A Study on the Improvement Strategies for Exhaust Performance in Commercial Kitchen Hoods (상업용 주방후드의 배기성능 개선방안에 관한 연구)

  • The purpose of this study is to suggest the improvement strategies for exhaust performance in composite kitchen hoods. The Exhaust only hood, the 2-way compensating hood and the 3-way compensating hood were selected, and the laboratory experiments were performed to compare the local exhaust efficiency and the indoor temperature distributions according to the variations of the hood type and supply/exhaust air velocity. The results of this study can be summarized as follows. The compensating hood has better performance than exhaust only hood in the aspect of local exhaust efficiency and temperature distribution. The 3-way compensating hood shows the best performance when the supply air velocity is about 2.7 m/s, and the 2-way compensating hood at the supply air velocity of 3.5 w/s. In the same exhaust rate condition, if the exhaust area of the hood is increased and therefore the exhaust velocity is lowered, the supply air velocity is also lowered to get the optimum performance. The optimum exhaust velocity range of the commercial kitchen hood which derived from this study is 0.48 ∼ 0.55 m/s.

Noise Characteristics of Improved Sirocco Fan for Range Hood (렌지 후드 용 개선된 시로코 홴의 소음특성 변화)

  • Recently, since structures have become extremely airtight with the development of high-rise apartments, mixed use residential and commercial buildings and offices, large capacity range hoods have become commonly implemented. However, the high noise level caused by this range hood system made of thin plate is the cause of increased complaints among users. In this study, the level of noise emitted from this type of range hood was measured by height at the user's location in the kitchen. It was confirmed that a great deal of noise was emitted in the downward direction of the hood. In order to minimize the noise emitted from this type of range hood, a new type of fan was manufactured. This was done by changing only the material and shape of the fan, since it was determined to be the primary source of noise emission. Then a comparison and evaluation were carried out regarding the noise characteristics between the new type of fan and the existing type of fan. As a result, it was confirmed that the noise from the new fan was reduced by more than 2 dB compared to the existing fan without noise interference at the discharge end.

  • A sirocco fan is widely used for discharging pollutants of a kitchen space since it is able to generate a relatively high air flow rate considering its small size and makes less noise than a axial fan or a centrifugal fan. However, it has a problem because its efficiency is low, and power consumption is larger. Performance of a sirocco fan is influenced by various factors such as number of the fan blades, diameter of the fan, geometry of the fan, geometry of its housing, revolution frequency, static pressure condition, and etc. This research investigated the effect on the performance of geometry of the housing. For CFD analysis, we used a commercial code, SC/Tetra, and used a sliding mesh method to give the same condition as an actual state. Verification of the CFD results is done by comparison of experimental data and numerical one about the suction flow rate, and it is confirmed that two results are well consistent. After we changed the shape of housing according to Archimedes' screw, we observed that suction efficiency is improved by 10.7% maximum.
