion cooking하여, 미강이 함유하고 있는 thiamine, riboflavin 및 niacin의 잔동율에 관하여 연구한 결과를 요약하면 다음과 같다. 미강에 함유되어 있는 thiamine, riboflavin 및 niacin의 잔존율은 extrusion cooking 처리시의 원료수분함량에 영향을 받으며, 수분함량이 많으면 적은 specific power consumption 및 낮은 extrusion temperature에서도 이들 vitamin의 파괴현상이 더 일어난다. 동등한 수분함량의 원료미강을 extrusion cooking 처리할 때, specific power consumption이 커질수록 그리고 extrusion temperature가 높을수록 이들 vitamin의 잔존율이 저하된다. 그리고 전extrusion cooking 조건에서 thiamine은 $89.9{\sim}97.0%$, riboflavin은 $83.4{\sim}97.3%$, niacin은 94.0%. riboflavin은 $83.4%{\sim}97.3%$ 그리고 niacin은 $94.0{\sim}97.7%$의 잔존율을 보이므로써, 전반적으로 순간고온압출공정인 extrusion cooking이. 가열처리보다 높은 vitamin 잔존율을 나타내고 있었다.
Lipid-based functional components present in foods undergo chemical changes during cooking. Useful n-3 and n-6 fatty acids, phytosterols, tocopherols, and carotenoids are degraded by thermal cooking such as frying, resulting in loss of their physiological functions. However, conjugated linoleic acid and diacylglycerols can be formed during heating, which would be beneficial to the health. Degree of degradation and formation of the functional components depends on the cooking method, cooking temperature and time, lipid matrix containing the components, and the presence of other materials. Although it is clear that the content of each functional component varies during long-heating in a model system consisting of small numbers of components, the real foods cooked in a small scale for a limited cooking time do not show highly significant differences in the functional components contents from raw food materials.
Purpose: High energy requirement and long cooking time are limiting consumption of pigeon pea (Cajanus cajan), a nutritious food. This study was performed to estimate energy and time demand by different methods of cooking pigeon pea. Methods: Pigeon pea (150 g) was soaked in 2.0 L of water at ambient temperature ($29{\pm} 2^{\circ}C$) to determine hydration behavior. Cooking experiments were conducted using aluminum and pressure-cooking pots. Efficiency of cooking was evaluated using four types of cooking appliances (kerosene, liquefied petroleum gas (LPG), electric, and charcoal stoves). Normal (continuous heating until the food was satisfactorily cooked) and control (controlling the energy input to closely match the actual energy required) cooking were conducted. Energy requirement and duration of cooking were determined using standard procedures. Results: Soaking increased moisture content from 11.99 to 30.01% in 90 min, while water absorption rate decreased with soaking duration. In cooking 150 g of pigeon pea using kerosene stove, presoaked normal pressure-pot cooking method consumed the least energy (10 800 kJ) and time (205 min), while unsoaked normal cooking consumed the highest energy (18 450 kJ) and time (336 min). Using LPG stove, unsoaked normal cooking method required the highest energy (52 470 kJ), while presoaked control pressure-pot required the least energy (14 405 kJ). For electric stove, the lowest energy (15 560 kJ) and shortest duration (105 min) were recorded during control cooking of presoaked sample in the pressure-pot. Conclusions: Control cooking was not practicable using charcoal stove. Generally, kerosene stove consumed the least energy, while electric stove was found to have the shortest duration of cooking.
A silica aerogel sheet with a very low thermal conductivity is used to suppress the temperature increase of the Cu coil in an induction cooker by reducing the heat flow from the heat source (cooking pot). It is found that the temperature of the Cu coil is reduced significantly by the insertion of an insulation sheet between the heat source and the Cu coil, demonstrating the effectiveness of the insulation sheet in the suppression of the heat flow between the cooking pot and the coil. Furthermore, the temperature of the cooking pot increases more rapidly with the use of the insulation sheet, allowing for an increased efficiency of the induction cooker.
