  • Two hundred and forty post-larvae (PL) of fresh water prawn, Macrobrachium rosenbergii were distributed in eight treatment groups with three replicates each. Eight experimental diets were prepared by using squilla (Orato squilla nepa), squid (Sepia pharonis) and clam (katelysia opima) alone or in different combination as source of animal protein and compared to a control diet containing fish meal. Total crude protein content for all dietary treatments was around 32%. Total protein content of fish meal was replaced by an equal amount of protein from different animal protein sources on isonitrogenous basis. Diets were fed at 5% of the body weight of post-larvae twice daily. The experiment was conducted for a period of 60 days. It was found that all the above three protein sources could be used by completely replacing fishmeal except clam meal at higher level of inclusion (26%). A combination of squid and squilla meal at 14% each in the diet increased the growth performance of PL significantly (p<0.05) in terms of Specific growth rate (SGR) % (5.17), FCR (2.12) and PER (1.51). Squilla meal can be used to the maximum level of 38% without any growth depression.

  • This experiment was conducted for compare domestic experimental microparticulated diets with imported commercial microparticulated diets in olive flounder larvae, Paralichthys olivaceus (Temminck et Schlegel). Fish larve were fed four microparticulated diets from 8th day after hatching. Four diets were two commercial microparticulated diets D and H, and experimental microparticulated diets K1 and K2 formulated each with different protein sources (diet K1 ; squid meal, blood meal, yeast extract, chlorella powder, olive flounder muscle, Lys, and Met ; diet K2 ; whole egg protein, krill meal, short-necked clam meal, squid muscle, live yeast, yeast extract, and casein). There were no significant differences on body weight, body length and survival rates among four diet treatments up to the 40th day after hatching. At the 83th day after hatching, fish fed diet D had a significantly higher survival rate than that of fish fed diet K2, whereas there was no significant difference between to diet H and K1. Fish fed diet D had a significantly higher body weight than these of fish fed diaet K1 and K2, whereas there was no significant difference between fish fed diet D and H. There was no significant difference on EPA and DHA of body fatty acid composition among four diet treatments up to the 83th day after hatching. These results show that nutritionally well-ballanced domestic microparticulated diets for olive flouner lavae can be developed.

  • There is a limitation to estimate vitamin $B_{12}$ intake due to a lack of data on vitamin $B_{12}$ content in many Korean foods. In this study, vitamin $B_{12}$ content was determined in some seaweeds, fish, and shellfish and their product that are consumed in Korea using a modified microbioassay with Lactobacillus delbruecki ATCC 7830. Dried laver and dried seasoned and toasted laver contained very high levels of vitamin $B_{12}$ (66.8 and $55.2-71.3\;{\mu}g$/100 g, respectively. Sea lettuce and seaweed fulvescene also contained high vitamin $B_{12}$ content of 5.47-9.41 and $6.46-7.20\;{\mu}g$/100 g, respectively, whereas sea mustard and sea tangle contained low levels of vitamin $B_{12}$; vitamin $B_{12}$ was not detected in seaweed fusifome. Pacific saury, trout, sea-bass, or squid contained 12.01, 2.00, 0.49 and $2.33\;{\mu}g$ vitamin $B_{12}$/100 g, respectively. Ochellatus octopus, and naked sand lance contained 0.72-1.43 and $3.68\;{\mu}g$ vitamin $B_{12}$/100 g, respectively. Dried Alaska pollack con-tained $0.19-2.64\;{\mu}g$ vitamin $B_{12}$/100 g. Shellfish such as little neck clam and small ark shellfish contained high levels of vitamin $B_{12}$ of $30.5-40.5\;{\mu}g$/100 g, and mussel and abalone contained 17.71 and $7.82\;{\mu}g$/100 g, respectively. Of unique Korean traditional fermented seafood products, salt-fermented products of squid ($2.91\;{\mu}g$/100 g), clams ($34.31\;{\mu}g$/100 g), Ala-ska pollack roe ($9.98-12.02\;{\mu}g$/100 g), hairtail guts ($4.58\;{\mu}g$/100 g) or small shrimp ($0.58-1.55\;{\mu}g$/100 g), and fish sauce from anchovies ($1.52-1.78\;{\mu}g$/100 mL), sand eel ($0.22-0.24\;{\mu}g$/100 mL) or small shrimp ($0.19-0.78\;{\mu}g$/100 mL) were analyzed. A few commercial brands of flying fish roe ($0.73-1.73\;{\mu}g$/100 g), canned tuna ($0.40\;{\mu}g$/100 g), and fried fish paste ($0.25-0.69\;{\mu}g$/100 g) were also analyzed. In conclusion, vitamin $B_{12}$ content in these foods, chosen considering the Korean food culture, should contribute to improve the present vitamin $B_{12}$ food database. It may be helpful to estimate vitamin $B_{12}$ intake more correctly than before, and provide additional information for dietary education related to vitamin $B_{12}$ and meal management.

  • This study was performed to investigate the information of food preference of workers for meal served by industry foodservice. The subjects were composed of 212 office workers and 220 laborers. The results were obtained as follows : 50.7% of the subjects were 30∼39 years old ; 72.0% of them had high school education ; the type of favored food was Korean style cooked rice ; food taste was the most important point in food selection. Preference form main foods : Cooked rice was preferred the most by the subjects. Both office workers and laborers liked Kalkooksoo and vegetable bread and cooked rice covered with beef was preferred by office workers and cooked rice covered with raw fish pieces was preferred by laborers. Also they disliked Hash rice, Curry rice and rice-cake soup in the pattern. Preference for side-dish : The Acceptances for side-dishes were high in soybean paste soup(office workers : 37.5%, laborers : 31.5%), hot chowder of corvina(26.1%, 25.7%), kimchi stew(30.5%, 28.8%), beef broiled in soy(32.5%, 30.5%), baked fish(32.5%, 31.9%), pachon(20.7%, 25.9%), a meat inside a razor clam(25.1$, 29.2%) and Chinese cabbage kimchi(44.5%, 46.3%), in that order by both of them. But in office workers, seasoned bean sprouts and steamed beef-rib were shown to have high preference and in laborers seasoned spinach and steamed pork-rib were high.
