김치의 생화학적 특성 (Critical Review on Biochemical Characteristics of Kimchi(Korean Fermented Vegetable Products))

  • Kimchi is a fermented Korean vegetable product prepared using mafor raw materials (oriental cabbage and radish) and other ingredients through a series of processes of grading, brining, blending, and fermentation. Kimchi fermentation is initiated by various microorganisms originally present in the raw materials, but the fermentation is gradually dominated by lactic acid bacteria. Thus, the complex biochemical activities obviously occur during, before and after kimchi fermentation and their biochemical characteristics greatly differ, depending on the raw materials and processes used. This review covers in detail the numerous biochemical characteristics of sugars, organic acids, amino acids, vitamins(B complex, carotene and ascorbic acid), pectic substances, flavor components and others during preparation and preservation of kimchi.

김치와 김치재료의 콜레스테롤 저하 및 항암효과 (Cholesterol-Lowering Effect and Anticancer Activity of Kimchi and Kimchi Ingredients)

  • The purpose of the paper is to explore the current knowledge on the nutritional evaluation, cholesterol-lowering effect and antitumor activity of kimchi and its ingredients(Korean cabbage, garlic, red pepper powder, ginger and onion). Kimchi contains high contents of nutrients such as vitamins(ascorbic acid, $\beta$-carotene and vitamin B complex), minerals(calcium, potassium, iron and phosphorous), essential amino acids and dietary fiber. Kimch also contains high levels of lactic acid bacteria, allicin, capsaicin, organic acid, phenol compounds, flavonoid and sulfur compounds. The dietary fiber and lactic acid bacteria isolated from kimchi are effective in improving intestinal microflora of human. Isoluble dietary fiber shows anticancer activity, but soluble dietary fiber shows hypocholesterolemic effect. Lactic acid bacteria isolated from kimchi acts as a hypocholesterolemic or anticancer agent. A major ingredient of kimchi is mainly cruciferous and allium family vegetables, which were also reported to prevent cancer and atherosclerosis. It is suggested that kimchi is important not only as one of the traditional fermented Korean food but also as therapeutic agent for carcinogenesis and hypercholesterolemic state.

History, Nutrition, and Advantages of Seaweed for Human Body

  • Seaweed has been consumed especially in the Asia since centuries ago as a vegetable (Matsukawa, 1997; Burtin, 2000; Raghavendran 2003). Seaweed has many valuable nutrients i.e. as a mineral resources, vitamin, and non-caloric fiber, also has potential antioxidant resources. Such of nutrition consists in the Seaweed is Chlorophyll, Carotene, Fucoxantine, Luteen and Zeaxantine, Polysaccharide and Diet Fiber, Mineral, Protein and Amino Acid, Fat and Fatty Acid, Vitamin, Polifenol, also Methanol. The benefits of some nutrition content on seaweed are as an antioxidant, slimmer agent, anti-diabetes, healthy for heart, eyes health, Iodium source, and some kind of vitamins functions. As a conclusion, developing research about seaweed we believe it would be a part of medicine material and food processing, also cosmetic industrial.

김치의 영양학적 평가와 항돌연변이 및 항암효과 (The Nutritional Evaluation, and Antimutagenic and Anticancer Effects of Kimchi)

  • The nutritional evaluation, and antimutagenic and anticancer effects of Kimchi were reviewed. Kimchi contains high levels of vitamins including vitamin C, $\beta$-carotene, vitamin B complex, niacin, and of minerals such as calcium, potassium, iron and phosphorous, etc. Kimchi is a low energy food, byt contains high quantities oforganic acids, dietary fiber and lactic acid bacteria in addition to the vitamins and minerals. Thus Kimchi could be developed as a protective food as it contains the various regulatory nutrients. The levels of NO3, NO2 and nitrosamines in Kimchi ingredients and Kimchi during theripening are not significant. However, high level of NaCl that could be used when prepared Kimchi in the warm region can be a problem, since high concentraitons of NaCl(>9.5%) in Kimchi could be comutagenic to themutagen of MNNG. The methanol extract of Kimchi, red pepper powder, garlic and lactic bacteria revealed antimutagenic or anticancer activities. The Kimchi extract also inhibited the growth of various human cancer cells.

Comparison of the Plasma and Urinary Carnitine Profiles between Omnivore and Vegetarian Female College Students

  • This study compared the effect of Korean vegetarian and omnivorous diets on plasma carnitine concentrations and urinary carnitine excretion. Twenty lactoovovegetarian and twenty omnivorous female college students consented to participate in this study. Daily nutritional intake and plasma and urinary nonesterified carnitine (NEC), acid-soluble acylcarnitine (ASAC), acid-insoluble acylcarnitine (AIAC), and total carnitine (TCNE) were determined. Daily protein, fat, retinol, vitamin B$_2$and vitamin B$\_$12/ intakes were significantly lower for vegetarians, however, fiber, carbohydrate, $\beta$-carotene, folic acid and vitamin C consumptions were much higher for vegetarians than omnivores. There were no differences in plasma NEC, ASAC, AIAC and TCNE concentrations between the two groups. Urinary carnitine excretion was lower in vegetarians, but only the differences in ASAC and TCNE excretions were statistically significant. These results suggest that the lower excretion of ASAC in vegetarians may be a reflection of their lipid metabolic state and that Korean vegetarian diets may accommodate lower carnitine intakes through efficient urinary conservation of carnitine.

  • This paper was developed for production of the humanized milk, comprising similarly to the composition and characteristic of human milk. Humanized milk of superior quality can be made directly from the fresh raw milk mixed vegetable oil, corn syrup, whey powder, ${\beta}-lactose$, sugar, vitamin, ${\beta}-carotene$ and minerals showing formulation of the humanized milk at table 2. The improving effects of adding vegetable oil and corn syrup are both more reformed the chemical and physical properties of humanized milk. The former enhanced the essential fatty acid and energy source in this product, the latter has the most solving function in water and induced amount of emulsion and stabilizer. The products contain about 13% protein, 23% fat, 58.3% carbohydrate, 2% ash and ensue reasonably balance of essential amino acid, poly-unsaturated fatty acid for the requirement of infants and controlled component of the humanized milk such as human milk.

식품성분표 차이에 따른 섭취 영양소 추정 비교 연구 (Comparative Study of Nutrient Intakes Estimated by Difference of Nutrient Database)

  • This study was conducted to investigate the influence of different nutrient databases in estimating nutrient intake. A nutrient survey with Food Frequency Questionnaire containing 65 food items was conducted with 2,426 subjects over 30 years of age living in Yeonchon-gun, Kyungki province. The nutrient intakes were first estimated by using one (A) nutrient database which was based on the Korean Food Composition Table, 4th edition. With the other (B) nutrient database which was based on the Korean RDA(Recommended Dietary Allowances) 6th edition, it was reestimated and two resu1ts were compared. For most nutrients except carbohydrate, calcium, vitamin C and $eta$-carotene, mean nutrient intake level estimated from database B was significantly higher than that from database A(p<0.05). Mean intake level of most nutrients from two databases were significantly correlated by Pearson's correlation coefficients(p<0.001). Results from the ranking of nutrient intake levels of the subjects by two databases were highly correlated ( P >0.9, p<0.001). Weighted kappa values representing measures of agreement ranged from 0.55 databases ranged from 45% for vitamin C to 96% for carbohydrate. This result implies that different nutrient database may produce substantial differences in estimating the absolute nutrient intake but may not be crucial in ranking or classifying individuals with regard to specific nutrient intake.

A Study on the Nutrient Intakes of Hospitalized Elderly Dementia Patients Receiving a Regular Diet

  • The purpose of the present study was to examine the nutrient intake status of elderly dementia patients. We surveyed the dietary intake of 50 demented elderly patients receiving a regular diet, who were hospitalized in a geriatric hospital in Yongin, Gyeonggi-do. The average age of the subjects was $79.6{\pm}6.5$ for the males and $80.5{\pm}6.3$ for the females. The average heights were $169.5{\pm}6.0\;cm$ (males) and $154.6{\pm}5.2\;cm$ (females), and the average weights were $58.5{\pm}7.4$ (males) and $51.7{\pm}8.9\;kg$ (females). Depending on the type of dementia, the male patients showed significant differences in their intakes of vegetable protein, fiber, total iron, and non-heme iron between the Alzheimer's disease (AD) and the vascular dementia (VD) groups, and the female patients showed significant differences in their intakes of total protein, phosphorus, zinc, and vitamin $B_6$ between the two groups. The male patients showed significant differences in their intakes of animal-source calcium and carotene according to ability to self-feed. According to physical activity, the male patients showed significant differences in vegetable fat and vitamin A intake, and the females showed significant differences in their intakes of total protein, animal protein, fiber, ash, total calcium, vegetable-source calcium, animal-source calcium, phosphorous, total iron, non-heme iron, heme iron, sodium, vitamins $B_1$, $B_2$, $B_6$, niacin, vitamin C, folate, and potassium. We found that the patients consumed excessive protein, but low amounts of calcium, vitamin $B_2$, and folate. Also, the patients' physical activity abilities appeared to affect their nutrient intakes.

Composition and Distribution of Phytoplankton with Size Fraction Results at Southwestern East/Japan Sea

  • Abundance and distribution of phytoplankton in seawater at southwestern East/Japan Sea near Gampo were investigated by HPLC analysis of photosynthetic pigments during summer of 1999. Detected photosynthetic pigments were chlorophyll a, b, $c_{1+2}$ (Chl a, Chl b, Chl $c_{1+2}$), fucoxanthin (Fuco), prasinoxanthin (Pras), zeaxanthin (Zea), 19'-butanoyloxyfucoxanthin (But-fuco) and beta-carotene (B-Car). Major carotenoid was fucoxanthin (bacillariophyte) and minor carotenoids were Pras (prasinophyte), Zea (cyanophyte) and But-fuco (chrysophyte). Chl a concentrations were in the range of $0.16-8.3\;{\mu}g/land$ subsurface chlorophyll maxima were observed at 0-10m at inshore and 30-50 m at offshore. Thermocline and nutricline tilted to the offshore direction showed a mild upwelling condition. Results from size-fraction showed that contribution from nano+picoplankton at Chl a maximum layer was increased from 18% at inshore to 69% at offshore on average. The maximum contribution from nano+picoplankton was found as 87% at St. E4. It was noteworthy that contribution from nano+picoplanktonic crysophytes and green algae to total biomass of phytoplankton was significant at offshore. Satellite images of sea surface temperature indicated that an extensive area of the East/Japan Sea showed lower temperature ($<18\;^{\circ}C$) but the enhanced Chi a patch was confined to a narrow coastal region in summer, 1999. Exceptionally high flux of low saline water from the Korea/Tsushima Strait seemed to make upwelling weak in summer of 1999 in the study area. Results of comparisons among Chi a from SeaWiFS, HPLC and fluorometric analysis showed that presence of Chi b cause underestimation of Chi a about 30% by fluorometric analysis but overestimation by satellite data about 30-75% compared to HPLC data.

Aqueous extract of Lycii fructus suppresses inflammation through the inhibition of nuclear factor kappa B signal pathway in murine raw 264.7 macrophages

  • Lycii fructus is the fruit of Lycium chinense Miller and is part of the Solanaceae family. Lycii fructus produces various effects such as hypotensive, hypoglycemic, anti-pyretic, and anti-stress activities. Lycii fructus is known to contain betaine, carotene, nicotinic acid, zeaxanthin, and cerebroside. In the present study, the effects of Lycii fructus aqueous extract on lipopolysaccharide (LPS)-induced inflammation in murine raw 264.7 macrophage cells were investigated. In this study we utilized the 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide (MTT) assay, reverse transcriptionpolymerase chain reaction (RT-PCR), Western blotting, and nitric oxide (NO) detection. Lycii fructus aqueous extract suppressed NO production by inhibiting the LPS-induced expressions of inducible nitric oxide synthase (iNOS) and tumor necrosis factor-alpha (TNF-$\alpha$) mRNA and iNOS protein in murine raw 264.7 macrophage cells. Also, Lycii fructus aqueous extract suppressed the activation of nuclear factor-kappa B (NF-${\kappa}B$) in the nucleus. These results demonstrated that Lycii fructus aqueous extract causes an anti-inflammatory effect that was likely produced by the suppression of iNOS expression through the down-regulation of NF-$\hat{e}B$ binding activity.
