Carcass and Meat Quality Traits in an Embden×Toulouse Goose Cross Raised in Organic Dehesa

  • This study assessed the influence of genetic type (Embden-Anser anser, EE; Toulouse-Anser anser, TT and F1 cross, ET) for meat characteristics (carcass, meat quality and fatty acid (FA) profiles), of domestic geese "Anser anser domesticus" raised in dehesa as an alternative, organic feeding system. Carcass and breast muscle weight (p<0.01) were greater for the ET group at the same live weight. None of the groups showed differences in the production of fatty liver with this type of feeding. Higher values were found for maximum Warner-Bratzler shear force (between 7.62 and $8.87kg/cm^2$), which implies the improvement of this parameter. High levels of oleic FAs were obtained, especially for the TT group. The polyunsaturated/saturated FA ratio was highest for the ET group (p<0.001), reflecting the optimum nutritional values as a component of a healthy consumer diet.

Effect of Single Nucleotide Polymorphism of Endothelial Differentiation G-Protein Coupled Receptor 1 (EDG1) Gene on Marbling Score in Hanwoo

  • Marbling (intramuscular fat) is the most economically important meat quality trait in Hanwoo (Korean cattle). The endothelial differentiation G-protein coupled receptor 1 (EDG1) gene, involved in blood vessel formation, is located within the genomic region of a quantitative trait locus (QTL) for marbling on bovine chromosome 3. Thus, the EDG1 gene can be considered as a positional and functional candidate gene for meat quality in beef cattle. This study aimed to identify single nucleotide polymorphisms (SNPs) in the EDG1 gene and to evaluate their associations with carcass traits in Hanwoo population. We have sequenced a fragment of 5'-UTR of the EDG1 gene and identified one SNP. Genotyping of the g.166A>G SNP marker was carried out using PCR-RFLP analysis in 309 Hanwoo steers in order to evaluate their association with carcass traits. The g.166A>G SNP marker showed a significant effect on the marbling score. Animals with the GG genotype had higher marbling score compared with AA and AG genotypes (p<0.05). This SNP marker also showed a significant additive effects for the marbling score (p<0.05). These results suggest that the EDG1 gene can be used as a molecular marker for DNA marker-assisted selection in order to increase the levels of the marbling score in Hanwoo.

비육돈의 출하체중 증가가 등지방두께, '떡지방' 삼겹살 발생률, 도체등급 및 도체의 품질 특성에 미치는 영향 (Effects of Increasing Market Weight of Finishing Pigs on Backfat Thickness, Incidence of the 'Caky-fatty' Belly, Carcass Grade, and Carcass Quality Traits)

  • 본 연구는 돼지 출하체중 증가가 '떡지방' 삼겹살 발생률, 도체등급 및 도체의 품질 특성에 미치는 영향을 구명하기 위해 수행되었다. 본 목적을 위해 85~150 kg 체중 범위의(Yorkshire ${\times}$ Landrace) ${\times}$ Duroc 교잡종 거세돼지와 암퇘지 각각 250두를 도살하여 그 도체를 분석하였다. 거세돼지와 암퇘지의 등지방두께(y; mm)는 각각 다음과 같이 생체중(x; kg)에 선형으로 회귀하였다: y = 0.1827x + 3.4825 ($r^2$ = 0.4671) 및 y = 0.2015x-0.6972 ($r^2$ = 0.4736). 삼겹살의 제 11~12 늑골부 5 cm 폭의 등쪽 반절편의 지방조직 중량비가 55%를 초과하는 경우를 떡지방의 기준으로 설정했을 때 떡지방 삼겹살은 거세돼지에서 10건 발생하였으나 소매상에서 떡지방 삼겹살로 판정된 경우는 없었다. 과중량으로 인해 도체등급이 강등된 도체는 총 101건(20.2%)에 달하였다. $1^+A$ 등급 도체는 다른 모든 등급 도체보다 근내지방도가 높았으나, 근내지방도와 도체 결함 특성을 제외하면 도체등급간 가시적인 품질 상의 차이는 발견되지 않았다. 결론적으로 도체 품질을 충분히 반영하지 못하고 크기만 클 뿐 정상적인 도체에 대해서는 평가절하는 현행 도체등급 판정 기준은 개정되어야 좋을 것이다. 또한 돼지 출하체중을 증가시킬 때 떡지방 삼겹살 발생률은 중요한 고려 사항이 아닌 것으로 사료된다.

Effects of Direct-fed Microbial and Pine Cone Extract on Carcass Traits and Meat Quality of Hanwoo (Korean Native Cattle)

  • The carcass traits and meat quality of Hanwoo (Korean native cattle) whose diets were supplemented with direct-fed microbial (DFM) and pine cone extract (PCE) were evaluated. Twenty head of Hanwoo steers were divided equally into four groups and for a period of 6 months were given different diets: One group was fed a basal diet as control (CON), the other three groups were fed a basal diet supplemented with DFM-1%, DFM+PCE-1% and DFM+PEC-3%, respectively. DFM+PCE3% diet resulted the lowest carcass quality grade. The loins of DFM-1% contained higher moisture and lower fat than did the loins from the CON group. The crude protein content of DFM+PCE-3% group was significantly higher than that of the other groups. The water holding capacity and Warner-Bratzler shear force of the DFM+PCE-1% and 3% groups were lower than those of the CON and DFM-1% groups. The DFM-1% and 3% groups contained lower saturated fatty acid, higher unsaturated fatty acid, mono-unsaturated fatty acid, and poly-unsaturated fatty acid than did CON and DFM+PCE 1% group. Moreover, the n6:n3 ratios of DFM-1% and DFM+PCE-1% and 3% groups were slightly lower than that of the CON group. Thus we concluded that DFM and PCE supplementation resulted healthier Hanwoo beef with lower fat content and n6:n3 ratio.

A synonymous mutation of uncoupling protein 2 (UCP2) gene is associated with growth performance, carcass characteristics and meat quality in rabbits

  • Background: Uncoupling proteins 2 (UCP2) plays an important role in energy regulation, previous studies suggested that UCP2 is an excellent candidate gene for human obesity and growth-related traits in cattle and chicks. The current study was designed to detect the genetic variation of UCP2 gene, and to explore the association between polymorphism of UCP2 gene and growth, carcass and meat quality traits in rabbits. Results: A synonymous mutation in exon 1 and four variants in the first intron of the UCP2 gene were identified by using PCR-sequencing. The synonymous mutation c.72G>A was subsequently genotyped by MassArray system (Sequenom iPLEXassay) in 248 samples from three meat rabbit breeds (94 Ira rabbits, 83 Champagne rabbits, and 71 Tianfu black rabbits). Association analysis suggested that the individuals with AA and AG genotypes showed greater 70 d body weight (P < 0.05), 84 d body weight (P < 0.01), ADG from 28 to 84 days of age (P < 0.05), eviscerated weight (P < 0.01), semi-eviscerated weight (P < 0.01) and semi-eviscerated slaughter percentage (P < 0.05), respectively. Additionally, the individuals with AA and AG genotype had a lower pH value of longissimus muscle (P < 0.01) and hind leg muscle (P < 0.05) after slaughter 24 h. Conclusions: These findings indicated that UCP2 could be a candidate gene that associated with growth performance, body composition and meat quality in rabbits, and this would contribute to advancements in meat rabbit breeding practice.

Effect of mixed hay supplementation during fattening on carcass traits and meat quality of Hanwoo steers

  • Background: This study was aim to observe the effects of feeding mixed local hay (MH) consisted of 55% orchard grass (Dactylis glomerata L.), 35% tall fescue (Festuca arundinacea) and 10% red clover (Trifolium pratense) to Hanwoo steers on performance, carcass characteristics and meat quality (longissimus thoracis) compared with feeding imported timothy hay (TH) and local rice straw (RS). Results: Although no significant effects were found on animal performance and carcass yield grade, the carcasses of MH group had higher marbling score and quality grade than those of RS and TH group (P < 0.05). Therefore, higher fat content (P < 0.001), lower shear force and hardness value in the beef of MH group than that of other groups were observed. Furthermore, the beef of MH group had higher CIE $a^*$ value (redness) than that of other groups and feeding MH to Hanwoo steers lowered n-6 to n-3 fatty acids ratio in beef. Conclusions: Mixed hay provided benefits on meat quality and could be used for Hanwoo fattening program.

Detection of QTL for Carcass Quality on Chromosome 6 by Exploiting Linkage and Linkage Disequilibrium in Hanwoo

  • The purpose of this study was to improve mapping power and resolution for the QTL influencing carcass quality in Hanwoo, which was previously detected on the bovine chromosome (BTA) 6. A sample of 427 steers were chosen, which were the progeny from 45 Korean proven sires in the Hanwoo Improvement Center, Seosan, Korea. The samples were genotyped with the set of 2,535 SNPs on BTA6 that were imbedded in the Illumina bovine 50 k chip. A linkage disequilibrium variance component mapping (LDVCM) method, which exploited both linkage between sires and their steers and population-wide linkage disequilibrium, was applied to detect QTL for four carcass quality traits. Fifteen QTL were detected at 0.1% comparison-wise level, for which five, three, five, and two QTL were associated with carcass weight (CWT), backfat thickness (BFT), longissimus dorsi muscle area (LMA), and marbling score (Marb), respectively. The number of QTL was greater compared with our previous results, in which twelve QTL for carcass quality were detected on the BTA6 in the same population by applying other linkage disequilibrium mapping approaches. One QTL for LMA was detected on the distal region (110,285,672 to 110,633,096 bp) with the most significant evidence for linkage (p< $10^{-5}$). Another QTL that was detected on the proximal region (33,596,515 to 33,897,434 bp) was pleiotrophic, i.e. influencing CWT, BFT, and LMA. Our results suggest that the LDVCM is a good alternative method for QTL fine-mapping in detection and characterization of QTL.

Rearing characteristics of fattening Hanwoo steers managed in different stocking densities

  • Objective: This study was conducted to analyze the effects of stocking density on growth and carcass quality, and behavior of Hanwoo cattle to conform with global trends, targeting animal welfare production through the practice of environmentally friendly condition. Methods: Thirty six steers were randomly assigned to three treatment groups (C: 5 heads, T1: 4 heads, T2: 3 heads) and reared in separate pens with a constant stocking density of $50m^2$ (C: $10m^2/head$, T1: $12.5m^2/head$, T2: $16.67m^2/head$) per group from 12 to 30 month of age. Growth performance, behavior and carcass quality traits of each steer were recorded and compared between the treatment groups. Results: In general, the average daily gain during the fattening period was lower in group T2 than in T1 and the control groups. However, carcass weight and dressing percentage was lower in the control group than in T1 or T2 groups (p<0.05). Also, marbling score at 30 months of age was the lowest in the control group (p<0.05), while the three heads group (T2) had the greatest longissimus muscle area and marbling score (p<0.05). The behavior of walking time was the greatest in T2 group, while self-grooming and fighting occurred with the most frequency in the control group (p<0.05). Conclusion: Our results show that the steers in more spacious stocking density had better carcass quality and wellbeing related behaviors, indicating that a lower density has a positive effect on raising management and carcass quality. Thus it is a need to install appropriate pens fitted to welfare-oriented management practices from growing to fattening period in Hanwoo cattle.

Association of Insulin-like growth factor binding protein 2 genotypes with growth, carcass and meat quality traits in pigs

  • Background: This study was conducted to investigate the potential association of variation in the insulin-like growth factor binding protein 2 (IGFBP2) gene with growth, carcass and meat quality traits in pigs. IGFBP2 is a member of the insulin-like growth factor binding protein family that is involved in regulating growth, and it maps to a region of pig chromosome 15 containing significant quantitative trait loci that affect economically important trait phenotypes. Results: An IGFBP2 polymorphism was identified in the Michigan State University (MSU) Duroc ${\times}$ Pietrain $F_2$ resource population (n = 408), and pigs were genotyped by MspI PCR-RFLP. Subsequently, a Duroc pig population from the National Swine Registry, USA, (n = 326) was genotyped using an Illumina Golden Gate assay. The IGFBP2 genotypic frequencies among the MSU resource population pigs were 3.43, 47.06 and 49.51 % for the AA, AB and BB genotypes, respectively. The genotypic frequencies for the Duroc pigs were 9.82, 47.85, and 42.33 % for the AA, AB and BB genotypes, respectively. Genotype effects (P < 0.05) were found in the MSU resource population for backfat thickness at $10^{th}$ rib and last rib as determined by ultrasound at 10, 13, 16 and 19 weeks of age, ADG from 10 to 22 weeks of age, and age to reach 105 kg. A genotype effect (P < 0.05) was also found for off test Longissimus muscle area in the Duroc population. Significant effects of IGFBP2 genotype (P < 0.05) were found for drip loss, 24 h postmortem pH, pH decline from 45 min to 24 h postmortem, subjective color score, CIE $L^*$ and $b^*$, Warner-Bratzler shear force, and sensory panel scores for juiciness, tenderness, connective tissue and overall tenderness in MSU resource population pigs. Genotype effects (P < 0.05) were found for 45-min pH, CIE $L^*$ and color score in the Duroc population. Conclusions: Results of this study revealed associations of the IGFBP2 genotypes with growth, carcass and meat quality traits in pigs. The results indicate IGFBP2 as a potential candidate gene for growth rate, backfat thickness, loin muscle area and some pork quality traits.

아연, 비타민과 셀레늄의 첨가가 홀스타인 거세우의 발육, 도체특성 및 경제성에 미치는 영향 (Effects of zinc, vitamin and selenium additives for improving meat quality on the growth performance, carcass characteristics and economic efficiency of holstein steers)

  • This study was conducted to investigate the effect of different additives on the growth performance, feed efficiency and carcass characteristics in Holstein steers during 18month fattening periods. Twenty four Holstein steers, 5months of age and 176.6kg, were randomly allocated to 3 experimental groups 8 animals each for 18-months feeding trial. The groups were control (not additive), T1 (fed zinc, Vitamin C) and T2 (fed zinc, Vitamin C, Vitamin B6 and Selenium). According to feeding additives, final weight was not significantly different among the treatment groups, tended to be high at T2 group (827kg) compared to the other groups. Average daily gain was not different among the treatment groups during the experimental periods, but T2 group was significantly greater than T1 group in growing stage (p<0.05). The feed additives had no effects on DMI during experimental periods. Feed conversion ratio of T1 group in growing stage was significantly higher than those of other groups (p<0.05), average feed conversion ratio was tend to be decreased at T2 group rather compared with other groups. In the results of yield traits, carcass weight were relatively higher in T2 group than other groups (p<0.05). Rib-eye area, back fat thickness and yield index were similar between groups. In quality traits, marbling, meat color, fat color, texture and maturity were not significantly different among the groups. In economic efficiency, income was highest at T2 group as 91~393 thousand won among 3 groups.
