Effect of Cheeses and Flavors on Sensory Properties of Gamma-irradiated Tarakjuk (치즈와 향신료의 첨가가 감마선 조사된 타락죽의 관능적 품질에 미치는 영향)

  • This study was conducted to improve organoleptic quality of gamma-irradiated Tarakjuk at 10 kGy with cheeses (Camembert, Cheddar, Gouda, and Edam) and flavors (Nurungji, cream, and vanilla-cream). Overall acceptability of gamma-irradiated Tarakjuk added each camembert cheese and vanilla-cream flavor was the highest among the all samples. In the effect of sterilization method on the quality of Tarakjuk, the autoclaved samples added with Edam cheese, Gouda cheese, and vanilla-cream flavor, respectively, were showed higher score on the overall acceptability than the irradiated samples, meanwhile the irradiated samples were superior in the other samples. In case of added mixture of Edam cheese and vanilla-cream flavor, irradiated Tarakjuk with mixture was showed the most of high score on overall acceptability. In conclusion, addition of mixture of cheese and flavor to Tarakjuk may help to improve organoleptic quality of sterilized Tarakjuk by gammairradiation.

달맞이꽃 종자유를 이용한 혈중 콜레스테롤 저하 Cheddar Cheese의 연구

  • 본 연구는 콜레스테롤을 제거한 cream과 skim milk을 혼합하여 균질시 달맞이꽃 종자유를 첨가하여 혈중 콜레스테롤을 저하시키는 Cheddar cheese를 개발하는데 목적을 두었으며, ${\beta}$-CD에 의한 치즈의 콜레스테롤 제거율은 90%이상이었다. Rheological 분석에서 숙성 기간동안 hardness 값이 증가하였지만 다른 rheological 성질의 유의적 차이는 나타나지 않았고, 관능평가에서는 달맞이꽃 종자유 함유량이 증가할수록 off-flavor intensity, rancid가 높았으며 반대로 cheese flavor는 감소하였다. 달맞이꽃 종자유는 off-flavor intensity, rancid에 상당한 영향을 끼친다고 나타났다. 동물실험에서 달맞이꽃 종자유 5%를 첨가한 Cheddar cheese는 control과 비교하여 25%의 혈중 콜레스테롤을 저하시켰다. 본 연구에서 콜레스테롤이 제거된 달맞이꽃 종자유의 첨가가 혈중 콜레스테롤을 획기적으로 감소시켜 효과적인 것으로 나타났다.

Comparison of GC Profile and Sensory Properties of Fermented Cheese Flavor Concentrates and Cheese Varieties (자연치즈와 치즈향 농축물의 화학적, 관능적 분석에 의한 향미 비교)

  • Volatile compounds in Cheddar, Emmentaler, Parmesan and Roquefort cheese and cheese aroma were concentrated using a microsteam distillation-extraction apparatus and those compounds were analyzed with GC. The lipase-treated cheese aroma concentrates showed significantly higher level of short-chain free fatty acids than natural ripened cheese. The sensory properties of rancidity was high in Emmemtaler and Parmesan. Acidity and fruitness were shown high score in Roquefort. Correlation of free fatty acids and cheese flavor 'sharpness, rancidity and soapy' appear to be related(r=0.8239, 0.8918 and 0.7503), respectively. Methyl ketones, the most striking flavor components of Roquefort cheese showed high amounts in the series 2-heptanone > 2-nonanone > 2-pentanone > 2-undecanone. And the intensity of the Roquefort taste sensation 'acidity and fruitness' is linearly correlated with the methyl ketone concentrations(r=0.9284, r=0.9659).

Flavor Compounds of Cholesterol-Reduced Cheddar Cheese Slurries

  • This study was carried out to find the difference in flavor compounds between cholesterol-reduced Cheddar cheese slurries and control sample. The cheeses were made by 3 different treatments as followings: 1) Control (no homogenization, no ${\beta}$-CD), 2) Trt A (1,000 psi milk homogenization, 1% ${\beta}$-CD) and 3) Trt B (cream separation following by 10% ${\beta}$-CD, mixed with skim milk at 1,000 psi homogenization). The cholesterol removals of the cheeses were 79.30% (Trt A) and 91.22% (Trt B). The cheese slurries made by the cheeses were aged at $32^{\circ}C$ for 3 wk. The production of short-chain fatty acids (SCFA) was significantly increased with storage time in all treatments. Total amount of SCFA was dramatically increased at 2 wk and maintained thereafter in control group. The amounts of acetone and acetaldehyde were slightly increased in control at 3 wk, however, no difference was found in others. Ethanol production was dramatically increased at 1 wk and decreased thereafter in all treatments. Based on our results, cheese slurries for Trt B showed a highest cholesterol removal rate. Although little difference was found in flavor production, lower amount of SCFA was found in Trts A and B in 2 and 3 wk. It may indicate that a certain amount of SCFA is decreased during ${\beta}$-CD treatment.

The Effects of the Addition of Cheese in the Manufacture of Rice Cakes Colored with 5 Vegetable-Derived Natural Coloring Materials (오색(五色) 채소 유래 천연 색소를 이용한 건강 맞춤형 컬러 치즈 떡 개발에 관한 연구)

  • In this study, the effects of adding cheese in the manufacture of rice cakes having 5 different vegetable-derived natural coloring materials were investigated with respect to quality characteristics during storage. Rice cake samples were prepared without (control) or with the addition of 2.0%, 3.0%, or 4.0% cheese. Changes in pH, external appearance, total solid content, and scanning electron microscopy (SEM), texture and sensory characteristics were monitored during storage. The sensory and texture characteristics of the rice cakes with cheese were investigated with respect to color, flavor, and overall acceptability. The total solid content and pH of the cheese-treated rice cakes were higher than that of the control during storage. Rice cakes added with cheese had higher liquid flavor than control. Results revealed that rice cakes added with cheese at less than 4% addition had the best taste, appearance, and sensory properties. Moreover, the addition of cheese to five-colored rice cakes provides additional nutrients while maintaining flavor and quality.

Change of Fatty Acid in Cheese Ripening by New Development of Lactic Acid Bacteria (육종 균주에 의한 치즈의 지방산 성분 변화에 관한 연구)

  • This study was carried out to elucidate the utility of fusant for shortening the ripening time of imitation processed cheese. L. bulgaricus exhibited the highest protease and lactase activity and L. helveticus revealed the highest lipase activity. Fusant was shown to be high in the activity of protease and lactase. The total volatile free fatty acid produced by the cheese treated with L. helveticus was markedly increased after four ripening days and was gently increased after nine ripening days. However, L. bulgaricus significantly increased the total volatile free fatty acid between four and nine ripening days. In the case of fusant, the amount of total volatile free fatty acid was observed to increase at a constant rate relative to the ripening time. In free fatty acid production at different ripening times, L. bulfaricus generated caproic acid and caprilic acid abundantly while it produced a poor quantity of capric acid, lauric acid, and myristic acid. In the cheese sample treated with L. helveticus, the amount of caproic acid and capylic acid was on increase as the ripening time increased. The amount of caproic acid and caprylic acid produced by fusant was less than that produced by the other two starters. In the panel sensory evaluation, the flavor intensity and preference increased as the ripening time increased. The cheese sample treated with fusant showed the highest flavor intensity at 7 days, whereas cheese treated with L. helveticus exhibited the highest flavor intensity at 15 or 30 days. The cheese treated with L. helveticus showed the highest preference at 7 days, but cheese treated with fusant exhibited the highest preference at 30 days.

Characteristics of Cheese Manufactured by Coprecipitation of Whey and Soy Milk (유청 및 두유의 공동침전에 의해 제조된 치즈의 특성)

  • As a way of improving the texture and flavor of soybean cheese, whey-say cheeses were made by coprecipitation of various mixtures of whey, whey powder, soy milk and soy protein powder, and mixed culture of str. lactis, str. cremoris and rennet were added, then the cheeses were cured at $15^{\circ}C$ for up to 10 weeks. Physicochemical characteristics of the cheese were investigated by analyzing pH, titratable acidity(TA), water soluble nitrogen, 10% TCA soluble nitrogen, amino acid composition, beany flavor, color and hardness. The pH of whey-soy cheeses during ripening changed from 5.3 to 4.2 after 5 or 6 weeks and maintained that value while that of soybean cheese maintained a higher pH value. TA of whey-soy milk cheeses was gradually increased to the value of 0.4-0.45 after 8 weeks, but that of soybean cheese reached only 0.2 after the same period. Water soluble and 10% TCA soluble-nitrogen increased steadily during ripening. Hardness of the whey-soy milk cheeses reached maximum after three weeks of ripening and greatest at those made from 3 : 1 mixture of whey and soy milk and that from soymilk. Color of the whey-soy milk chesses was lighter than that of soybean cheese. The bean flavor of soybean cheese was strong and persistent for the whole ripening period. Acid flavor was dominant in the whey-so milk cheese and masked the beany flavor partially.

Preparation of various soy cheese and their physicochemical and sensory characteristics (대두 Cheese의 제조와 그의 일반 성분 및 수응도에 관한 연구)

  • For the manufacture of soybean cheese, curds were made from soy milk using either lactic starter or CaCl$_2$and ripened for 3 weeks. When papain was added during ripening, the amout of soluble protein increased. The yields of 3 soybean cheese were 76~88%, indicating that considerable loss of soy protein did not occur during the processing. During the period of ripening the change of moisture content was about 1 n. Total acidity of 3 soy cheese increased, demonstrating the production of lactic acid through lactic fermentation. Texture determined by Instron showed that 3 soy cheese had their own characteristic texture profile curve and that the cheese without papain treatment received the highest textural parameters. 3 manufactured soy cheese received 3-4 (good-very good) sensory scores in appearance, flavor and texture. General acceptibility of 3 cheese were evaluated as desirable or very desirable.

Effects of Processing Conditions on the Sensory Properties of Cheddar Cheese (체다치즈의 제조조건이 관능특성에 미치는 영향)

  • The perceived intensities of Cheddar cheese flavor were investigated in terms of cheese processing conditions and types of panels participated. The mean intensities of sensory properties for Cheddar cheese were higher in untrained panels compared to those in trained panels. There are significant differences in Cheddar cheese flavor between six-month and eight-month ripening. Cheddar cheese ripening at 1$13^{\circ}C$ resulted in positive effects on sensory attributes compared to ripening at $8^{\circ}C$. The addition of lactobacilli as starter culture caused an increase of sharpness and a decrease of bitterness. Sharpness and bitterness were not related to other cheese sensory properties, and revealed a positive relationship each other. Cheese acidity was negatively related to rancidity and fruitiness.

Development of Phytosterol Ester-added Cheddar Cheese for Lowering Blood Cholesterol

  • This study was carried out to investigate the effect of phytosterol ester addition on lowering blood cholesterol in cholesterol-reduced Cheddar cheese. For cholesterol removal, separated cream was treated with 10% ${\beta}$-cyclodextrin at 800 rpm, then blended with remaining skim milk and homogenized with 1,000 psi at $70^{\circ}C$. Experimental cheeses were manufactured by five different levels of phytosterol addition. After the cholesterol reduction process by ;${\beta}$-cyclodextrin, the cholesterol removal rate was in the range of 91.0 to 92.1%. Amount of short-chain free fatty acid and free amino acids increased with an increase of phytosterol ester, and those were significantly different from that of control in all ripening periods. All rheological properties also increased with an increase of phytosterol ester during ripening period. In sensory analysis, the scores of rancid, bitterness Cheddar flavor and off-flavor intensities increased significantly, while texture was decreased during ripening in phytosterol ester-added groups. Total blood cholesterol was reduced by 18% when rats were fed Cheddar cheese treated with 8% phytosterol. The present study indicated that phytosterol ester addition resulted in a profound lowering effect of blood with cholesterol-reduced Cheddar cheese.
