The Effect of Carcass Traits on Economic Values in Hanwoo (한우의 도체 형질이 경제성에 미치는 영향)

  • The objective of this study was to investigate factors related to carcass traits of Hanwoo. In the statistical model developed in this study, slaughterhouse, carcass year, carcass month and sex effects were used as fixed effects and carcass traits (carcass weight, marbling score, loineye muscle area, backfat thickness and meat yield index) as covariations. The grading service data for 285,515 Hanwoo, which were evaluated by Animal Products Grading Service from 2005 to 2007, were used in this study. The partial R-square values of the fixed effects and the marbling score (MS), loineye muscle area, back-fat thickness, meat yield index and carcass weight (CW) on auction prices (AP) of the carcass and carcass price (CP) of the animals were estimated. The most important estimated trait in AP was MS. However, CW is the most important estimated trait on the CP and the MS also has secondly significant effect on the CP. In conclusion, MS as well as CW should maximize the farmer profits and establish a breeding scheme for Hanwoo.

Relationships of the Slaughter Weight to Growth Performance and Meat Quality Traits in Finishing Pigs Fed A Low-energy Diet (저에너지 사료로 비육된 돼지에서 도살체중과 성장성적 및 육질과의 관계)

  • The present study was undertaken to investigate the effects of slaughter weight (SW) of finishing pigs fed a low-energy diet on growth efficiency and carcass quality and thereby to assess the optimal SW. (Yorkshire $\times$ Landrace) $\times$ Duroc-crossbred gilts and barrows were fed a diet containing 3,060 kcal DE/kg from 80-kg BW and slaughtered at 110, 125, or 135 kg, after which the belly, the most preferred cut in Korea, as well as the least preferred cuts ham and loin were subjected to physicochemical and sensory analyses. Both ADG and ADFI were greater (P<0.05) in the group slaughtered at 125 or 135 kg than in the 110-kg-SW group, whereas the opposite was true for gain:feed (P<0.01). Backfat thickness (BFT), which increased with increasing SW (P<0.01 and P<0.05), was greater in barrows than in gilts (P<0.01); BFT of barrows at 125 kg (24.6 mm) was comparable to that of gilts at 135 kg (24.2 mm). Physicochemical characteristics of the belly, ham and loin were minimally affected, if not affected, by SW; of note, however, the redness of the ham increased between 110- and 125-kg SW (P<0.05). In sensory evaluation of the belly, the fat:lean balance, which is a most important quality trait in this cut, was best (P<0.05) at 125 kg of SW, but the overall acceptability of this cut was not changed by SW. In the ham and loin, the marbling score increased (P<0.01) between 110- and 125-kg SW, whereas color, aroma, off-flavor, and drip were unaffected by SW. In addition, the acceptability of the loin increased (P<0.05) between 110- and 125-kg SW. In cooked meats, none of color, aroma, off-flavor, juiciness, tenderness, taste, and acceptability was changed by SW, except for an increase (P<0.05) in darkness of loin color between 110- and 125-kg SW. In conclusion, the optimal SW for the present subpopulation on the present low-energy diet lie in between 125 and 135 kg for gilts and at 125 kg for barrows.

Effects of Increasing Market Weight of Finishing Pigs on Backfat Thickness, Incidence of the 'Caky-fatty' Belly, Carcass Grade, and Carcass Quality Traits (비육돈의 출하체중 증가가 등지방두께, '떡지방' 삼겹살 발생률, 도체등급 및 도체의 품질 특성에 미치는 영향)

  • The present study was undertaken to investigate the effects of increasing pig market weight on the incidence of the 'caky-fatty' belly, carcass grade and carcass quality traits. To this end, 500 (Yorkshire ${\times}$ Landrace) ${\times}$ Duroc market pigs consisting of equal numbers of barrows and gilts were slaughtered at body weights ranging from 85 to 150 kg and their carcasses were analyzed. Backfat thickness (BFT; mm) of the barrows and gilts regressed on live weight (kg) linearly as follows: BFT (y) = 0.1827x + 3.4825 ($r^2$ = 0.4671) and y = 0.2015x-0.6972 ($r^2$ = 0.4736), respectively. The caky-fatty belly, which, by definition of the present study, had = 55% fat by weight in the dorsal-side half of a 5 cm-wide belly strip between the $11^{th}$ and $12^{th}$ ribs, was found in 10 carcasses from barrows. However, no belly was condemned as 'caky-fatty' by the retailers. Total number of carcasses which were down-graded on account of overweight was as many as 101 (20.2%). The $1^+A$-grade carcasses exhibited a superior intramuscular fat score to all other grades, but except for this and the defective quality traits, no visible differences were found in carcass quality among different carcass grades. In conclusion, the current carcass grading system, which is sparingly reflective of the carcass quality and also under-evaluates the larger but otherwise normal carcasses, may as well be revised. Moreover, the incidence of the caky-fatty belly appears not to be a critical factor to be considered when increasing the pig market weight.

Urban aquaculture of catfish, Silurus asotus, using biofloc and aquaponics systems (바이오플락과 아쿠아포닉스를 이용한 도심형 양식시스템에서의 메기양식)

  • This study was conducted to determine whether the water in which nitrate accumulated during long-term fish culture in an aquaponics system without water exchange could be removed and reused as catfish-culturing water. The catfish (Silurus asotus) were cultured in the urban aquaculture system using BFT (Biofloc Technology) aquaculture and an aquaponics system (two rearing tanks, 3 tons each) without exchanging the rearing water. After 151 days (from March to August) of rearing, 2.8 g of fry had grown to an average weight of 171.3 g (total weight, 56.53 kg) and 235.5 g (total weight 71.1 kg), respectively. The overall survival rate was 65% in the urban aquaculture system. However, the survival rate was 77.7% before separation into the two tanks. The survival rates after the separation were 92.9% and 78.0%. In the early biofloc watermaking process, there was a high mortality rate. After water stabilization, the mortality rate decreased and some mortality occurred during the period when the total amount of suspended solids (TSS) increased. The results of monthly blood analysis of the catfish showed that the AST concentration was significantly higher in April. Blood ALT levels and triglycerides showed no difference in the rearing period and the glucose, cholesterol, and total protein levels were significantly higher in July. There was no difference in the other periods. The plants produced by the aquaponics system using catfish-rearing water were lettuce, basil, chard, and red chicory. These showed smooth growth and a total of 148.85 kg of plants were harvested in five months. It was possible to remove nitric acid from the aquaponics system and reuse it as catfish-rearing water. Maintaining proper plant quantity according to the capacity of the catfish showed that the combination of agricultural and aquatic products was possible.

Intensive Culture of the Pacific White Shrimp Litopenaeus vannamei, under Limited Water Exchange - II. Indoor Post-Nursery Culture of Juvenile Shrimp - (사육수 비교환 방식에 의한 흰다리새우의 고밀도 사육 - II. 흰다리새우의 실내 중간양성 -)

  • Shrimp farming which is entirely conducted in outdoor ponds in the west coast of Korea has been suffered from mass mortality due to viral epizootics. Intensive indoor shrimp culture under limited water exchange can solve these problems of outdoor ponds including viral transmission from environment, pollution due to discharge of rearing water, low productivity and limited culture period. In this study, juvenile L. vannamei (B.W. 0.08-0.09 g) was stocked with $3,000-5,455/m^3$ in density in four raceway tanks (two $12.9\;m^2$, two $18\;m^2$ tanks) and cultured for 42 days with 2.7-3.4% of daily water exchange. Results from four tanks showed FCR of 0.79-1.29, survival of 38.2-48.0%, and yields of $2.49-4.22\;kg/m^3$ which is consistent with 12-20 and 8-14 times higher than those of commercial shrimp hatchery and outdoor pond in Korea, respectively. Concentrations of total ammonia nitrogen in all four tanks were 1.11-1.42 ppm in mean level and did not exceed 6.0 ppm (0.096 ppm of $NH_3$) which is still acceptable levels for shrimp growth. During the culture trial, concentration of $NO_2$-N rapidly increased from stocking, resulting in mean concentration of 18.45-22.07 ppm. It also exceeded 10 ppm over four weeks and maintained at 35-45 ppm for four days in all tanks, accounting for low survival of shrimp due to long-term exposure to high concentration of $NO_2$-N. Nevertheless, the results with survival rate over 38% from raceways which experienced the extreme $NO_2$-N levels suggests that under "biofloc system" white shrimp can acclimate to high $NO_2$-N concentration to some degree.

Association between PON1 Gene SNPs and Growth and Carcass Traits in Beef Cattle

  • Paraoxonase-1 (PON1), like lipoprotein lipase (LPL), plays a key role in the metabolism and physiology of mammalian growth. The objectives of this study were to estimate the allele and genotype frequencies at the PON1/EcoRV and PON1/AluI loci in three genetic groups of beef cattle and to determine associations between these polymorphisms and growth and carcass traits. Genotyping was performed on 30 Angus, 32 Hereford and 26 Simmental. The association analysis was carried out using the GLM procedure of SAS 9.1 and the least squares means of the genotypes were compared by the Tukey's test. Animals with AG genotype at the PON1/EcoRV locus had higher weight at the time of entry into the fattening corrals ($329.97{\pm}6.08kg$) and close to the time of slaughter ($577.56{\pm}8.32kg$) and net meat weight ($275.89{\pm}4.05kg$) and fitted tenderness ($3.10{\pm}0.19kg$) (p<0.05). Animals with AA genotype at the PON1/AluI locus had higher weight at the time of entry ($333.37{\pm}8.93kg$) and slaughter ($576.82{\pm}13.18kg$) and net meat weight ($275.49{\pm}6.43kg$) and average daily gain ($0.68{\pm}0.02kg/d$) (p<0.05). The meat color score was also significantly higher (p<0.05). Between genotypes and breeds, there were significant differences observed except for TBW, REMG, MBS, REA and MCS. As a metabolism gene, genotypes of the SNPs of PON1 gene might be reflecting BFT directly, such as $A_eA_eG_aG_a$ genotype in this experiment.

Acute Toxicity of Ammonia on Juvenile banded Catfish(Pseudobagurus fulvidraco) (동자개 치어의 암모니아 급성 독성)

  • Juvenile banded catfish(Pseudobagurus fulvidraco, mean length $10.7{\pm}0.42cm$ and mean weight $15.0{\pm}0.23g$) were exposed to varies TAN(total ammonia) concentrations at pH levels of $6.12{\pm}0.51$, $7.00{\pm}0.26$ and $8.04{\pm}0.07$ for 96hrs to check the level of acute toxicity on biofloc technology aquaculture system(BFT). The result showed that cumulative mortalities for juvenile banded catfish at TAN levels 48.95, 55.96, 66.47, and 78.88 mg/L at pH $6.12{\pm}0.51$ were 0, 30, 30, and 50%, respectively. At pH $7.00{\pm}0.26$, its mortalities to TAN 5.20, 11.68, 15.31, and 18.31 mg/L were 0, 10, 20, and 70%, respectively and at pH $8.04{\pm}0.07$, the mortalities to TAN 0.96, 1.49, 2.13, and 3.62 mg/L were 10, 20, 40, and 100%, respectively. Its $96h-LC_{50}$ (median lethal concentration, $LC_{50}$) at pH $6.12{\pm}0.51$, $7.00{\pm}0.26$, and $8.04{\pm}0.07$ were 78.12, 15.87, and 2.21 mg/L for TAN, and 0.05, 0.10, and 0.14 mg/L for $NH_3$, respectively, and the acute toxicity for ammonia to juvenile banded catfish increased exponentially with increase of pH.

Estimation of genetic parameters for growth traits and backfat thickness using Maternal animal model in pigs (모체효과 모형을 이용한 돼지 품종 간의 성장형질 및 등지방두께에 대한 유전모수 추정)

  • This study was conducted to examine the influence of the maternal genetic effect of swine on their economic traits through the estimation of their genetic parameters, breeding value and genetic trends using an animal model. The data on Duroc pigs, Korean Native Pigs and Synthetic pigs (Duroc ${\times}$ Korean Native Pig) from 2000 to 2015 were obtained from the National Institute of Animal Science in Korea and used to estimate the genetic parameters for the average daily gain (ADG) and backfat thickness (BFT). Model 1 included the additive genetic effect of the animals, Model 2 consisted of Model 1 + the maternal genetic effect and Model 3 consisted of Model 2 + the maternal permanent environment effect. The heritability calculated by estimating the additive genetic effect was higher than that calculated by estimating the maternal genetic effect using the maternal animal model. The estimated genetic correlations between the additive and maternal genetic effects for the ADG and BF were strongly negative. Thus, the estimation of the breeding value can be used to select the most appropriate individuals and make an optimal breeding scheme.

Acute Toxicity of Nitrite on Juvenile Banded Catfish(Pseudobagurus fulvidraco) (동자개 치어의 아질산 급성 독성)

  • Juvenile banded catfish(Pseudobagurus fulvidraco, mean length $10.4{\pm}0.37cm$ and mean weight $14.5{\pm}0.46g$) were exposed to several nitrite(${NO_2}^-$) concentrations for 96h at pH levels of $6.18{\pm}0.54$, $6.5{\pm}0.30$ and $7.07{\pm}0.22$. The result showed that cumulative mortalities of fish to ${NO_2}^-$ levels of 12.4, 19.8, 33.9 and 53.6 mg/L at pH levels of $6.18{\pm}0.54$ were 20, 25, 40 and 85%, respectively. At pH $6.5{\pm}0.54$, mortalities to ${NO_2}^-$ 22.4, 36.4, 45.3 and 63.2 mg/L were 25, 35, 50 and 100%, respectively. At pH $7.07{\pm}0.22$, mortalities to ${NO_2}^-$ 25.5, 45.7, 56.3 and 66.4 mg/L were 0, 55, 70 and 100%, respectively. The 96h-$LC_{50}$(median lethal concentration, $LC_{50}$) of fish to several ${NO_2}^-$ concentrations at pH levels of $6.18{\pm}0.54$, $6.5{\pm}0.30$ and $7.07{\pm}0.22$ were assessed in these experiments. 96h-$LC_{50}$ at pH levels of $6.18{\pm}0.54$, $6.5{\pm}0.30$ and $7.07{\pm}0.22$ were 32.68, 40.49 and 45.85 mg/L, respectively. It indicated that acute toxicity of ${NO_2}^-$ to juvenile banded catfish increased with low levels of pH and lengthening of exposure time to ${NO_2}^-$. In particular, smaller fish(mean weight $14.5{\pm}0.46g$) were more sensitive to ${NO_2}^-$ than larger fish(mean weight $81.7{\pm}1.42g$; not published). The 96h-$LC_{50}$ of juvenile banded catfish to ${NO_2}^-$ would be primary guideline for water quality management in the intensive culture system such as RAS and BFT.

Comparative study on growth of leafy vegetables grown in a hybrid BFT-aquaponics using Japanese eel, Anguilla japonica and hydroponics

  • Aquaponics is a cultivation system that combines aquaculture and agricultural hydroponics. This study investigated the productivity of leafy vegetables cultivated in the hybrid biofloc technology-aquaponics (HBFT-AP) using Japanese eel fed two kinds of diets (Mash, commercial powdered feed and extruded pellet [EP]) and hydroponics (HP).The mash was fed to the fish in a type of a dough mixed with water for 6 weeks (Exp1) and switched to the EP containing 2.7% monobasic potassium phosphate (MKP) for subsequent 6 weeks (Exp2). Leafy vegetables of 8 cultivar were employed in the experiment and water quality [dissolved oxygen (DO, mg/L), pH, water temperature (℃), electrical conductivity (EC; ㎲/cm), turbidity (NTU), TAN (NH3 + NH4+) (mg /L), NO2-N (mg/L), NO3-N (mg/L) and PO4-P (mg/L)] was measured 6 times a week. Leafy vegetable productivity (HBFT-AP vs HP) was compared in respective experiment, which was similar or somewhat higher in HBFT-AP. During the 12-week feeding trial, concentrations of nitrite (NO2-N) and phosphorus (PO4-P) were kept low in variability while total ammonia nitrogen (TAN) and NO3-N levels increased with time in HBFT-AP. At the end of two feeding trials, values of weight gain (WG, %), feed efficiency (FE, %), specific growth rate (SGR, %) and protein efficiency ratio (PER) were higher in Exp2 than in Exp1. As well, higher values in hematocrit (PCV, %), plasma K (mEq/L) and inorganic phosphorus (mg/dL) were found (p < 0.05) in Exp2 where fish were fed the EP (EP: 38.60%, 2.80 mEq/L and 7.04 g/dL; Mash: 33.20%, 1.95 mEq/L and 5.50 g/dL). Leafy vegetables in HBFT-AP using Japanese eel fed the EP with MKP 2.7% had a productivity similar (4 kinds of cultivar) or somewhat higher (4 kinds of cultivar) compared to those in HP. Also, Japanese eel fed the EP showed higher values of Pi (m/dL) and K (mEq/L) in plasma compared to those fed commercial powder diet.
