  • This study was carried out to investigate the cause of leaf discoloration occurring frequently in paddy cultivation. Chemical property of soil and inorganic nutrient component of leaf were analyzed on abnormal fields of 7 regions where leaf discoloration occurred severely and normal fields of 7 regions among ginseng garden. The pH of abnormal fields was strong acidic condition (pH 5.51) compare to normal fields of slightly acid condition (pH 6.42). Calcium and magnesium content in abnormal fields were lower distinctly than that of normal fields, while EC, organic matter, phosphate, and potassium content showed not distinct difference between abnormal and normal fields. Whereas calcium and magnesium content were distinctly high in normal fields, both of potassium and iron content of ginseng leaf were distinctly high in abnormal fields. In particular, iron content of abnormal fields was more 1.94 times in soil, and 3.03 times in leaf than that of normal fields. In soil chemical property, there were significant negative correlation between leaf discoloration ratio and soil pH, and there were also significant positive correlation between leaf discoloration ratio and iron content. In ginseng leaf, there were highly significant negative correlation between leaf discoloration ratio and calcium content, and there were also highly significant positive correlation between leaf discoloration ratio and iron content.

  • This study was conducted to select the soybean cultivar to minimize the formation of calcium oxalate, and investigate the ingredients for total oxalate (Ox), phytate ($InsP_6$) and minerals such as calcium (Ca), magnesium (Mg), sodium (Na), zinc (Zn), and potassium (K) in 113 recommended soybean cultivars in Korea. Ca content ranged from 0.586 mg/g in Saealkong to 3.177 mg/g in Daolkong, and Mg content ranged from 0.559 mg/g in Taekwankong to 3.085 mg/g of dry seed in Seonheukkong. The total oxalate content ranged from 1.24 mg/g in Seonheukkong to 3.81 mg/g in Ilmikong, and InsP6 content ranged from 0.43 mg/g in Mailikong to 4.72 mg/g of dry seed in Dagikong. In the cross-correlation analysis for the contents of Ca, Mg, Ox and $InsP_6$, Seonheukkong and Danmi2 were selected to minimize the formation of calcium oxalate because the contents of Ca and $InsP_6$ were much higher than the content of Ox. These cultivars could be useful for producing soy foods beneficial to populations at risk for calcium oxalate kidney stones and for improved mineral bioavailability.

  • Mechanism of calcium transport inhibition of cardiac sarcoplasmic reticulum (SR) by oxygen free radicals was examined. Effects of oxygen free radicals generated by xanthine/xanthine oxidase (X/XO) system on isolated porcine ventricle SR were studied with respect to its calcium binding, lipid peroxidation, SH-group content and alteration of membrane protein components. The results are as follows. 1) Calcium binding of isolated SR was markedly inhibited by X/XO. 2) During the incubation of sarcoplasmic reticulum with xanthine/xanthine oxidase, there were marked inclose in lipid peroxidation and reduction of SH-group content. 3) An antioxidant, p-phenylenediamine effectively prevented the lipid peroxidation but partially prevented the calcium binding inhibition of X/XO treated SR. 4) The reduction of SH-group content of SR treated with X/XO was partially prevented by p-phenylendiamine. 5) When modifying SH-group of SR by treatment with DTNB, the inhibition of calcium binding activity was partially prevented. 6) On gel-permeation chromatography of X/XO-treated sarcoplasmic reticulum, there was an increase of small molecular weight products, probably protein degradation products. 7) Semicarbazide, which prevents the cross-linking reaction of protein components, did not affect the calcium binding inhibition of X/XO-treated SR. From these results, it is suggested that the inhibition of calcium binding of SR by oxygen free radicals results from the consequence of multiple changes of SR components, which are lipid peroxidation, SH-group oxidation and degradation of protein components.

  • It is controversial whether low calcium intake, commonly associated with osteoporosis, results in calcium accumulation in soft tissues. This study was conducted to investigate the effects of low calcium (Ca) and oxalate (ox) intake on soft-tissue Ca deposits and bone metabolism in ovariectomized (ovx) rats. Eight week old female Sprague-Dawley rats were ovariectomized and divided into four groups. The rats were fed experimental diets containing low (0.1%, w/w) or normal (0.5%, w/w) Ca with or without sodium oxalate (1%, w/w); Sham/NCa, Ovx/NCa, Ovx/LCa, Ovx/NCa-ox, Ovx/LCa-ox for 6 weeks. All ovx rats showed a remarkable increase in body and tissue weight, glutamic oxaloacetic transaminase, glutamic pyruvic transaminase, blood urea nitrogen, alkaline phosphatase, and decreases in weight, ash, and Ca contents, as well as bone breaking force compared to those in sham rats. Serum Ca concentration was not significantly affected by dietary Ca levels or ox intake. Kidney Ca, ox acid content, and microscopic Ca deposition increased remarkably in the Ovx/LCa-ox group compared to those in the other groups. Ca content in the spleen and aorta also increased significantly, but the weight contents, Ca, bone breaking force, and Ca and oxalic acid in feces decreased significantly in the Ovx/LCa-ox group. Serum parathyroid hormone levels were not significantly different among the groups. These results indicate that low Ca intake decreased bone mineral content and increased Ca deposits in soft tissues, which was aggravated by ox intake in ovx rats. Thus, high ox intake may result in a kidney disorder in patients with osteoporosis who eat a low Ca diet.

  • Utilization of soluble protein recovered from surimi wastewater using calcium powder of cuttle bone were examined. The crude ash content of the heat-induced surimi gel was increased linearly by increasing substitution ratio of recovered protein-ATC toward commercial surimi. Moisture (approximately $76\%$) and lipid $(0.2\%)$ contents were not change, but their protein contents were decreased 15.7 to $14.3\%$ depend on increasing of substitution ratio. The white index of the heat-induced surimi gel by color meter was increased up to $10\%$ of substitution ratio. There were no difference between $0\%\;and\;5\%$ substituted surimi gel in the gel strength. The sensory score on white index and texture of the heat-induced surimi gel did not change in 0 to $10\%$ as a substitution ratio of recovered protein-ATC toward commercial surimi, while decreased in more $15\%.$ The optimal substitution ratio of recovered protein-ATC as a bulking agent was $10\%.$ The heat-induced surimi gel prepared with $10\%$ substitution of recovered protein-ATC was similar to the content and composition of total amino. acids, and superior to calcium content and the ratio of calcium and phosphorus toward those of commercial surimi.

  • Calcium carbonate ($CaCO_3$) content was measured from 3 box core (BC060301, BC060303, BC070301) sediments, in addition to pilot core (PC313) sediments, from deep waters within the Western Pacific Ocean. At the two collection sites (BC060301, PC313) located close to the equator, downcore variation exhibited low $CaCO_3$ content during the interglacial period and high $CaCO_3$ content during the glacial period. Variation of coarse fraction (>$63\;{\mu}m$) content also followed changes in $CaCO_3$ content, indicating that dissolution effect of bottom water decreased during the glacial period. Such variation pattern is typical of the Pacific Ocean. However, downcore variation at the two collection sites (BC060303, BC070301) in the Philippine Sea contrasted the trend of the previous two cores (i.e., high $CaCO_3$ content during the interglacial period and low during the glacial period). This pattern is typical of the Atlantic Ocean. Such results may be attributed to the increasing dilution effect, initiated possibly by the increased transportation of terrigenous materials from nearby continent and archipelago during the glacial period when sea level was low. Alternatively, it is possible that the non-carbonate biogenic particles may have been responsible for dilution. Because of these uncertainties, the record of $CaCO_3$ variation in the deep Western Pacific Ocean is not regionally consistent.

  • The decomposition of litters of Pinus densiflora and the growth of microbial populations in a calcareous region, Youngwal were compared with those in a noncalcareous region, Sinlim. The decay rate of litter in Pinus densiflora in Youngwal was 0.128 and that in Sinlim was 0.096. The differences in the populations of soil bacteria and total microorganisms between the two regions were signficant at the 5% level, but that of fungi and actinomycetes was not at that level. The differences in the content of calcium and pH value of soil between the two regions were significant at the 1% level. The excessive content of calcium became to increase pH value, in turn the high pH decreased the content of available phosphorus in soil. The vertical distribution of the content of available phsophorus was consistent with that of the populations of fungi and actinomycetes in Youngwal.

  • The relationship between bone mineral density and the environmental factors were investigated from the view point of preventing osteoporosis in Korean pubescent girls. The effects of calcium, nutrient intake, physical activity on total bone mineral density, lumbar spine and femoral bone mineral density and total bone mineral content were evaluated 33 healthy pubescent girls aged 14∼16y. A convenient method was used to assess nutritional and energy intake and calcium index was used together. Calcium intake in childhood was estimated by asking whether subjects usually drank milk as children. Eating habits data and history of menstruation were obtained by questionnaire and interview. Average energy expenditure was calculated. Bone mineral density and content were measured by dual energy x-ray absorptiometry using a Lunar DPX+Scanner (Lunar, Madison, WI). The lumbar spine(L2∼L4) and three sites in the proximal femur (femoral neck, trochanteric region, and Ward's triangle)were measured. Height and weight were measured, and the body mass index(BMI) was derived from the formula : BMI=kg/㎡ Statistical analysis was performed by simple correlation using the SAS package. The mean calcium intake (736mg) was below the RDA of 800mg/d. Twelve percent of the total subjects did not drink milk at all because they did not like the taste. Skipping meals, low calcium intake and low energy intake were significantly correlated with the low BMD. Also the data indicate that girls who reported drinking milk with every meal during childhood had significantly higher bone densities than girls who reported drinking milk less frequently. The results suggest that milk consumption in childhood appears to be needed not only for growth and development, but possibly also to assure an optimal peak of bone mass and thus greater latitude for the maintenance or skeletal integrity in the face of bone losses. There was a highly significant correlation between the total BMD and overall level of physical activity. Body weight was a better predictor of total BMD than was and other factor. Simple mechanical loading may explain why body weight, but total BMC was positively relatd to height. Conclusively, increasing calcium intake and physical activity in the pubescent girls could influence BMD.

  • Effect of calcium sulfate and barium sulfate on the formation of portland cement clinker was studied by means of chemical analysis. DTA and X-ray diffraction analysis. In the presence of liquid phase, effect of the additives on the formation of tricalcium silicate was examined according to the reaction, 2CaO.$SiO_3$+CaO$\longrightarrow$3CaO.$SiO_3$, which is the principal reaction in portland cement clinkerization, and optimum conditions in firing clinker concerning amount of additive, firing time and temperature were determined, and its kinetics was referred to. The experimental results are summerized as follow: (1) Appropriate burning temperature range of cement clinker is more limited as the content of calcium sulfate in clinker is increased. Amount of calcium sulfate, firing time and temperature in proper condition of clinkerization is related to each others. Being added suitable quantity of calcium sulfate, firing temperature of clinker can be lowered about $100^{\circ}C$. (2) When 3-5 mole% of calcium sulfate is added, firing time of 15-30 minutes at about $1380^{\circ}C$ is reasonable, and if the content is over7 mole %, firing for 1 hr. or more at $1350^{\circ}C$ is anticipated to be optimum condition. (3) In the reaction of tricalcium silicate formation, the role of barium sulfate as a mineralizer is similar to that of calcium sulfate, but the optimum firing temperature of cement clinker containing barium sulfate tends to be 20-$30^{\circ}C$ higher than that of clinker containing calcium sulfate. (4) When barium sulfate is used as mineralizer, 2-3 mole % of it to tricalcium silicate is recommended and if it is added more than this amount, free CaO is increased rapidly in clinker and alite formation is inhibited.
