과실 및 채소류의 저장에 있어서 Lactic Acid Bacteria의 이용 (Lactic held Bacteria for the Preservation of Fruit and Vegetables)

  • Lactic aicd bacteria(LAB)는 전통적으로 식품의 발효과정 중에 사용되는 미생물이다. Lactic acid bacteria를 이용한 bacteriocinogenic culture와 lactic acid bacteria에서 생산되는 산물은 식품의 부패에 원인이 되는 미생물과 병원성균에 대한 생육억제효과을 지니고 있다. 이러한 이유로 생선제품, 유제품. 육제품과 발효되지 않은 냉장식품 등의 식품저장에 lactic acid bacteria를 이용한 연구가 다양하게 수행되어져 오고 있었으나 과실 및 채소류에서의 lactic acid bacteria에 대한 효용가능성에 대해서는 아직까지 광범위하게 연구된 것이 없다. 따라서 lactic acid bacteria의 과일 및 채소류의 저장시 효과적이고 적용성이 넓은 보존제로서의 성공적인 이용을 위해서 식품저장과 lactic acid bacteria에 대한 특성, lactic acid bacteria의 대사산물, lactic acid bacteria의 안정성 등을 고려하여 과일 및 채소의 식품성분 및 구성요소와 미생물의 생육저해효과가 있는 대사산물과의 관계에 대한 많은 연구의 수행이 과일 및 채소제품에서 lactic acid bacteria의 식품보존제로서의 이용가능성을 평가하기 위해 필요한 점으로 사료된다.

  • 천연항균제의 개발에 대한 관심이 날로 증가하는 가운데, 다수의 연구들에서 Escherichia coli, Salmonella typhimurium, Pseudomonas aeruginosa, Vibrio parahaemolyticus, Staphylococcus aureus, Bacillus subtilis, Aspergillus parasiticus, Helicobacter pylori 등 다양한 세균들에 대한 서양산 고추냉이의 항균 효과가 밝혀진 바 있다. 서양산 고추냉이가 치아우식증의 원인균인 Streptococcus mutans에 대해서도 항균성을 나타낸다는 보고가 있으나, 아직까지 구강내에서 분리된 임상분리균주를 대상으로 한 연구는 미진한 실정이다. 본 연구에서는 사람의 구강내에서 분리 및 동정된 Streptococcus mutans에 대한 서양산 고추냉이 뿌리 추출물의 항균 효과를, 대표적 항균제인 클로르헥시딘과 비교하여 알아보고, Streptococcus mutans 표준균주에 대한 서양산 고추냉이 뿌리 추출물의 효과와 비교하고자 하였다. 항균 효과를 평가하기 위해 최소억제농도와 최소살균농도를 측정하여 다음과 같은 결론을 얻었다. 1. 본 연구에서 Streptococcus mutans 임상 분리균주와 표준균주에 대한 서양산 고추냉이 뿌리 추출물의 최소억제 농도는 각각 평균 $0.083{\sim}0.25%$ ($833.33{\sim}2500 ppm$), 평균 0.25%(2500 ppm)으로 나타나, 두 종류의 균주에 대한 항균 효과에는 뚜렷한 차이가 없는 것으로 나타났다. 2. 서양산 고추냉이 뿌리 추출물은 $0.083{\sim}0.25%$의 농도에서 클로르헥시딘($0.0021{\sim}0.0041%$)과 대등한 항균 효과를 가지는 것으로 나타났다.

Antimicrobial effect of Australia propolis on cariogenic and periodontopathic bacteria

  • The purpose of this study was to investigate the antimicrobial effects of Australia propolis against cariogenic and periodontopathic bacteria. Antimicrobial activity was determined by evaluating the minimal bactericidal concentration (MBC). Cell cytotoxicity of propolis extract on normal human gingival fibroblast (HGF-1) cells was observed using the methylthiazolyldiphenyl-tetrazolium bromide assay. The data indicated that, with the exception of Aggregatibacter actinomycetemcomitans (KCOM 1306), the MBC values of the propolis strains were 0.25-1% without HGF-1 cell cytotoxicity. These results suggest that propolis can be used to develop oral hygiene products for the prevention of oral infectious disease.

향신료 에탄올 추출물이 김치에서 분리한 Lactobacillus plantarum과 Leuconostoc mesenteroides의 항균성에 미치는 영향 (Antimicrobial Effect of Ethanol Extracts from Spices against Lactobacillus plantarum and Leuconostoc mesenteroides Isolated from Kimchi)

  • This study was carried out to investigate antimicrobial activities of ethanol extracts from 12 kinds of spices against Lactobacillus plantarum and Leuconostoc mesenteroides to kimchi fermentation. Lactic acid bacteria were isolated from fermenting kimchi, were identified as Leu. mesenteroides, Lac. sake, Lac. plantarum and Pediococcus pentosaceus. The ethanol extracts of cardamon, thyme and cumin among 12 spices showed antimicrobial activities against Lac. plantarum, while they did not showed the activites against Leu. mesenteroides through paper disc method. In addition, the growth of Lac. plantarum was inhibited in MRS broth containing each of cardamon(>4%), thyme(>4%) an cumin(>1%).

  • Silver-containing antimicrobial inorganic pigments that have been developed so far still have problems, which result from silver's unique metallic color and discoloration. Therefore, those things are used only for make-up cosmetics or just the restricted amount is used. Although the use of white-base pigments or iron oxides has been considered to solve those problems, they virtually fail to serve as a perfect substitute. So it seems difficult to use enough quantity of those materials or to apply them to diverse kinds of products. The purpose of this study was, accordingly, to attain the complete removal of metallic color and the maintenance of color. Additionally, a rosemary extract was employed to develop a silver-containing inorganic antimicrobial pigment(Ag-AIP-R) that has an improved antimicrobial effect and anti oxidative effect.

Grapefruit 종자 추출물의 항균작용 및 미생물 생리기능에 미치는 영향 (Antimicrobial activities and effect of grapefruit seed extract on the physiological function of microorganism)

  • To investigate the antimicrobial activities and effect of grapefruit seed extract(GFSE) on the physiological function of microorganism, antimicrobial activity, fatty acids of bacterial cell lipid and amino acids of bacterial cell protein were measured. The change of cell morphotype was observed by transmission electron microscope. GFSE was very stable on the wide range temperture and pH. The growth rate of E. coli and B. suvtilis were decreased above 40ppm GFSE There fore, minimum inhibitory concentration (MIC) of the E. coli and B. subtilis to GFSE were determined around 40ppm. In the change of fatty acids quantities, hexadecanoate was significantly decreased on the treatment compared with control in case of E. coli, whereas tridecanoate was not detected in case of B. subtilis. In the change of amino acids quantities, alanine, glutamic acid, glycine, lysine were decreased on the treatment compared with control in case of E. coli and B. subtilis Transmission electron microsgraphs(TEM) showed the microbial cells were destroyed by GFSE.

The effect of using nanoparticles in bioactive glass on its antimicrobial properties

  • Objectives: This study addresses the effect of using nanoparticles (np) on the antimicrobial properties of bioactive glass (BAG) when used in intracanal medicaments against Enterococcus faecalis (E. faecalis) biofilms. Materials and Methods: E. faecalis biofilms, grown inside 90 root canals for 21 days, were randomly divided into 4 groups according to the antimicrobial regimen followed (n = 20; BAG-np, BAG, calcium hydroxide [CaOH], and saline). After 1 week, residual live bacteria were quantified in terms of colony-forming units (CFU), while dead bacteria were assessed with a confocal laser scanning microscope. Results: Although there was a statistically significant decrease in the mean CFU value among all groups, the nano-group performed the best. The highest percentage of dead bacteria was detected in the BAG-np group, with a significant difference from the BAG group. Conclusions: The reduction of particle size and use of a nano-form of BAG improved the antimicrobial properties of the intracanal treatment of E. faecalis biofilms

Tea Tree Oil의 여드름균에 대한 항균활성 (Antimicrobial Activity of Tea Tree Oil against Pathogens relate to Acne)

  • The purpose of this study is to determine the antimicrobial effect of tea tree oil a against pathogens relate to acne. Tea tree oil extracted from Australian Melaleuca alterifolia has been studied extensively for their antimicrobial properties against different type of bacteria and fungi. Tea tree oil has been reported to have antibacterial, antiinflammatory and antitumor activities, among others. By evaluating the antibacterial effect of Tea Tree Oil of Australia, the MIC value of Tea Tree oil against P. acnes was 0.05% and 0.5% against aerobic bacteria. This study showed that Tea Tree Oil has antibacterial effect against bacteria which induce acne. Tea Tree Oil had better antibacterial effect against P. acnes compared to aerobic bacteria. It is promising to develop a nature-based functional material for makeup product, which can cure and prevent acne.

용매별 정향 추출물의 항균활성 (Antimicrobial Activity of Clove Extract by Extraction Solvents)

  • 본 연구에서는 추출용매(물, 메탄올, 석유 에테르)에 따른 정향추출물의 항균성을 비교, 검토하고자 하였다. 물 추출물의 경우 E coli, S. aureus, S. typhimurium, P. aeruginosa에 대해서 항균효과를 나타내었으며 B. subtilis에서는 높은 농도에서도 항균력을 보이지 않았다. 메탄올 추출물의 경우 모든 균에서 항균성을 나타내었고, 특히 S. aureus에 대한 항균성이 매우 우수하였으며, 반면에 석유 에테르 추출물의 경우에서는 항균효과를 나타내지 않았다. 액체배지에서 정향의 생육저해 효과는 물 추출물의 경우 B. subtilis를 제외한 모든 균에서 항균력을 보였으며, 균종별로는 S. aureus보다 E. coli, S. typhimurium에서 더 강한 항균력 을 보였다. 메탄올 추출물의 생육저해 효과를 조사한 결과 모든 균에서 강한 항균력을 보였고, G(-)균보다 G(+)균에 대한 생육저해 효과가 크게 나타났다. 반면 석유 에테르 추출물은 모든 균에 대해서 추출물의 농도에 관계없이 생육저해 효과를 보이지 않았다. 따라서 정향 추출물의 항균력은 메탄올>물>석유에테르 추출물 순이었다.
