Perception of Korean Rice Wine and Food Pairings among Foodservice Employees in Seoul Metropolitan Area (수도권 지역 외식업계 종사자의 약주 및 동반 음식에 대한 인식 조사)

  • The present study was performed to obtain data that could be used to popularize yakju(Korean traditional rice wine) by surveying how well rice wine goes with pairing foods. The survey was given to 302 men and women living in the Seoul and Gyunggi areas and work in the food service industry. The Jeon group, Gui group, Jeongol and Jjigae group, Pyeonyuk and Bossam group, and Muchim group were selected as menu items that go well with available rice wines. The survey aimed to identify foods that go well with four rice wines with different sensory characteristics. The survey results showed that both men and women replied that rice wines with Nuruk aroma and Nuruk taste go well with the Jeon group, rice wines with sour and flower aromas and common characteristics go well with the Muchim group, and rice wines with sweet and fruit tastes go well with the Muchim group. However, men and women had different opinions on rice wines having ginseng, soil, and herbal medicine aromas. Men replied that such rice wines go well with grilled meat, whereas women replied that these rice wines go well with Pyeonyuk and Bossan groups.

  • In this paper, we present the different characteristics of NDVI fluctuation pattern between irrigated and non-irrigated area in Suphanburi province, in Central Thailand. For non-irrigated rice cultivation area, there is a strong correlation between NDVI fluctuation and peak rainfall, while there is a lower correlation with irrigated area. In this study, the 'peak detector' classifier was developed to identify the area of non-irrigated and irrigated cropping and its cropping intensity (number of crops per year). This classifier was created based on cropping characteristics such as number of crops, time or planting period of each crop and its relationship with the peak of rainfall. The classified result showed good accuracy in identification irrigated and nonirrigated rice cultivation areas.

Effect of Particle Size on the Physicochemical and Nutritional Properties of Egg Yolk Porridge (입자 크기에 따른 난황죽의 이화학적 및 영양학적 특성)

  • The study was conducted to investigate the effect of particle size on the physicochemical properties of egg yolk-rice porridge. The pH of egg yolk-rice porridge was decreased when compared to that of the control, while the lightness and yellowness was increased as the rice particle size increased. The viscosity of whole particle egg yolk porridge was highest among the three porridges at $40^{\circ}C$. The protein content of the egg yolk-rice porridge was increased three-fold, when compared to that of the rice porridges. The total amino acid content of egg yolk-rice porridge was 1,500.6 mg/100 g, while that of rice was 1,147.5 mg/100 g. The Lys and Thr content of the amino acid content of egg yolk-rice porridge were also increased. Sensory evaluation results revealed that the half particle size rice egg yolk-rice porridge had the highest scores in color, taste and over-all preference. Based on these results, the half particle size egg yolk-porridge had good quality with respect to both the physicochemical and nutritional properties.

  • This study was attempted to examine the sensory quality, color and moisture content of Ssooksulgis added with Mugworts. In sensory quality, Ssooksulgis made by 100% rice flour added with 20% Mugworts showed the most favorite characteristics. In view of color, flavor, afterswallowing and overall quality, 10% Ssooksulgis was more preferable than those of other Ssooksulgis added 50% glutionus rice flour. Moisture contents was not different from other reports. L-value on the control group was high showing 86.78 and 85.81, respectively.

  • The contents of 6 classical records consist of 208 items about alcoholics and a number of side dishes; 44 items in YuckJooBangmoon, 82 items in Joochan, 19 items in the "sulbitnunbup", 24 items in Kyuhapchongsu from Korea university, and 39 items in Kyuhapchongsu. Interpreted content was classified and analyzed. Selected 27 items among those brewages, artless-brewing alcoholics, were distributed into 4 large patterns. The materials used for brewing artless alcoholics were regular rice, and yeast (NURUK) Four patterns, grounded on these materials, were set one thing to another and analyzed. analyzed.

Effect of Particle Size of Rice on Physicochemical and Nutritional Properties of Soybean Porridge (쌀 입자 크기에 따른 콩죽의 이화학적 및 영양학적 특성)

  • The study investigated the effect of rice particle size on the physicochemical properties of soybean porridge prepared at different pH. Redness, yellowness and viscosity of soybean porridge increased according to the rice particle size. Protein content of soybean porridge was increased 2-fold, compared to that of rice porridges. Total amino acid content of soybean porridge was 1,821.2 mg/100 g and that of rice was 1,719.1 mg/100 g. Lysine and threonine contents of limited amino acid of soybean porridge were increased. Half grain rice soybean porridge exhibited the highest sensory scores. The results indicated that half grain size soybean porridge is preferred, both physicochemically and nutritionally.

  • This study was attempted to enhance the contents of dietary fiber and minerals of cooked rice by adding four different levels of carrot juice in cooking water (0%:A. 10%:B. 20%:C. 30%:D). The degree of gelatinization and retrogradation, sensory evaluation. and in vitro digestion ratio were tested. These results concluded that the rice cooked with 10~20 % of carrot juice in cooking water was quite acceptable. the optimum cooking conditions fur the rice were one hour presoaking time, 160% cooking water to rice ratio. 20 minutes heating time and 10 minutes steamed cooking.

Quality Characteristics of Glutinous Rice Dduk Made from Different Rice as a Meal Substitute (쌀의 종류에 따른 식사대용 찰떡의 품질 특성)

  • Glutinous rice dduk, traditional Korean rice cake, was prepared using rice(white glutinous rice, brown glutinous rice, black glutinous rice, gaba glutinous rice) as a meal alternative, and each of their quality characteristics were compared. This study had checked sensory tests, color differences, moisture contents, texture characteristics, and storage lives of dduk during storage at room temperature for 6 days. The moisture contents of black glutinous rice dduk scored the highest. For color properties, gaba glutinous rice dduk was darker with a decreased yellow value, whereas its red value was higher comparing with that of brown glutinous rice dduk. The results of the preference test showed that appearance, flavor, texture, and overall preference were the highest in white glutinous rice dduk, whereas black glutinous rice dduk showed the lowest score. The results of the color difference test showed that softness, viscoelasticity, and fineness were the highest in white glutinous rice dduk, whereas black glutinous rice dduk showed the highest difference in color. For individual textural characteristics, black glutinous rice dduk showed the highest score, whereas white glutinous rice dduk showed the lowest scores in hardness, chewiness, and gumminess. In the results of the textural characteristics of dduk during storage, white glutinous rice dduk showed the highest increase in hardness after 48 hours, whereas black glutinous rice dduk showed the lowest increase. White glutinous rice dduk showed the highest increases in chewiness and gumminess. Cohesiveness decreased in all glutinous rice dduk. In the results of fungal occurrence in dduk during storage, black and gaba glutinous rice dduk showed increased fungi occurrence compared with white and brown glutinous rice dduk after 6 days. In conclusion, the overall preference for glutinous rice dduk made from different rice is more affected by appearance or texture than flavor.

EFFECTS OF HIGH BY-PRODUCT DIETS CONTAINING RICE BRAN AND BEET PULP ON THE SITE AND EXTENT OF DIGESTION AND MICROBIAL SYNTHESIS IN STEERS

  • The effects of feeding rice bran and beet pulp mixtures on the site and extent of digestion and microbial synthesis in fattening steers were studied. Three Holstein steers fitted with ruminal, duodenal and ileal cannulas were fed four diets in a $4{\times}3$ Youden square design. The four diets consisted of 15% Italian ryegrass hay and 85% concentrate as a control diet which included 72% rolled barley, 20% rice bran plus 40% beet pulp, 30% rice bran plus 30% beet pulp or 40% rice bran plus 20% beet pulp. All diets provided 1.8 times digestible energy required for maintenance. The digestibility of fat in the small intestine (% of flow) showed an increase with rice bran content among the by-product diets. Digestibility of structural carbohydrate both in the rumen and the whole digestive tract decreased linearly with rice bran content. The digestibility of nonstructural carbohydrate was not affected by rice bran content, but that of nonstructural, nonstarch polysaccharides was higher in the rumen and lower in the large intestine for the by-product diets than for the control diet. A rice bran content of more than 30% in the by-product diets severely inhibits ruminal microbial synthesis and digestible energy intake in fattening steers.
