To furnish basic data for the utilization of leaf mustard as a raw material of salted and fermented vegetable food, the contents of carotenoids and chlorophylls of Dolsan Leaf Mustard(DLM) were investigated. Total carotenoid content of DLM was 4.75 mg%, and the compositions were ${\beta}-carotene(80.91%)$, lutein(13.07%), lutein epoxide(3.93%). The contents of chlorophyll a and b were 4.1 and 1.5 mg%, and leaf was 7.4- and 8.1-fold, respectively, higher than leaf stalk. The ratios of chlorophyll a/b in leaf (2.7:1) and leaf stalk(3.0:1) were similar to those of other vegetables.

Changes of chemical and oxidative/antioxidative characteristics chlorophylls(CHLs) and their derivatives in the model system of mustard leaf kimchi(MLK) were investigated. During fermentation of MLK(at 15oC, for 25days, 2.3$\pm$ 0.1% salt content) pH and total acidity were decreased/increased from 5.6 and 0.4%(initial day) to 3.6 and 1.07%(final day) resceptively. Activities of lipoxygenase and peroxidase were decreased gradually, however, these of chlorophyllase was increased in the first 10 days of fermentation. CHLs of MLK in the initial stage of fermentation were degraded rapidly and all CHLs and chlorophyllides were converted to pheophytins and pheophorbides in the final stage. Deg radation effects of CHLs(a & b) and their derivatives(pheophytins a & b) fractionated from MLK and carotene on the autoxidation and lipoxygenase oxidation of linoleic acid were observed, and also stronger antioxidative activities of CHLs and pheophytins were shown in their autoxidation/enzymtic oxidation of linoleic acid.
In this study, effects of feeding Holstein cows with TMR feed, which includes un-dried citrus byproducts, on the nutritional components of their raw milk were investigated. Two kinds of raw milk from primipara cows and multipara cows were used for the experiment: T0 (raw milk produced by dairy cows not fed with TMR feed including citrus byproducts) and T1 (raw milk produced by dairy cows fed with TMR feed including citrus byproducts). For both primipara and multipara cows, there was no statistically meaningful difference between T0 and T1 in terms of moisture, crude protein, crude fat, crude ash contents or caloric content. T1 showed a lower amount of cholesterol in raw milk for both primipara and multipara cows, which was especially statistically meaningful in multipara cows (p<0.05). Regarding mineral contents in raw milk, T1 showed significantly higher amounts of Na and S in primipara cows, and Na, Cu, Fe, S in multipara cows, respectively. For both primipara and multipara cows, there were no statistically meaningful differences between T0 and T1 in terms of the total amount of amino acids in the raw milk, the composition of saturated fatty acid/unsaturated fatty acid, vitamin A, E, $B_2$ or $\beta$-carotene, while T1 showed significantly higher levels of vitamin $B_1$ in primipara cows than T0.

Difference of carotenoid pigments in integuments of the wild and cultured flounder, Paralichthys olivaceus and yellowtail, Seriola quinqueradiata were studied. Total carotenoid contents in integuments of the wild and cultured flounder were 1.38mg% and 1.l6mg%, respectively. The main carotenoids in integuments of the wild flonder were zeaxanthin (19.22%), $\beta$-carotene type triol (17.80%), tunaxanthin C (17.77%), lutein (16.44%) and tunaxanthin B (13.70%). In addition, tunaxanthin A (5.42%), $\alpha$-cryptoxanthin (4.80%), astaxanthin (0.69%) and $\beta$-cryptoxanthin (0.24%) were also contained in small amounts. But in the cultured flounder, lutein (38.21%) and zeaxanthin (29.69%) were contained as main carotenoids. In addition, $\beta$-carotene type triol (7.80%), tunaxanthin C (7.05%), $\alpha$-cryptoxanthin (4.34%), tunaxanthin B (4.21%), as-taxanthin (2.40%) and $\beta$-cryptoxanthin (1.30%) were present in small amounts. Consequently, the wild flounder contained higher amounts of tunaxanthin and trios but contained lower amounts of lutein and zeaxanthin than the cultured flonder. The contents of carotenoids from integuments of wild and cultured yellow-tail were 1.08mg% and 0.09mg%. Wild and cultured yellowtail have similar carotenoid patterns, consisting of tunaxanthin C (44.11%, 43.37%), tunaxanthin B (33.56%, 29.23%) and tunaxanthin A (18.22%, 21.68%), respectively.

Nutritional compositions of Korean traditional actinidia (Actinidia arguta) cultivars, such as Otumsense, Chiak, and Skinny green, were investigated as high value-added food substances. Among minerals, K content of three cultivars was the highest, and P, Ca, and Na contents were relatively higher than those of other minerals. Contents of essential amino acids were analyzed as follows: Otumsense (198.48 mg/100 g), Chiak (413.50 mg/100 g), and Skinny green (270.07 mg/100 g). Total amino acids of Chiak were the highest among the three cultivars, and major amino acids of the three cultivars were glutamic acid and aspartic acid. Analysis of fatty acids showed that major fatty acids were palmitic acid as a saturated fatted acid and ${\alpha}$-linoleic acid as an unsaturated fatty acid in the three cultivars. Glucose and fructose were major free sugar constituents in the three cultivars. Total free sugar content of Otumsense was relatively higher than others. Finally, niacin and vitamin $B_6$ of Skinny green (1.55 mg/100 g, 1.92 mg/100 g) were the highest among the cultivars. However, ${\beta}$-carotene as a vitamin A precursor ($3.82{\mu}g/100g$) and vitamin C as a natural antioxidant substance (47.18 mg/100 g) of Otumsense cultivar were the highest.
This study was conducted to evaluate resistance and physiological responses of Zelkova serrata Makino seedlings to ozone in open-top chamber. One-year-old seedlings of Zelkova serrata were planted in pots in April and grown in greenhouse until August. The plants were transferred into two out-door open-top chambers with a dimension of 2.0 m in diameter and 2.0 m in height. First chamber served as a control and was supplied with ambient air. Ozone was added to the second chamber for 5 hours per day(10.00 AM-15.00 PM) for 23 consecutive days at 0.1 ppm. Each chamber housed 70 pots. Every two, three or five days after initiation of exposure, ten pots were randomly removed from the chamber and determined for the contents of chlorophyll a, b, total chlorophyll and ${\beta}$-carotene in the leaves. Photosynthesis and dark respiration were estimated by measuring $CO_2$ absorption in a gas exchange chamber and oxygen absorption by oxygen monitoring system, respectively. Superoxide dismutase(SOD) activity in the leaves was assayed by a xanthine oxidase method. First visible injury of translucent(water-soaked looking) spots appeared on the leaves 14 days after the initial exposure, and ozone accelerated senescence of old leaves. Contents of chlorophyll a and b decreased by 17%, and 31%, respectively, in ozone treatment two days after exposure. The decrease in chlorophyll b was greater than that of chlorophyll a. Content of ${\beta}$-carotene in ozone treatment decreased by 25% two days after initiation of exposure, but the reduction was recovered with time. Photosynthesis decreased by 45%, and the respiration increased by 28% in the ozone treatment. SOD activity started to increase 4 days after beginning of exposure and increased by 285% 7 days after exposure, and decreased to the level below the control treatment with the advancement of the visible injury.
In this study, the effects of feeding citrus peel on the nutritional composition of chicken meat were investigated. The samples consisted of chicken meats provided with only feed for laying hens without citrus peel (CP-0), and chicken meats fed with 1.0%, 1.5% and 2.0% citrus peel during the starter (initial period feed; 1${\sim}$9th day), the grower (middle period feed; 10${\sim}$24th day), and the finisher (latter period feed; 25${\sim}$36th day), respectively. There was no significant difference between CP-0 and CP-1 regardless of feeding citrus peel in terms of chicken's moisture, protein, fat, ash or caloric content. The cholesterol content was significantly lower in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05). The K P and Ca contents were significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05), but there were no significant differences between CP-0 and CP-1, regardless of feeding citrus peet in terms of chicken meat's Na and Mg. There were no significant differences between CP-o and CP-1 regardless of feeding citrus peet in terms of chicken meat's vitamin A, xanthophyll, ${\beta}$-carotene, hesperidin or naringin, but vitamins $B_1$ and $B_2$ were significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05). There were no significant differences between CP-0 and CP-1 regardless of feeding citrus peet in terms of chicken meat's amino acid composition - most of free amino acids and fatty acid composition - but L-glutamic acid was significantly higher in the CP-0 chicken meats than in the CP-1 chicken meats, and the DL-${\beta}$-amino isobutyric acid was significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05).
In this study, changes in the physicochemical properties and functional components of uncooked foods, including carrots, cabbage, shiitake (Lentinus edodes) and white button (Agaricus bisporus) mushrooms, sea mustard, and laver treated with electrolyzed water were investigated. No changes were observed in the primary compositions of any of the materials that were hot air- or freeze-dried after being treated with electrolyzed water. The lightness (L), redness (a), and yellowness (b) values of the carrots, shiitake, and laver were not affected by drying, while changes did occur in the cabbage (L-, a-, and b-values), mushrooms (a-value), and sea mustard (b-value) specimens that were hot air- or freeze-dried following the treatments with electrolyzed water. The dietary fiber contents of all the materials increased when they were hot air-dried. Vitamin C content decreased when the samples were treated with alkalic electrolyzed water. No changes occurred in the lectin, $\beta$-carotene, or total phenolic compound contents after the electrolyzed water treatments, suggesting that electrolyzed water could be used effectively as a pasteurization step for uncooked carrots, cabbage, shiitake and white button mushrooms, sea mustard, and laver.
Following the previous reports (Part I : For Sea-Divers and Hwa-Jeon-Min; Part II : For male and female Buddhists) Authors have conducted another nutrition survey for the island inhabitants living in Sa Hoo Ri, Goon Oi Myun, Wan Do Goon, Jon Nam Province. The following results were obtained. 1. Cereals, green vegetables and fishes and shell-fishes were major food for the inhabitants, and the amounts of the intakes of these foods were 54%, 28.5%, 5.3% of total intake, respectively. The Calorie derived from carbohydrate occupied approximately 80% of total calorie intaken. 2. The calorie intakes of the inhibitant, were generally lower compared with the Korean Recommended Dietary Allowances. 3. Protein intake was generally good, but animal protein occupied only 19.4% of total protein intake. 4. Fat intake was very low and the calorie from fat occupied only 6.1% of total calorie intaken. 5. Vitamin A intake was low, and 99.4% of the total Vitamin A intaken consisted of carotene. 6. Vitamin $B_1\;and\;B_2$ intakes were low, especially Vitamin $B_2$ intake was very low.
Chromosomal aberration tests in vitro using Chinese hamster lung(CHL) cells were carried out to evaluate the possible role of the MeOH extract of Ecklonia stolonifera in modulating the chromosomal damage induced by Mitomycin C(MMC) and Benzo(a)pyrene(B(a)P), respectively. The MeOH extract of Ecklonia stolonifera(260$\mu\textrm{g}$/ml) reduced significantly the incidence of chromosomal aberration induced by treatment with B(a)P by 80%. The suppressive effect was much stronger than that of $\beta$-carotene, which is well known antimu-tagen. However, there was no marked decrease in the chromosomal aberration induced by MMC. In the tests involving chromosomal aberration induced by the treatment of the MeOH extract of Exklonia stlolnifera alone, there was no significant increase in comparison with the negative control. The results would seem to indicate that. at least under the conditions examined, the MeOH extract of Ecklonis stolonifera decreased the chromosomal aberrations induced by B(a)P in the CHL cells, but had little effect on the chromosomal aberration induced by MMC.
