  • The objective of this study was to investigate the consumption pattern of snacks-containing trans-fatty acid in adolescents living in the Kwang-ju area of Korea, and to analyze the relevance toward their eating behaviors, body composition, nutrient intakes, and consumption frequency of snacks-containing trans fatty acid. A survey questionnaire was developed in order to investigate general environmental factors, eating behavior, nutritional knowledge, and the consumption frequency of snacks-containing trans fatty acid. A total of 312 middle school students were surveyed. The collection rate was 97% and ultimately 282 cases were analyzed. Anthropometric measurements, body composition data, and nutrient intakes were also collected. The consumption frequencies for snacks-containing trans-fatty acid were negatively correlated with food behavior scores (p<0.01) however, pocket money and snack intake frequency per day were positively correlated with consumption frequency. Also, snack consumption frequency had some correlation with the subjects' anthropometric measurements and body composition data such as total body water (p<0.01), body protein (p<0.01), body minerals (p<0.01), and skeletal muscle mass (p<0.01). Finally, the consumption frequency of snacks-containing trans fatty acid was significantly correlated with calcium intake (p<0.05), it also showed correlations with vitamin A, retinol, ${\beta}-carotene$, and folic acid intake, although statistical significance was not verified.

  • Stress has been known to change dietary behaviors and food intakes in individuals. The purpose of this study was to investigate the effect of stress level on the frequency and the amount of snack consumption. The high stress group (HS) showed significantly higher frequency of consumption for bread, chips, cookies, ramyeon, and frozen snacks (p<0.05) compared to low stress group (LS) with higher frequency of snack consumption (p<0.01), and increased intakes of energy, carbohydrates, and sodium from snacks (p<0.01) than LS. As the stress level became higher, the proportions of students with irregular meals, overeating, and night snacking increased (p<0.01). Also, 33.0% of the subjects answered that they consumed an increased amount of snacks when they were feeling stressed. Our results indicated that stress has negative influence on snack consumption in middle school girls.

  • This study was performed to investigate the consumption of coffee beverages and energy contribution ratios of coffee beverages and accompanying snacks by college students in Deajeon City and Chungnam Province in Korea. Questionnaire survey, dietary survey, and snack survey using food record method during 3-days were carried out. As a result, we found that 86.9% of male students and 75.6% of female students consumed coffee beverages usually, with no differences between the two groups. However, the frequency of coffee beverages consumed by female students out-numbered that of male students by 1 cup a day to 1-2 cups a week (p<0.05). Furthermore, male students most likely consumed coffee beverages at schools or academies, but female students consumed them at coffee shops (p<0.01). The reasons male students gave to consume coffee beverages were for scent, taste, fatigue, and to stay awake. Similarly, the reasons female students gave to consume coffee beverages were for scent, taste, habit, and to stay awake (p<0.01). Fully 58.1% of male students and 80.0% of female students ate snacks along with coffee beverages (p<0.01). Most male students substituted a coffee beverage and accompanying snack for a regular meal once a month. Female students were doing it at most 2-3 times a month (p<0.05). The mean daily dietary energy intake of male students was 1,924 kcal/d, and of female students was 1,518 kcal/d (p<0.001), which both were below the estimated energy requirements. Male students obtained 285.6 kcal/d and female students obtained 289.5 kcal/d from coffee beverages and accompanying snacks. There was a significant different in dietary intake of energy (p<0.05), calcium, and iron (p<0.001) for each ratio of reference intake between male and female students. The students who ate larger amounts of coffee beverages and accompanying snacks consumed less dietary energy, protein, calcium, and iron, respectively (p<0.05). These results show that many students consume coffee beverages regularly and obtain large amounts of energy from coffee beverages and accompanying snacks. It also shows that student's dietary nutrient intake tends to be poorer, as he or she obtains more energy from coffee beverages and accompanying snacks. Therefore, it is critical to monitor the influence of consumption of coffee beverages and accompanying snacks on the dietary nutrient intakes and health of college students, and to provide nutrition education about the proper consumption of coffee beverages and accompanying snacks based on scientific evidence.

  • This study looks into the relationship between mother's nutrition knowledge and the actual situation of snacks consumption by mothers living in Daegu and Gyeongbuk. The data were analyzed by statistical methods such as frequency, percentage, Chi-square, ANOVA and Duncan with the SPSS Windows 19.0 program. Regarding level of education, most of the subjects in the 'High' and 'Medium' Groups were university graduates, whereas most of those in the 'Low' Group were college graduates. Most of the subjects ate used processed snacks, produced snacks, or cooked snacks themselves, and most added fruits, followed by milk products and confectionery as snacks. Most of the subjects were satisfied with their experiences of purchasing snacks for children. In selecting the snacks, most of them attached importance to 'balanced nutrition', followed by 'food additives', 'allergy', and 'sanitation.' These results show that nutrition education is necessary for choosing correct and good quality snacks for children.

  • The aim of this study was to provide descriptive information on meal and snack patterns and to investigate snacks in relation to energy intake and food choice according to the meal patterns of employed people in Korea. 683 employed people (292 males, 391 females) were interviewed to collect one day dietary data by using 24-h dietary recall. A recorded day was divided into 3 meal and 3 snack periods by the respondent's criteria and the time of consumption. To analyze the eating pattern participants were divided as the more frequent snack eaters (MFSE) and the less frequent snack eaters (LFSE). They were also categorized into 6 groups according to the frequency of all eating occasions. The common meal pattern in nearly half of the subjects (47.6%) was composed of three meals plus one or two snacks per day. A trend of an increasing the number of snacks in between main meals emerges, although the conventional meal pattern is still retained in most employed Korean adults. Women, aged 30-39, and urban residents, had a higher number of being MFSE than LFSE. Increasing eating occasions was associated with higher energy, protein, and carbohydrate intakes, with the exception of fat intakes. 16.8% of the total daily energy intake came from snack consumption, while the 3 main meals contributed 83.2%. Energy and macronutrient intakes from snacks in the MFSE were significantly higher than the LFSE. Instant coffee was the most popular snack in the morning and afternoon, whereas heavy snacks and alcohol were more frequently consumed by both of the meal skipper groups ($\leq$2M+2,3S and $\leq$2M+0,1S) in the evening. In conclusion, meal pattern is changing to reflect an increase of more snacks between the three main meals. Meal and snack patterns may be markers for the energy and macronutrient intakes of employed people in Korea.

  • Objectives: The study was conducted to investigate the relationship between several stress measures in everyday life, emotional eating behavior, and dietary pattern (snacks, fatty foods, sweet beverages, fruits and vegetables) in school-aged children. Methods: One hundred and ninety-four students of an elementary school located in Seongnam City participated in the study. The students responded to the survey questionnaire by self-report, which consisted of items regarding general characteristics, height, weight, dietary habits, frequency of consuming healthy (fruits and vegetables) and unhealthy foods (snacks, fatty foods, and sweet beverages), emotional eating behavior, and daily stress. Correlational analysis was performed to examine the relationship between stress, emotional eating behavior, and dietary pattern, and Poisson and logistic regression analyses were conducted to investigate the effects of stress on dietary pattern. Results: Positive correlations were found between all stress factors and emotional eating behavior and between the friend and personal factor (one of the stress factors) and the consumption of sweet beverages. The frequency of consuming sweet beverages was 2.6 times higher in the high stress group than in the low stress group (95% CI). Conclusions: Children's daily stress was associated with emotional eating behavior and undesirable dietary pattern such as consumption of sweet beverages.

  • This study was conducted to evaluate children's purchase behavior (frequency of snack consumption and purchase) and preference for high protein snack products developed for weight control and nutritional balance. A total of 80 elementary school students (from the 3rd to 6th graders) in the Gyeonggi-do learning center were participated and 76 were used for the analysis. The most common response for liking snacks was taste (71.4%), and the most preferred types of snacks were chips (42.1%) and puff snacks (34.2%). The highest frequency of snack ingestion was 1-3 times per week (48; 63.2%), and the main purchasers were parents (65.8%). Cheese, corn and chili flavors were more preferred than the control, while yogurt taste was slightly less preferred than the control. The results of this study showed the possibility of commercialization of new protein snacks according to children's seasoning preference and provide the insights into the snack preferences of children as main consumers.

  • This study was conducted to evaluate the risk of overweight and obesity in adolescents consuming snacks frequently from 2007~2009, Korean National Health and Nutrition Examination Survey (KNHANES). The subjects (12~14 years: n=523; 15~18 years: n=614) were presented with food frequency questionnaires, and they were classified according to their gender and frequency of snack consumption. In the age group of 12~14 years, boys and girls (boys OR: 1.11, 95% CI: 0.52~2.39, girls OR: 12.45, 95% CI: 2.26~68.51) who consumed yogurt frequently had a higher risk of overweight and obesity at the highest quartile frequency compared with the lowest quartile after adjustments for multiple confounding factors, including age, physical activity, frequency of eating out and snack consumption, and energy intake. In the age group of 15~18 years, girls (OR: 1.01, 95% CI: 0.34~2.99) consuming fried foods had a higher risk of overweight and obesity at the highest quartile frequency compared with the lowest quartile after adjustments for multiple confounding factors, including age, physical activity, frequency of eating out and snack consumption, and energy intake. Thus, we conclude that frequent consumption of yogurt and fried foods increases the risk of overweight and obesity in adolescents. These findings suggest that the risk of overweight and obesity is associated with the frequency of snack consumption.

  • The purpose of this study was to investigate snacking behavior in adolescents. We selected one middle school and one high school in 11 school districts in Seoul. The subjects were 1,813 students (904 boys and 909 girls) in 21 schools (11 middle schools and 10 high schools). Subjects reported their snacking behavior: snack frequency, snack type, snack time, with whom to eat snack, place to purchase snack. The subjects were classified into four groups by gender and schooling. The mean snack frequency was 2.8. Girls ate snacks more frequently than boys (p < 0.001). More than half of subjects ate 1 to 3 snacks a day. Only 9.3% of them did not eat any snack. Tangerine was highly ranked in snack type. Each subject groups had different snack time (p < 0.01) and type of snack (p < 0.001). Most snack was consumed alone (46.6%), however they mainly ate fruits and other foods with family. 46.9% of snacks were purchased outside. A typical snack time was 'before dinner' for most snacks except fruits. Unhealthy foods like soft drinks, cookies, chips, candies, chocolates, ice creams had relatively high proportion in snack consumption with friends. In conclusion, adolescents had different snacking behaviors by their age and gender. These results indicate necessities of multi-dimensional efforts at home, school, media and government level considering adolescents' age and gender for their healthy snacking behavior.
