Comparison of characteristics and taste components of oyster mushoom with cultivars (느타리버섯의 품종별 특성 및 맛성분 비교)

  • In this study, the characteristics and taste components of six different oyster mushroom cultivars (Gonji-7ho, Santari, Baekseon, Chunchu, Suhan, and Heuktari) were analyzed and compared. The Heuktari mushroom pileus had the lowest brightness index (32.8) and remained dark (brightness index: 30.5) even after blanching. The moisture content of the mushrooms was approximately 90%. The salinity and sugar contents were highest in Heuktari (5.7% and 7.1%, respectively). Gonji -7ho had the highest contraction rates, with a length contraction rate of 16.4% and thickness contraction rate of 23.9%. The total amino acid content was highest in Heuktari (537.8 mg/100 g), but the glutamine content contributing to umami taste was highest in Santari (59.4 mg/100 g) and the aspartic acid content was highest in Baekseon (33.1 mg/100 g). Among the 5?-nucleotide components, guanosine monophosphate, which enhances umami taste, was highest in Baekseon (0.7 mg/g). Baekseon was also calculated to have the highest umami taste concentration based on amino acid and nucleic acid contents (12.7 g/100 g). The results of this study serve as valuable basic data on the physicochemical characteristics of oyster mushroom cultivars grown in Korea.

Mycelial and cultural characteristics of Pleurotus ostreatus 'Baekseon', a novel white cultivar for bottle culture (병재배용백색느타리신품종 『백선』의 균사배양및생육특성)

  • Oyster mushrooms are an economically important crop, accounting for 35% of the total mushroom production in Korea. In this study, we developed a new cultivar of Pleurotus ostreatus, known as 'Baekseon,' which is characterized by a white pileus with a white stipe. It was bred by mating monokaryons isolated from white mutant oyster mushrooms that were naturally generated from 'Gonji-7ho' and 'Wonhyeong-1ho' at the Mushroom Research Institute, GARES, Korea in 2018. The optimum temperature for mycelial growth on potato dextrose agar medium was approximately $28-31^{\circ}C$, and the optimum temperatures for primordia formation and growth of fruit bodies on sawdust media were $22^{\circ}C$ and $20^{\circ}C$, respectively. The time required for the bottle-cultured mushrooms to complete spawn running, primordia formation, and growth of fruit bodies was 30 days, 4 days, and 4 days, respectively. The fruit bodies were bundle-shaped, the pilei were round type and white, and the stipes were white. The stipes were slender and longer than those of the control ('Miso'). In the productivity test, the yield per bottle was 185 g/1100 mL, which was 45% greater than that of the control ('Miso'). In the farm test, the yield per bottle for Farm A (Pyeongtaek) and Farm B (Yeoju) was 184 g/1100 mL and 178 g/850 mL, respectively. With regard to the physical properties of fruit bodies, the springiness, cohesiveness, gumminess, and brittleness of stipe tissue were 80%, 57%, 720 g, and 57 kg, respectively. These values were lower than those of the control ('Miso'). To test the shelf life, the fruit bodies were wrapped with antifogging film and stored at $4^{\circ}C$ for 28 days and then at room temperature for 4 days; such conditions were sufficient for maintaining edibility.

Screening Method for Excessive Water Tolerance at Germinating Stage of Peanut (땅콩 발아기의 내습성 검정 방법)

  • This study was conducted to develop the testing method for excessive water tolerance at germinating stage and to screen 31 domestic peanut cultivars. Regardless of peanut grain scales, the amount of seed absorption nearly reached the peak in 10 hours after imbibition. When peanut seed in vermiculate soil was directly soaked in water, ability of emergence did not reduced until 16 days and then sharply reduce to 25 days with non-emergence. When seeds germinated for 1, 2, 3, and 4 days after seeding (DAS) were soaked, the emergence abilities were distinctively varied according to the sequent soaking days such as 1, 2, 3, 4, and 5 days. This explained the negative relationship between first germinating days (DAS) and following soaking days. Using the method of 2 day germinating and 3 day soaking that show less than 70% of emergence ability, 31 peanut cultivars were applied to test excessive water tolerance. Emergence rates varied 0% to 69% according to cultivar. Cultivar Daekwang, Sinkwang, Daecheong and Baekseon had over 50% emergence rates. These results suggested that the degree of water resistance in germinating stage may be important point to evaluate the excessive water resistance among cultivars.

Modelling the Effects of Temperature and Photoperiod on Phenology and Leaf Appearance in Chrysanthemum (온도와 일장에 따른 국화의 식물계절과 출엽 예측 모델 개발)

  • Chrysanthemum production would benefit from crop growth simulations, which would support decision-making in crop management. Chrysanthemum is a typical short day plant of which floral initiation and development is sensitive to photoperiod. We developed a model to predict phenological development and leaf appearance of chrysanthemum (cv. Baekseon) using daylength (including civil twilight period), air temperature, and management options like light interruption and ethylene treatment as predictor variables. Chrysanthemum development stage (DVS) was divided into juvenile (DVS=1.0), juvenile to budding (DVS=1.33), and budding to flowering (DVS=2.0) phases for which different strategies and variables were used to predict the development toward the end of each phenophase. The juvenile phase was assumed to be completed at a certain leaf number which was estimated as 15.5 and increased by ethylene application to the mother plant before cutting and the transplanted plant after cutting. After juvenile phase, development rate (DVR) before budding and flowering were calculated from temperature and day length response functions, and budding and flowering were completed when the integrated DVR reached 1.33 and 2.0, respectively. In addition the model assumed that leaf appearance terminates just before budding. This model predicted budding date, flowering date, and leaf appearance with acceptable accuracy and precision not only for the calibration data set but also for the validation data set which are independent of the calibration data set.
