  • The coagulation of Chinese cabbage juice can be accomplished by applying the combine method of the formic acid with rate of 3% and in four hours the propionic acid with rate of 1 % in the juice. The separation of coagulation into the protein paste and the brown juice completed in 6.5 hours by set up method in special storage. The protein paste can be stored safely for 30 days in anaerobic condition.

  • 배추김치의 항균작용을 실험한 본 연구에서 1개월간 발효된 배추김치즙 시료(염분 2.8%, 산도 1.34%, PH 4.1)를 2% 함유한 보통 한천 배지에서 실험군의 집락수 억제율은Salmonella enteritidis ATCC 13076이 가장 낮은 63%이었고 Enterobacter cloacae ATCC 13047과 Staphylococcus aureus ATCC 6538p은 각각 72%, 76%이었고 Vibrio parahaemolyticus ATCC 17802은 가장 높은 90%를 보였다. Vibrio parahaemolyticus ATCC 17802는 배추김치즙 함량이 6%에서 100%발육 억제효과를 보여 실험균 중 배추김치즙에 대한 저항력이 가장 약했으나 동일한 배추김치즙 시료농도(6%)에서 Salmonella enteritidis ATCC 13076, Enterobacter cloacae ATCC 13047, Staphylococcus aureus ATCC 6538p는 각각 89%, 90%, 91% 의 집락수 억제 효과를 보였다. 배추김치즙 함량 10%에서 모든 실험군의 집락가100% 억제되는 효과를 보였다. 실험결과 1개월간 충분히 발효된 배추김치에는 어떤 식중독균도 생존할 수 없을 것으로 밝혀졌다.

  • The fractionation of green juice could be one of the ways to treat the green juice for saving the bio re-sources by using the basic processes of protein coagulation and separating juice coagulation into protein paste and brown juice and storing the final products. The fractionation of Chinese cabbage juice can be accomplished by applying the combine method of the formic acid with rate of 0.3% and the propionic acid with rate of 0.1 % added 4 hours later in the juice with maximum recovery of protein coagulation. The separation of coagulation into the protein paste and the brown juice completed in 6.5 hours by set up method in a special designed storage. The protein paste could be stored safely for 30days in anaerobic condition.

폐기물 활용을 위한 종합적 처리방법의 김치쥬스 발효 향상 (Improvement of Kimchi Juice Fermentation by Combined method for Chinese Cabbage Waste Utilization)

  • The effective fermentation methods of Kimchi juice for utilization of outer layer of Chinese cabbage, an waste of Kimchi industry were studied. The Kimchi juice prepared with brining and grinding the waste of Chinese cabbage and addition of spices was fermented at $25^{\circ}C$. Addition of 5$^{\circ}C$15% fermented Kimchi juice of pH 5.4 at initial stage and pH 4.4 at middle state resulted in a significant increase in fermentation rate and solid content after 12 hours of fermentation. The combined method of enzymatic hydrolysis(0.1% viscozyme) of the brined and ground cabbage and addition of 2.0% NaCl, 1.0% sucrose and 10% fermented juice of pH 5.4 first and 4.4 during fermentation, respectively resulted in more rapid fermentation. The solid concentration was 5 times higher than control at maximum point and acidic and total flavor intensity were also significantly high.

배추즙액을 기질로 이용한 Candida utilis 균체의 생산 (Production of Candida utilis Biomass on Chinese Cabbage Juice)

  • 국내에서 대량생산될 수 있는 자생가능한 자원인 배추의 비전통적 이용을 위해 배추즙액에 효모 Candida utilis를 배양하여 단세포단백을 생산하는 연구를 하였다. 배추의 당함량은 $2.1{\sim}4.0%$의 범위에 있었고 배추원액을 그대로 사용하여 C. utilis를 배양했을 때보다는 배추즙액을 적절히 희석하여 배양하였을 때 증식속도가 빨라졌고 소비된 당에 대한 건조균체생산율도 17%에서 약 50% 정도로 향상되었다. 배추즙액에 C. utilis를 배양하여 단세포단백을 생산하고자 할 때는 당의 함량이 1.0% 정도로 희석하는 것이 적절하였고 당함량을 1.0%되게 조정한 배추희석액에 영양원을 첨가하여 그 영향을 평가해 보았을 때 glucose, $KH_2PO_4$$(NH_4)_2SO_4$는 첨가효과가 없거나 오히려 균체생산량을 감소시킨데 비하여 yeast extract나 peptone은 건조균체 생산 및 균체의 단백질 함량을 $10{\sim}20%$씩 증가시키는 효과가 있었으나 yeast extract나 peptone의 첨가량에 비해 건조균체생산량의 증가가 적어서 배추즙희석액 자체로만도 효모배양을 위한 좋은 기질임이 확인되었다.

Investigating the Effects of Chinese Cabbage Powder as an Alternative Nitrate Source on Cured Color Development of Ground Pork Sausages

  • This study investigated the effects of Chinese cabbage powder as a natural replacement for sodium nitrite on the qualities of alternatively cured pork products. Chinese cabbages grown in Korea were collected and used for preparing hot air dried powder. Different levels of Chinese cabbage powder were added to pork products and evaluated by comparing these products to those with sodium nitrite or a commercially available celery juice powder. The experimental groups included control (100 ppm sodium nitrite added), treatment 1 (0.15% Chinese cabbage powder added), treatment 2 (0.25% Chinese cabbage powder added), treatment 3 (0.35% Chinese cabbage powder added), and treatment 4 (0.4% celery juice powder added). The cooking yields and pH values of treatments 1 to 3 were significantly lower (p<0.05) than the control. However, all of the alternatively cured products were redder (higher CIE a* values; p<0.05) than the control and this result was supported from higher nitrosyl hemochrome, total pigment, and curing efficiency. Furthermore, the inclusion of vegetable powders to these products resulted in considerably less residual nitrite content. However, Chinese cabbage powder (0.25% and 0.35%) was effective in producing alternatively cured meat products with a higher curing efficiency comparable to those of the traditionally cured control or the products with celery juice powder. Therefore, Chinese cabbage powder exhibited the efficacy for use as a natural replacer for alternatively cured meat products.

배추를 이용한 단세포단백질의 생산 (Single Cell Protein Production from Chinese Cabbage Juice)

  • 우리나라에서 풍부하게 생산될 수 있으면서 흔히 과잉생산되어 문제가 되는 배추를 이용한 단세포단백 생산에 관한 연구를 하였다. Saccharomyces cerevisiae와 Candida utilis 공히 배추즙액에 잘 번식하였으며 $30^{\circ}C$에서 20시간 이내에 번식이 완결되었다. 이들 효모의 최종 건조균체량은 동결시킨 후 해동된 배추를 이용하거나 동결 되지 않은 배추의 즙액을 이용하거나 차이가 없었는데 S. cerevisiae와 C. utilis는 각각 4.3g/l 및 5.1g/l의 건조균체를 생산하였다.

감압하에서 배추의 소금절임 (Salting of Chinese Cabbage under Sub-atmosphere)

  • The aim of this study is to elevate the efficiency of salting with low salt concentration in order to improve the quality of salted Chinese cabbage. The efficiency of salting was tested with various sub-atmosphere(760mmHg to 0mmHg), temperature(20$^{\circ}C$ and 30$^{\circ}C$), and concentration of salt(3%, 5% and 10%). The salting efficiency was estimated by amounts of juice, calcium elution, sodium penetration and the state of tissue. The amunts of juice eleuted from Chinese cabbage was increased significantly with the decrease of atmosphere and the time to reach the highest amounts was reduced. This tendency was promoted, with increase of salinigy(from 3% to 10%)and the increase of temperature(more juice at 30$^{\circ}C$ than 20$^{\circ}C$). The amounts of eluted calcium from Chinese cabbage tissue during salting under sub-atmosphere was directly proportional to amounts of juice and was inversely proportional to penetrated sodium. The salting time was reduced with elevation of sub-atmosphere. It was desirable to take between 5.5 and 9 hours to salt under the condition of 3% of salting, 20$^{\circ}C$, and 560-0mmHg. It took between 4.4 and 5 hours under 5% of salt and between 4 and 4.5 hours under 10% of salt. However, it was undesirable because the drying phenomenon and the transparency of tissue appeared under 30$^{\circ}C$ and 160-0mmHg.

배추 겉잎을 이용한 김치쥬스 제조시 효소분해, 당, 소금농도가 발효에 미치는 영향 (Effects of Enzymatic Hydrolysis and Concentrations of Sugar and Salt on Kimchi Juice Fermentation of Outer Leaves of Chinese Cabbage)

  • Addition of sugar, enzymatic hydrolysis and salt concentration were evaluated for their effects on the changes in some characteristics of Kimchi juice during fermentation. The Kimchi juice was prepared by brining and grinding of outer layer leaves of chinese cabbage, one of the wastes products of Kimchi processing, followed by fermentation proceeded significantly faster. Addition of sucrose or glucose at the ange of 0.5~2.0 % also improved the fermentation but the concentration effect was little. Enzymatic hydrolysis on the brined cabbage prior to fermentation with a commercial polysaccharides hydrolases also increased the fermentation. However the solid concentration in Kimchi juice was rather decreased by higher concentration of NaCl and enzymatic hydrolysis. The reducing sugar content showed a rapid decrease from 24 hours of fermentation and the effect of enzymatic hydrolysis was little.

Evaluating the Potential of Vegetable Powders as Nitrite Replacements in Cured Pork Sausages: Effects of Different Processing Methods to Produce Chinese Cabbage and Radish Powders

  • This study investigated the potential of Chinese cabbage and radish powders as natural sources of nitrite in ground pork sausages. Four vegetable powders from Chinese cabbage and radish, depending on the processing method, were prepared for evaluation: filtered Chinese cabbage juice powder (FCJP), crushed Chinese cabbage powder (CCP), filtered radish juice powder (FRJP), and crushed radish powder (CRP). Both FCJP and FRJP from filtered juice of Chinese cabbages and radishes had higher total soluble solids and water soluble index compared to CCP and CRP from crushed Chinese cabbages and radishes. Additionally, FRJP and CRP showed a higher nitrate content than CCP and FCJP. The evaluation of vegetable powders against products containing sodium nitrite (control) or commercial vegetable powder in ground pork sausages showed that the use of FRJP and CRP resulted in similar levels of CIE a* compared to the control, whereas those cured with FCJP or CCP resulted in lower CIE a* values. However, regardless of the type and processing method of vegetables, all sausages treated with vegetable powders were similar in terms of cured pigment, total pigment, curing efficiency, and lipid oxidation compared with the control. Although lower hardness was observed in sausages treated with FRJP, no other treatments affected textural attributes. These results indicate that FRJP and CRP have great potential as natural curing agents for replacing nitrite in cured sausages. The use of powders obtained from filtered juices may provide extended utility as vegetable-based curing methods for other meat products.
