Gas sensing pattern in chungkukjang production using household fermentation system (가정용 발효기를 이용한 청국장 제조과정의 가스감지 패턴)

  • The sensing system was designed and fabricated to investigate the ferment environment of soybeans. $NH_3$ gas was saturated after about 7 h and $CO_2$ gas was reached the peak after about 8 h in the inoculation of Bacillus subtilis. However, times that $CO_2$ gas and $NH_3$ gas were reached maximum value without Bacillus subtilis were about 15 h and 18 h, respectively. The sample that inoculated Bacillus subtils had deeper taste than one without it. We found that the peak time of $CO_2$ gas means the starting time of fermentation. If we control the operating time after the start of fermentation, it is expected to make a suitable Chungkukjang to individual preference.

Antimicrobial Activities of Methanolic Extracts Obtained from Different Parts of Several Ferns and Fern Allies (다양한 양치식물 메탄올 추출물의 부위별 항균활성)

  • 본 연구는 13과 37종 양치식물의 엽상체(지상부)와 근경의 메탄올 추출물을 대상으로 식품의 오염 및 변질의 원인이 되는 Bacillus subtils, 식중독의 원인이 되는 Escherichia coli, 식중독 및 선회병(listeriosis)의 원인이 되는 Listeria monocytogenes, 피부 여드름의 원인이 되는 Propionibacterium acnes에 대한 항균활성을 탐색하고 항균력이 우수한 천연소재를 선발하기 위하여 시행하였다. $5mg{\cdot}mL^{-1}$의 농도의 추출물을 대상으로 각 미생물에 대하여 50% 이상의 항균활성을 나타낸 양치식물 추출물을 선발하였으며, 선발된 추출물을 2mg/disc의 농도로 조절하여 agar diffusion법으로 항균력을 측정하여 15mm 이상의 억제환을 나타내는 추출물을 선발하였다. 상기의 방법으로 선발된 추출물을 $0.125{\sim}2.000mg{\cdot}mL^{-1}$의 농도로 조절하여 72시간 동안 각 미생육의 생육에 미치는 영향을 분석하여 항균활성이 우수한 양치식물의 추출물을 선발하였다. 연구의 결과, B. subtils의 생육억제에는 야산고비의 성엽과 쇠고비의 근경 추출물, E. coli의 생육 억제에는 설설고사리의 성엽과 나도히초미 및 더부살이고사리의 근경 추출물, L. monocytogenes의 생육억제에는 관중의 성엽과 공작고사리, 꿩고비 및 쇠고비의 추출물이 효과적이었다. 한편 대부분의 양치식물 추출물은 P. acnes의 생육억제 효과가 미비하였으나, 관중과 참지네고사리는 성엽과 근경 모두에서 P. acnes의 생육억제 효과가 매우 우수하였으며, 별도의 제균처리를 하지 않은 관중과 참지네고사리의 메탄올 조추출물의 $MIC_{50}$은 성엽의 추출물에서 66.8과 $80.4{\mu}g{\cdot}mL^{-1}$, 근경의 추출물에서는 8.8과 $54.2{\mu}g{\cdot}mL^{-1}$로 나타났다.

  • In order to evaluated the mutagenic potential of Ag-Os produced by receiving Ag ion at the carrier, 2 types of mutagenecity tests were performed. No mutagenic potential was shown in bacterial reverse multation test using Salmonella typhimurim TA 1535, TA 1537, TA 98, TA 100. No DNA-damaging property was shown in Rec-assay using Bacillus subtilis(Rec+) and Bacillus subtilis (Rec-). These results indicate that the Ag-Os does not cause reverse mutation and DNA-damaging property

Antimicrobial Effects of Pinus densiflora Sieb. et Zucc. Extract on Pathogenic Microorganisms (병원성 미생물에 대한 소나무(Pinus densifiora Sieb. et Zucc.) 추출물의 항균효과)

  • To develop natural food preservative, antimicrobial activity of Pinus densiflora Sieb. et Zucc. (PD) ethanol extract against pathogens were investigated. The growth of pathogens such as Staphylococcus aureus ATCC 29737, Bacillus subtils KCTC 1021, Bacillus megaterium KCTC 3007 and Vibrio parahaemolyticus ATCC 17802 was inhibited as much as 4 to 6 log cycle in tryptic soy broth containing 40mg/㎖ of PD extract but Salmonalla typhimurium ATCC 14028 and Pseudomonas fluorescens ATCC 21541 were not inhibited. The total, gram negative and psychrotrophic bacterial count were inhibited in minced pork containing 40mg/㎖ of PD extract for 20 days at 4$\^{C}$. The sensory quality of hamburger patty such as taste, flavor and overall acceptability were not decreased by the addition of 40mg/㎖ PD(p<0.05).

Antibacterial Effect of Bacteria Isolated from the Korean Traditional Foods against Pathogenic Bacteria (한국전통식품으로부터 분리 된 세균의 항균활성 효과)

  • Aquaculture continues to be an ever-growing sector. However, high-density farming increases disease outbreaks due to deteriorating water quality and internal stress. To prevent disease, the most common method chemotherapy is using antibiotic administration. In this study, probiotic bacteria were isolated from Korean traditional foods, such a Gochu pickle and cutlassfish salted seafood. Various bacteria were isolated, and their 16S rDNA sequences were analyzed. The antimicrobial activities of four isolates from Gochu pickle and seven isolates from cutlassfish salted seafood were assayed, in addition to the antibacterial activity of culture pellet and supernatant. The antibacterial activity of the pellet was higher than that of the supernatant. Isolate JKM-2 showed the highest antibacterial activity against Streptococcus iniae (43 mm), S. parauberis (40 mm), S. mutans (35 mm), and Vibrio vuinificus (26.5 mm). The sequences of the isolated strains were compared with those of Bacillus subtilis (97.71%), B. tequilensis (97.71%), Brevibacterium halotolerans (97.71%), B. subtilis (97.63%), B. subtilis (97.63%), B. mojavensis (97.54%), B. vallismortis (97.46%), B. nanillea (97.45%), B. methylotrophicus (97.37%), and B. ssiamensis (97.37%). Future through analysis and new strains confirmed the bacterial cell material investigation of JKM-3, and to ensure sufficient stability, it is desired to verify the utility value as a substitute material for antibiotics by application to the form of the industry.
