A Study on the Development of Facillities for Preservation of Kimchi (김치 저장 용기 개발에 관한 연구)

  • The facillities for Kimchi preservation were investigated in order to develop the taste, flavor and commercial quality of Kimchi during fermentation. Four kinds of facillities used for this experiment were PP(Polypropylene). PSC(Polypropylene+ceramic)and PPP was selected newly and laminated of three layers with PETG (Polyester G), PS (Polystyrene) and PETG. The change of total number of lactic acid Bacteria, pH, acidity, color, gas contents and free internal volume of package were measured for the Kimchi packaged by 4 facillities during 6 days fermentation at 15$^{\circ}C$. The total No. of lactic acid Bacteria within the Kimchi in the PPP facillity was more and remained longer time (120 hrs.) than other Kimchi in the PP, PS and PPC facillities. Also the pH of all Kimchi were decreased to pH 4 within 72 hrs. and the pH of Kimchi in the PPP facillity was kept as pH 4 for 120 hrs., so that was shown to be decreased more dully than others. In case of fimchi in the PPP facillity, the color was retained better, CO$_2$ contents was lower similar to PPC facillity, and swelling degree of free internal volume was higher than others. By the sensory evaluation, the Kimchi in the PPP facillity represented as better than others for color, flavor, texture and total preferences until 48 hrs. fermentation. And the PPP facillity is transparent, so these will be selected and confirmed more easily, also PPP facillity is so hard to endure the swelling pressure of internal gas. Therefore it is thought that the PPP facillity used as Kimchi package will be desirable for better taste, flavor, and commercial quality.

Depletion of Nitrite by Lactic Acid Bacteria Isolated from Commercial Kimchi (시판 김치 분리 젖산균에 의한 아질산염 소거)

  • This study confirmed depletion efficiency of nitrite when incubate lactic acid bacteria was isolated from commercial Chinese cabbage pickles (Baechu kimchi), pickled ponytail radishes (Chongkak kimchi), radish cube kimchi (Kaktugi) and pickled Wakegi (Pa kimchi) at temperatures of $15^{\circ}C$ and $25^{\circ}C$. At $15^{\circ}C$, lactic acid bacteria isolated from commercial kimchi depleted nitrite actively except Leuconostoc mesenteroides subsp. mesenteroides and Leuconostoc paramesenteroides. In particular, Leuconostoc mesenteroides subsp. dextrinicum and Leuconostoc lactis depleted nitrite by very actively without period adaptation in nitrite. Lactobacillus sake, Lactobacillus plantarum, Lactobacillus casei subsp. pseudoplantarum, and Lactobacillus coryniformis subsp. torquens depleted nitrite very actively after 1 day. L. mesenteroides subsp. mesenteroides depleted nitrite relatively actively after 2 days pass. In contrast, L. paramesenteroides displayed very low nitrite depletion ratio compared to other species. At $25^{\circ}C$, all lactic acid bacteria isolated from commercial kimchi did not need adapting period in nitrite, and depleted nitrite very actively except L. paramesenteroides. Also, all lactic acid bacteria except L. mesenteroides subsp. mesenteroides and L. paramesenteroides nitrite of more than 90% after 1 day, and L. mesenteroides subsp. mesenteroides depleted nitrite of more than 90% after 2 days. However, because L. paramesenteroides was not active even at $25^{\circ}C$, nitrite depletion efficiency was very low compared to other species. On the other hand, the same species of Lactobacilli and Leuconostocs except L. mesenteroides subsp. mesenteroides and L. paramesenteroides of other kimchi origin at $15^{\circ}C$ as well as $25^{\circ}C$ by vitality depleted nitrite very actively without statistically significant difference (p<0.05).

Antioxidative Activities of Soymilk Fermented with Bacillus subtilis

  • To develop a dietary beverage with functionalities of cheonggukjang, soymilk was fermented with Bacillus subtilis and its antioxidant activities were examined. Antioxidative capacities of fermented soymilk (FS) with 5 different B. subtilis were significantly different. Among these, FS with 2829PNU015 revealed the greatest antioxidant activities. 1,1-Diphenyl-2-picrylhydrazyl (DPPH) scavenging activity, total antioxidant activity, and low density lipoprotein (LDL) oxidation inhibition of FS with 2829PNU015 were increased by 150, 140, and 240%, respectively, compared with those of unfermented soymilk (p<0.05). Further study for the improvement of sensory properties of FS with B. subtilis is required for a commercial production.

Effects of Traditional Salt on the Quality Characteristics and Growth of Microorganisms from Kimchi (자염(煮鹽)으로 담근 배추김치의 발효숙성 중 이화학적.관능적 특성 및 자염이 김치발효 미생물의 생육에 미치는 영향)

  • This study was carried out to investigate the effects of various kinds of commercial salts, including sun-dried (Korea), purified, and traditional salts on the chemical and sensory properties and growth of microorganisms involved in kimchi fermentation. Kimchi was prepared by salting in 10% NaCl solution for 2 hours followed by addition of other spices and fermentation at $20^{\circ}C$. The decreases in pH suggested that kimchi fermentation can be classified into 3 steps: initial, intermediate, and final stages. In texture analysis, the hardness and fracturability of traditional salt kimchi were higher than those of regular kimchi. From the sensory evaluation test for kimchi, sensory scores were high for traditional salt addition, especially taste, overall preference and texture. Among various microorganisms related to kimchi fermentation, the growth of Leuconostoc mesenteroides, Lactobacillus plantarum, Pichia membranaefaciens and Escherichia coli were examined. Based on the conditions of kimchi fermentation, a 2% and 5% concentration of each salt were studied. Also, the conditions of the cultures at $37^{\circ}C$ were examined. There was no considerable difference in the growth of Leuconostoc mesenteroides, Lactobacillus plantarum, Escherichia coli in the different kinds of salts. However, the growth of Pichia membranaefaciens was strongly inhibited by a 5% concentration of traditional salt during incubation at $37^{\circ}C$.

Descriptive Sensory Evaluation and Consumer Acceptability of Sujeonggwa in a Tea Bag (티백 형 수정과의 관능적 특성 및 소비자 기호도 조사)

  • Sujeonggwa is a popular Korean traditional beverage. However, consumers only prepare it at home on special occasions due to the time and effort required. Developing a convenient form of Sujeonggwa may promote its consumption. The objectives of this study were to 1) develop Sujeonggwa in a tea bag using different sweeteners and 2) describe the characteristics of Sujeonggwa's flavor in tea bag samples and 3) determine how well consumers accept the tea bag samples. A total of four types of Sujeonggwa in a tea bag were developed: two samples with varying amount of sugar, another sample using sugar and stevia and the last sample using sugar and short chain fructo-oligosaccharide as a sweetener. A commercial ginger tea and cinnamon tea were used as control products. Descriptive analysis was conducted on the same six samples and a descriptive panel identified its attributes. A total of 61 consumers evaluated acceptability using a nine-point hedonic scale and how they felt about intensities of the samples using a just-about-right scale. The results indicated that consumers liked Sujeonggwa samples in a tea bag more than commercial ginger tea and cinnamon tea.

Bacterial Community Monitoring of Commercial Kimchi Produced in Korea and China with Evidence of Bacilli Spore Formation during Fermentation (한국산 및 중국산 김치의 Bacteria 군집 분석 및 발효과정 중 Bacilli 포자 형성 규명)

  • Terminal Restriction Fragment Length Polymorphism (T-RFLP) analysis was adopted to explore rapid differentiation in the diversity and dynamics of bacteria in kimchi made in Korea and China for future application in kimchi origin discrimination. T-RFLP analysis supported the reproducible and rapid detection of major lactic acid bacteria known to be involved in kimchi fermentation. The taxonomic resolution level of this T-RFLP analysis was between the species and genus level, but was not specific enough for the detection of a bacterium found only in one origin, either Korea or China. The bacterial community structure successions in kimchi samples from Korea and China analyzed by T-RFLP analysis occurred with a similar pattern. Bacillus spp. which were not detected in the early microbial studies of kimchi were constantly detected until the late fermentation stage of kimchi in our T-RFLP analysis and their existence was proved by culture-based identification. Additionally, sporulation of Bacillus spp. during kimchi fermentation was discovered.

Effect of Vacuumizing Conditions on Quality Changes of Flexible Package Kimchi (초기 진공조건이 유연포장 김치의 품질변화에 미치는 영향)

  • Kimchi vacuum packaged in PET/AI/PE pouch was stored at $0^{\circ}C\;and\;10^{\circ}C$ to evaluate the effect of vacuumizing conditions on quality changes. The quality of kimchi during storage was investigated in terms of pH, titratable acidity, color, viable counts of lactic acid bacteria including Leuconostoc and Lactobacilli and sensory properties. Titratable acidity and pH were not significantly different for the vacuum degrees. Color index (L b/a) values of crushed kimchi juice decreased exponentially and remained constant during storage, but the resulting color change was not affected by the vacuum degrees. Viable counts of lactic acid bacteria and sensory scores exhibited no significant difference among the kimchi of different vacuum degrees. Consequently, the vacuum degree in packaging of kimchi seemed to influence little on quality of kimchi. For enhancing the commercial value of vacuum packaged kimchi products, it would be appropriate to produce a slight vacuum, eliminating the head space, within packages.

Quality Changes of Commercial Kimchi Products by Different Packaging Methods (소포장 김치의 포장방법별 품질특성 변화)

  • The effect of various packaging methods on kimchi quality was investigated in order to develop the packaging techniques for preventing commercial kimchi products from inflation and explosion, due to fermentative gas evolved during storage and distribution. Kimchi was packaged in different methods; 1) atmospheric packaging(AP), 2) check valve packaging(CV), 3) double packaging(DP), and 4) vacuum packaging(VP). The quality of kimchi during storage at $10^{\circ}C$ was evaluated in terms of gas composition, free volume, pH, titratable acidity color index and sensory properties. The gas composition inside packages showed different curves according to the packaging methods. Due to fermentative gas accumulation in both AP and CV, $CO_2$ concentration increased by 2 stepwise pattern, while $O_2$, concentration decreased exponentially. In DP, $O_2$ concentration remained constant, but $CO_2$ concentration increased by 2 stepwise pattern and then decreased. In contrast, VP produced low $O_2$ and high $CO_2$ concentrations only at the end of storage. The free volume in both AP and CV showed typical sigmoidal curves similar to $CO_2$ concentration changes. It remained constant in DP, but started to increase at the late stage of storage in VP. There was no significant effect of packaging methods on pH changes of kimchi. In titratable acidity, DP maintained relatively higher than others. Regarding to the color change of crushed kimchi juice in all packages, L and b values decreased exponentially but a value remained constant during storage. Color index(L b/a) of crushed kimchi juice decreased exponentially and remained constant at the end of storage. The growth of lactic acid bacteria was VP, CV, AP, DP in increasing order. In sensory test, the sourness scores of DP were fairly higher than those of others, but the texture was not significantly affected by the packaging methods. The preference for kimchi showed VP>AP, CV>DP in order of score. In this study, it could be proposed to employ DP and VP method as the effective packaging techniques for preventing commercial kimchi products from inflation.

Sensitivity of Color Indicators to Fermentation Products of Kimchi at Various Temperatures (김치 발효산물에 대한 발색지시계의 온도별 민감성)

  • Application of the color indicators to kimchi packages was investigated in order to monitor the ripeness of commercial kimchi products during storage and distribution. Kimchi was packed in polypropylene (PP) tray and nylon/cast polypropylene (Ny/CPP) lid where the indicating sachet consisting of $CO_2$ absorbent and chemical dye (bromocresol purple and methyl red) was attached. The ripeness of kimchi during storage at $0{\sim}20^{\circ}C$ was measured in terms of pH and titratable acidity (TA), which were compared with Hunter color values of the indicators. The color of bromocresol purple dye turned from light blue to purple, while that of methyl red turned from light yellow to red. Regardless of the storage temperatures, Hunter b values of bromocresol purple type and Hunter a values of methyl red type appeared to be proportional to both the pH and TA values of kimchi. These results suggest that the color indicators be employed as one of the effective techniques for sensing the ripeness of packaged kimchi products without destructing the package.

Antioxidant Activities of Extracts from Various Kimchi with Heat and Non-heat Treatment of Salt-Fermented Anchovies (가열 및 비가열 처리 액젓으로 제조한 김치 추출물의 항산화 활성)

  • The free radical scavenging activities of extracts from kimchi, as well as various antioxidant activities, such as 2,2-azinobis-( 3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity, and ferric reducing antioxidant power (FRAP) were examined. Specifically, the ABTS radical scavenging and FRAP activities of ethanolic extracts from kimchi (kimchi with non-treated salt fermented anchovy, treated non-heat salt fermented anchovy, treated heat salt fermented anchovy and commercial salt-fermented anchovy) were $0.749{\pm}0.26$, $0.895{\pm}0.15$, $0.758{\pm}0.12$, and $0.769{\pm}0.02$ mM Trolox eq./mg extract and $0.727{\pm}0.11$, $0.901{\pm}0.03$, $0.811{\pm}0.17$, and $0.843{\pm}0.16$ mM $FeSO_4$ eq./mg extract, respectively. In addition, the antioxidant activity of extract from kimchi was estimated in vivo. Mice were randomly divided into six groups (n=6), and treated with LPS for 10 days, which resulted in lower antioxidant capacities as well as increased aspartate aminotransferase (AST) and alanine aminotransferase (ALT) values in the blood serum. Furthermore, antioxidant enzymes (catalase and superoxide dismutase) in blood serum increased in the presence of the kimchi. The present results reveal antioxidant activities from kimchi and encourage their application for the food industry and cooking.
