The steady and dynamic shear rheological properties of traditional kochujang fermented at three different temperatures (20${^circ}C$, 25${^circ}C$ and 30${^circ}C$) were studied. Flow of kochujang samples showed time dependence, which was quantitatively described by the Weltman model, Kochujang samples were highly shear thinning fluids (n=0.25~0.27) with large magnitudes of Casson yield stresses (1.09~1.21 kPa). Consistency index (K) and apparent viscosity (${\eta}_{a,20}$) increased with increase in fermentation temperature of kochujang. Storage (G') and loss (G") moduli increased with increase in frequency (ω), while complex viscosity (${\eta}^{\ast}$) decreased. Based on dynamic shear data, kochujang samples exhibit structural properties similar to weak gels. The complex and steady shear viscosities at different fermentation temperatures followed the Cox-Merz superposition rule with the application of the shift factor (a=0.011~0.016).
Effects of rheological parameters, such as shear rate, temperature, concerntration, salts on the apparent viscosity of chitosan(deacetylation degree: $84\%$, Mw: 267,000) dissolved in acetate buffer(pH 4.5) were investigated. Rheologiral properties of chitosan solution from cuticle of red snow crab (Chinonecetes japonicus) are as follows. $0.5\%$ chitosan in 0.1M acetate buffer (pH 4.5) solution showed Bingham flow having hysteresis loop. It's flow equation was $\sigma=0.757+19.6_\gamma(r^2=0.99)$. The viscosity of chitosan solution is exponentially increased with its concentration, and showed Arrhenius dependence with respect to the temperature $(10^{\circ}C-40^{\circ}C).$ When various salts were added to chitosan solution, the viscosity decreased as the concentration of counterion increased. But the type ot counterions itself does not have any significant effects on the viscosity.
Purpose: Generally dental technicians clinically decide the sintering temperature of zirconia artificial teeth to match the color of the teeth. However, the sintering temperature influence the microstructure and mechanical strength of ceramic body. In this study, to evaluate the free choice of sintering temperature which leads to color the problems in zirconia false teeth, the variation of microstructure, mechanical strength, and colortone of zirconia ceramics according to the change of sintering temperature was investigated. Methods: Bar type specimens were prepared from commercial zirconia blocks by cutting and polishing into $0.8cm(L){\times}1.0cm(W){\times}4.8cm(H)$. Specimens were fired from 1,400 to $1,700^{\circ}C$ at $50^{\circ}C$ intervals and held for 1hour at highest temperature. Apparent porosity, water absorption, firing shrinkage, bulk density, bend strength, whiteness were tested. Microstructures were observed by SEM. Results: When fired above $1450^{\circ}C$, all specimens showed 0% apparent porosity and water absorption, 20% firing shrinkage, and $6.1g/cm^3$ bulk density regardless of firing temperatures. SEM photomicrographs showed grain growth of zirconia occurred above $1,600^{\circ}C$. Whiteness was also largely changed above this temperature. Maximum bend strength of 1,05MPa was obtained at $1,550^{\circ}C$. Bend strength lowered slightly above this temperature and showed $950{\ss}\acute{A}$ at $1,700^{\circ}C$. Conclusion: In order to fit the colortone of zirconia artificial teeth, arbitrary choice of firing temperature higher than $1,500^{\circ}C$, up to $1,700^{\circ}C$ did not influence the mechanical strength.
Accelerated thermal aging of chlorosulfonated polyethylene (CSPE) was performed for 0 days, 80.82 days, and 161.63 days at 100℃, which is equivalent to 0 y, 40 y, and 80 y of aging, respectively, at 50℃. After freshwater flooding, the volume electrical resistivity of CSPE was highest after 180 days of drying, and its insulating property recovered when dried for more than 300 days. The dielectric constant of the CSPE was not measured after seawater flooding. The dielectric constant of the accelerated thermally aged CSPE was higher after freshwater flooding than that before seawater flooding. The bright, open pores of CSPE were converted into dark, closed pores after seawater flooding, and the dark, closed pores of the accelerated thermally aged CSPE samples were partly converted into bright, open pores after freshwater flooding. The apparent density of CSPE increased slightly whereas its elongation at break (EAB) decreased until 80 y of accelerated thermal aging before seawater flooding. The peak binding energies of oxygen in the non-accelerated and accelerated thermally aged CSPE for 40 y and 80 y were shifted by more than 1.0 eV after seawater and freshwater flooding. The CH2 content in the non-accelerated and accelerated thermally aged CSPE for 40 y and 80 y after seawater flooding for 5 days was lower than that before seawater flooding whereas atoms such as Cl, O, Pb, Al, Si, Sb, and S that are related to conducting ions such as Na+, Cl-, Mg2+, SO4 2-, and K+ were relatively increased.
Citrus (Citrus unshiu S. Marcoy) industry by-products were used as a source of dietary fiber, and the effects of dietary fiber extracted from citrus peel on the proximate composition, pH, color, protein solubility, cooking loss, emulsion stability, and apparent viscosity of a chicken emulsion in model systems were examined. Chicken emulsions were prepared by adding citrus peel fiber at four different concentrations (1, 2, 3, and 4%). The apparent viscosity, redness, and yellowness of the chicken emulsion with citrus peel fiber were higher than those of the control (p<0.05). The lightness values of the chicken emulsions were lower in treatments containing citrus peel fiber (p<0.05). Furthermore, moisture content, cooking loss, and emulsion stability of the chicken emulsion with 1-2% citrus peel fiber were higher than those of other treatments (p<0.05). Fat content was lower in the treatments with added citrus peel fiber than that in the control (p<0.05). Chicken emulsions with added citrus peel fiber had improved quality characteristics, and the best results were obtained for the chicken emulsion with 2% added citrus peel fiber.

Rheological properties of micronized full-fat soyflour (MFS ) milk were determined according to solid content, heat-treatment and type of coagulants. Heat-treated MFS milk showed a pseudoplastic flow pattern. The consistency and flow index of heated MFS milk was greatly affected by increasing the concentration of MFS and/or soy protein isolate (SPI). Apparent viscosity of MFS milk was gradually decreased by heating below 6$0^{\circ}C$, but was drastically increased by raising temperature further. Addition of coagulants and SPI resulted in dropping the temperature that allows to increase apparent viscosity drastically. A coagulant for MFS tofu was formulated based on the gelling Property of a single coagulant. The textural properties of MFS tofu were improved using 7.1% total protein fortified with SPI.
Lacquer sap extracted from lacquer trees exhibits good thermal stabilities and antimicrobial properties. To apply these superior properties to functional packaging, polyurushiol (YPUOH) powders were prepared and blended into LDPE (low density polyethylene) to prepare three different LDPE/YPUOH composite films via a twin screw extruder system. Their morphology, thermal and antimicrobial properties as well as barrier properties of the LDPE/YPUOH composite films were thoroughly investigated to find out applicablities of the films as functional packaging materials. Although the interfacial interaction between LDPE and YPUOH was relatively weak, LDPE/YPUOH composite films exhibited good dispersion of YPUOH in LDPE, resulting in the enhanced thermal stability with YPUOH loading. Due to the good antibacterial property of as-prepared YPUOH, LDPE/YUOH composite films also showed an excellent antibacterial activity (R) of 99.9% against E. coli. Furthermore, the moisture barrier property of LDPE/YPUOH composite films increased with increasing YPUOH contents. Incorporating the relatively low amount of YPUOH in LDPE resulted in the apparent enhancement in thermal stabilities, antibacterial and moisture barrier properties, which made them promising candidates as a functional filler for packaging materials.
Cement-bonded particleboard is being used as outdoor siding material all over the world, because this composite particularly bears a light weight, high resistance against fire, decay, and crack by cyclic freezing and thawing, anti-shock property, and strength enhancement. Construction systems are currently changing into a frame-building style and wooden houses are being constructed with prefabrication type. Therefore, they require a more durability at outdoor-exposed sides. In this study, the cement hydration property for Korean pine particle, Japanese larch particle and face- and middle layer particles (designated as PB particle below) used in Korean particleboard-manufacturing company was investigated, and the rapid manufacturing characteristics of cement-bonded particleboard by supercritical $CO_2$ curing was evaluated. Korean pine flour showed a good hydration property, however, larch flour showed a bad one. PB particle had a better hydration property than larch flour. The addition of $Na_2SiO_3$ indicated a negative effect on hydration, however, $MgCl_2$ had a positive one. Curing by supercritical $CO_2$ fluid gave a conspicuous enhancement in the performances of cement-bonded particleboards compared to conventional curing. $MgCl_2$ 3%-added PB particle had the highest properties, and $MgCl_2$ 1%-added Korean pine particle had the second class with the conditions of cement/wood ratio of 2.7, a small fraction-screened particle and supercritical curing. On the contrary, the composition of non-hammermilled or large fraction-screened particle at cement/wood ratio of 2.2 was poorer. Also, the feasibility for actual use of 3%-added, small PB particle-screened fraction was greatest of all the conventional curing treatments. Relative superiority of supercritical curing vs. conventional curing at dimensional stability was not so apparent as in strength properties. Through the thermogravimetric analysis, it was ascertained that the peak of a component $CaCO_3$ was highest, and the two weak peaks of calcium silicate hydrate and ettringite and $Ca(OH)_2$ were present in supercritical treatment. Accordingly, it was inferred that the increased formation of carbonates in board contributes to strength enhancement.

This study investigates micro-structural and mechanical properties of trabecular bone in human femoral head with and without osteoporosis using Micro-CT and finite element-model. 15 cored trabecular bone specimens with 20min of diameter were obtained from femoral heads with osteoporosis (T-score > -2.5 ) resected for total hip arthroplasty, and 5 specimens were removed from femoral head of cadavers, which has no history of musculoskeletal diseases. A high-resolution micro-CT system was used to scan each specimen to obtain histomorphometry indices. Based on obtained micro-images(pixel size=21.31㎛), a FE-model was created to determine mechanical property indices. While non-osteoporosis group had increases trabecular thickness, bone volume, bone volume fraction, degree of anisotropy and trabecular number compared with those of non-osteoporotic group, the non-osteoporotic group showed decreases in trabecular separation and structure model index. Regarding the mechanical property indices, reaction force, apparent stress and young's modulus were 1ower in osteoporotic group than in non-osteoporotic group. Our data shows salient deteriorations in trabecular micro-structural and mechanical properties in human femoral head with osteoporosis.
Retention of interfacial shear strength (IFSS) of polymer composites at cryogenic temperature application is very important. In this work, single carbon tiber reinforced epoxy compositc was used to evaluate IFSS and apparent modulus under room and cryogenic temperatures. The property change of carbon and selected epoxy for particularly cryogenic temperature application were tested in tension and compression. Tensile strength and elongation of carbon fiber decreased at cryogenic temperature, whereas tensile modulus was almost same. On the other hand, epoxy matrix showed the increased tensile strength but decreased elongation. It can be due to maximum thermal contraction existing free volume in cryogenic temperature. IFSS increased up to $-10^{\circ}C$ and then decreased steadily. However, IFSS at cryogenic temperature was still similar to that at room temperature. This result is very useful to cryogenic application since selected epoxy toughness and interfacial adhesion can keep at such low temperature.
