Effects on Growth Performance and Meat Quality Parameters by Restricted Diet during Finishing Days

  • The objective of the present study was to investigate the effects on growth performance, meat quality parameters and fatty acids of meat by restricted diet amount on finishing Berkshires. A total of 180 pigs (Berkshire, initially 52 kg BW) at 100 days of age were allotted in arrangement in a completely randomized design (10 pigs per pen), blocked arrangement of treatments with 3 replications. The variables were market ages (180, 200 and 220 days) and in which was also included sex (gilts and barrow). All the pigs were restrictively fed so that day could be marked at 103 kg. Pork quality was evaluated from 4 pigs of each treatment. Average daily gain (ADG) and average daily feed intake (ADFI) were decreased (p<0.05) with age increase. The ratio of feed to gain was increased (p<0.05) at 200 and 220 days compared to that of 180 days. Moisture and crude protein of longissimus dorsi muscle (LM) at 180 days were increased (p<0.05) compared to 200 and 220 days. Crude fat was increased (p<0.05) by age and crude ash was lower (p<0.05) at 180 days than at 220 days. Red to green meat color scale (CIE a$^{*}$) increased (p<0.05) at 200 and 220 days more than at 180 days. Regarding fatty acid composition in meat, saturated fatty acids (SFA) was increased more (p<0.05) at 220 days than at 180 and 200 days. The results indicate that even with a restricted diet of low nutrient supplement, there was an improvement in Berkshire meat quality parameters.

Identification of genes related to intramuscular fat content of pigs using genome-wide association study

  • Objective: The aim of this study is to identify single nucleotide polymorphisms (SNPs) and genes related to pig IMF and estimate the heritability of intramuscular fat content (IMF). Methods: Genome-wide association study (GWAS) on 704 inbred Berkshires was performed for IMF. To consider the inbreeding among samples, associations of the SNPs with IMF were tested as random effects in a mixed linear model using the genetic relationship matrix by GEMMA. Significant genes were compared with reported pig IMF quantitative trait loci (QTL) regions and functional classification of the identified genes were also performed. Heritability of IMF was estimated by GCTA tool. Results: Total 365 SNPs were found to be significant from a cutoff of p-value <0.01 and the 365 significant SNPs were annotated across 120 genes. Twenty five genes were on pig IMF QTL regions. Bone morphogenetic protein-binding endothelial cell precursor-derived regulator, forkhead box protein O1, ectodysplasin A receptor, ring finger protein 149, cluster of differentiation, tyrosine-protein phosphatase non-receptor type 1, SRY (sex determining region Y)-box 9 (SOX9), MYC proto-oncogene, and macrophage migration inhibitory factor were related to mitogen-activated protein kinase pathway, which regulates the differentiation to adipocytes. These genes and the genes mapped on QTLs could be the candidate genes affecting IMF. Heritability of IMF was estimated as 0.52, which was relatively high, suggesting that a considerable portion of the total variance of IMF is explained by the SNP information. Conclusion: Our results can contribute to breeding pigs with better IMF and therefore, producing pork with better sensory qualities.

The Effect of Change in Meat Quality Parameters on Pig Longissimus dorsi Muscle by the Addition of Fermented Persimmon Shell Diet

  • The objective of the present study was to investigate the effects of growth performance, chemical composition and meat quality parameters by the addition of fermented persimmon shell diets (FPSD). The experimental animals were ninety-six Berkshires. The pigs were allotted at 8 per pen in front-open building with three replicate pens per treatment. Until $61{\pm}1kg$ live weight at 140 days, the animals were fed growing diet, after which, experimental samples were fixed at 0, 3, 5 and 7% FPSD as C, T1, T2 and T3 in the finishing diets. Pigs of $103{\pm}1kg$ live weight were slaughtered by electrical stunning. In growth performance, ADG increased more (p<0.05) in T2 than C and T1. ADFI (kg/day) was higher (p<0.05) in T2 than in other groups. Feed conversion ratio was lower (p<0.05) in T2 than in other groups. On longissimus dorsi muscle (LM), the content of moisture was lower (p<0.05) in T3 than in other treatments. Crude fat increased (p<0.05) by addition of FPSD. pH at 24 h ($pH_{24}$) decreased more (p<0.05) in T2 and T3 than C and T1 by addition of FPSD. WHC decreased (p<0.05) by addition of FPSD. In meat, Hunter $L^*$ and $a^*$ were lower (p<0.05) in C than in other treatments. Hunter $b^*$ was higher (p<0.05) in T3 than in other treatments. In back-fat, Hunter $L^*$ was higher (p<0.05) in C than in other treatments. Hunter $a^*$ was not different in C and T1 but increased (p<0.05) in treatments by addition of FPSD. Hunter $b^*$ increased (p<0.05) by addition of FPSD. In sensory evaluation scores, for fresh meat, the value of meat color was higher (p<0.05) in T2 and T3 than in C and T1. The value of marbling was lower (p<0.05) in C than in other treatments. The value of drip loss was higher (p<0.05) in C than in other treatments and was lower (p<0.05) in T2 and T3 than in other treatments. The results of cooked meat, the value of tenderness was not different in C and T1 but increased (p<0.05) in other treatments. The value of flavor was significantly higher (p<0.05) in T2 and T3 than in C and T1. The value of overall acceptability was increased (p<0.05) by addition of FPSD. Hence we can conclude that addition of FPSD affected growth performance and meat quality parameters, in particular, it improved crude fat, hunter $L^*$ and $b^*$, and sensory evaluation on pork and was also seen to affect $pH_{24}$ and WHC. FPSD can be used for improvement of meat quality parameters.

Genetic Traceability of Black Pig Meats Using Microsatellite Markers

  • Pork from Jeju black pig (population J) and Berkshire (population B) has a unique market share in Korea because of their high meat quality. Due to the high demand of this pork, traceability of the pork to its origin is becoming an important part of the consumer demand. To examine the feasibility of such a system, we aim to provide basic genetic information of the two black pig populations and assess the possibility of genetically distinguishing between the two breeds. Muscle samples were collected from slaughter houses in Jeju Island and Namwon, Chonbuk province, Korea, for populations J and B, respectively. In total 800 Jeju black pigs and 351 Berkshires were genotyped at thirteen microsatellite (MS) markers. Analyses on the genetic diversity of the two populations were carried out in the programs MS toolkit and FSTAT. The population structure of the two breeds was determined by a Bayesian clustering method implemented in structure and by a phylogenetic analysis in Phylip. Population J exhibited higher mean number of alleles, expected heterozygosity and observed heterozygosity value, and polymorphism information content, compared to population B. The $F_{IS}$ values of population J and population B were 0.03 and -0.005, respectively, indicating that little or no inbreeding has occurred. In addition, genetic structure analysis revealed the possibility of gene flow from population B to population J. The expected probability of identify value of the 13 MS markers was $9.87{\times}10^{-14}$ in population J, $3.17{\times}10^{-9}$ in population B, and $1.03{\times}10^{-12}$ in the two populations. The results of this study are useful in distinguishing between the two black pig breeds and can be used as a foundation for further development of DNA markers.

  • The effects of slaughter weight on blood profile and pork qualities of japan berkshires were investigated A total 72 pigs were divided into 3 groups$(125\~130,\;105\~110\;or\;95\~104\;kg)$. At each slaughter weight pigs were conventionally slaughtered and then chilled overnight The carcass characteristics (carcass weight backfat thickness and grades) were determined on those carcass, the muscle longissimus dorsi was removed from each left side at 5th to 13th rib and meat qualities were evaluated. Blood profile including cortisol, creatine phos-phokinase (CPK), lactate dehydrogenase (LDH), glucose and phosphorus was not significantly (p>0.05) different among all slaughter weight, However, the calcium contents of pigs at $95\~104\;kg$ were significantly (p<0.05) higher than the other weights. The carcass weight and backfat thickness of pigs slaughtered at $125\~130\;kg$ were higher than those of $105\~110\;or\;95\~104\;kg$. The carcass grade of pigs slaughtered at $125\~130\;kg$ were significantly (p<0.05) lower than the other weight. The moisture contents of pigs slaughtered at $125\~130\;kg$ were significantly lower than the other weights, but crude protein contents were significantly (p<0.05) higher, Cooking loss and shear lone values of pigs slaughtered at $95\~104\;kg$ were significantly (p<0.05) lower than the other weight. CIE $a^*\;and\;b^*$ values of pigs slaughtered at $105\~110\;kg$ were significantly higher than the other weights. These results imply that the carcass characteristics (carcass weight and backfat thickness) could be affected by slaughter weight the cooking loss and shear force values of pigs slaughtered at $125\~130\;kg$ resulted in higher than those of $105\~110kg\;or\;95\~104\;kg$.

  • 본(本) 연구(硏究)는 1975년(年)부터 1979년(年)까지 축산시험장(畜産試驗場)에서 생산(生産)된 돼지중 산자능력(産仔能力) 시험(試驗)에 315복(腹), 산육능력시험(産肉能力試驗)에 325두(頭)를 가지고, 25개교배조합중(個交配組合中)에서 우수(優秀)한 산자(産仔) 및 산육능력(産能肉力)을 갖는 교배조합(交配組合)을 선발(選拔)하고자 실시(實施)한 바 그 결과(結果)는 마음과 같다. 1. 복당생존자돈수는 $D{\times}LwL$조합(組合)이 가장 우수(優秀)했고, 다음은 $D{\times}HL$조합(組合)이었으며 햄프샤순종(純種)의 조합(組合)이 가장 불량(不良)하였다. 복당생존자돈수는 3~6산차(産次)에서 다른 산차(産次)의 경우에 비(比)하여 현저히 높았다. 2. 두당생시체중은 $D{\times}Lw$조합(組合)이 가장 무거웠고 라지화이트순종(純種)이 가장 가벼웠으며, 복당생시체중은 $D{\times}LwL$조합(組合)이 가장 무거웠고, 그 다음은 $D{\times}HL$, $Lw{\times}L$조합(組合)의 순(順)이었으며, 햄프샤 및 버크샤순종(純種)의 조합(組合)이 다른 교배조합(交配組合)에 비(比)하여 불량(不良)하였다. 3. 복당이유자돈수는 $D{\times}LwL$조합(組合)이 가장 우수(優秀)했고, 다음은 $D{\times}HL$, $Lw{\times}L$조합(組合)의 순(順)이었으며, 듀록과 햄프샤순종(純種)의 조합(組合)이 불량(不良)하였다. 3~6산차(産次)의 자돈(仔豚)에서는 다른 산차(産次)의 경우에 비(比)하여 복당이유자돈수가 많았다. 4. 복당이유시체중은 $D{\times}LwL$조합(組合)이 가장 무거웠고 다음은 $H{\times}LwL$, $Lw{\times}L$조합(組合)의 순서(順序)였으며, 듀록과 햄프샤 순종(純種)의 조합(組合)이 다른 교배조합(交配組合)에 비(比)하여 불량(不良)하였다. 두당이유시체중은 $D{\times}LwL$조합(組合)이 가장 무거웠고, $L{\times}H$조합(組合)이 가장 가벼웠다. 5. 이유시(離乳時) 생존율(生存率)은 $L{\times}Lw$조합(組合)이 제일 우수(優秀)했으며, 그 다음은 $D{\times}LH$, $D{\times}HL$조합(組合)의 순서(順序)였고, 듀록 순종(純種)의 조합(組合)이 가장 불량(不良)하였다. 6. 일당증체량과 사료요구율(飼料要求率)은 $D{\times}HL$조합(組合)이 가장 우수(優秀)했고, 다음은 $D{\times}LwL$, $H{\times}LwL$ 조합(組合)이었으며, 버크샤순종(純種)과 렌드레이스순종(純種)의 조합(組合)이 다른 교배조합(交配組合)보다 불량(不良)하였다. 수컷은 암컷에 비(比)하여 일당증체량이 0.06kg 정도 더 높았고, 사료요구율(飼料要求率)도 0.14정도 더 양호(良好)하였다. 7. 90kg도달일령(到達日令)은 $D{\times}HL$, $D{\times}LwL$$H{\times}LwL$조합(組合)이 다른 교배조합(交配組合)에 비(比)하여 우수(優秀)했으며, $D{\times}HL$조합(組合)은 렌드레이스순종조합(純種組合)보다 39일 정도 빨리 90kg에 도달(到達)했다. 8. 도체율(屠體率) 및 정육율(精肉率)은 $H{\times}LwL$, $H{\times}L$$L{\times}B$조합(組合)이 다른 교배조합(交配組合)보다 우수(優秀)했으며, 배장근단면적(背長筋斷面積)은 $Lw{\times}L$조합(組合)이 가장 컷고, $B{\times}L$ 조합(組合)이 가장 작게 나타났다. 등지방(脂肪)두께는 햄프샤순종(純種)이 가장 얇게 나타났고, $B{\times}L$조합(組合)이 가장 두껍게 나타났다. 9. 이상(以上)의 결과(結果)를 종합(綜合)해 보면 이품종간(二品種間) 교잡종(交雜種)에서는 $Lw{\times}L$조합(組合)이, 삼품종간(三品種間) 교잡종(交雜種)에서는 $D{\times}LwL$$D{\times}HL$조합(組合)이 우수(優秀)한 산자(産仔) 및 산육능력(産肉能力)을 가진 교배(交配) 조합(組合)으로 나타났다.
