Meat quality characteristics of pork bellies in relation to fat level

  • Objective: Pork belly is considered as the most commercially important and preferable primal cut by consumers worldwide. Thus, this study was conducted to determine the effects of fat levels on the meat quality characteristics of pork bellies. Methods: Seventy-eight growing-finishing pigs collected from different commercial pig farms were slaughtered and used in the present study. After slaughter 24 h, bellies were fabricated according to the Korean Pork Cutting Specification, and immediately sampled for analysis of their fat content. Based on the fat levels, the bellies were segregated into three different groups: low fat (LF, fat ≤20%, n = 15), medium fat (MF, fat 21% to 30%, n = 30), and high fat (HF, fat ≥31%, n = 33). The bellies were then analyzed for meat quality traits, fatty acids, flavor compounds and eating quality properties. Results: The HF group had lower moisture and cooking loss levels compared to the other groups (p<0.05). The LF group presented higher proportions of polyunsaturated fatty acids compared to the other groups (p<0.05). The LF group showed higher amounts of the Maillard reaction-derived flavor compounds (e.g., 2,5-dimethyl pyrazine, 2-ethyl-3,5-dimethyl, and 4-methylthiazole) associated with meaty and roasty flavors whereas, the HF group showed higher amounts of oleic acid- derived compounds (e.g., nonanal and octanal) associated with the fatty and oily flavors. Interestingly, significantly higher scores for all the eating quality attributes (flavor, juiciness, tenderness, and overall acceptance) were found in the HF group compared to those in the LF or MF group (p<0.05). Conclusion: The high-fat bellies (fat ≥31%) had a better technological quality and eating quality compared to the low-fat bellies (fat ≤20%). Thus, increasing the fat content may improve the technological quality and eating quality traits of pork bellies, however, this increase may also result in more trimmed loss due to excessively deposited body fat.

Adzuki bean (Vigna angularis) extract reduces amyloid-β aggregation and delays cognitive impairment in Drosophila models of Alzheimer's disease

  • BACKGROUND/OBJECTIVES: Alzheimer's disease is a neurodegenerative disease that induces symptoms such as a decrease in motor function and cognitive impairment. Increases in the aggregation and deposition of amyloid beta protein ($A{\beta}$) in the brain may be closely correlated with the development of Alzheimer's disease. In this study, the effects of an adzuki bean extract on the aggregation of $A{\beta}$ were examined; moreover, the anti-Alzheimer's activity of the adzuki extract was examined. MATERIALS/METHODS: First, we undertook thioflavin T (ThT) fluorescence analysis and transmission electron microscopy (TEM) to evaluate the effect of an adzuki bean extract on $A{\beta}_{42}$ aggregation. To evaluate the effects of the adzuki extract on the symptoms of Alzheimer's disease in vivo, $A{\beta}_{42}$-overexpressing Drosophila were used. In these flies, overexpression of $A{\beta}_{42}$ induced the formation of $A{\beta}_{42}$ aggregates in the brain, decreased motor function, and resulted in cognitive impairment. RESULTS: Based on the results obtained by ThT fluorescence assays and TEM, the adzuki bean extract inhibited the formation of $A{\beta}_{42}$ aggregates in a concentration-dependent manner. When $A{\beta}_{42}$-overexpressing flies were fed regular medium containing adzuki extract, the $A{\beta}_{42}$ level in the brain was significantly lower than that in the group fed regular medium only. Furthermore, suppression of the decrease in motor function, suppression of cognitive impairment, and improvement in lifespan were observed in $A{\beta}_{42}$-overexpressing flies fed regular medium with adzuki extract. CONCLUSIONS: The results reveal the delaying effects of an adzuki bean extract on the progression of Alzheimer's disease and provide useful information for identifying novel prevention treatments for Alzheimer's disease.

균열방지 슬리브가 매설된 패널식 옹벽 (Concrete-Panel Retaining Wall anti-crack sleeve inserted)

  • 우리나라는 산지가 70% 이상으로 도로, 철도, 산업단지 조성 등의 기반시설 구축시 원지반 일부를 깍아 부지를 형성하는 이른바 깍기 비탈면이 널리 쓰이고 있다. 최근에는 환경 훼손에 대한 규제가 더욱 엄격해져 대규모 깍기 비탈면을 지양하고 최소한의 용지사용으로 목적구조물을 건설하기 위하여 다양한 방법의 공법들이 개발되어 적용되고 있으며, 그 중 활발하게 적용되는 공법이 패널식 옹벽 공법이다. 패널식 옹벽은 지보재 보강을 통한 원지반의 전단강도 증가와 그 지보재 전면에 프리캐스트 옹벽을 체결하여 벽체를 형성시킴으로써 수평토압에 저항하는 공법이다. 지보재는 쏘일네일링, 어스볼트, 그라운드앵커 등이 사용되고 있으며, 그 중 그라운드앵커는 강선에 미리 인장하중을 도입하는 보다 적극적인 보강형태로 전면판인 패널에 큰 집중하중이 작용하게 된다. 이러한 집중하중은 콘크리트 패널에 균열을 발생시키고 옹벽 자체의 내구성을 저해시키는 요인으로 본 연구에서는 이러한 기존 패널식 옹벽의 단점을 보완하기 위하여 패널 정착부에 강관 슬리브 및 보강재를 매입함으로써 균열을 방지하고, 패널 단부에 요철 모양의 전단키를 적용하여 기존 그라우트앵커가 가지는 개별거동에 대한 취약점을 보완하여 안정성을 향상시켰으며, 옹벽 전면 콘크리트 노출 및 정착부 돌출에 의한 경관성 저하문제를 자연석 문양 연출과 정착부를 돌출시키지 않는 단면구성으로 해결하였다. 패널에 사용된 균열방지 슬리브 및 보강재의 효과를 검증하기 위하여 실내시험 및 3차원 수치해석을 수행한 결과, 강관슬리브 및 보강재의 사용으로 패널의 전반적인 강도 증가와 균열억제 효과가 입증되었다.

Carcass characteristics and meat quality of purebred Pakchong 5 and crossbred pigs sired by Pakchong 5 or Duroc boar

  • Objective: This study investigated carcass characteristics and meat quality of purebred Pakchong 5, crossbred pigs sired by Pakchong 5, and crossbred pigs sired by Duroc. Methods: Forty-eight pigs (average body weight of 22.25 kg) were composed of three groups as purebred Pakchong 5 (PP), Large $White{\times}Landrace$ pigs sired by Pakchong 5 (LWLRP), and Large $White{\times}Landrace$ pigs sired by Duroc (LWLRD). Each group consisted of eight gilts and eight barrows. At 109-day-raising period, pigs were slaughtered, and carcass characteristics were evaluated. Longissimus thoracis (LT) muscles from left side of carcasses were evaluated for meat quality and chemical composition. Data were analyzed using general linear model procedure, where group, sex, and their interaction were included in the model. Results: The PP had greater carcass, total lean, and ham percentages than crossbred pigs (p<0.05). LWLRP had thicker backfat and more carcass fat percentage than LWLRD (p<0.05). There were no differences (p>0.05) on cutting percentages from tender loin, loin, boston butt, and picnic shoulder among groups. The PP and LWLRP had larger loin eye area (LEA) than LWLRD (p<0.05). Gilts had more loin percentage and lower $L^*$ value than barrows (p<0.05). No meat color parameters ($L^*$, $a^*$, and $b^*$) were affected by groups (p>0.05). PP and LWLRP had larger muscle fiber diameters than LWLRD (p<0.05). However, water holding capacity, Warner-Bratzler shear force values, and chemical composition of LT were not affected by group or sex (p>0.05). Conclusion: Pakchong 5 purebred has good carcass and lean percentages. Compared to Duroc crossbred pigs, Pakchong 5 crossbreds have similar carcass and lean percentages, larger LEA, and slightly more carcass fat, with comparable meat quality and chemical composition. Pakchong 5 boars are more affordable for very small- to medium-scale pig producers.

국내 유통 합판의 수종식별을 위한 해부학적 특성 분석 (Analysis of Anatomical Characteristics for Wood Species Identification of Commercial Plywood in Korea)

  • 전 세계적으로 불법목재 방지를 위한 국제적 노력이 확대되고 있으며, 우리나라는 국내에 수입·유통되는 목재의 합법성을 강화하기 위하여 2019년 '합법목재 교역촉진제도'를 시행하고 있다. 합법목재 교역촉진제도는 목재, 목재제품 등을 수입할 시 생산 국가, 수종, 벌채지 등에 대해 합법한 목재임을 입증하는 제도이다. 입증 방법에는 주로 DNA 분석 기술과 현미경을 이용한 해부학적 특징 분석이 함께 이용되고 있다. 따라서, 본 연구에서는 다양한 목재제품 중에 우선적으로 합판의 해부학적 특성을 분석하여 수종 식별을 하였다. 공시재료는 합판 생산 기업의 합판(7, 9ply)을 취급하는 4업체를 선정하여 미송(Pseudotsuga menziesii (Mirb.) Franco.) 및 낙엽송(Larix kaempferi (Lamb.) Carriere)합판을 구입하여 시료를 확보하였다. 각 회사의 합판을 약 1cm3 크기로 절삭한 뒤, 표판부터 이판까지 하나의 단판으로 분리하여 광학현미경을 이용하여 3단면을 관찰하였다. 수종식별 결과, 침·활엽수 혼합 합판과 소나무류, 포플러류, 낙엽송·소나무류의 혼합으로 구성되어 있었다. 현미경법을 이용한 목재의 수종식별은 무분별한 불법 목재의 유통 및 불법 벌채 위험국가로부터 수입되는 합판을 비롯한 다른 여러 가지 목재 제품을 과학적으로 분석·검증할 수 있는 중요한 분야이다

선박 제조 공정 분야에서 수용접 대체를 위한 용접 로봇 시스템 도입의 적합성 분석 연구 (A Study on the Suitability Analysis of Welding Robot System for Replacement of Manual Welding in Ship Manufacturing Process)

  • Welding work is a production work method widely used throughout the industry, and various types of welding technologies exist. In addition, many methods are being studied to automate these welding operations using robots, but in the ship manufacturing field, welding such as painting, cutting, and grinding is also the most common operation, but the manual operation ratio is higher than in other industries. Such a high manual labor ratio in the field of ship manufacturing not only causes quality problems and production delays according to the skill of workers, but also causes problems in the supply and demand of manpower. Therefore, this paper analyzed the reason why the automation rate is low in welding work at ship manufacturing sites compared to other industries, and analyzed the production process and field environment for small and medium-sized ship manufacturing companies that repeatedly manufactured with a small quantity production method. Based on the analysis results, it is intended to propose a robot system that can easily move between workplaces and secure uniform welding quality and productivity by collaborating simple welding tasks with humans. Finally, the simulation environment is constructed and analyzed to secure the suitability of robot system application to current production site environment, work process, and productivity, rather than to develop and apply the proposed robot system. Through such pre-simulation and robot system suitability analysis, it is expected to reduce trial and error that may occur in actual field installation and operation, and to improve the possibility of robot application and positive perception of robot system at ship manufacturing sites.

치자(梔子)의 부위별 Geniposide정량 및 항산화효능비교 (Comparison of geniposide quantification and antioxidant effect among the various parts of Gardeniae fructus)

  • Objectives : The objective of the paper was to study cutting method of Gardeniae frutus, that tends to show symptom of separations in a packing, in accordance with the comparison experiment of quantification and antioxidant effect proceed with the intact Gardeniae fructus(Gf), seed of Gardeniae fructus (Gs) and the pericarp of Gardeniae fructus (Gp) separately. Methods : The Gf, Gs, and Gp were extracted using 80% MeOH, followed by quantizing geniposide contained in each group. A MTT assay was conducted and ROS generation and NO production were measured for comparing its antioxidant effect. Results : As a result of quantizing geniposide contained in the Gf, Gp, and Gs, respectively, the geniposide content was shown to be the highest in the Gs. MTT assay showed that no cytotoxicity was observed in the groups treated with Gf, Gp, and Gs, respectively, at a dose of 500 ${\mu}g/ml$. The ROS generation was shown to have more significantly decreased in the group pretreated with Gf 500 ${\mu}g/ml$ than in the group treated with LPS. The NO level was shown to have more significantly decreased in the group pretreated with Gp 500 ${\mu}g/ml$ than in the group treated with LPS. Conclusion : As the geniposide content and antioxidant effect of Gf varies according to its each part, it is recommended that Gf should be distributed as an intact form other than segregation in packing.

밀링과 소결과정이 지르코니아 보철물의 완성도에 미치는 영향에 관한 문헌고찰 (Effect of milling and sintering process on integrity of zirconia prosthesis: a literature review)

  • 지르코니아는 다양한 공정과정을 거쳐서 제작되며, 각각의 요소는 최종 보철물의 물성에 영향을 줄 수 있다. 특히 밀링과정과 소결과정이 모두 지르코니아 보철물의 최종 완성도(integrity)에 영향을 미칠 수 있다. 밀링머신은 대부분 초정밀 5축 가공방식을 채택하고 있으며 어떤 방식을 사용하고 밀링기구를 어떻게 관리하는가에 따라서도 결과가 달라진다. 밀링블록은 절삭의 효율성과 심미재현성에 따라 선택하는데 물성의 변화를 야기할 수 있음은 주의해야 한다. 소결방식은 입자성장과 광학적 특성에 영향을 미칠 수 있는데 속도를 조절하는 최근의 방식에 대해서는 추가적인 연구가 동반되어야 정확한 평가가 이루어질 수 있다. 소결온도 뿐 아니라 온도 유지시간도 최종결과물에 영향을 줄 수 있다.

생태계교란식물인 돼지풀아재비의 발생특성과 관리 (Occurrence characteristics and management of Parthenium hysterophorus, an ecosystem disturbing plant)

  • 환경부에서 생태계교란식물로 추가 지정된 돼지풀아재비의 분포, 형태·생리·생태적 특성 그리고 다양한 제거방법 등을 정리하여 효율적인 관리방안을 제시하고자 한다. 중앙아메리카가 원산지인 돼지풀아재비는 전 세계적으로 45개국에서 발생하고 있지만, 우리나라에서는 경상남도 통영 및 창원의 일부지역에서만 생육하고 있다. 이 식물은 한해살이풀로 종자로 확산되며, 수입 농산물에 포함되거나 차량이나 농업용 기계에 부착되어 인근으로 그 영역을 넓히고 있다. 돼지풀아재비의 줄기와 뿌리에서 타감물질인 파르테닌 등이 분비되어 주변 식생의 발생을 억제한다. 또한 다양한 알레르겐을 함유하고 있어 인간과 가축에 피해를 주는 식물이다. 돼지풀아재비와 같은 유해식물이 발생되면 관계기관에 신고하는 제도적인 관리방안이 마련되어야 한다. 돼지풀아재비의 줄기를 절단하거나 제거하는 등의 물리적 방법 그리고 glyphosate와 같은 비선택성 제초제 처리로 방제할 수 있다. 생물학적 방제연구는 많이 수행되었으나, 우리나라의 법률과 제도의 미비로 국내에 적용 가능한 것은 제한적이다.

Effect of Application over Time for Each Type of Blending Tea on Bovine Tooth Coloration

  • Background: This study aimed to investigate the effect of selecting commercially available blending teas and applying them to bovine teeth on color change over time. Methods: After selecting healthy bovine teeth, using a cutting-disc, 105 specimens with a dimension of 5×5×3 mm were prepared, and 15 specimens were distributed to each group. Black tea was used as a positive control, water was used as a negative control, and blended tea of five types was used as an experimental group. First, pH and buffering capacity were measured with a pH meter, and tooth color was determined using a spectrophotometer before immersion in the blending tea solution and 1, 5, 7, 14, and 21 days after immersion. Thereafter, the shape change of the enamel surface was observed using a scanning electron microscope, and SPSS ver.26 was used to analyze the color change. Results: The average pH of the five blending teas in the experimental group was 3.78, and the pH of group 3 (strawberry rhubarb) was the lowest at 3.22. The pH levels of black tea and water were 5.19 and 7.30, respectively. The buffering capacity was the highest in group 3 at both pH levels of 5.5 and 7.0. The L*a*b* color change according to immersion time was the largest in group 4 (rooibos yellow flower), and the amount of color change was large in black tea and group 4. As a result of observing the enamel surface of bovine teeth, changes in the surface shape were noted in all groups immersed in the experimental solution for 21 days, except for water. Conclusion: There was a significant difference between the experimental groups in terms of color change according to the immersion time, and color and enamel surface changes were observed in black tea and all experimental groups, except for water.
