Evaluation on the Contents of Antioxidative Substance at the Different Layers in Several Rice Varieties (몇 가지 벼품종 현미층위별 항산화 물질의 함량 평가)

  • Fifteen varieties of Oryza sativa mainly includig those of Korean native rice were exactly cutted into three layers such as L$_1$ layer (the outer part of 90% from rice center), L$_2$ layer(the part of 81 ~ 91% from the rice center) and L$_3$ layer(the inner part of 80% from the rice center) and ferulic acid derivatives, which play an important role of antioxidative action, were quantitiavely analyzed by UV absorption spectrometric method at fixed 314nm. From this experiment, it was found that the more it enters from the surface into the rice center, the more those secondary metabolites contents were highly reduced. The varieties showing contents more than 20 mg/g were as follows: Hwasunchalbyeo(25.8mg/g), Jojeongdo(24.1mg/g), Suwon425(21.2mg/g), Daigolbyeo(20.6mg/g) and Nonglimna 1(20.2mg/g) by this order. Estimation onthe anthocyanin contents of both Suwon 425 and Sanghehanghyeolna revealed that its total. contents were very exactly close each other. However, it was charateristically differentiated in the contents of L$_2$ layer with respect to showing a considerably higher content of Suwon 425 than of Sanghaehanghyeolna. Conclusively, the selected Suwon 425 variety, which is coloured and flavour volatile one, showed relatively higher contents of anthocyanin, ferulic acid derivatives in the L$_2$ layer as well as L$_1$ layer when compared with Sanghaehangyeolna and even other varieties. This fact suggested that Suwon 425 could be a promising candidate for the development of health rice food.

Variation of antioxidant activity in Korea-native weedy rice germplasm

  • Brown rice grains are increasingly attended by consumers due to their potential health benefits of antioxidant capacity. Therefore, this research was carried out to evaluate the antioxidant activity of brown rice in Korea-native weedy rice germplasm. Two hundred and twenty one accessions of weedy rice used in this study were received from the National Agrobiodiversity Center of RDA, and were regenerated in the experimental field of Chonbuk National University. The sampled seeds were extracted using methanol and the extracts were analyzed using the 1, 1-dipheny-2-picrylhydrasyl (DPPH) free radical scavenging assay for antioxidant capacity determination. Among the all germplasm, the samples of seed coat in red colour, white colour, red -white mixing colour and brown colour were 171 (81%), 26 (12%), 12 (6%) and 2 (1%), respectively. The antioxidant activity values of all samples were varied in the range from 22.31% to 95.53 % and mean value was 82.09%. Depend on the seed coat colour, the average antioxidant activity of the extract of weedy rice seeds indicated that the following order in seed coat colour: red colour (89.11%) > the red-white mixing colour (70.67%) > brown colour (53.16%) > white colour (45.99%). The antioxidant activity of red coloured weedy rice were significantly higher than those of the others. It is suggested that Korea-native weedy rice accessions with high antioxidant activity could be developed as a potential functional food material by further research of component analysis.

Antioxidative and Hepatoprotective Activity of Colured-Scented and Korean Native Rice Varieties Based on Different Layers (특수 유색미, 향류미 및 한국 재래종 벼 종자의 층위별 항산화 및 간보호 활성)

  • Fifteen varieties of Oryza sativa mainly including those of Korean native rice were exactly cutted into three layers such as L1 layer(the outer part of 92% from rice center), L2 layer(the part of 81∼91% from the rice center) and L3 layer(the inner part of 80% from the rice center) We biologically evaluated the antioxidative effect on the every layer(L1, L2 and L3) of all the varieties, by observing malondialdehyde (MDA) produced by galactosamine in the mouse. L1 layer of some varieties showed significant antiox idative effect, while L2 and L3 layer didn't show the activity. It was also suggested that coloured rice(Suwon 425 and Sanggaehangbyeolna) showed stronger activity than other general rices, probably due to high contents of anthocyanins. Successively, we evaluated antihepatotoxic effect, based on the determination of serum ALT and AST activity. Some varieties of only L1 layer, except for L2 and L3 layer, significantly decreased the serum ALT and AST activity. This finding indicate that oral diet of some raw rice are able to protect hepatotoxicities. Among all the samples tested, L1 layer of Suwon 425 showed the strongest antihepatotoxic effect. From quantitative analysis on ferulic acid derivatives, it was found that the more it enters from the surface into the rice center, the more those secondary metabolites contents were highly reduced. These findings above suggested that Suwon 425 could be a promising candidate for the development of health rice food.

  • 'Hongjinju', the reddish brown coloured rice variety, was developed by the rice breeding team of National Institute of Crop Science, RDA during the period from 1990 to 2006 and released in 2007. The cultivar was derived from a cross between Suwon 383, and $SR18164F_2$, a reddish brown pigmented line. 'Hongjinju' is medium maturity with 133 days of growth duration from seeding to heading and is japonica-type with about 82 cm in culm length. 'Hongjinju' has slightly less number of tillers per hill and more spikelets of panicles than those of 'Heugjinjubyeo'. It is susceptible to leaf blast, other disease and insect pests. It shows intermediate germination ratio at low temperature and similar tolerance to leaf discolor at seeding stage and heading-delay but it is resistant to spikelets-sterility type of cold damage at maturing stage compared with 'Heugjinjubyeo'. The yield performance of this variety in brown rice is about 5.07 MT/ha and is adaptable to the central and southern plain areas of Korea.

Effects of Hydrocolloids on Quality Characteristics of Bread with Rice Flour (쌀을 첨가하여 제조한 식빵의 품질 특성에 미치는 Hydrocolloids의 영향)

  • The effects of different hydrocolloids, including hydroxypropyl methylcellulose (HPMC), xanthan gum (XG), guar gum (GG), and glucomannan (GM), on bread quality characteristics were investigated. The composite flour used for bread production consisted of 80% bread flour and 20% rice flour with 1% different hydrocolloids based on baker's%. Loaf volume, specific loaf volume, baking and cooling loss rate, moisture content, crumb texture and color, and sensory evaluation were determined. Breads containing HPMC and GM showed the highest loaf volumes, but the difference was not significant. Bread containing GM showed the lowest baking and cooling loss rate (7.03 and 7.78%, respectively), and the highest moisture content. Breads containing HPMC and GM showed increased springiness and decreased hardness based on texture profile analysis. Cohesiveness, chewiness, and gumminess of breads containing GM and HPMC showed their lowest values, whereas breads containing XG revealed their highest values. Bread with HPMC showed lightest coloured crumbs. In the sensory evaluation, bread containing GM and HPMC presented their highest scores, whereas bread containing XG showed the lowest scores. Overall, HPMC and GM significantly and positively affected quality characteristics of bread.

Changes in Development and Nutrient Composition of Pod after Flowering in Cowpea 〔Vigna unguiculata(L) Walp〕 (동부(Vigna unguiculatal(L) Walp)의 개화후 일수경과에 따른 협실비대 및 품질의 변화)

  • In order to identify the physiological maturity and to determine the proper time of harvesting as fresh seed for cooking with rice and germination ability according to the harvesting time in cowpea (Vigna unguiculata (L.) Walp), this experiment was conducted. The results obtained are as follows; 1. The length and width of pods became maximum size on 10 days after flowering(DAF) and thickness of them increased to 14 DAF and then decreased to 18 DAF. 2. The weight of pod wall reached the maximum on 14 DAF, the thickness of them increased to 8 DAF and decreased to 18 DAF and it was stabilized. 3. The length and thickness of the seeds became larger to 10 DAF, were not changed from 10 DAF to 16 DAF and then decreased after 16 DAF. 4. The seeds coloured 2 days earlier than the pod wall on 8 DAF and the grade increased by degrees to 16 DAF. 5. The moisture content of seeds and pod wall started to decrease on 8 DAF and the moisture content of pod wall was higher than that of seeds in the middle stage but the condition changed after 18 DAF. 6. When the weight of seeds reached the maximum on 16 DAF, the moisture content of them was 54.5%. 7. The content of total nitrogen, phosphate and oil decreased but the carbohydrate increased by degrees along the passing of DAF. The silicic acid did not exist and K$_2$O, CaO, MgO, protein etc. existed but did not show regular tendency. 8. The physiological maturity was 16 DAF and the proper time of harvesting as fresh seed for cooking with rice was 12 DAF to 16 DAF. 9. Germination was possible after 10 DAF but we could get the normal roots from the seeds harvested after 14 DAF.
