The Historical Study of Pheasant Cooking in Korea (우리나라 꿩고기 조리법(調理法)의 역사적(歷史的) 고찰(考察))

  • The purpose of this paper is to examine the various kinds of recipes of pheasant through classical cookbooks written from 1670 to 1943 which are the basic materials to the meat cooking. The recipes of pheasant are found 39 times in the literature, which can be classified into eleven groups. Chronologically, the recipe of mandu (ravioli) was first appeared, and guk, tang (soup), kui (roasted), jang (salted meat), chim (steamed), po (dried meat), whe (raw meat), gijim (boiled in soy sauce), cho (sparkly heated in soy sauce and sugar), jolim (hard boiled in soy sauce), and jungol (meat with vegetable cooked in pan) followed in the records. Kui was the most popular one with the frequency of 43.6%, which proves that kui is the most suitable one for pheasant among all of recipes. Mandu and guk, tang were 10.2%, chim and po were found with the same rate of 7.7% and the next ones were jang, gijim, cho, and jungol with the rate of 2.6%. The recipes of pheasant were recorded much less than those of beef, chicken, pork, lamb, and dog meat. Particularly, in comparison with chicken belonging to fowls, the frequency of pheasant cooking did not reach even to one third of that. The Korean recipes of pheasant have been independently developed with originality, having nothing to do with the Chinese ones. The recipes of pheasant before the late 1800s have based on the strict recipe principles along with the spirit of art and sincerity, but they were deteriorated to simple and easy ones discarding principles. The main ingredient was the flesh of pheasant and the sub-ingredients such as flour, pinenut, buckwheat powder, and mushroom were included in common. In additon, oil, soy sauce, black pepper, and stone leek were frequently used as main seasonings.

  • The Indonesian Archipelago is located in the southern tip of the Eurasian plate. The diverse subduction system of the Indonesia region records interactions between three megaplates (Eurasian, Indian-Australian, and Pacific plates) and many smaller plates. The geology of Indonesian Archipelago is characterized by many factors such as subduction zone complexes, magmatic arc rocks associated with plate tectonics, the arc granite and volcanic rocks, and the related metamorphic rocks. The base-metal deposits of Indonesia have a great effect on petrochemical character of parent rocks and geotectonic environments. The base-metal deposits can be classified into four types as hosted by felsic-intermediate intrusive rocks, hosted by ultramafic rocks, hosted by volcanic rocks, and hosted by sedimentary rocks. The gold deposits are divided into three types: epithermal gold deposits, porphyry copper associated gold deposits, and alluvial gold deposits. Especially, Indonesian island uc, with its numerous plates tectonic, has an high potential for epithermal gold deposits. Indonesia with many old and present subduction zones and sub-aerial calcalkaline volcanic rocks is a very promising country for epithermal gold mineralization.

The Characteristics of Exhumed Cotton Fabrics of the Middle Age of Yi Dynasty (朝鮮中期 出土된 綿織物의 理化學的 特性)

  • Three pieces of cotton fabrics used for this study were exhumed in the Mt.Moo Deung near Kwang Ju in 1965. The fabrics were remains of Jang Heung Lim Si-the nephew's wife of General Kim Deok Ryeong. It was reported that Jang Heung Lim Si died in 1615. The cotton fabrics were classified into three, A, B and C, according to their color. The fabric A was inherent color of cotton, the fabric B was that of light brown and the fabric C was that of dark brown. The physical and chemical characteristics of the cotton fabrics were examined. In the meantime the construction of cotton fabrics and traditional dyeing of Yi dynasty were studied through various records. The results were as follows: 1. According to electromicroscopic examination, the lumen in the cotton fiber had not been developed enough, therefore the quality of cotton at that time was supposed to be not so excellent. 2. The results of chemical analysis indicated that: (1) While the copper number of the cotton fabric A was similar to that of bleached cotton, that of the fabric C was extremely high. (2) The amount of methylene blue absorption was much more than that of normal cotton. (3) The content of cellulose was less than that of normal cotton. (4) The degree of polymerization was less than that of normal cotton. From the results mentioned above, it was concluded that the cotton fabrics were oxidized slowly in the closed lime coffin for a long period of time. From this process of oxidization and deterioration, the degree of polymerization was decreased through depolymerization, and carboxyl groups were produced by the oxidization at reducing end groups. 3. It was confirmed that the cotton fabric C was dyed by the juice of immature persimmon. Thus, it was inferred that the large amount of copper number of cotton fabric C was derived from phenolic OH groups of tannins having high reducing properties in persimmon.

A Study on Dietary Factors Related to the Incidence of Stomach Cancer and Colon Cancer in Korea (위암 및 대장암의 유발에 영향을 미치는 식이요인에 관한 연구)

  • This study was undertaken to investigate the dietary factors related to the incidence of stomach and colon cancers in Korean. The subjects were 139 stomach and 52 colon cancer patients recruited from 3 general hospitals in Seoul. Food intake, anthropometric measurement, and blood compositions were studied through personal interview and using medical records. Body weight, body mass index, triceps skinfold thickness, body muscle mass of the subjects were lower than reference values. The body weight was reduced after the onset of the illness, which suggests body waste due to the cancers. The patients showed the lower valuies of hemoglobin and hematocrit. Serum protein and calcium were at lower limit of the normal range. Therefore the untritional status assessed by anthropometry and blood composition should be said to be marginal. The average intake of most of the nutrients except Ca of the subjects met the RDA, but the range was wide and the nutrient intake of large proportion of the subjects feel below 75% of RDA. The food intake of egg, milk, legumes, and fruts were lower than national average, on the other hand the subjects had higher intake of meat, vegetables, and fats. The subjects drank and smoked heavily, stomach cancers being more severs. From this results, dietary risk factors for the stomach and colon cancers in Korean did not agree with the reports of western societies. Even though the intakes of meat and animal food of colon cancer patients can not be classified as high, it was higher than stomach cancer and national average. Therefore it could be concluded that with increasing consumption of animal food, the incidence of colon cancer would be increased in Korea.

Effectiveness of inactivated hantavirus vaccine on the disease severity of hemorrhagic fever with renal syndrome

  • Background: An inactivated Hantaan virus vaccine (iHV) has been broadly used as a preventive strategy for hemorrhagic fever with renal syndrome (HFRS) by the South Korean Army. After the vaccination program was initiated, the overall incidence of HFRS cases was reduced in the military population. While there are about 400 HFRS cases annually, few studies have demonstrated the efficacy of the iHV in field settings. Therefore, this study aimed to evaluate the iHV efficacy on HFRS severity. Methods: From 2009 to 2017, HFRS cases were collected in South Korean Army hospitals along with patients' vaccination history. HFRS patients were classified retrospectively into two groups according to vaccination records: no history of iHV vaccination and valid vaccination. Vaccine efficacy on the severity of acute kidney injury (AKI) stage and dialysis events were investigated. Results: The effects of the iHV on renal injury severity in between 18 valid vaccinated and 110 non-vaccinated patients were respectively evaluated. In the valid vaccination group, six of the 18 HFRS patients (33.3%) had stage 3 AKI, compared to 60 of the 110 (54.5%) patients in the non-vaccination group. The iHV efficacy against disease progression ($VE_p$) was 58.1% (95% confidence interval, 31.3% to 88.0%). Conclusion: The iHV efficacy against the progression of HFRS failed to demonstrate statistically significant protection. However, different severity profiles were observed between the iHV and non-vaccination groups. Additional studies with larger populations are needed to demonstrate the effectiveness of the iHV in patients with HFRS.

Relationship between serum vitamin D levels and clinical features of acute bronchiolitis (급성세기관지염과 혈청 비타민 D와의 상관관계)

  • Purpose: Vitamin D plays an important role in calcium homeostasis and bone metabolism. It is associated with various diseases such as cardiovascular, immune, allergic and infectious disease. The aim of this study was to investigate the difference in clinical manifestations according to the concentration of vitamin D in mild bronchiolitis. Methods: We performed a retrospective review of medical records of patients with mild bronchiolitis from November 2016 to April 2017 in Daegu Fatima Hospital. Mild bronchiolitis was classified by the modified Tal's score method. Patients were divided into 2 groups according to a 25-hydroxyvitamin D level of 20 ng/mL. We analyzed the clinical characteristics and laboratory data from the 2 groups. Results: Of the 64 patients, 19 were included in the deficiency group and 45 in the normal group. Vitamin D levels were $11.7{\pm}4.9ng/mL$ in the deficiency group and $28.8{\pm}5.0ng/mL$ in the normal group. There were no differences in clinical features between both groups. However, the vitamin D deficiency group had significantly longer hospitalization than the normal group ($6.78{\pm}2.74$ days vs. $5.3{\pm}1.7$ days, P=0.045). In the deficiency group, the incidence of previous respiratory diseases was significantly higher (P=0.001). No significant difference in blood and respiratory virus tests was observed. Conclusion: Low vitamin D levels in mild bronchiolitis were associated with longer hospitalization and prior respiratory disease. Vitamin D may affect the course of mild bronchiolitis.

Differences in dietary intakes, body compositions, and biochemical indices between metabolically healthy and metabolically abnormal obese Korean women

  • BACKGROUND/OBJECTIVES: There are various factors that affect metabolic abnormalities related to obesity. The purpose of this study is to analyze the differences in dietary intakes and body compositions of obese women according to metabolic risks and to classify them as metabolically healthy obese (MHO) or metabolically abnormal obese (MAO). SUBJECTS/METHODS: This study was conducted on 59 obese Korean women aged 19 to 60 years. NCEP-ATPIII criteria were applied and the women classified as MHO (n = 45) or MAO (n = 14). Body composition of each subject was measured by using dual-energy x-ray absorptiometry (DEXA). Three-day food records were used to analyze dietary intake. Eating habits and health-related behaviors were determined through questionnaires. Indirect calorimetry was used to measure resting metabolic rate and respiratory rate. RESULTS: The average age of the subjects was 43.7 years. The analysis of body composition according to phenotype revealed significantly higher body fat mass (P < 0.05), arm fat mass (P < 0.05), and android fat mass (P < 0.05), as measured by DEXA, in the MAO group than in the MHO group. There was no significant difference in the dietary intake of the two groups. However, eating behaviors differed. Compared to the MHO group, the MAO women had a shorter meal time (less than 10 minutes), a preference of oily foods, and a tendency to eat until full. Therefore, the eating habits of MHO women were more positive than those of MAO women. CONCLUSIONS: The results suggest that fat distribution in each body region affects various metabolic abnormalities. A high level of arm fat mass in obese Korean women may increase metabolic risk. In addition, eating habits of obese Korean women are considered to be environmental factors affecting the metabolic phenotype of obese Korean women.

Primary Hyperoxaluria in Korean Pediatric Patients

  • Background: Primary hyperoxaluria (PH), a rare inborn error of glyoxylate meta bolism causing overproduction of oxalate, is classified into three genetic subgroups: type 1-3 (PH1-PH3) caused by AGXT, GRHPR, and HOGA1 gene mutations, respectively. We performed a retrospective case series study of Korean pediatric patients with PH. Methods: In total, 11 unrelated pediatric patients were recruited and their phenotypes and genotypes were analyzed by a retrospective review of their medical records. Results: Mutational analyses revealed biallelic AGXT mutations (PH1) in nine patients and a single heterozygous GRHPR and HOGA1 mutation in one patient each. The c.33dupC was the most common AGXT mutation with an allelic frequency of 44%. The median age of onset was 3 months (range, 2 months-3 years), and eight patients with PH1 presented with end stage renal disease (ESRD). Patients with two truncating mutations showed an earlier age of onset and more frequent retinal involvement than patients with one truncating mutation. Among eight PH1 patients presenting with ESRD, five patients were treated with intensive dialysis followed by liver transplantation (n=5) with/without subsequent kidney transplantation (n=3). Conclusion: Most patients presented with severe infantile forms of PH. Patients with two truncating mutations displayed more severe phenotypes than those of patients with one truncating mutation. Sequential liver and kidney transplantation was adopted for PH1 patients presenting with ESRD. A larger nation-wide multicenter study is needed to confirm the genotype-phenotype correlations and outcomes of organ transplantation.

The Epidemiological Characteristics of Health Problems of Middle School Students Based on School Health Clinic Service (보건실 이용을 중심으로 본 중학생 건강문제의 역학적 특성)

  • Purpose: This study was to identify the types and characteristics of health problems of middle school students in Gangwondo. Methods: The subjects of the study were 11 middle schools from 47 schools with nurse teachers in Gangwondo. The anecdotal records of the school health clinics were collected from March to December in 1998 with the agreement of nurse teachers of the schools. Results: 71.0% of the middle students visited the school health care clinics once or more than once. The mean frequency of health problems was 2.03 times per one year. The rate of health problems did not show any statistical differences by sex, school location, age, the day of the week and weather. However, there were statistical differences of the rate by month. The highest rate was showed in September, followed by June and April (F=2.52, p=0.01). Health problems were classified into 11 types. Gastrointestinal illness showed the largest proportion (60.6%). The oral illness showed statistical differences among the location of school, between municipal and rural area (t=-2.97, p=0.016). There were 411 types of signs and symptoms recorded. Among them, headache was showed the highest proportion with 2,122 cases (11.2%). Conclusion : The incidence rate of health problems was higher than that of earlier studies. It showed that the incidence rates and the types of diseasps in middle school students were different by school locations, characteristics of students, and months. To improve the qualities of primary cares in school health services, the reformed and unified anecdotal record system and the standardized guidelines for primary care are necessary.

Comparison of postoperative outcomes between early and delayed surgery for pediatric nasal fractures

  • Background: Pediatric nasal fractures, unlike adult nasal fractures, are treated surgically as early as 7 days after the initial trauma. However, in some cases, a week or more elapses before surgery, and few studies have investigated the consequences of delayed surgery for pediatric nasal fractures. The purpose of this study was to evaluate the postoperative outcomes of pediatric nasal fractures according to the time interval between the initial trauma and surgery. Methods: The records of pediatric patients under 12 years old who underwent closed reduction of nasal bone fracture from March 2012 to February 2020 were reviewed. The interval between trauma and surgery was divided into within 7 days (early reduction) and more than 7 days (delayed reduction). Postoperative results were classified into five grades (excellent, good, moderate, poor, and very poor) based on the degree of reduction shown on computed tomography. Results: Ninety-eight patients were analyzed, of whom 51 underwent early reduction and 47 underwent delayed reduction. Forty-two (82.4%) of the 51 patients in the early reduction group showed excellent results, and nine (17.6%) showed good results. Thirty-nine (83.0%) of the 47 patients in the delayed reduction group showed excellent results and eight (17.0%) showed good results. No statistically significant difference in outcomes was found between the two groups (chi-square test p= 0.937). However, patients without septal injury were significantly more likely to have excellent postoperative outcomes (chi-square test p< 0.01). Conclusion: No statistically significant difference was found in the outcomes of pediatric nasal fractures between the early and delayed reduction groups. Successful surgical results were found even in patients who received delayed reduction (more than 7 days after trauma).
