아마씨 가루를 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies Made with Flaxseed Powder)

  • 본 연구에서는 아마씨 가루를 밀가루 중량기준 0%, 6%, 12%, 18%의 비율로 첨가한 쿠키를 제조한 다음, 반죽의 밀도, pH, 수분 함량, 쿠키의 퍼짐성, 손실률, 팽창률, 경도, 색도, 관능평가, 과산화물가, 산가 등을 측정하였다. 반죽의 밀도는 대조군과 실험군 간에 유의적인 차이가 없었고 pH는 첨가군이 대조군보다 높게 나타났으며 수분 함량은 낮게 나타났다. 퍼짐성은 아마씨 가루 첨가량이 증가할수록 증가하였고(p<0.05) 손실률은 대조군과 6% 첨가군 간에 유의적인 차이가 없었고 12% 첨가군이 가장 높았으며 18% 첨가군이 가장 낮았다. 팽창률은 대조군과 6%, 12% 첨가군 간에 차이가 없는 반면, 18% 첨가군은 대조군보다 감소하였다. 경도는 아마씨 가루 첨가군이 대조군보다 유의적으로 낮았고(p<0.05) 명도와 황색도는 아마씨 가루 첨가량이 증가할수록 감소하였다. 관능검사결과 아마씨 가루 첨가량이 증가할수록 쿠키의 표면색, 고소한 맛이 강하게 평가되었고 전반적인 기호도는 12% 첨가군이 대조군보다 높은 점수로 평가되었다(p<0.05). 저장 기간에 따른 산화 안정성을 측정한 결과 과산화물가는 모든 시료에서 저장 30일까지 증가하다가 감소하였고 산가는 저장기간 동안 지속적으로 증가하였으며 각 시료 간에 유의적인 차이는 없었다.

  • The purpose of this study was to propose optimal mixing proportion by adding stevia in powder form, which are low caloric and high intensity sweetener to cookies, and to determine the characteristic of product. It reduced the average sugar content of cookies to 50%, processed stevia powder, add them in 2, 4, 6, and 8% to make cookies and measured various product characteristics, including anti-oxidant activity. The antioxidant activity was highly correlated with the total phenolic composition of stevia cookies (r=0.967). Total phenolic contents and DPPH free radical scavenging activity of cookies significantly increased with increasing stevia powder. The bulk density of the dough, spread factor and the hardness, total polyphenol contents and DPPH free radical scavenging activity of cookies significantly increased with increasing stevia powder, while the pH of the dough, and L values of the cookies decreased with increasing stevia powder content (p<0.001). Additionally, the consumer acceptability scores for the 4% stevia cookie groups ranked significantly (p<0.001) higher than those of the other groups in color, taste, flavor, sweetness and overall preference. All the take together, the results of this study suggest that stevia powder is a good ingredient for increasing the consumer acceptability and the functionality of cookies.

우엉 분말 첨가 버터 쿠키의 품질특성, 생리활성 물질 함량 및 항산화 활성 (Quality Characteristics, Bioactive Compound Content, and Antioxidant Activity of Butter Cookies Supplemented with Burdock Powder)

  • We determined physicochemical characteristics and antioxidant activities of cookies prepared by replacing wheat flour with 0, 3, 6, and 9% freeze-dried burdock powder instead of wheat flour. The leavening and loss rates of the cookies decreased in proportion to the amount of burdock powder added to the dough. The moisture content of the cookies increased in proportion to the amount of burdock powder added and the crude protein and hardness were higher in the burdock-added group compared to the control. The lightness and yellowness of the cookies decreased, and the redness increased in proportion to the amount of burdock powder added. The total flavonoid and polyphenol compounds in the cookies increased in proportion to the amounts of burdock powder added. The antioxidant activities also tended to increase in proportion to the amount of burdock powder added. Based on the above results, adding burdock powder to cookies can increase antioxidant activity by increasing the content of antioxidant components, such as polyphenols and flavonoids. In addition, it is believed that adding burdock powder at levels of 3 to 9% of the weight of flour would result in cookies with spreadability, swelling power, and hardness similar to those of regular cookies.

흰깨, 검은깨 및 들깨가 고아미 2호를 이용한 쌀쿠키의 이화학적 및 관능적 특성에 미치는 영향 (Physicochemical and Sensory Characteristics of Rice Cookies Based on Goami 2 with Sesames(White and Black) and Perilla Seeds)

  • The aim of this study was to develop rice cookies based on 'Goami 2' rice, and made with sesame (white and black) and perilla seeds. Furthermore, we studied the physicochemical and sensory characteristics of the cookies as well as the alternative effects of the sesames or perilla seeds for butter, where we substituted the sesames or perilla for 30% of the total butter. The pH values of the cookie doughs made with the sesames or perilla seeds were significantly different (p<0.001), whereas the spread factors of the doughs were not significantly different. The Hunter color L-, a-, and b- values were significantly different for the cookies made with the added sesames or perilla seeds (p<0.001). The brittleness of the Goami 2 rice cookies (control) was significantly higher than that of the cookies made with the sesames or perilla (p<0.001). In a descriptive analysis performed by 8 trained panelists, the following sensory characteristics: yellow, black, sweet taste, nutty taste, nutty odor, oily flavor, and off flavor, were significantly different among the cookie samples. In a consumer test by 50 women students, the Goami 2 rice cookies were preferred in the following order: Goami 2 rice cookies with no additions > black sesame cookies > white sesame cookies > perilla cookies. In conclusion, some physicochemical and sensory characteristics of the cookies were different, in relation to being made with or without the sesame or perilla seeds. However, because of the small difference in acceptance among the cookies, the sesame and perilla rice cookies show strong potentials for consumer acceptance. Moreover, the black sesame cookies were more acceptable in terms of butter substitution for the cookie preparation.

매생이 분말을 첨가하여 제조한 쿠키의 품질특성과 항산화효과 (Quality Characteristics and Antioxidative Effect of Cookies Made with Capsosiphon fulvescens Powder)

  • 본 연구는 매생이 분말의 첨가량을 3~7%로 달리하여 쿠키를 제조한 후 쿠키의 이화학적 품질특성 및 저장기간 중 지질산화효과를 측정하였다. 반죽의 밀도는 대조군과 매생이 첨가군간에 차이가 없었으나 반죽의 pH는 매생이 분말의 첨가량에 증가함에 따라 유의적으로 감소하였다. 쿠키의 퍼짐성은 대조군에 비해 3%군과 5%군은 유의적으로 높았으나 7%군은 유의적으로 낮게 나타났다. 손실율은 대조군과 7%군은 차이가 없었으나 3%와 5%군은 대조군에 비해 유의적으로 낮게 나타났다. 팽창율은 매생이 분말 첨가량이 증가함에 따라 유의적으로 감소하였다. 쿠키의 조직감은 대조군과 3%군과는 차이가 없었으나 5%와 7%군은 대조군에 비해 유의적으로 높게 나타났다. 색도의 경우 명도는 매생이 분말의 첨가량이 증가할수록 유의적으로 낮게 나타났으며, 녹색도는 대조군에 비해 매생이 첨가군에서 높게 나타났다. 황색도 역시 대조군에 비해 매생이 분말의 첨가량이 증가할수록 유의적으로 낮게 나타났다. 쿠키의 관능평가 결과 색은 대조군에 비해 3%군과 7%군은 유의적으로 낮게 나타났으며, 촉촉함 정도에서는 대조군에 비해 7%군에서 유의적으로 높게 나타났다. 쿠키의 무기질 함량은 대조군에 비해 매생이 첨가 쿠키에서 측정한 모든 무기성분이 높게 나타났다. 저장기간 중 매생이 분말 첨가 쿠키의 산가와 과산화물가는 대조군에 비해 매생이 첨가군에서 모두 낮게 나타났으며 특히 5%군에서 가장 낮게 나타났다. 이러한 연구결과를 볼 때 해조류인 매생이를 이용하여 쿠키를 제조할 수 있을 뿐 아니라, 특히 매생이 분말 5% 첨가군이 산패 억제에 효과가 있으므로 적절한 양의 매생이 분말을 첨가한 쿠키가 일반 쿠키에 비하여 저장기간을 증가시킴을 알 수 있었다.

보리순 분말을 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies added with Barley Sprout Powder)

  • This study examined the quality characteristics of cookies comprised of various amounts of barley-sprout powder by analyzing the physico-chemical characteristics of the cookies and investigating a sensory evaluation. For the study, the cookies were cooked with the following levels of barley-sprout powder: 0%, 3%, 6%, 9%, and 12%. The results show that the moisture content of the cookies was increased in accordance with the level of barley-sprout powder and this result is the same as the spreadability factor of the cookies (p<0.001). Also, the pH and brix values of the samples decreased in accordance with the level of barley-sprout powder (p<0.001). Regarding hunter's colors, the values of L (lightness), a (redness), and b (yellowness) are significantly decreased, increasing the quantity of barley-sprout powder (p<0.001). For the textural characteristics, the results show that the hardness of the cookies decreased in accordance with the addition of the barley-sprout powder; furthermore, the results indicate a tendency whereby the DPPH-radical-scavenging activity and the total polyphenol content of the cookies were increased, thereby increasing the quantity of the barley-sprout powder (p<0.001). For the sensory evaluation, the cookies that were made with 6 % barley-sprout powder received the highest scores in terms of appearance, taste, and overall preference (p<0.05, p<0.001). This study suggests that barley-sprout powder is an excellent ingredient for improving the acceptability and functionality of cookies, and that, in relation to the flour quantity the ideal proportion of barley-sprout powder is 6%.

메밀가루 첨가가 냉동 쿠키의 품질 특성에 미치는 영향 (Quality Charactistics of Frozen Cookies with Buckwheat Flour)

  • The purpose of this study was to investigate the quality characteristics of frozen cookies made with 3%, 6%, 9% buckwheat flour. The higher amount of buckwheat flour added to the frozen cookies, the greater the decrease in water activity, hardness, Max. G and brittleness compared to control. Lightness, redness, and yellowness of the cookies with buckwheat flour were slightly lower than those of control. Brown color and buckwheat odor of the cookies with buckwheat flour were higher, whereas egg odor and butter flavor were lower than those of control. Overall acceptance of the frozen cookies with 3% buckwheat flour was high.

뽕잎 분말을 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies containing Mulberry Leaf (Morus alba Linne) Powder)

  • This study examined the quality characteristics of cookies prepared with mulberry leaf powder (0, 1, 3, 5, and 7%) substituted for flour. The pH of the cookie dough decreased significantly in response to the addition of all levels of mulberry leaf powder. The spread factor of the cookies also increased significantly with increasing mulberry leaf powder content added to the cookies recipe. In addition, the Hunter's color L and a values decreased significantly with increasing mulberry leaf powder content, whereas the b value increased. According to hardness measurements, the substitution of 1~7% mulberry leaf powder resulted in increased hardness compared to the control. Moreover, the DPPH free radical scavenging activity of the cookies was increased significantly (p<0.05) with increasing levels of mulberry leaf powder. The sensory evaluation revealed cookies containing 3% to have the highest scores.

단호박 분말이 쿠키의 품질특성에 미치는 영향 (Effects of Sweet Pumpkin Powder on Quality Characteristics of Cookies)

  • This study was conducted to evaluate the effects of sweet pumpkin (Cucurbita Maxima D.) powder on the quality characteristics of cookies. The cookies were made with various sweet pumpkin powder levels (10%, 20%, and 30%). The pH of the dough increased while the density of the dough decreased as the amount of sweet pumpkin powder increased. The width of cookies determined by water content in dough increased with increasing sweet pumpkin powder level. The L value of cookies was significantly the largest in the control group. The b value was the highest for the 30% substituted sample group. According to textural measurements, the hardness, cohesiveness, springiness, and brittleness of the cookies with sweet pumpkin powder were higher in concentration than those of the control group. According to the sensory evaluation, the appearance, color, flavor, and texture of cookies with 10-20% sweet pumpkin powder were higher compared to those of the control group. The overall most acceptable cookie group was that with 10% added sweet pumpkin powder.

민들레 분말을 이용한 쿠키의 품질과 항산화성 (Quality Characteristics and Antioxidant Activity of Cookies Prepared from Taraxacum coreamm Powder)

  • This study assessed the preparation and quality characteristics of cookies prepared from Taraxacum coreamm powder (TCP) (0, 2, 4, 6, 8%) substituting wheat flour. The pH of the cookie dough significantly decreased with increasing TCP. However the density of the cookie dough was not significantly different among the test groups. The baking loss rate of the groups with TCP was slightly lower, whereas the moisture content was higher than the control group. The spread factor of the cookies decreased significantly with increasing TCP. The hardness of the cookies increased as TCP increased. In Hunter's color value, the L and a value of the cookies decreased with increasing TCP, while the b value increased. The DPPH radical scavenging activity of the cookies significantly increased with increasing TCP. Based on the above results, this study suggested that TCP can be a good ingredient to increase the functionality of cookies.
