Effect of Low-Temperature Conditions on Expansion of Choux (슈의 팽화에 대한 저온 조건의 영향)

  • This study examined the effects of low temperature conditions on the expansion of choux when mixing the dough with egg fluid. The egg fluid was tested at 5 and $17^{\circ}C$, and the dough temperature was 20, 30, 40, 50, 60 or $70^{\circ}C$. The expansion decreased with decreasing temperature of the egg fluid and dough, with the concomitant formation of membranes in the cavities of choux because of the poor emulsion stability of the choux paste. In addition, the structure of the choux pastry was not dense and the cracks in the surface were partial and narrow. The shape, expansion and cracks of choux were the best at a dough temperature of 60 and $70^{\circ}C$ added with egg fluid at $17^{\circ}C$. The temperature of the choux paste in these two samples was higher than the melting point of the butter used to produce the paste. Therefore, the practical limit temperature when mixing the egg fluid and dough is 20 and $60^{\circ}C$, respectively, and care should ve taken to maintain a low temperature when making choux in confectionary.

Effect of the Additives on Choux Quality of Rice Flour (쌀가루 슈의 품질향상을 위한 첨가물의 효과)

  • This experiment was carried out to investigate the effective additives and amount of addition in order to improve the quality of chou made with rice flour. The four emulsifiers and four thickeners were used as the additives in this test. The chou was formed with rice flour without the additives. There were not significantly differences in the sensory evaluation between choux of rice flour of non-additives and the additives, but the emulsifiers treatment increased the expansion capacity of paste. Thickeners did not improve the quality of choux. The hardness of pastes were increased and the cavities in choux were not formed in addition of high amount of thickeners. The mixture of two kinds of emulsifiers, the mixture of emulsifiers and a thickener did not improve of choux quality compared to the addition of emulsifier. The best quality of chou was obtained from 0.6% of lecithin.

A Study on Flour Cooking - Dependence of Choux Puff Swelling on Butter Contents - (소맥분조리에 관한 연구 - Butter 분량에 따른 Choux Puffs 형성에 대하여 -)

  • 1. Pasts containing 10, 12.5, 15, 17.5 and 20g of butter respectively with identical contents of flor(16.25g) and egg(50g) were prepared. 2. For the five batter samples described above, following tests were conducted. a) Hardness and adhesiveness determination by texturometry b) Light microscopic observation d) Sensory Test 3. Significant differences of hardness, adhesiveness, and viscosity among the five samples were not recognized; but 1% significant difference in volumns were recognized. The best swelling was observed for the 17.5g butter sample; those of 15g and 12.5g butter samples were identical, while those of 10g and 20g showed the lowest swelling. Generally, stirring at 60~7$0^{\circ}C$ gave the best homogenity The degree of emulsification influenced the swelling. Not only large but also small amount of butter gave undestirable swelling. Sensory test for the 15g butter sample also gave best result.

Study on Confectionary Properties of Chou made with Flour of Rice and Rice-Wheat mixture (미분을 이용한 chou의 제과특성 연구)

  • This study was concentrated on the subject of chou formation and physicochemical characteristics on medium flour mixed with 0, 25, 50, 75, 100% of rice flour in order to clarify the possibility to substitute rice flour for wheat flour on chou preparation. The water holding capacity, swelling power, and maximum viscosity were higher in rice flour than those in medium flour but the initial pasting temperature was equal to 65$^{\circ}C$ in the two flour groups. The ratio of setback during cooling became 0.94 in the rice flour and 1.14 in the medium flour. So, the rice flour showed a slow tendency during gel formation as compared with the medium flour. The volumes of the rice choux were ranged from 80.0% to 89.0% according to the mixing ratio of medium flour as compared with that of the chou of wheat flour. But, the choux formation were increased as much as 108.8% out the paste added gelation of glutinous substance and 124.4% at the paste added Span20 of emulsifier compared to the non-addition treatment. The paste of rice flour added gelatin and Span20 showed better dispersion of components, especially, the small granules of lipid were fairly or plentifully dispersed in the paste added Span20 due to emulsifying activity. In sensory evaluation, the chou of l00% rice flour was inferior to that of medium flour on cavity-forming but the choux of wheat flour mixed with 25%, 50%, and 75% of rice flour were equal or superior to that of medium flour on all characteristics tested such as appearance, surface color, cavity-forming, chewiness, and taste. There were no significant differences on the cavity-forming expansion and taste between choux of rice flour and wheat flour Therefore, the results of this study made conclusion that rice flour would be substituted for wheat flour on the chou preparation.
