Changes in Textural Properties of Kimchi during Fermentation (김치의 숙성과정 중 조직감의 변화)

  • Kimchi is a traditional fermented vegetable in Korea. It has unique taste and flavor due to the variability of raw vegetable, subingredient and their ratio of combination. Fermentation method have very critical effect on these charicteristics. Overall taste of Kimchi is also influenced by texture. In this paper, the changes in texture of Kimchis were reviewed related to pectic substance, enzymatic activities and other chemical changes during the fermentation of Kimchi. Moreover, treatments to prevent softening of Kimchi texture such as preheating, CaCl$_2$ addition, their combination effect and chitosan addition were summarized from the literatures.

Changes in the Handsheet Properties by Low Concentration Sodium Hydroxide Swelling and Beating (저농도 NaOH 팽윤과 고해에 따른 수초지 특성 변화)

  • Effects of alkali swelling of HwBKP (hardwood bleached kraft pulp) at a low concentration below 2 percent (based on the oven-dried weight of pulp) on handsheet properties were investigated. Swelling treatment of HwBKP was performed at various low NaOH concentrations with/without beating. Then, the changes in handsheet properties were evaluated in terms of bulk, optical and strength properties. It was found that bulk was slightly increased when the alkali concentration was increased. When the pulp was only swollen without beating, paper optical and strength properties was slightly decreased or not changed with alkali concentration. When the pulp was alkali-swollen after beating, paper strength and opacity showed almost no changes while brightness was increased. When the pulp was beaten after NaOH swelling, alkali concentration showed almost no effect on brightness and opacity of paper. Paper strength was slightly decreased with alkali concentration, suggesting that alkali pretreatment before refining could adversely affect refining efficiency.

Effect of Washing Conditions on Dimensional Change and Mechanical Properties in Polyester/Spandex Knit Fabric (세탁조건에 따른 폴리에스터/스판덱스 편성물의 형태안정성과 역학적 특성 변화)

  • This study comparatively analyzed the changes in the dimensional stability and the mechanical properties of stretch knit fabrics associated with washings conditions in order to determine the most appropriate washing method. Polyester and spandex knit fabrics were washed 25 cycles with nine washing condition profiles that controled detergent, hardness. temperature and RPM. The knit fabrics with repeated washings were evaluated by dimensional stability and measured by the KES-FB system. Polyester and spandex fibers have good chemical resistance. However, the changes in the dimensional stability and the mechanical properties were observed in washed knit fabrics. After repeated washings, the knit fabrics washed in an alkali or neutral detergent had good dimensional stability compared with the knit fabric washed in functional detergent. The washed knit fabrics were extended, stiff, rough, and had a smaller volume. The changes were the result of the rearrange of polyester fibers which twisted around spandex core and chemical interactions involving the detergent and the physical and mechanical forces of washing. Especially, using an alkali detergent resulted in increased stiffness and roughness of the knit fabric. In conclusion, the washing in water with low hardness and a neutral detergent can minimize the changes in dimensional stability and mechanical properties of polyester and spandex knit fabric.

  • The effect of individual gas constituents in a sintering atmosphere is examined to optimize the sintered properties of Iron-Carbon P/M components. The influence of sintered properties is reviewed as a function of hydrogen percentages and dew point in the sintering zone. Microstructures, porosity, pore morphology and dimensional changes are the subject of this review. The effects of CO containing atmospheres are compared against the non CO atmospheres in terms of hardness, carbon control and dimensional changes.

  • The changes of physical properties of portland cement pastes and mortars were investigated by addition of sodium gluconate. Flow table experiment and viscosity measurement were took in order to find dispersing effect, and time-dependent changesof viscosity and rates of hydration heat evolution were carried out for the sake of finding retardation effect of hydration. And changes of physical properties of cement pastes and mortars were discussed by setting time, compressive strength and porosity.

  • Among many densification routes for silicon nitride, HIP(hot isostatic pressing) is becomming more popular these days, mainly due to the fact that it can produce highly reliable products with superior mechanical properties. This study involves in sintering of silicon nitride followed by HIP which requires no canning. Various property changes curing sintering and HIP are observed and analyzed in terms of microstructural changes. Porosity decrease and enhanced interlocking of grains by HIP are considered to be the major causes for improved mechanical properties of silicon nitride.

Changes in the Optical and Thermal Properties of Low-Temperature Cured Polyimide Thin Films Using the Catalyst (촉매를 이용한 저온경화 폴리이미드 박막의 광학적/열적 특성 변화)

  • In this study, various polyimide films were synthesized via low temperature cure in order to understand changes in their physical properties when using 4,4'-oxydianiline (ODA) as a diamine and dianhydride molecules with different backbones on a single diamine such as 4,4'-Oxydiphthalic anhydride (ODPA), 4,4-hexafluoroisopropylidene diphthalic dianhydride (6FDA), and 3,3', 4,4'-benzophenone tetracarboxylic dianhydride (BTDA). After the synthesis of poly(amic acid), polyimide films were fabricated by adding 1,4-diazabicyclo [2.2.2]octane (DABCO), a low-temperature catalyst, at various wt% to poly(amic acid)s. Changes of optical and thermal properties were compared and analyzed between polyimide films without catalyst and polyimide films with catalyst by FT-IR, UV-Vis transmittance, DSC/TGA, and WAXD analysis. Wide-angle X-ray diffraction (WAXD) analysis revealed that the mean intermolecular distance decreased with the use of a catalyst by the type of dianhydride. Thus, while the optical properties of the films improve by a low-temperature cure performed using a catalyst, their thermal properties decrease. These changes can be explained by the changes in the morphological structure of the films triggered by a catalyst-induced reduction in the mean intermolecular distance. Moreover, the results show that the type of dianhydride determines the degree of change in the optical and thermal properties in each types of polyimide, demonstrating that changes in the optical and thermal properties are directly associated with the backbone of the polyimide structure.

  • The layered lithium-manganese oxide ($Li_2MnO_3$) as a cathode material of lithium ion secondary batteries was prepared and characterized the physico-chemical and electrochemical properties. The morphological and structural changes of MnO(OH) and $Li_2MnO_3$ are closely connected to the changes of electrochemical properties. The crystallinity of $Li_2MnO_3$ is enhanced as the annealing temperature increase, but its capacity is reduced due to the easier structural changes of less crystalline $Li_2MnO_3$ than highly crystalline one. Moreover, the addition of buffer material such as MnO(OH) into cathode causes to reduce the morphological and structural changes of layered $Li_2MnO_3$ and increase the discharge capacity and cycleability.

Long Term Reliability of Fluroelastomer (FKM) O-ring after Exposure to High Pressure Hydrogen Gas

  • The long-term durability of an FKM O-ring used as parts of a hydrogen station was investigated by exposing it to high-pressure gaseous hydrogen for 1, 3, and 7 days at room temperature. Changes in its sealing force were subsequently measured at 150℃ using intermittent compression stress relaxation (CSR). No changes in the tensile properties of FKM O-ring were observed, but its initial and overall sealing forces at 150℃ significantly decreased with increasing exposure time to hydrogen gas. Microvoid formation in the FKM O-ring upon exposure to high-pressure hydrogen was minimized over time after the ring was exposed to atmospheric pressure at room temperature, which prevented changes in its tensile properties. However, applying heat accelerated FKM O-ring oxidation, which decreased its sealing force. These results indicated that identifying changes in the sealing force of rubber materials using intermittent CSR is not sufficient for monitoring changes in mechanical properties under high-pressure hydrogen atmospheres; however, it is suitable for evaluating the long-term durability of sealing materials for hydrogen station applications under similar conditions.

  • This paper is the study of the reflectance of light from biological tissue for red and Infrared wavelengths and relates the acquired reflectance data to expected physiological changes within the skin and muscle layers associated with heat and exercise. The instrument was disigned to collect data from the calf muscle in human subjects with probe located at the surface of skin. Rapid data acquisition method allowed monitoring of rapid changes in reflecttance due to a stimulus. This study demonstrates that changes in O2 saturation and blood fractional volume expected within the dermis and muscle layers were asserted by examining the slopes of the plotted index for heat and exercise. The results presented in thls study support the claim that reflectance can separately discriminate between changes of blood volume and oxygenation in muscle and in skin. The data demonstrate the ability to measure consistent changes In tissue optical properties during exercise and heat.
