The purpose of the study is to review the evolutional process of the U.S. broiler industry into the integrated production and marketing systems and to examine the factors influenced such a structural change over the Past half a century. The study is also carried out under the consideration that the experience gained by the integrated U.S. broiler industry could be utilized in applying the system to any non-integrated broiler industries like one in Korea. The U.S. broiler industry has been prevailed in the typical independent operation of all stages, from factor supply through growing to dressing and marketing until such time as growers began to suffer from financial difficulties right after the end of the World Wat II due mainly to lowered price of broilers stemmed from whopping decrease of the demand, which eventually reflected to the allied agribusiness sectors. The feed business field was the first reactor to this situation so that a kind of measures was taken to cope with the problems faced in such a way to provide extended credit on feeds first and help obtain chicks or sell broilers later. This trend has been practiced for broiler related agribusiness through late 1940's to work together with growers by coordinating its function between two or more stages involved in broiler production and marketing process as a means of spreading risk and sharing profit between stages Participated. The integrated system and contract farming thus became Popular across the country through mid 1950's.
The purpose of this presentation is to review the situation of the Cheju broiler industry peculiarized with the integrated production and marketing system to some degree, which is not prevailed in the whole broiler industry in Korea, so as to study the case of the Cheju industry from the viewpoint of an economic integration. The economic integration in the broiler industry is grouped into three patterns: non-integration, quasi-integration and complete integration, which generally exist under the different type of market competition. The quasi-integration tends to be formed at all phases where the complete integration is not fully implemented, but the non-integration has begun to change its nature into partially integrated structure. The Cheju broiler industry is characterized by the geographical location of isolated market so that factor supplies and broiler products are marketed in the different conditions from those of mainland Korea, somewhat in an oligopolistic pattern. It was since early 1980's that the industry successfully had three dressing plants merged into one by virtue of entire growers ownership, which opened an era of an integrated industry centered on the function of dressing birds. The case of Cheju broiler industry today is to be referred to as a typical quasi-integration which is coordinated the function between growing and dressing birds directly and extended the functional cooperation to distribution of products indirectly, while factor supplies are traded independently. As a result of a quasi-integration, the growers are able to receive a fixed price set by the dressing plant of growers that has the power to adjust the supply of and demand for broilers produced and consumed in the Island. There are some problems, however, in the integration of the Cheju broiler industry, stemming mainly from the process of the structure change, : 1) the difficulty of controlling the production of broilers, 2) continuing pressure on the integration by non-integrated sectors, 3) the challenge on the stabilized broiler market from the mainland, 4) limited effectiveness of consumer education activities, and 5) lack of leadership for the industry development through integration. It is projected that the partially integrated Cheju broiler industry will be continually developed toward the direction of a complete integration in due course, as the currently independent supply sectors are to be backward integrated. The case of the Cheju broiler integration, therefore, could be used as a reference for making the whole broiler industry in Korea develop toward the integrated structure in the future.

Improvement in domestic poultry production has a positive effect on the export competitiveness of the poultry industry. However, overproduction and enlargement of facilities to assure a supply increase a stocking density which make a poor environment in the broiler house. In particular, an intensive rearing environment is vulnerable to dust control that causes respiratory diseases, such as asthma, bronchitis, etc., to farmers and broilers. However, monitoring data and research for environment control are not adequate, and there are no air quality regulations in broiler houses in Korea. In this study, TSP, PM10, inhalable dust and respirable dust concentration were monitored according to season, age of broiler and broiler's activities. Air quality assessment was also performed in accordance with the threshold limit value by Donham et al. (2000). The TSP concentrations were 77.5 %, 219.7 % higher and PM10 concentrations were 121.2 %, 303.8 % higher when change of season and winter respectively than summer. There were significantly different concentrations according to season and age of broiler. Inhalable and respirable dust concentration were also clearly different according to the season and age of broiler. A high dust concentration was observed, specifically exceeding the threshold limit by 119 % in the winter. In the case of the broiler's motion was activity according to worker's access into the broiler house, concentration level was 769.6 % higher than broiler's motion was stable and exceeded the threshold limit. These results suggest that the worker should put on protective equipment to protect there's respiratory health in the broiler house.
This is to provide basic information and technical data, supported by literature search, for use in designing and /or evaluating ventilation systems for broiler shelters. At first, the general design information including weather data, building requirements, ventilation requirements, and supplemental heating and cooling, was presented. Then, environment requirements for broilers, which are for temperature, humidity, air movement, radiant heat, were described and the optimal ventilation systems for broiler were developed.
The large amount of tissue culture medium (TCM), which contains some of the active secretory components of Korean wild ginseng (KWG; Panax ginseng) such as saponins, is usually discarded after harvest of KWG. The present study was aimed to investigate the efficacy of oral administration of the TCM-KWG on growth performance and diseases resistance in broiler chickens. A day old broiler chickens randomized in 6 groups (n = 60/groups) were administered orally with 0, 2, 4, 8, 16 and 32 mL/L TCMKWG through drinking water for 5 weeks and examined the change of weight gain, feed intake and blood components. Also, five weeks old broiler chickens (n = 15/groups) were challenged orally with Salmonella (S.) gallinarum and investigated the mortality in broiler chickens. An average weight gain and feed intake significantly didn't change in TCM-KWG administration groups as compared to control group. The concentration of calcium (Ca), phosphate (Pi) and potassium (K) in serum were increase by TCM-KWG administration in broiler chickens. We also found that oral administration of TCM-KWG through drinking water significantly reduced the mortality in broiler chickens experimentally infected with virulent S. gallinarum. The results of this study indicated that TCM-KWG administration may elevate the resistance on disease and improved the skeleton formation and body homeostasis of chickens, and TCM-KWG can be used as a cost-effective and environmentally alternative additives to control of the disease and growth.
A broiler experiment was conducted to compare the effects of supplementary iron sources and levels on the iron content of broiler meat. Two hundred and fifty hatched Ross broiler chickens were randomly assigned to 5 dietary treatments. Each treatment had 5 replicates of 10 birds (5 males and 5 females). Birds were housed in raised floor batteries and fed traditional broiler diets ad libitum for 5 weeks. Dietary treatments were as follows: Control, Fe-Met 100 (100 ppm iron as Fe-methionine), Fe-Met 200, $FeSO_4$ 100 (100 ppm iron as $FeSO_4{\cdot}7H_2O$) and $FeSO_4\;200$. There were no significant differences among treatments in parameters related to production performance. Liver contained approximately 10 times more iron than the leg muscle which contained approximately 3 times more iron than either breast muscle or wing muscle. Significant differences in iron content in the broiler meat were observed. In the breast meat, Fe-Met treatments were significantly (p<0.05) higher than other treatments in iron content. In the leg meat, Fe-Met treatments and $FeSO_4\;200$ treatment were significantly higher than the control in iron content. In the wing muscle, Fe-Met 200 treatment was significantly higher than other treatments in iron content. Iron content in the liver was significantly influenced by source and supplementation level of iron. Fe-Met treatments were higher than $FeSO_4$ treatments and 200 ppm treatments were higher than 100 ppm treatments in iron content in the liver. It is concluded that iron-methionine chelate is more efficient than iron sulfate and 200 ppm iron supplementation as Fe-Met is recommended for maximum iron enrichment in broiler meat.
This study was conducted to investigate the effects of feeding dried leftover food (DLF) on growth, body composition and feed conversion of broiler chicks. One hundred ninety-six of one-day old Ross broiler chicks were assigned to 7 treatments in a completely randomized design. Each treatment had four replications with seven chicks per replication. The treatments groups included control without DLF, dietary 10% level of DLF, dietary 20% level of DLF and dietary 30% level of DLF, 5% higher protein level of diet containing 10% DLF, 10% higher protein level of diet containing 20% DLF and 15% higher protein level of diet containing 30% DLF than control diet. Body weight gain was slightly higher in control group than that of DLF-fed groups. However, there were no significant differences in body weight gain among those groups fed diets containing different levels of DLF. In general, increasing dietary level of DLF resulted in decreasing feed conversion. Content of crude protein in whole broiler body was slightly higher in control group although any significant difference was not found among treatments (p>0.05). Content of crude fat in whole broiler body was lowest in groups fed diets containing 30% DLF with 15% higher protein level than control diet, showing significant difference from groups fed diets containing 20% DLF (p<0.05). Contents of total cholesterol, free cholesterol, cholesterol ester and LDL- cholesterol in blood of broilers fed DLF-containing diets generally appeared to be higher compared with control group without significant difference (p>0.05). Fatty acid contents in broiler meat were higher in the order of oleic acid, palmitic acid and linoleic acid without significant differences among treatments. Content of DHA in broiler meat was higher in groups fed diets containing DLF than that of control group although there were no significant differences among treatments (p>0.05).
To develop environmentally friendly bio-materials for animal feed, the potential of using mushroom was studied. Adding Flammulina velutipes cultivation media wastes (FCMW) has shown beneficial effects on broiler meat quality and production cost because of the $10{\sim}20%$ saving in feeds for broiler chicken. However, differences proximate composition between FCMW and commercial broiler chicken feed were observed. FCMW had higher contents of crude fat (6.2%) and crude fiber (13.7%) than the commercial broiler feed which had crude fat and crude fiber of 4.0%, and 6.0%, respectively. But FCMW crude protein contents were lower (12.2%) than those in commercial broiler (19.0%). Adding $5{\sim}10%$ of FCMW to broiler chicken feed increased amino acid concentration upto $33{\sim}38%$ in the meat, but adding more than 20% decreased amino acid concentration.
The Purpose of this study is to examine both supply and demand side of broiler chicken in Korea. Especially the paper aims to investigate the broiler chicken production Dressing and marketing pattern which may affect the demand for it. It is generally understood that broiler chicken production becomes unstable because of frequent market price fluctuation mainly due to disequilibrium of quantities demanded ana supplied It is important to point out that marketing in the form dressed chicken has been enforced by the regulation in Seoul area since March 1st, 1983, though live birds have been customarily marketed for year. It is assumed that the subsituation of chicken meat for beef would save foreign exchanges, because increasingly large amount of beef is imported mainly thanked to a chronical shortage in local production. Main findings of this study may be summarized as follows: 1) Broiler chicker production has been rapidly increased recently, estimating 180-200 million head per year with the trend of contineous increase year after year. Price fluctuation during the year is found, especially summer and winter mainly due to seasonal demand change. It is known that mal-funconing of broiler chicken market may be one of the causes for a large Price fluctuation. Accordingly the increase of marketing efficiency may reduce the price fluctuation and also positively impact on creating demand for the chicken consumption. 2) It is also interesting to note that 90 percent of broilers are grown on the floor and almost 86 percent of total broilers composed of so called high-bros, weighing on an average more than 1.6kg per head Approximately 8 weeks are required for of around marketing birds at the feed efficiency of around 2.3-2.5 Average broiler farm raises between 1,000 and 2,000 head, showing a quite small scale of operation. Only a few sampled farmers follow an all-in and all-out method in broiler production.
The objective of this study was to characterize the meat quality traits that affect the texture and savory taste of Ufipa indigenous chickens by comparing the proximate composition, physical characteristics, collagen, and nucleic acid contents with those of commercial broilers. It was found that Ufipa chicken breast and thigh meat had a higher protein content (p<0.05) than broiler chicken meat, whereas the fat content was lower (p<0.01). The moisture content of thigh meat was lower in Ufipa chicken meat than in broiler chicken meat (p<0.05). Regarding meat color, broiler chickens had considerably higher L* and b* than Ufipa chickens in both the breast and the thigh meat, except for a* (p<0.01). Regarding water holding capacity, Ufipa chicken breast exhibited higher drip loss but lower thawing and cooking losses than broiler chicken (p<0.01). In contrast, its thigh meat had a much lower drip and thawing losses but higher cooking losses (p<0.01). The shear force of Ufipa chickens' breasts and thighs was higher than that of broiler chickens (p<0.05), while the amount of total collagen in the thigh meat was higher than that of broiler chickens (p<0.05). Additionally, the inosine-5'-monophosphate (IMP) of Ufipa chicken breast and thigh meat was higher than that of broiler meat (p<0.05). The principal component analysis of meat quality traits provides a correlation between the proximate and physical-chemical prosperties of both breeds with some contrast. In conclusion, the present study provides information on healthy food with good-tasting Ufipa indigenous chickens, which offer a promising market due to consumers' preferences.
