Objective: This study was conducted to evaluate the correlation between body size traits, carcass traits, and primal cuts in Hanwoo steers. Methods: Sixty-one beef carcasses were classified for conformation and primal cut weight. Additionally, carcass weight, fat thickness, carcass dimensions, and longissimus muscle area were determined to complement the grading. Results: The average live weight and cold carcass weight were 759 and 469 kg, respectively. The mean carcass meat, fat, and bone proportions were 551, 298, and 151 g/kg, respectively. Primal cuts weights showed significant positive correlations (p<0.001) of 0.42 to 0.82 with live weight, carcass weight, and longissimus muscle area and a significant negative correlation with carcass fat (without shank, -0.38 to -0.10). Primal cut weights were positively correlated (p<0.01) with carcass length (0.41 to 0.77), forequarter length (0.33 to 0.57), 6th lumbar vertebrae-heel length (0.33 to 0.59), 7th cervical vertebrae carcass breadth (0.35 to 0.58), 5th to 6th thoracic vertebrae breadth (0.36 to 0.65), 7th to 8th thoracic vertebrae girth (0.38 to 0.63), and coxae girth (0.34 to 0.56) and non-significantly related to cervical vertebrae length and coxae thickness. Conclusion: There was a high correlation among live weight, carcass weight, longissimus muscle area, carcass length, 7th cervical vertebrae carcass breadth, 5th to 6th thoracic vertebrae breadth, and 7th to 8th thoracic vertebrae girth of the primal cuts yield. The correlation between fat and primal cut yields was highly significant and negative. Carcass length and 7th to 8th thoracic vertebrae girth, appear to be the most important traits affecting primal cut yields.
Objective: The vertebral number is associated with body length and carcass traits, which represents an economically important trait in farm animals. The variation of vertebral number has been observed in a few mammalian species. However, the variation of vertebral number and quantitative trait loci in sheep breeds have not been well addressed. Methods: In our investigation, the information including gender, age, carcass weight, carcass length and the number of thoracic and lumbar vertebrae from 624 China Kazakh sheep was collected. The effect of vertebral number variation on carcass weight and carcass length was estimated by general linear model. Further, the polymorphic sites of Vertnin (VRTN) gene were identified by sequencing, and the association of the genotype and vertebral number variation was analyzed by the one-way analysis of variance model. Results: The variation of thoracolumbar vertebrae number in Kazakh sheep (18 to 20) was smaller than that in Texel sheep (17 to 21). The individuals with 19 thoracolumbar vertebrae (T13L6) were dominant in Kazakh sheep (79.2%). The association study showed that the numbers of thoracolumbar vertebrae were positively correlated with the carcass length and carcass weight, statistically significant with carcass length. To investigate the association of thoracolumbar vertebrae number with VRTN gene, we genotyped the VRTN gene. A total of 9 polymorphic sites were detected and only a single nucleotide polymorphism (SNP) (rs426367238) was suggested to associate with thoracic vertebral number statistically. Conclusion: The variation of thoracolumbar vertebrae number positively associated with the carcass length and carcass weight, especially with the carcass length. VRTN gene polymorphism of the SNP (rs426367238) with significant effect on thoracic vertebral number could be as a candidate marker to further evaluate its role in influence of thoracolumbar vertebral number.

The present study was conducted to determine the best level of substitution of soybean meal by sunflower cake in diets for kids through the evaluation of quantitative carcass traits. Thirty-two Boer kids X 1/2 NDB (no defined breed), males, non-castrated, with 4 months of age and initial body weight of $15{\pm}3.2$ kg, were randomly assigned to individual pens. The treatments contained four substitution levels of soybean meal by sunflower cake (0, 33, 66 and 100% DM). At the end of the experimental period, the animals were slaughtered. There was no influence of the treatments on any of the mean values of the evaluated measures (p>0.05): 21.78 kg (body weight at slaughter), 8.65 kg (hot carcass weight), 8.59 kg (cold carcass weight), 40.27% (hot carcass yield), 39.20% (cold carcass yield), 7.73 $cm^2$ (rib eye area), 46.74 cm (carcass outer length), 45.68 cm (carcass internal length), 36.92 cm (leg length), 26.04 cm (leg perimeter), 48.66 cm (hind perimeter), 58.62 cm (thoracic perimeter), 0.20 (carcass compactness index), 68.48% (total muscle of the leg), 2.79% (total leg fat), 55.19% (subcutaneous leg fat), 28.82% (total bone), 81.66 g (femur weight), 14.88 cm (femur length), 0.38 (leg muscularity index), 2.53 (muscle:bone ratio) and 33.42 (muscle:fat ratio). The substitution of soybean meal by sunflower cake may be recommended up to a level of 100% without alterations to quantitative carcass traits.

Japanese Black cattle (Wagyu) are fed for a long period to produce high quality beef, however, extended feeding often causes inefficiency and greater environmental load mainly derived from their manure. The objectives of this study were to analyze changes in feeding length by listing breeding values (BVs) at calf markets and the relationships between BVs and carcass characteristics of 4,052 Japanese Black cattle, and to examine the feasibility of optimizing feeding length by referring to listed BVs. BV classes A, B, and C were defined based on BVs of cows in Shimane Prefecture as follows: an upper quarter of BVs was classified as A, a second quarter as B, and under the average as C. For cattle sold at calf markets in the first term of 1996, just before the start of BV listing, the feeding length of cattle with class B BVs for the beef marbling standard (BMS) was longer (p>0.05) than that of class A cattle. However, in the second term of 1996, just after the start of BV listing, the feeding length of class B cattle became shorter (p<0.001) than that of class A cattle. Then, the feeding lengths of both classes showed no significant differences. Feeding lengths of both class A and B BVs for carcass weight (CW) changed similarly to the corresponding BV classes for BMS. The analysis of the relationships among the listed BV classes and the actual carcass characteristics showed that class A cattle had a higher (p<0.001) BMS than class B cattle, and that the higher-class cattle had a heavier CW (p<0.05). On the basis of previous reports, the cattle, particularly those with lower genetic marbling ability, seem to only increase marbling at markedly low efficiency for a few months before slaughter. Therefore, the finding that carcass characteristics corresponded to their class of BVs suggests that an optimum feeding length based on listed BVs not only increases the efficiency of beef production, but also reduces the environmental load.

The effect of 16 different dietary rations, computed by the combinations of 13, 16, 19 or 22% CP and 2600, 2800, 3000 or 3100 kcal ME/kg, on growth performances and carcass yield of Starcross layers were assessed in two similar experiments. In both experiments, the body weight, eviscerated carcass yield, edible carcass yield, length of digestive tract and shank length increased but the feed intake decreased linearly with the increase of dietary CP and ME levels. The liver and gizzard weights as percentages of live weight tended to be increased with the increase of dietary CP and ME levels. The carcass dry matter, crude protein, fat, ash and energy content were not influenced by the dietary CP and ME levels. Dietary CP levels had positive correlations with all the parameters (except feed and energy intake and carcass dry matter). However, the dietary ME levels were positively correlated with all the parameters (except feed and energy intake; carcass dry matter and ash) in both experiments. The higher values were noted for all the parameters (except gizzard and carcass fat percentages) studied in Experiment 1 compared to those observed in Experiment 2.

This work was carried out to study the carcass characteristics, the chemical composition and the fatty acid profile in Longissimus muscle (LM) of bull breeds Nellore, NEL (11), Caracu, CAR (12) and Holstein-Friesian, HFR (12) finished in a feedlot. The bulls were fed twice a day with corn silage, cotton meal, cracked corn, urea, limestone and mineral salt. NEL and CAR bulls had similar (p>0.05) final weight and hot carcass weight. However, NEL and CAR bulls had higher (p<0.05) final weight and hot carcass weight than HFR bulls. Carcass hot dressing, carcass conformation, cushion thickness, Longissimus muscle area and texture were similar (p>0.05) among NEL, CAR and HFR bulls. NEL and HFR bulls had higher (p<0.05) carcass length in comparison to the CAR breed. Nellore breed had higher (p<0.05) leg length in comparison to CAR and HFR breeds. Leg length was similar (p>0.05) between CAR and HFR breeds. Thickness fat, color and marbling score were lower (p<0.05) in NEL breed in comparison to CAR and HFR breeds. LM of NEL bulls had higher (p<0.05) meat moisture content in comparison to CAR and HFR bulls. In contrast, lipid content was lower (p<0.10) in HFR bulls. LM ash and crude protein contents were similar (p>0.05) among breeds. Saturated fatty acids (SFA) were higher (p<0.10) in HFR animals. Monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), n-6, n-3 and PUFA/SFA ratio were similar (p>0.05) among the different breeds. N-6/n-3 ratio was higher (p<0.05) in CAR animals.
Thirty-six Najdi ram lambs, weighing an average of 24 kg and circa 3 months old, were utilized in this trial to evaluate the effects of various alfalfa hay particle lengths in the diet on growth performance, digestion coefficients, nitrogen retention and carcass characteristics. Lambs were randomly allotted to three dietary treatments: 9.5 and 14 mm diets, where alfalfa hay was processed to 9.5 and 14 mm particle lengths, respectively, mixed with 3 parts of concentrate and pelleted as a total mixed ration (TMR), and long hay diet, where one part of loose alfalfa hay (17.8${\pm}$2.4 cm) was offered in combination with 3 parts of only-concentrate pellet. All dietary treatments were homogeneous in their ingredient composition. All lambs were slaughtered after a 14-week feeding trial. Although the results showed no significant effect of hay particle length on DMI, TDN and DCP, lambs fed the 9.5 mm pelleted diet had higher (p<0.05) final body weight, ADG, gain efficiency and nitrogen retention than lambs fed the 14 mm and long hay diets. Altering the particle length of alfalfa hay in diets did not affect the digestibility of DM or CP, whereas digestibilities of ADF and NDF were 3.7% and 5.4% higher (p<0.05), respectively, for the long hay diet versus the 9.5 mm pelleted diet. Hot carcass weight, percentage of separable lean from the $9-11^{th}$ rib joint, and percentages of protein and EE in the separable lean increased (p<0.05) as the particle length of alfalfa hay in the diet decreased. Under the conditions of this study, the reduction of particle length in the TMR played an important role in enhancing performance without altering DM consumption, and this may lead to more efficient productivity of lamb fattening compared with longer chopping lengths.
This experiment was conducted to determine and compare some characteristics of the meat and carcass of rabbits aged 11 weeks according to sex. In the experiment thirty male and thirty female New Zealand White rabbits were slaughtered. The weights and percentages of cold carcasses, skin with head and limbs, liver, kidney, heart, lung, fore legs, hind legs, breast and ribs, loin and abdominal wall were recorded. The values for carcass length, lumbar circumference, pH in the muscles of Biceps femoris and Longissimus dorsi, meat to bone ratio and cooking loss were also determined. The mean values for cold carcass weight and cold dressing percentage were 832 g and 48.77% in male and 849 g and 48.69% in female, respectively. In this study no significant differences were shown between male and female rabbits in the characteristics of carcass and meat except the value of pH of Longissimus dorsi muscle which was markedly higher in males than that in females meat. Slaughter weight was positively correlated with the weights of carcass, skin with head and limbs, lung, liver, kidney, heart and weights of joints (p<0.01) and dressing percentage (p<0.05).
Objective: This study aimed to investigate the polymorphisms of the dopa decarboxylase (DDC) gene and association analysis with lamb quality and expression quantification of the DDC gene in phenotypically divergent Indonesian sheep. Methods: The totals of 189 rams with an average body weight of 24.12 kg at 10 to 12 months were used to identify DDC gene polymorphism using polymerase chain reaction-restriction fragment length polymorphism (PCR-RFLP). Among 189 rams, several rams representing various sheep genotypes were used for an association study between genotypes and phenotypic traits with proc general linear model (GLM) analysis. In addition, the gene expression analysis of the DDC mRNA in the phenotypically divergent sheep population was analyzed using quantitative reverse-transcription PCR. Results: The DDC gene (g. 5377439 G>A) showed polymorphisms that indicated three genotypes: AA, AG, and GG. The DDC gene polymorphism was significantly associated (p≤0.05) with carcass characteristics including carcass percentage, carcass length, hot and cold carcass; physical properties of lamb quality including pH value; retail cut carcass; fatty acid composition such as fat content, pentadecanoic acid (C15:0), tricosylic acid (C23:0), lignoceric acid (C24:0), oleic acid (C18:1n9c), elaidic acid (C18:1n9t), nervonic acid (C24:1), linoleic acid (C18:2n6c), arachidonic acid (C20:4n6), cervonic acid (C22:6n3); and mineral content including potassium (K). The GG genotype of the DDC gene had the best association with lamb quality traits. The DDC gene expression analysis mRNA showed no significant difference (p≥0.05) between lamb quality traits. Conclusion: The DDC gene could be used as a potential candidate gene to improve lamb quality.
