The Non-Enzymatic Browning Reaction Occurred by Gamma Irradiation in Sugar-Lysine Aqueous Model Solution (당-Lysine 모델 수용액을 이용한 감마선 조사에 의한 비효소적 갈변반응 연구)

  • Aqueous solutions of sugar alone or in the presence of lysine were gamma irradiated at 0, 5, 10, 20 and 30 kGy at room temperature. Absorbances at 284 nm as an indicator of intermediate stage of non -enzymatic browning reaction increased with irradiation dose in both the solution of sugar or lysine alone and sugar-lysine mixed solution. Absorbances at 420 nm as indicator of browning increased in the irradiated sugar-lysine mixed solutions although no browning was observed in the irradiated solution of sugar or lysine alone. The degree of browning of the irradiated sugar-lysine mixed solution increased with irradiation dose and was dependent on the type of sugar. For sugar-lysine mixed solution irradiated at 30 kGy, the browning had the following order of intensity: sucrose>fructose>arabinose>xylose>glucose. However, the sugar loss of irradiated sugar lysine mixed solution had a following order of intensity: glucose>fructose>sucrose>xylose>arabinose. The reducing power of the non-reducing sugar, sucrose, was produced by gamma irradiation. The present results indicated that gamma irradiation leads to a non-enzymatic browning reaction (carbonyl-amine reaction) in an aqueous system.

  • In this study the effects of fluid viscosity on the pump performances of a conventional centrifugal pump were experimentally studied. The study aimed to compare the pump characteristics for water and high viscosity fluids. The Working fluids are water, aqueous sugar solution and glycerin solution. The pump characteristics of total head and efficiency with high viscosity fluids were different. The performance curves of efficiency for the sugar and glycerin solutions were decreased up to 8.1% and 12.9% than that of water.

Study on Maillard Reaction Products Derived from Aqueous and Ethanolic Fructose-Glycine and Its Oligomer Solutions

  • The present study compared the Maillard reaction products (MRPs) derived from aqueous and ethanolic fructoseglycine and its oligomer (dimer and trimer) solutions. The pH was lower in glycine (G) than in diglycine (DG) and triglycine (TG) in both aqueous and ethanolic solutions, but the pH difference between the DG and TG was not significant. MRPs derived from the DG had a greater absorbance at 294 and 420 nm in ethanolic solution than in an aqueous solution. In particular, the loss of sugar was higher in ethanolic solution than in aqueous solution. Enolization of fructose was observed in both aqueous and ethanolic MRP solutions; however, enolization was not observed for the G in aqueous MRP solutions. The glycine oligomer content in ethanolic MRP solutions remained higher than that in aqueous MRP solutions. Furthermore, neither diglycine nor triglycine were detected in the G aqueous or ethanolic MRP solutions, while triglycine was detected in both the DG aqueous and ethanolic MRP solutions. Absorption in the ultraviolet-visible (UV-Vis) spectra was higher with MRPs derived from the ethanolic solution than with those derived from the aqueous solution. MRPs derived from the DG in an ethanolic solution showed the highest absorption intensity.

  • In this study the effects of fluid viscosity on the pump performances for a conventional centrifugal pump were experimentally investigated. The study aimed to compare the pump characteristics between water and viscosity fluids. In order to measure the flow rate and pressure, v-notch welt and bourdon pressure gauges were used for the codes of KS B6301 and KS B6302. The working fluids were water, aqueous sugar and glycerin solutions. The results were summarized as follows : The experimental results were summarized as follows : the pump characteristics of the total head, shaft power, and efficiency with high viscosity fluids were different from those of water. When the viscosity of the applied fluid was increased, the total head and efficiency were more decreased than those of water. The decreasing gradients of the total head and the efficiency were larger than water due to the increased disk friction losses at the duty operation point. However, the shut-off head was almost constant regardless the viscosity of applied fluids. Each efficiency curves for the sugar $20w\%$ and glycerin $20w\%$ solutions was decreased up to $15.1\%$ and $34.4\%$ than that of water, respectively.

  • In the current study the effects on pump performances of a conventional centrifugal pump for Newtonian and non-Newtonian fluid were experimentally studied. The study aimed to compare the pump characteristics for Newtonian and non-Newtonian fluid. The working fluids are water, aqueous sugar solution, glycerin solution, muddy solution and pulp solution. The pump characteristics with high viscosity fluids were different. The operating efficiency for the sugar and glycerin solutions were decreased to $8.1\%$ and $12.9\%$ than that of water. The head reductions of the muddy solution for different concentration ratios were decreased to $7.97\%,\;15.11\%$ and $24.87\%$ than that of water And the head reductions of the pulp solution for different concentration ratios were decreased to $11.87\%,\;19.79\%$ md $36.81\%$ than that of water.

  • The measurement of cell constant in a diaphragm-cell method is the most important factor. In order to get the correct cell constant, the diffusion coefficients of potassium chloride were measured, at various concentration and temperature of potassium chloride solution, and at the stirring rate in the cell. The pseudo-binary diffusion coefficients of organic aroma component (benzaldehyde) in sugar solution has been measured at various concentration and temperature with the cell constant obtained above. Experimental results were compared and discussed with the semi-empirical epuations from literatures. And, especially, the diffusion coefficient of benzaldehyde, $D_{ba}$ for a small solute diffusing in a viscous solvent of larger molecules is proportional to the -0.82 power of the viscosity of aqueous sugar solution, ${\mu}$ at constant temperature, $D_{ba}{\mu}^{0.82}=constant$.

  • In this study, the pretreatment of Helianthus tuberosus residue had been performed. The two-stage pretreatment on flow-through process were applied in the interests of increase of sugar production yield on enzymatic saccharification. The delignification by aqueous ammonia and the fractionation of hemicellulose by sulfuric acid solution as pretreatment solution were confirmed for effects of enzymatic saccharification. Two-stage pretreatment process was performed using aqueous ammonia and sulfuric acid. The first step was performed with aqueous ammonia for 40 min at $163.2^{\circ}C$ and the second step was performed with sulfuric acid solution for 20 min at $169.7^{\circ}C$. And then, the first step was performed with sulfuric acid solution and the second step was pretreated with aqueous ammonia. At this time, the glucose production was 30.7 g and the glucose yield was 72.4% in the first step process with aqueous ammonia. And, the glucose production was 20.9 g and the glucose yield was 49.3% in the first step process with sulfuric acid solution.

  • Influencing factors on the instant properties of agglomerated parched barley powder prepared by fluidized bed agglomerator were investigated. Instant effect was measured by the determination of wettability, sinkability, dispersibility and solubility of agglomerated particles. Instant effect of agglomerated particle was influenced by sorts of binding materials, concentration of aqueous binder solution and agglomerated particle diameter. The binding materials for agglomerated process were water and aqueous solution of glucose, maltose and gelatin. Instant effect of agglomerated particles increased as the concentration of aqueous sugar solution increased. However, the effect of aqueous solution of gelatin on instant effect was inversely proportional to the concentration. The size of agglomerated particle had an outstanding effect on instant properties and the diameter of agglomerated particle ranging from 0.1 mm - 0.3 mm showed the excellent instant effect.

A Study on the Purification Process of Methyl Fructoside by Liquid Chromatography (액체 크로마토그래피에 의한 메틸프룩토시드의 분리공정 연구)

  • Methyl frucloside was purified from the aqueous sugar/methyl fructoside solution by liquid chromatography using Amberlite IRA-900, strong anion-exchange resin. The optimum operating conditions, resolution and productivity of methyl fructoside were discussed to evaluate the practical feasibility of the proposed chromatographic separation process of methyl fructoside which is useful as a new starting material for sugar ester synthesis. The linear chromatography model with HETP was well applied to the chromatographic separation process of methyl fructoside and the theoretical solution successfully predicted the elution chromatogram of methyl fructoside and sucrose at different superficial linear velocity of eluent for rectangular feed with different loading volume of packed bed. The optimum operating conditions were found to be 75% with the loading volume of packed bed at 1.13 cm/min of the superficial linear velocity at $60^{\circ}C$, and gave the productivity of methyl fructoside of 7 mg/g-resin/h with the resolution of 1.1.

  • To increase the solubility of iodine and iodine releasing agents, which are used widely as a topical broad spectrum antiseptics and disinfectant sanitizers, its inclusion complexes were prepared and studied. Inclusion complexes of iodine with ${\beta}-cyclodextrin$ were prepared by coprecipitation method and complex formation was acertained by differential scanning calorimetry and microscopic observation. Iodine content of inclusion complex was determined by means of iodometry. Tablets containing inclusion complex were manufactured with sugar, citric acid, magnesium stearate, dextrose. Stability of inclusion complexes and tablets was evaluated by accelerated stability test, and comparing with PVP-iodine. During preparation, use of 50% ethanol solution is preferable to water as the medium because the former resulted in more stable complex for a month under accelerated storage conditions. Solubility of iodine in KI aqueous solution was 0.048 g/ml and lower than in 50% ethanol solution. Inclusion complex and its tablets were very stable at severe condition for one month, and comparable to PVP-iodine in the aspect of stability. Inclusion complex tabletswere not affected with citric acid, sugar, dextrose, and direct tableting method was recommendable because wet granulation using ethanol gave some release of included iodine during process.
