Effect of Supercritical Carbon Dioxide Treatment on Quality of Citrus juice (초임계 이산화탄소 처리가 감귤쥬스 품질에 미치는 영향)

  • Citrus juice was treated with supercritical carbon dioxide $(SC-CO_{2})$ and the effect of temperature and pressure on quality of citrus juice was determined. Pectinesterase (PE) was inactivated by $(SC-CO_{2})$ below temperatures necessary for thermal inactivation. There was no significant change in the pH, Brix and total acidity of citrus juice before and after $(SC-CO_{2})$ treatment, but brightness was improved. More ascorbic acid was retained during $(SC-CO_{2})$ treatment of citrus juice than thermal treatment $(93^{\circ}C/0.66\;min)$.During storage of supercritically treated citrus juice at $4^{\circ}C$, activity of PE was reversible. Sensory evaluation showed that color, flavor, taste and overall acceptance of $(SC-CO_{2})$ treated juice were not significantly different from untreated juice. This method offers potentially beneficial processing avenues for citrus juice and other juices, especially in the area of minimally processed products.

Effect of Freeze Dried Ramie Leaf Powder on the Quality Characteristics of Pork Patties (동결건조 모시잎 분말 첨가가 돈육패티의 품질특성에 미치는 영향)

  • This study was conducted to investigate the effects of ramie leaf powder on the quality characteristics of pork patties. The moisture, crude protein, crude fat, and crude ash in freeze-dried ramie leaf powder were found to be 4.67% (w/w), 25.61% (w/w), 6.66% (w/w), and 16.88% (w/w), respectively. Pork patties were prepared by adding varying amounts of ramie leaf powders up to 1.5% (w/w) of the pork patty formulation. The moisture contents of meat patties containing ramie leaf powder were lower than that of the control patty, but there was no significant difference in pH values between the patties. With increasing amounts of ramie leaf powder, chromaticity decreased in brightness ($L^*$) and redness ($a^*$), but increased in yellowness ($b^*$) in the raw patties. In texture analysis, hardness, springiness, cohesiveness, and chewiness of the pork patties increased as more ramie leaf powder was added to the pork patties. Thiobarbituric acid reactive substances (TBARS) values increased during storage in pork patties without ramie leaf powder, but those formulated with ramie leaf powder showed lower TBARS values than those in the control groups. Sensory panels determined that pork patties containing 0.5% ramie leaf powder had higher scores for overall acceptability.

Quality Characteristics of Tomato Sauce added Freeze Dried Mugwort (동결건조 쑥을 첨가한 토마토 소스의 품질특성)

  • This study is aimed at examining the usefulness of mugwort as an alternative of western herb by making widely known tomato sauce with mugwort powder added, the ingredient that has a bio-active substance. The control group showed the highest percentage of water from tomato sauce, 89.24%. The sauce with mugwort added in by 2% showed the lowest pH, 4.55. The brightness L value for chromaticity got lower significantly (p>0.001) as the amount of added mugwort increased, and red a value and yellow b value were high in the control group for 18.06 and 16.84 respectively, and got reduced as the amount of added mugwort increased. The salinity was the highest in the sauce mugwort added in by 2% for 1.02. Sugar content and reducing sugar were the lowest in the sauce mugwort added in by 2% for 9.49 and 56.01. As measuring total count change, no microorganism was found until $10^{th}$ day of storage, and was 0% $1.7{\times}10^3CFU/mL$ on the $15^{th}$ day, and no microorganism was found in the 1.5% and 2% added groups. Lastly for 60 days of storage, the control group without mugwort showed the highest microorganism count for $3.1{\times}10^8CFU/mL$ In a sensory test, color was in the 1% added group was 5.28, higher than the control group which showed 4.78, but there was no significant difference. Taste was rated most highly in the 1.5% added group for 5.65. After taste was also rated most highly in the 1.5% added group for 5.8. Overall preference was the highest in the 1% added group for 5.79. From the results, tomato sauce with mugwort added in showed the high storage capacity and was rated highly in the preference test. The possibility of the alternative of western spice and the potential to use Korean spice for other western spice were observed again.

Characteristics of Curd Yogurt from Milk Added with Maesil (Prunus mume) (매실(Prunus mume)을 첨가한 호상요구르트의 품질 특성)

  • Characteristics of curd yogurt containing maesil extract and flesh, and mixed cultures of lactic acid bacteria (Streptococcus thermophilus, Lactobacillus acidophilus, and L. casei) were investigated redundant. The results of sensory evaluation of curd yogurts containing maseil indicated that color, odor, taste, flesh amount, aftertaste, and overall acceptability of the 3% maesil extract crud yogurt added with 20% maesil flesh showed higher preference than others. The contents of free fatty acid and citric acid of curd yogurts added with 3% maesil extract were higher than the specify sample. The Hunter L (brightness) value of curd yogurt added with 3% maesil extract was not significantly different from the control curd yogurt, while the Hunter a (redness) and Hunter b (yellowness) values were higher. The hardness, adhesiveness, and gumminess of 3% maesil extract curd yogurts added with 20% maesil flesh were higher than others.

  • Intravenous injection is widely used for patient treatment, including injection drugs, fluids, parenteral nutrition, and blood products, and is the most frequently performed invasive treatment for inpatients, including blood collection, peripheral catheter insertion, and other IV therapy, and more than 1 billion cases per year. Intravenous injection is one of the difficult procedures performed only by experienced nurses who have been trained in intravenous injection, and failure can lead to thrombosis and hematoma or nerve damage to the vein. Nurses who frequently perform intravenous injections may also make mistakes because it is not easy to detect veins due to factors such as obesity, skin color, and age. Accordingly, studies on auxiliary equipment capable of visualizing the venous structure of the back of the hand or arm have been published to reduce mistakes during intravenous injection. This paper is about the development of venous detection equipment that visualizes venous structure during intravenous injection, and the optimal combination was selected by comparing the brightness of acquired images according to the combination of near-infrared (NIR) LED and Filter with different wavelength bands. In addition, an image processing algorithm was derived to threshehold and making blood vessel part to green through grayscale conversion, histogram equilzation, and sharpening filters for clarity of vein images obtained through the implemented venous detection experimental module.

Quality Characteristics and Antioxidant Activity of Yogurt Added with Acanthopanax Powder (오가피 분말을 첨가한 요구르트의 품질 특성 및 항산화 활성)

  • This study was performed to examine the quality characteristics and antioxidant activity of the curd yogurt with different contents (0.5-2%, w/w) of acanthopanax powder (AP). The pH decreased with increasing AP content until 16 h, whereas the treated groups showed higher pH levels than the control group after 20 h. The viscosity and the viable cell counts of the yogurt with 2% AP were lower than those of the control group during fermentation, significantly. Color values of AP yogurt were lower in terms of brightness, whereas redness and yellowness values were higher compared to the control group. The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity and soluble content significantly increased with increasing AP content. Consumer acceptability score of yogurt with 0.5% AP was ranked higher than other yogurts. Yogurt added with 0.5% AP showed no differences in pH, titrable acidity, and viable cell counts compared to the control group after storage at $4^{\circ}C$ for 14 days.

An Analysis of Archaeological Chemistry on the Low-grade Celadons Excavated at Noksan dong, Busan in Korea (부산 녹산동 조질청자의 고고화학적 분석)

  • The purpose of this study is to analyze the characteristics of low-grade 12th-century celadons, which were excavated from a kiln site in Noksan-dong, Busan. The physical and chemical properties of the body and the glaze are evaluated through scientific analyses. All the selected celadon shards have a similar body color, regardless of the kiln from which they originated. The celadon shards from 2 3 kilns are brighter than those from 4 5 kilns, and there are two saturations, namely gray and brown. The brightness of the glaze shows a high contribution of red and yellow. The porosity of the selected shards is 8.8% in the gray saturation and 16.1% in the brown saturation. The major chemical compositions of the body and glaze are in the typical chemical composition of the celadon, but the $TiO_2$ flux contents are different. The visible characteristic difference between the 2 3 kilns and the 4 5 kilns can be attributed to the mixing and the firing process rather than the raw materials used. The difference in the $Fe_2O_3$ and $K_2O$ flux between the 2 3 and 4 5 kilns can be attributed to changes in the ingredient combination during the process. In conclusion, Noksan-dong celadon could not be easier vitrification due to the manufacturing process that primary burning process, It is highly likely that there were process differences in kilns to produce high quality celadon.

Development of Emotion Assessment Scale in Evaluation of Television Picture Quality (TV 화질에 대한 감성평가척도 개발)

  • The article reports findings on: (1) development of emotion assessment scale in evaluating the Television(TV) picture quality; and (2) how psychological and physical factors relate to TV picture quality. A total of 152 adjectives that specifically describe emotional reactions were first selected from a Korean dictionary of adjectives, followed by ratings on their suitability for the evaluation of TV picture quality. The final selection of 19 adjective, based on the reported rating scores greater than 4.1, were used on 126 college students who were asked to perform similarity ratings on the adjectives. Based on factor analyses (i.e., principal component analysis with oblique rotation) on the similarity of scores, the following adjectives were selectively chosen for the development of the new emotion assessment scale: 'neat-messy', 'refreshing-gloomy', 'clean-dirty', 'comfortable-tense', 'smooth-rough', 'bright-dark', 'gorgeous-plain', 'diverse-monotonous', 'satisfying', 'natural', and 'sensuous'. These adjectives composed into two distinct constructs, 'cleanness or smart' factor and 'gorgeousness' factor, which demonstrated sensitivity to changes in brightness, contrast, color, and tint in the TV picture quality, except for changes in sharpness.

Physicochemical Properties of Hull-less Barley Flours Prepared with Different Grinding Mills (제분방법에 따른 쌀보리가루의 이화학적 특성)

  • During the pearling process of hull-less barley, protein, lipid, ash and insoluble dietary fiber (IDF) contents decreased, while soluble dietary fiber (SDF) and ${\beta}-glucan$ contents slightly increased. Depending on milling methods and types of grinding mills used, there were differences in particle size distribution of barley flour. Flour particle size was smaller in the following order of Fitz mill, Ball mill, Pin mill, Cyclotec sample mill and Jet mill. Color (brightness) was closely related to the particle size of barley flour. Damaged starch (%) in pearled barley flour was the highest in Jet mill among different mills. Flours prepared with Cyclone mill and Pin mill had a reasonable amount of damaged starch. Flour produced by Fitz mill showed the lowest amount of damaged starch. Scanning electron microscopy (SEM) of the flour samples demonstrated different sizes and shapes of particles consisting of starch granules and cell wall materials. Damaged starch tended to increase water absorption index (WAI), water solubility index (WSI), and water retention capacity (WRC). Pasting viscosity determined by amylograph was relatively high in Pin-milled and Cyclone-milled flours. Viscosity was the lowest in coarsely ground flour by Fits mill.

Classification of Diabetic Retinopathy using Mask R-CNN and Random Forest Method

  • In this paper, we studied a system that detects and analyzes the pathological features of diabetic retinopathy using Mask R-CNN and a Random Forest classifier. Those are one of the deep learning techniques and automatically diagnoses diabetic retinopathy. Diabetic retinopathy can be diagnosed through fundus images taken with special equipment. Brightness, color tone, and contrast may vary depending on the device. Research and development of an automatic diagnosis system using artificial intelligence to help ophthalmologists make medical judgments possible. This system detects pathological features such as microvascular perfusion and retinal hemorrhage using the Mask R-CNN technique. It also diagnoses normal and abnormal conditions of the eye by using a Random Forest classifier after pre-processing. In order to improve the detection performance of the Mask R-CNN algorithm, image augmentation was performed and learning procedure was conducted. Dice similarity coefficients and mean accuracy were used as evaluation indicators to measure detection accuracy. The Faster R-CNN method was used as a control group, and the detection performance of the Mask R-CNN method through this study showed an average of 90% accuracy through Dice coefficients. In the case of mean accuracy it showed 91% accuracy. When diabetic retinopathy was diagnosed by learning a Random Forest classifier based on the detected pathological symptoms, the accuracy was 99%.
