  • This study was performed to define the physicochemical characteristics of food waste and food wastewater, and to find the effect of salinity variation experiment, the samples of 1, 2, 3 and 4 were prepared by the salinity of 1.0%, 1.5%, 2.0% and 2.5%, respectively. In experiment, aerobic composting reactors were operated by the model which was composed of half an hour's stirring and 2 hour's aeration per day, for 45 days. Seeds of vegetables of Chinese cabbage and red pepper were seeded at compost-free control, compost 1, 2, 3 and compost 4 for the sake of investigation of germination rate and growth rate of those. The followings are the conclusions that were derived from this study. 1. In food waste, the moisture content was 60%, organic compound content was 95%, total carbon was 47.5%, total nitrogen was 1.6%(therefore, C/N ratio was 30). The values of pH were 4.0 and 3.8 the values of salinity were 0.9% and 1.2%, and the values of conductivity were 7.8 mS/cm and 18.0 mS/cm, respectively. 2. In salinity experiment, the reduction rate of volume was increased(40%) when the salinity was decreased(1.0%). Also, the reduction rate of mass was increased(52%) when the salinity was decreased(1.0%). This fact denotes that salinity hinders the process of composting. 3. Germination rate and growth rate of Chinese cabbage are more excellent than those of red pepper(97.14%, 5.2:2.5 cm). 4. In Chinese cabbage, germination rate and growth rate at compost with the lowest salinity are more excellent than those at compost-free control(97:94%, 5.2:4.5 cm).

  • The purpose of this study was to find out the effects of slow-released nitrogen fertilizer (SRF) on the growth and yield of Chinese cabbage. The SRF used in this study was prepared by embedding urea into a waste paper slum. The underwater dissolution rate of SRF was very rapid during the first 12 hours and 60.4% of the embedded nitrogen was released after 72 hours. The SRF and urea was applied as nitrogen source and growth. yield, yield components, nitrogen uptake of Chinese cabbage were investigated a pot experiment. Maximum leaf length of Chinese cabbage was not different between SRF and urea treatments. Length and wish of head, number of leaf per head and fresh weight of Chinese cabbage were higher in SRF treatment than those in urea treatment, but the differences were not statistically significant. Comparing to the urea treatment, nitrogen content and nitrogen uptake efficiency of Chinese cabbage were significantly higher in SRF treatment. After the experiment, total soil nitrogen contents were not different between the SRF and urea treatments.

  • Major characteristics of waste brine from the repeated salting and rinsing processes of Chinese cabbage for Kimchi were investigated. Salt concentration of brine was increased with the number of successive salting steps from 12% after 1st salting step to 14% after 5th step. Total waste brine which is the representative of wastewater produced from salting process of cabbage showed 6-8% salt concentration. The pH values in all samples decreased with the number of reuse of brine and showed pH 5.9 and pH 5.2 for the mixture of brine for quarter-cut and small-cut cabbage, respectively, after 5th salting process. Soluble solid contents increased with repetition and resulted in 14-16 $^{\circ}Brix$. Total brine showed increased COD values with the number of reuse of brine and 40-50 ppm of COD values for both quarter-cut and small-cut cabbages.

  • Although the storage period of raw baechu cabbage could be 2 months at $0{\sim}2^{\circ}C$, 1 month was appropriate considering the quality of the baechu cabbage, waste ratio, and storage cost. The polyethylene container was the most efficient storage container among polypropylene box, polypropylene net and polyethylene container. pH of a brined baechu cabbage using raw baechu cabbage was 4.0~4.3 after 8 weeks and its total bacteria and lactic acid bacteria counts were $10^7$ cfu/g, and textural property (springiness) lower than 50% was at 8th week of storage at $0{\sim}2^{\circ}C$ and thus its storage period was limited to 8 weeks. When brined baechu cabbage was prepared by raw baechu cabbage stored for 1 month at $0{\sim}2^{\circ}C$, its pH, microorganism counts and springiness showed similar trends to the brined cabbage using raw baechu stored for 0 month. However, its rates of change were faster than the brined baechu cabbage using the raw baechu, and the storage period was limited to 6 weeks. Brined baechu cabbage using the raw cabbage stored for 2 months and its storage period was limited by about 4 weeks judging by its indicated quality characteristics.

  • Microalgae do not require much land and make a higher efficient oil production. However, it costs still much higher than other biodiesel resources, such as crops. Sugars charge 80% of culture media when microalgae are massively cultured in the fermenter. This study aims to develop a cost-efficient process for sugar production from Chinese cabbage byproducts. Pre-treatment with 0.25% H2SO4 was most effective when chopped cabbage was incubated 50℃/130 rpm for 24 hours. To hydrolyze cabbage cellulose, we used cellulases secreted from Trichoderma. harzianum. T. harzianum was cultured at 28℃/pH 7/130 rpm for five days. Optimal enzymatic activity of cellulase was obtained by incubating at 0.24 FPU/ml/45℃/pH 5/130 rpm for three days. In comparison to other agricultural waste, such as rice straw, green tea leaves, and palm residue, Chinese cabbage produced the highest sugar yield. We found the optimal conditions to produce sugar from Chinese cabbage byproducts as a carbon source to culture biodiesel-producing microalgae. The efficient process developed in this study helps microalgae as a sustainable alternative energy source by cost-down.

  • The purpose of this study was to investigate food services and plate waste of the elementary school children in the urban, rural and suburban areas of Taegu and Kyoungpook province. Statistical data analysis was performed using the SPSS programs for Crosstabs analysis T-test, One-way Anova and Pearson's correlation. The results were as follows: The serving size of rice was greater in suburban area than in rural and urban area by the physical estimation. The amount of soup given was the greatest in rural area. The rate of waste in soup was higher than that of rice. Among side dishes, plate waste rate of braised potato was the highest in rural, then suburban and urban area. There were significant differences (p < .001) among the schools in the three areas. Especially, plate waste rate of cucumber and cabbage salad was the highest in all three areas. Then finally the serving size and plate waste rate of Kimchies were the greatest in rural, then suburban and urban schools. There were significant differences in 'spice pickled cabbage'(p < .001) and 'spice pickled radish'(p < .01) among the three areas. Plate waste amounts of egg soup and pine mushroom soup in urban area were greatest. In rural area, side dishes except egg soup, cabbage salad and Kimchies had a greater amount of plate waste. In suburban areas, there were smaller plate waste amount in rice, but plate waste amounts of pine mushroom soup and beef soup were great. Plate waste rate of rice and 'Kimchies' by children's rating estimation were significantly higher in rural than suburban and urban areas. There were no significant differences in plate waste rate of the given food except braised chicken (p < .001), soup (p < .001) and 'Kimchies' (p < .05) between the physical estimation and the children's rating estimation. Increased satisfaction on food service in most menus resulted decreased plate waste rate. There was a significant degree of satisfaction on the amounts of food served.

  • Solid and liquid phase peroxidases were extracted from Chinese cabbage roots by using commercial juicer in order to use peroxidases from agricultural waste for industrial applications. Since peroxidases are distributed into 66% in liquid (juice) and 34% in solid phase (pulp), enzymes from both phases were applied to investigate the enzymatic removal of phenol from waste water. After contacting 150 ppm Phenol solution with liquid phase enzyme (1,800 unit/$\ell$) for 3 hours in a batch stirred reactor, 96% of phenol could be removed through polymerization and precipitation. Also, phenol could be removed from initial 120ppm to 5ppm by applying solid phase enzyme in an air lift reactor ($600 unit/\ell$). Almost equivalent efficiencies of phenol removal were observed between two systems, even though only one third of the enzymes in batch stirred reactor was applied in airlift reactor. The possible reason for this phenomenon is because peroxidases exist as immobilized forms in solid phase.

  • Purpose: The objective of this study was to evaluate the biogas productivity of agricultural by-products (ABPs) based on their proximate composition. Specifically, the effects of proximate composition were investigated, and a new mixing method was developed using various ABPs that are difficult to digest for biogas production. Methods: Experiments were conducted to compare the biogas productivity between a single ABP and a mixture of ABPs that had the same proximate composition as the single ABP. To match the proximate compositions of radish waste and corn distiller's dried grains with solubles (DDGS), mixed ABPs were made from various ABPs. Biogas potential tests (BMP tests) were performed at an organic loading rate (OLR) of 2.5 g VS/L and a feed to microorganism ratio (F/M) of 0.5 under the mesophilic condition. Results: The individual ABPs (radish and corn DDGS) and the mixed ABPs (cabbage waste with skim milk waste, bean-curd waste with skim milk waste, and some others) produced similar amounts of biogas. Conclusions: The new mixing method based on proximate composition can be applied to other ABPs and organic wastes from factories and municipal waste treatment plants to develop renewable energy and effective waste treatment methods.

  • Rendering, is attracting attention as a technology that can stably and quickly process livestock carcasses. However, large amounts of livestock carcass solid residues are discharged in this process and limited methods are available for recycling them. In this study, rendered animal carcass solid residues were pyrolyzed to produce carbonized materials (350℃; RACR-C) and their chemical properties were investigated. Further, RACR-C were applied to cabbage cultivation for investigating their crop growth characteristics and soil improvement effects. RACR-C contained large amounts of fertilizer components such as nitrogen and phosphorus, and showed no toxic effects on the seedling growth of crops. The content of water-soluble nutrients released from RACR-C under the reaction time increased rapidly within 30 min, but was insignificant compared to the total content. Thus, most fertilizer components in RACR-C were not readily soluble in water. The optimal application amount for applying RACR-C to cabbage cultivation based on the changes in cabbage growth, inorganic content, and soil chemistry was 200 kg/10a. Overall, pyrolysis of solid residues after rendering livestock carcass to produce carbonized material as a soil improver is an effective method to recycle the waste discharged from the rendering process.

  • This experiment were carried out to clarify the effects of several factory wastes on the emergence and seedling growth of five crop species, rice, Chinese cabbage, melon, and tomato. Wastes of three factories treated by several concentrations on the soil in which crop were seeded. In rice seedling experiments, the rice seedlings were treated with factory wastes hydroponically. Factory wastes used in the experiment were obtained from leather, phenol resin, and dye factory. The growth of rice seedlings was inhibited by each factory wastes, but the dry weight of rice seedling was increased by the low concentration below 1/16 dilution of leather factory waste. During 15 days, dry matter accumulation of rice seedlings treated with undiluted factory wastes decreased to 46.0, 51.4, -5.4% of control by treating wastes of phenol resin, leather, and dye factory respectively. The injury of crops by leather factory waste was severe in tomato but slight in barley. Waste of phenol resin factory affects highly both on Chinese cabbage and on melon. When dye factory waste was treated on each crop, all plants died in the treatments of waste solution which diluted to 1/8 of original waste. Tomato and melon were most sensitive crop species to the waste of dye factory. Although the responses of crops to each factory waste were various, the degree of injuries were more higher in vegetables than cereal crops.
