To study the effects of utilizing extruded full fat soybean (FFS) in layer diets, 300 White Leghorn pullets were put in trial divided into 5 treatments; control (commercial soybean meal as protein source), FFS 50% (replacing 50% of soybean meal with FFS), FFS 100% (replacing all amount of soybean meal with FFS), soybean oil and tallow added treatment. Each treatment consisted of 5 replicates of 12 birds. Egg production and feed efficiency from hens fed control diet were significantly lower than from hens fed the other diets. Significant differences in egg production and feed efficiency were found between the control and the other treatments. Cholesterol concentration of serum and egg yolk were not affected by any dietary treatment. Feeding extruded full fat soybean did not cause pancreatic hypertrophy nor change in mortality. There was an indication that linoleic acid (C18:2), linolenic acid (C18:3) and iodine contents increased in the thigh and egg yolk lipid of the groups fed FFS or soybean soybean can serve as effective protein source for layer diets if economically justified.
The purpose of this study is to provide useful information which will aid in the promotion of nutritional policy in the Korean rural area which are derived from a survey of intake and source of protein in some Korean rural adults and the correlations between their protein nutrition and various nutrients, the uses of tobacco, alcohol, coffee, etc. The survey was conducted from July, 24 through July, 18, 1989. The healthy subjects were 45 males(average age 42.3, average BMI 22.1kg/m2) and 55 females (44 years, 21.2 kg/m2) residing in Sungjoo Kyun, Chulanam-Do, Korea. The subjects were examined for the anthropometric, food Intake and food habits. Their daily diets were measured by 24-hr recall method. The results can be summarized as follows : The daily mean protein intakes of male and female subjects were 9595 of RDA(66, 5g) (16. 7% of total food intake per day) and 102.3Bh of RDA(61g) (14.8% of total intake per day) respectively. The order of sources of animal protein in all subjects was fish(47.9%), meat(29.8%), milk (12%), and egg(10.3%). Among protein sources the intake frequencies of fork and chicken were higher than those of others. The protein nutrition of the subjects showed positive correlations with energy and fat, carbohydrate, fiber at the level of significance of 1%. The protein nutrition of the male subjects showed no correlation with age, BMI, uses of alcohol, coffee, medicine, but the plant protein nutrition showed a positive correlation with smoking and exercise(at 5%). And the protein nutrition of the male subjects showed no correlations with uses of tobacco, alcohol, coffee, medicine and their opinion of their present state of their health, but the age of the male subjects showed negative correlations with milk(at 1%) and egg(at 5%). In conclusion, the daily protein Intake was good and the main sources of animal protein were fishes in rural adults. The protein nutrition of the subjects showed a correlation with energy, fat, carbohydrate and in the case of female, milk and egg intakes showed the negative correlation with age.

Yeast protein can be a nutritionally suitable auxiliary protein source in livestock food. The breakdown of proteins and thereby generating high-quality peptide, typically provides nutritional benefits. Enzyme hydrolysis has been effectively uesed to generate peptides; however, studies on the potential applications of different types of enzymes to produce yeast protein hydrolysates remain limited. This study investigated the effects of endo- (alcalase and neutrase) and exotype (flavourzyme and prozyme 2000P) enzyme treatments on yeast protein. Endotype enzymes facilitate a higher hydrolysis efficiency in yeast proteins than exotype enzymes. The highest degree of hydrolysis was observed for the protein treated with neutrase, which was followed by alcalase, prozyme 2000P, and flavourzyme. Furthermore, endotype enzyme treated proteins exhibited higher solubility than their exotype counterparts. Notably, the more uniform particle size distribution was observed in endotype treated yeast protein. Moreover, compared with the original yeast protein, the enzymatic protein hydrolysates possessed a higher content of β-sheets structures, indicating their higher structural stability. Regardless of enzyme type, enzyme treated protein possessed a higher total free amino acid content including essential amino acids. Therefore, this study provides significant insights into the production of protein hydrolysates as an alternative protein material.

Soybean meal was fermented by Aspergillus usami in order to reduce phytate content. Aflatoxin B1 was not detected in the fermented soybean meal. The contents of crude protein, crude fiber, ether extract and crude ash were slightly increased following fermentation with a concomitant reduction in nitrogen free extract. Though the fermentation partly degraded proteins in the soybean meal, there was small difference in amino acid composition between the soybean meal and the fermented soybean meal. The results showed that the fermentation did not affect nutritional value of protein in soybean meal. Approximately 55% of phosphorus extracted by trichloroacetic acid was inositol hexaphosphate (phytate) in the soybean meal. The content of inositol tetra to hexaphosphates was not detected in the fermented soybean meal. These results indicated that the fermentation almost completely eliminated phytate in soybean meal. Phytase activity was not detected in the unfermented soybean meal. However, the enzyme activity in the fermented soybean meal was 167.7 U/g. When the fermented soybean meal in supplemented in formula feeds, phytase in the fermented soybean meal might partly degrade the phytate in other ingredients in the digestive tract. The fermented soybean meal is possibly used as a phytate-free protein source of feed, which contains high available phosphorus.

This study was conducted to examine the effect of Leucaena leucocephala-Morus alba-Azadirachta indica (2:1:1) based leaf meal mixture as nitrogen source to partially replace (50%) soybean meal in conventional supplements on the performance of goats. Twelve non-descript female goats were divided into two equal groups in a completely randomized design to receive either the leaf meal mixture based supplement (LMAM) or soybean meal incorporated concentrate (SBM) and wheat straw for ad libitum intake for a two month period. The goats given LMAM and SBM concentrate had similar dry matter intake ($50.2{\pm}1.67g/kg\;W^{0.75}$) and nutrient digestibility. Nitrogen intake and its faecal and urinary excretion were similar irrespective of diets. The balance of nitrogen was positive and comparable ($1.63{\pm}0.08g/d$) in both dietary treatments. The plane of nutrition on both diets was comparable and the digestible crude protein and total digestible nutrients values of the composite diets offered did not differ significantly between the dietary supplements. The serum concentration of enzymes alanine aminotransferase and aspartate aminotransferase were statistically similar in both the groups, while haemoglobin and serum urea levels were significantly (p<0.05) higher in LMAM and SBM treatments, respectively. It was concluded that the leaf meal mixture of Leucaena leucocephala-Morus alba-Azadirachta indica could be used as a vegetable protein supplement to wheat straw based diet of goats.
Objective: This research determined the chemical composition and the apparent and standardized ileal digestibility (AID and SID) of crude protein (CP) and amino acids (AA) in whole yeast and autolyzed yeast derived from sugarcane ethanol production fed to growing pigs. Methods: Six growing pigs were randomly allocated in a replicated 3×3 Latin square design with 3 diets and 3 periods of 7 days each, resulting in a total of 6 experimental replications. Three assay diets were formulated using whole yeast, autolyzed yeast, or soybean meal as the sole sources of dietary CP and AA. Pigs were allowed to adapt to the assay diets for 5 days. Thereafter, ileal digesta samples were collected continuously for 8 hours on days 6 and 7. Results: There was no difference in the chemical composition between whole yeast and autolyzed yeast, but whole yeast had low digestibility of CP and AA due to the presence of a rigid cell wall. As conducting autolysis can induce cell wall damage, the AID and SID of CP and AA were greater in autolyzed yeast than in whole yeast. Conclusion: The information obtained on the SID of CP and AA in both yeast products can be used for the accurate estimation of the bioavailability of CP and AA in feed formulations. The yeast products derived from sugarcane ethanol production are an alternative protein source in pig diets.
Growth and feeding studies were conducted to determine effects of hazelnut kernel oil meal (HKOM) on growth performance (as protein efficiency), and milk production and composition. In the growth study, 24 individually fed Karayaka lambs (4 mo. and 25.55 kg LW) were used to determine protein efficiency calculated using the Slope Ratio Technique. In the feeding trial, 4 Jersey cows were arranged in $4{\times}4$ Latin squares experiment to measure effects of diets containing HKOM, soybean meal (SBM) corn gluten meal (CGU) and urea (U) on milk production and composition. Protein efficiencies for HKOM, SBM and CGM were found as $1.342{\pm}0.499$, $0.879{\pm}0.488$ and $1.833{\pm}0.893$, respectively. Milk production for the cows consuming concentrates, containing HKOM, SBM, CGM and U, were $13.97{\pm}0.99$, $13.20{\pm}1.09$, $14.86{\pm}0.68 $ and $13.06{\pm}1.23kg/d$ (p<0.01), respectively. There were no differences (p>0.05) among diets for milk protein content were statistically different (p<0.05), although milk DM and fat percentage as well as milk solids-not-fat and lactose percentage (p<0.01). The highest DM intake was associated with the U diet, intake was intermediate with the SBM and HKOM diets, and the lowest with CGM diet (p<0.05). In conclusion, there data may indicate that the HKOM is useful in diets as a protein source for growing ruminants and lactating cows.
Objective: The impact of forage feeding strategy on growth performance, ruminal fermentation and nutrient digestibility in post-weaning calves was investigated. Methods: Forty-five female Holstein calves (body weight [BW] = $79.79{\pm}0.38kg$) were enrolled in the 35-d study at one week after weaning and randomly assigned to one of three dietary treatments. All diets were fed as total mixed ration containing 60% (dry matter [DM] basis) of basal starter feed and 40% (DM basis) of forage, but varied in composition of forage source including i) alfalfa (40% DM, AH); ii) alfalfa hay (26.7% DM)+oat hay (13.3% DM; OH); iii) alfalfa hay (26.7% DM)+corn silage (13.3% DM; WS). Results: Dry matter intake was not different among treatment groups (p>0.05). However, BW (p<0.05) and average daily gain (p<0.05) of calves fed AH and OH were greater than WS-fed calves, whereas heart girth was greater in OH-fed calves than those fed AH and WS (p<0.05). Ruminal fermentation parameters including proportion of butyric acid, acetated-to-propionate ratio, concentration of total volatile fatty acid, protozoal protein, bacterial protein, and microbial protein in rumen were the highest in OH (p<0.05) and the lowest in WS. Compared with the AH and WS, feeding oat hay to postweaning calves increased crude protein digestibility (p<0.05), and decreased duration of diarrhea (p<0.05) and fecal index (p<0.05). Conclusion: Our results suggested that partially replacing alfalfa hay with oat hay improved ruminal fermentation, nitrogen utilization, and reduced incidence of diarrhea in post-weaning dairy calves.

A total of six crossbred barrows ($Duroc{\times}Landrace{\times}Large$ White, $44.17{\pm}1.94kg$ BW) were housed conducted to evaluate apparent fecal digestibilities of Brown Rice (BR) as an alternative energy source in growing pigs. Pigs were housed individually on metabolism crate on the basis of body weight. Four treatments contained: 1) 100% of corn-soybean meal (C100; Control diet), 2) 75% of corn-soybean meal diet plus 25% of corn meal (C25), 3) 100% of brown rice-soybean meal diet (BR100), 4) 75% of brown rice-soybean meal diet plus 25% of brown rice meal (BR25). Brown rice has an excellent gross energy and crude protein composition compared to corn. The BR used had 3,801 kcal of gross energy/kg, 8.0% crude protein, 2.6% of ether extract, 0.035% calcium and 0.35% total phosphorus. The best digestibilities of energy (87.75%), DM (81.71%) and CP (78.57%) were observed in BR 100 group and the worst were found in Corn 25 group. The nutrient digestibility was not significantly different in most nutrients. Through this experiment, BR appeared a good alternative energy source that can replace corn yellow to 100% in growing pigs. Therefore, the price relationship between corn and BR may provide an excellent opportunity for pork producers to use BR in order to reduce feed costs provided that diet has been balanced for digestible amino acids.
This study investigated on the effects of adding mechanically deboned chicken meat (MDCM) hydrolysates on the quality properties of imitation fish paste (IFP) during storage. IFP was prepared from Alaska Pollack, spent laying hens surimi and protein hydrolysates which were enzymatically extracted from MDCM. The study was designed as a $3{\times}4$ factorial design with three MDCM hydrolysate content groups (0%, 0.4%, and 0.8%) and four storage times (0, 2, 4, and 6 weeks). Addition of MDCM hydrolysates increased crude fat content but lowered water content (p<0.05). The breaking force of IFP, an indicator of gel formation, increased in treated groups compared to control (p<0.05). Angiotensin I-converting enzyme (ACE) activity was inhibited and free radical scavenging activity increased with increasing MDCM hydrolysate content (p<0.05). In conclusion, the addition of MDCM to IFP improves gel characteristics. Additionally, protein hydrolysates from MDCM serve as a potential source of ACE inhibiting peptides.
