HPLC/MS/MS를 이용한 음료류 중 인공감미료 동시분석에 관한 연구 (A Study on the Analysis of Five Artificial Sweetners in Beverages by HPLC/MS/MS)

  • 본 연구는 식품산업에서 큰 비중을 차지하고 있는 음료류에 대한 인공감미료 (삭카린나트륨, 아스파탐, 아세설팜칼륨, 수크랄로스, 싸이클라메이트)의 함유현황 파악을 위한 동시분석법을 확립하였다. 희석 및 여과의 간편하고 효율적인 전처리 후 HPLC/MS/MS를 이용하여 5종 인공감미료 동시분석 조건을 검토하였다. 컬럼은 $C_{18}$($2.1mm{\times}150mm$, 3.5 um), 이동상은 2% methanol (1 mM ammonium acetate)과 95% methanol (1 mM ammonium acetate)을 사용하여 농도구배 조건으로 각 성분을 분리하였으며 ESI/SRM 방식으로 정량 분석하였다. 0.1~5.0 mg/L의 농도범위에서 각 인공감미료 검량선은 1에 가까운 높은 직선성을 나타냈다. 검출한계, 정량한계는 각각 0.001~0.022 mg/L, 0.004~0.073 mg/L로 저농도의 감미료 분석이 가능함을 확인하였다. 회수율은 92.76~113.50%, 정밀도는 10.91% 이하로 양호하였다. 이상의 결과로 본 분석법은 음료 중 인공감미료 분석에 적합하다고 판단되었다. 확립된 분석법으로 시중 유통 중인 음료 102건 분석한 결과 42건에서 아스파탐, 아세설팜칼륨, 수크랄로스가 검출되었으며 삭카린나트륨과 싸이클라메이트는 검출되지 않았다. 검출된 인공감미료는 표시사항과 일치하였으며 사용대상과 사용량의 기준에 적합하였다.

  • 본 연구는 학교주변에서 유통되는 어린이기호식품 중 빙과류, 음료류, 캔디류를 대상으로 인공감미료 4종(삭카린나트륨, 아스파탐, 아세설팜칼륨, 수크랄로스)의 사용실태와 사용량을 분석하였다. 이에 따른 어린이의 일일추정섭취량 (Estimated Daily Intake, EDl)을 산출하여 일일섭취허용량 (Acceptable Daily Intake, ADI)과 비교함으로써 위해성평가를 실시하였다. 어린이기호식품 섭취에 대한 인공감미료 4종의 함량을 분석한 결과, 빙과류, 음료류, 캔디류의 평균 함량은 삭카린나트륨의 경우 각각 0.41, 0.47, 0.00 mg/kg, 아스파탐은 0.00, 20.54, 197.09 mg/kg, 아세설팜칼륨은 0.00, 28.10, 0.00 mg/kg, 수크랄로스는 9.99, 1.40, 0.00 mg/kg으로 나타났다. 섭취량 분석 결과, 그 수준이 평균적으로 매우 낮고 상위섭취군(95th)에서도 ADI의 0~2.66%에 불과한 것으로 나타나 어린이기호식품 섭취에 따른 어린이의 인공감미료에 대한 위해성 수준은 매우 낮은 것으로 판단된다.

A study on the analysis of artificial sweeteners in processed foods including emulsified foods by HPLC-DAD

  • This study has been carried out to develop a standard method for quantifying of 3 permitted artificial sweeteners (including sodium saccharine, aspartame, acesulfame potassium) contained in foods by HPLC-DAD. A simple and rapid sample pretreatment method was used to remove fat and protein from the test solution with Carrez clearing regent precipitant know to be effective for protein and fat removal. The artificial sweeteners in the test solution purified through sample pretreatment were detected by high performance liquid chromatograph using a Reverse phase C18 column (5 ㎛, 4.6 × 250 mm). The simultaneous quantitative test of 3 kinds of artificial sweeteners can be effectively performed on the high fat emulsified foods containing a large amount of fat. Using the established simultaneous quantitative test method, artificial sweeteners were tested in foods such as dairy products, snacks and chocolate. The results calibration curve showed good linearity with high regression coefficients and the result of recovery test showed satisfactory recoveries within 80~110 %.

Role of certain nutritional supplements and biological regulators in the epilepsy

  • Certain dietary contents, biological supplements might influence the occurrence or treatment of epilepsy. Some studies have found that the supplementation with individual nutrients reduced seizure frequency or improved other aspects of health in patients with epilepsy. Potentially beneficial dietary interventions include treating blood glucose dysregulations. Identifying and avoiding allergenic foods, and avoiding suspected triggering agents such as alcohol, aspartame, and monosodium glutamate. The Atkins diet (very low in carbohydrates) is a less restrictive type diet that may be effective in some cases. Nutrients that may reduce seizure frequency include vitamin B6, magnesium, vitamin E, manganese, taurine, dimethylglycine, and omega-3 fatty acids. Administration of thiamine may improve cognitive function in patients with epilepsy. Supplementation with folic acid, vitamin B6, biotin, vitamin D, and L-carnitine may be needed to prevent or treat deficiencies resulting from the use of anticonvulsant drugs. Vitamin K1 has been recommended near the end of pregnancy for women taking anticonvulsants. Melatonin may reduce seizure frequency in some cases, and progesterone may be useful for women with cyclic exacerbations of seizures. In most cases, nutritional therapy is not a substitute for anticonvulsant medications. However, in selected cases, depending on the effectiveness of the interventions, dosage reductions or discontinuation of medications may be possible. However, nutrient supplementation may be necessary to prevent or reverse the effects of certain deficiencies that frequently result from the use of antiepileptic drugs.

  • 감미료의 종류를 달리하여 제조한 백설기의 관능적특성들에서 거친 정도, 견고성, 촉촉한 정도, 조밀도 및 점착성에서 SOR군과 ASP, SAC군들은 서로 간에 뚜렷한 차이를 보였으며 SUC군과 FRU군을 이들의 중간 양상을 띠었다. 백설기의 색깔과 촉촉한 정도는 감미료의 종류에 따라 뚜렷한 차이를 보였으나, 삼킬때의 용이성과 쓴맛에 있어서는 유의적인 차이가 없었다. SUC군은 대부분의 관능적 특성에서 다른 첨가군들의 중간 양상을 띠는 것으로 평가되었다. 또한 Instron을 사용하여 측정한 견고성, 부착성, 응집성및 점착성의 택스쳐 특성들은 현저하게 유의적인 차이를 보였으며 관능검사의 결과와도 유사한 경향을 나타냈다.

생맥산의 처방을 응용한 전통음료의 개발 (Development of Traditional Drinks using Sangmaksan)

  • This study was conducted to develop a healthy and functional drink using red ginseng, maekmoondong and omija using Saengmaeksan. Since the red ginseng extract was used as a raw material, it was diluted from 1,000 to 1,500 times using distilled water and the highest sensory score was obtained when the red ginseng extract was diluted to 1,500 times. When the red ginseng extract was mired with omija and maekmoondong, there was no difference between the ratio of 1: 20 : 1, 1 : 21 : 1 and 1: 22: 1 (red ginseng : omija : maekmoondong). In case of sweetener, honey showed the highest sensory store compared to sucrose, pear extract apple extract, sucralose and aspartame. Additionally, the sweetness was evaluated using all sweeteners and 10 brix or 11 brix showed the highest sensory score. Therefore, red ginseng extract was first mixed with omija and maekmoondong in the ratio of 1 : 20 : 1, and distilled water was added to 1,500 times of the amount of red ginseng extract. Honey was finally added to the mixture to obtain 10 brix concentration and this was highly acceptable.

  • Nature applied flavanoids, glucosinolates and peptides for a great variety of functions. Flavanoids and glucosinolates are rich source of antioxidants, generally present in colored fruits and vegetables. Quercetin and its glucosides areone of the best examples of flavonol used in daily diet. Whereas peptides can act as antimicrobial, chemical messenger, neurotransmitter etc that regulating various life processes. Aspartame, a dipeptide is used as artificial sweetener and oxytocin for medical purposes, gained importance in everyday life. So, flavanoids, glucosinolates, peptides and their derivatives continue to hold the attention of synthetic chemists, agriculturists and biologists. Apart from a variety of naturally occurring bioactive metabolites, we are aiming to extract, separate and synthesize new analogs of promising natural drug candidates.

인공감미료 섭취가 비만에 미치는 영향 (The Effect of Artificial Sweetener Use on Obesity)

  • Despite the emergence of obesity as a significant public health concern, artificial sweeteners have made their way into various food products due to the perception, that they serve as substitutes for sugar. Artificial sweeteners are used to supposedly achieve weight management and health improvement. However, their efficacy and safety remain debatable. Commonly used artificial sweeteners include aspartame, acesulfame potassium, saccharin, and sucralose. This article discusses the effects of artificial sweetener consumption on weight loss, appetite regulation, blood glucose control, and gut microbiota. Research findings, concerning the consumption of artificial sweeteners and their association with body weight, have shown inconsistencies between randomized controlled trials and cohort studies. Studies, comparing artificial sweeteners to sugar, have reported no significant differences in satiety. Although artificial sweeteners have no calories, they can affect blood sugar levels through the cephalic phase insulin response. A recent study suggested that artificial sweeteners influenced the occurrence of diabetes. Due to limitations in the study design, excluding diabetes-influencing factors was not feasible. The evidence showed that artificial sweeteners harbored potential health risks, necessitating further investigation. According to recent studies, the consumption of artificial sweeteners was associated with gut microbiota changes and individual blood sugar responses. It is important to note that artificial sweeteners cannot be considered safe alternatives to sugar, and further research is required.

Various Types and Manufacturing Techniques of Nano and Micro Capsules for Nanofood

  • Nano and micro capsulation (NM capsulation) involve the incorporation for nanofood materials, enzymes, cells or other materials in small capsules. Since Kim D. M. (2001) showed that a new type of food called firstly the name of nanofood, which means nanotechnology for food, and the encapsulated materials can be protected from moisture, heat or other extreme conditions, thus enhancing their stability and maintaining viability applications for this nanofood technique have increased in the food. NM capsules for nanofood is also utilized to mask odours or tastes. Various techniques are employed to form the capsules, including spray drying, spray chilling or spray cooling, extrusion coating, fluidized bed coating, liposome entrapment, coacervation, inclusion complexation, centrifugal extrusion and rotational suspension separation. Each of these techniques is discussed in this review. A wide variety of nanofood is NM capsulated - flavouring agents, acids, bases, artificial sweeteners, colourants, preservatives, leavening agents, antioxidants, agents with undesirable flavours, odours and nutrients, among others. The use of NM capsulation for sweeteners such as aspartame and flavors in chewing gum is well known. Fats, starches, dextrins, alginates, protein and lipid materials can be employed as encapsulating materials. Various methods exist to release the ingredients from the capsules. Release can be site-specific, stage-specific or signaled by changes in pH, temperature, irradiation or osmotic shock. NM capsulation for the nanofood, the most common method is by solvent-activated release. The addition of water to dry beverages or cake mixes is an example. Liposomes have been applied in cheese-making, and its use in the preparation of nanofood emulsions such as spreads, margarine and mayonnaise is a developing area. Most recent developments include the NM capsulation for nanofood in the areas of controlled release, carrier materials, preparation methods and sweetener immobilization. New markets are being developed and current research is underway to reduce the high production costs and lack of food-grade materials.

천일염을 사용한 김치를 소재로 한 음료 개발 (Development of Sun-Dried Salt Kimchi Beverage)

  • 천일염을 사용한 김치를 소재로 한 음료의 레시피를 개발하고자 하였다. 천일염으로 만든 김치를 첨가하여 제조한 음료에 대하여 감미료의 선호도는 올리고당 > 벌꿀 > 슈가파우더 > 설탕 > 아스파탐 > 배즙 순으로 나타났다. 관능검사로는 김치첨가음료의 색, 냄새 및 종합적 기호도의 3가지 항목으로 평가하였다. 종합적인 기호도 (Overall acceptance)측면에서 동치미 음료가 6.24점, 백김치음료가 6.00점, 배추김치음료가 5.76점 순으로 나타나 동치미음료가 백김치나 배추김치음료보다 더 좋은 관능검사 점수를 나타내었다. 천일염 김치 첨가량은 10%가 대조구와 차이가 없는 것으로 나타났으며 동치미 음료, 백김치음료, 배추김치음료 세 가지 모두에서 공통적으로 가장 적절한 것으로 조사되었다. 제조 후 상온에서 저장했을 경우 저장 시간의 경과에 따라 백김치나 동치미 음료, 배추김치음료 모두 각 관능검사 항목에 대한 관능평점은 저하되었다.
