Studies on the genetic and environmental effects on M.longissimus thoracis area (MLTA), fat thickness (SFT), rib thickness (RT) and marbling score (MS) were conducted on 21,086 steers and 7,151 heifers of Japanese Brown breed. All carcass traits were affected significantly (p<0.01) by sire, sex and initial year effects. Both of the MLTA and MS of steers were greater than heifers. Their differences were $1.4cm^2$ for MLTA and 0.05 for MS, respectively. Cattle started for fattening in winter tend to have higher of MLTA and MS and thicker of SFT and RT than those in other seasons. MLTA increase from 1987 to 1989 (about $1.9cm^2$) and decrease until 1994 (about $2.4cm^2$) and then increase again up to 1995 (about $1.5cm^2$). MS were nearly equal from 1987 to 1991 (about "1") and then decrease up to 1995 (about "1"). Heritability estimates of MLTA, RT, SFT and MS were ranged from 0.22 to 0.36. Genetic and phenotypic correlations of MLTA, RT, SFT and MS were positive and ranged from 0.05 to 0.62 and from 0.03 to 0.32 except SFT with MLTA was negative (-0.14 and -0.03).
The prediction of carcass composition in Hanwoo steers is very important for value-based marketing, and the improvement of prediction accuracy and precision can be achieved through the analyses of independent variables using a prediction equation with a sufficient dataset. The present study was conducted to develop a prediction equation for Hanwoo carcass composition for which data was collected from 7,907 Hanwoo steers raised at a private farm in Gangwon Province, South Korea, and slaughtered in the period between January 2009 and September 2014. Carcass traits such as carcass weight (CWT), back fat thickness (BFT), eye-muscle area (EMA), and marbling score (MAR) were used as independent variables for the development of a prediction equation for carcass composition, such as retail cut weight and percentage (RC, and %RC, respectively), trimmed fat weight and percentage (FAT, and %FAT, respectively), and separated bone weight and percentage (BONE, and %BONE), and its feasibility for practical use was evaluated using the estimated retail yield percentage (ELP) currently used in Korea. The equations were functions of all the variables, and the significance was estimated via stepwise regression analyses. Further, the model equations were verified by means of the residual standard deviation and the coefficient of determination ($R^2$) between the predicted and observed values. As the results of stepwise analyses, CWT was the most important single variable in the equation for RC and FAT, and BFT was the most important variable for the equation of %RC and %FAT. The precision and accuracy of three variable equation consisting CWT, BFT, and EMA were very similar to those of four variable equation that included all for independent variables (CWT, BFT, EMA, and MAR) in RC and FAT, while the three variable equations provided a more accurate prediction for %RC. Consequently, the three-variable equation might be more appropriate for practical use than the four-variable equation based on its easy and cost-effective measurement. However, a relatively high average difference for the ELP in absolute value implies a revision of the official equation may be required, although the current official equation for predicting RC with three variables is still valid.

Molecular marker selection has been an acceptable tool in the acceleration of the genetic response of desired traits to improve production performance in chickens. The crossbreds from commercial parent stock (PS) broilers with four Thai synthetic breeds; Kaen Thong (KT), Khai Mook Esarn (KM), Soi Nin (SN), and Soi Pet (SP) were used to study the association among chicken growth hormones (cGH) and the insulin-like growth factor (IGF-I) genes for growth and carcass traits; for the purpose of developing a suitable terminal breeding program for Thai broilers. A total of 408 chickens of four Thai broiler lines were genotyped, using polymerase chain reaction-restriction fragment length polymorphism methods. The cGH gene was significantly associated with body weight at hatching; at 4, 6, 8, 10 weeks of age and with average daily gain (ADG); during 2 to 4, 4 to 6, 0 to 6, 0 to 8, and 0 to 10 weeks of age in $PS{\times}KM$ chickens. For $PS{\times}KT$ populations, cGH gene showed significant association with body weight at hatching, and ADG; during 8 to 10 weeks of age. The single nucleotide polymorphism variant confirmed that allele G has positive effects for body weight and ADG. Within carcass traits, cGH revealed a tentative association within the dressing percentage. For the IGF-I gene polymorphism, there were significant associations with body weight at hatching; at 2, 4, and 6 weeks of age and ADG; during 0 to 2, 4 to 6, and 0 to 6 weeks of age; in all of four Thai broiler populations. There were tentative associations of the IGF-I gene within the percentages of breast muscles and wings. Thus, cGH gene may be used as a candidate gene, to improve growth traits of Thai broilers.

TBC1D1 gene has known functional effects on body energy homeostasis and glucose uptake pathway in skeletal muscle tissue. This biological function is reported to have significant effects on traits of growth and meat quality in chicken. In this study, we focused on two single nucleotide polymorphisms (SNPs) (g.70179137A>G and g.70175861T>C) identified through SNP annotation information of Korean native chicken and previous literature for TBC1D1 in chicken. Association of SNPs in TBC1D1 with growth and serum clinical-chemical traits were evaluated. A total of 584 male and female birds from five Korean native chicken lines were used in the study. The SNP1 (g.70179137A>G) is located in intron 11 and SNP2 (g.70175861T>C) is a non-synonymous missense mutation in exon 10, responsible for the amino acid change from Methionine to Valine. The A allele of SNP1 and T allele of SNP2 had the highest allele frequencies. Both SNPs indicated moderate polymorphism information content values (0.25
This study was conducted to figure out how the shape of Hanwoo changes over time, examine the rank correlations between the carcass traits which are the selection traits and parameters of growth curve, and determine the correlation between body shape and carcass. Body weight, body measurements and carcass traits were measured from 161 castrated Hanwoo, and 12 growth traits and 5 carcass traits were investigated in total. The logistic model(Nelder, 1961) used for the estimation of growth curve parameters and growth characteristics at inflection point were calculated by these growth curve parameters. The value of this parameter was greatest for pinbone width, which suggests that it is an early ripening trait, while it was lowest for chest girth, suggesting it to be a late ripening trait. The rank correlations of chest depth, chest width, and hip width with backfat thickness steadily increased from 6 to 24 months, while the rank correlations of other traits decreased after 18 months until 24 months of age. Only phenotypic records were analyzed in this study, but for examine the genetic changes over growth phase in Hanwoo, if another additional genetic analysis like as estimation of genetic parameters should achieve, body measurements may be useful traits in proven bull selection.
This study was conducted to investigate the genetic correlations among the traits used to select young bulls and proven bulls in Hanwoo Performance and Progeny Test Program in Korea. For the estimation of heritabilities and correlations among the growth traits of bulls and carcass traits of progeny steers, 2,532 records of performance tested bull calves and 1,819 records of progeny tested steers were collected from Livestock Improvement Main Center (LIMC), National Agricultural Cooperative Federation (NACF). Fixed effects of mixed model for each traits were selected by using stepwise regression analysis and prior values of variance components were estimated by MTDFREML. The prior values of variance components were estimated with pairwise 2 traits model followed by single trait analysis. The estimated heritability of backfat thickness(BF), dressing percentage(DP), loin-eye muscle area(LMA), marbling score(MS) and weight at 12 months(WT12) was 0.51, 0.32, 0.27, 0.33, 0.50 and 0.26, respectively. Genetic correlation of WT12 of bull calves with backfat thickness, carcass weight and loin-eye muscle area of steers was positive correlation as 0.05, 0.35 and 0.21, respectively. However genetic correlation of WT12 with DP and MS showed negative correlation as 0.09 and 0.27, respectively and these negative genetic correlations implies that bulls that may be superior in carcass traits can be lost at the first step of selection and current selection method should be modified to solve this problem.
For determining the relative genetic effects of Duroc (D) and Taoyuan (T) breeds on the economic traits of their hybrids, 72 litters of pigs, from four mating types, namely TT (T♂$\times$T♀), DD (D♂$\times$D♀) and D-T hybrids (TD, T♂$\times$D♀ and DT, D♂$\times$T♀) were used in this study. The various crossbreeding parameters were estimated by comparisons among mating types using linear contrasts of least-square analysis. The results of reproductive traits analysis showed that T breed had contributed superior genetic effects on the total number of piglets at birth (TBN) (p<0.10) and number of live piglets at 21 days (LP21) (p<0.05) to the D-T hybrids. Estimates of maternal genetic effects showed that the T females were superior in TBN (p<0.05), but inferior in average birth weight (ABW) and average litter birth weight (LBW) (p<0.01) to the D females. Direct heterosis effects were significant for LBW, LP21 and LWT21 (p<0.01). Least-squares analysis of other economic traits showed that T breed had relative negative effects on all growth traits, withers height (WH), body type index (BTI), average backfat thickness (ABF), carcass length (LENG), loin eye area (longissimus) (LEARA), and lean percentage (LEAN) of D-T hybrids (p<0.05). Estimates of direct genetic effects showed that the D breed was superior to the T breed in all growth and carcass traits except the average backfat (BF). Estimates of maternal genetic effects showed that average body weight at 180 days (WT180) of progenies from T sows were lighter than from D sows. Progenies from D females had larger and leaner carcass than those from T females. Direct heterosis effects were significant for average daily weight gains from 150 to 180 days ($ADG_{150-180}$) (p<0.05) and for average body weights at 150 (WT150), and 180 days (WT180), average daily weight gains from birth to 150 and 180 days ($ADG_{150}$ and $ADG_{180}$, respectively), WH, body length (BL), ABF, BTI, and LENG (p<0.01). The results showed that D-T hybrids tended to have superior TBN and LP21 than D breed, and to be superior in all growth and most conformation and carcass traits to the T breed.
This study was conducted to estimate the correlation structure between body size traits, carcass traits, and primal cuts in Hanwoo steers. Hanwoo progeny test data (body weight and body measurements) were collected from 2008 to 2010 from a total of 882 steers at the Hanwoo Improvement Main Center (NACF). Carcass traits considered were cold carcass weight, eye muscle area, backfat thickness, and marbling scores evaluated at the time of carcass grading. Correlation analyses were performed with observed scales of the traits and with residuals considering fixed environmental effects in generalized linear models. The correlation coefficient estimated between loin weight and chest girth was high at 0.74. The shank negatively correlated with pelvic width (-0.23) and hipbone width (-0.27). In addition, rib weight and chest girth was highly correlated (0.80). The correlation between carcass weight and chest girth was 0.86 in observed scale. Residual correlation between these traits was estimated at 0.65. Correlation between carcass weight and loin was 0.87 in the observed scale. Residual correlation was estimated at 0.83. The correlation coefficient estimated between shank weight and brisket and flank weight was negative at -0.69. Chest girth had a high correlation between primal cuts weight and body measurements. Thus, we believe that these results will provide a greater understanding on the relationship of primal cuts and other phenotypes, thus enabling valid production models for Hanwoo steers.
An experiment was carried out to evaluate the effects of feeding graded levels of chromium in the form of chromium picolinate on growth performance, blood components, carcass grade, in vitro lipogenesis and lipolysis, and in vitro protein degradation and synthesis in growing-finishing pigs. There were no significant differences for daily weight gain, feed intake and feed conversion among treatments during growing phase, while in the finishing phase, feed intake was lower in groups fed diets with 200 ppb chromium than in other treatment (p < 0.1). Feed conversion was improved in the groups fed diets with chromium compared with control. Carcass weight was similar among treatments while carcass length was longer in groups fed diets with 200 ppb chromium (p < 0.05). Thinner carcass fat was found with groups fed diets with chromium compared to control. Three A grade of carcasses were from groups fed chromium compared to control. No significant differences were observed with blood glucose, insulin, total cholesterol, triglycerides and non-esterified fatty acid at 60kg body weight. While, at 100 kg body weight, blood triglyceride was lower in groups with 200 and 400 ppb chromium but higher in groups with 100 ppb chromium (p < 0.05). In vitro lipolysis and protein synthesis in adipose tissues were increased as dietary chromium was increased from 0 to 200 ppb (p < 0.1). As a result, 200 ppb chromium in a growing-finishing diet could improve feed efficiency and carcass traits; an increase to 400 ppb has no further effect.
Twelve intact and 12 docked Najdi lambs of equal numbers of males and females were utilized in the experiment. All lambs were raised under similar conditions until they attained 40 kg shorn and shrunk body weight. Thereafter, lambs were individually fed ad libitum on a diet formulated to contain 11.20 MJ ME/kg and slaughtered after 60 days feeding period. The results showed that Najdi rams averaged 6.14 kg more total gain (p < .05), required 6.80 kg less feed (p < .05) per kg of gain and produced 3.2 and 3.07 kg more (p < .05) carcass and salable cuts weights over the feeding period than comparable ewes. Body wall thickness and kidney and pelvic fat weight were greater (p < .05) for ewes than for rams; dressing percent, longissimus area and fat thickness were not significantly influenced by sex of lambs. Docked lambs kept for 60 days on feed required 1.80 kg less feed (p < .05) per kg of gain and produced 2.21 kg more (p < .05) salable wholesale cuts weight than intact lambs. Docking was not a significant source of variation for total gain, carcass weight, dressing percent, longissimus dorsi area, body wall thickness and fat thickness.
