Studies on the Development of Blood Sausage from By-products -Appreciation of Blood Sausage Qualities from the Animal Experiments- (부산물(副産物)을 이용(利用)한 혈액(血液)소시지 개발(開發)에 관한 연구(硏究) -동물실험(動物實驗)을 통한 제품가치(製品價値) 평가(評價)-)

  • This experiment aims to observe the nutritive value of blood sausages by manufacturing three kinds of them in order to utilize various by-products of swine when it is processed. In attempt to do so, five different diets were made: one control diet and four diets in which three kinds of blood sausages(blood sausage-1 was made with sausage meat 10%, fat 40%, blood 20%, skin 20% and liver 2%. blood sausage-2 was made with ham meat 30%, fat 20%, blood 20%, liver 2% and skin 20%. blood sausage-3 was made with smoked ham patch 30%, fat 20%, blood 20%, liver 2% and skin 20%) and mixed sausage(sausage meat 20%, fat 10% and fish meat 35%) were mixed with control diet at the rates of 10% respectively. These diets were fed to growing male and female albino rats for 6 weeks. The results obtained through this study are summarized as follows. In body weight gain of male rats, blood sausage-1 and 2 groups were significantly higher than mixed sausage group during the experimental period, and in that of female rats, control group and blood sausage-1 group were similar, but the other groups were lower than control group. Food intake was different in each group every week, but the amount of that was similar to each one throughout all experimental period. Food efficiency ratio and protein efficiency ratio in male were similar in each group, but slightly different in female during the feeding period. Liver weights of male in mixed sausage group and blood sausage-3 group were lower than those in control group and blood sausage-2 group, but liver weight of female in blood sausage-2 group was lower than that in control group. And all groups were similar in liver weight per 100 g of body weight. Mixed sausage group and blood sausage-1 group were lower than control group in kidney weight of male, and blood sausage-1 group was lower than control group in kidney weight of female. Kidney weight per 100 g of body weight of male showed that blood sausage-1 group was lower than the other groups. Spleen weight was similar in all groups. Hematocrit and hemoglobin contents in blood, total protein, albumin, albumin/globulin ratio, total lipid and total cholesterol contents in serum were showed almost similar in all groups.

  • This nutrition survey was carried out twice(Spring and autumn) in Sam Chung-Ri, Song Kwang Myun, Soong Ju-Gun. The food intakes of 92 family members were measured by weighing method. Also 45 adults were examined for anthropometric, blood content and blood pressure. The results abtained were summarized as follows; In vegetable foods, the intake of rice was high, but that of legumina and other cereals was low. In animal foods, the intake of milk and eggs was low, and that of oils and fats was very low. However, the food intake between spring and autumn showed remarkable difference. The average intake of calorie, protein, Ca, Fe and vitamin $B_2$ except vitamin $B_1$ and niacin was below the RDAs. The percentage of carbohydrate, protein and fat for energy was 82.2, 11.6 and 6.2%, respectively. The results of anthropometry of height, weight and chestcircumference showed that both sexes Were below Korean Standards. The concentration of Hb & Hct was normal in both sexes, and the rate of anemia was low. The concentrations of plasma glucose, protein, lipids, and blood pressure were normal in both sexes. In case of male, the correlation between plasma albumin and nutrients intake was significant, but the case of female showed different tendency. In case of male, the correlation between weight, height and plasma protein was also significant but the case of female showed different tendency. The rate of parasite infection was very low $(2.17%{\ldots}3.26%)$

  • Trend of foods and nutrients intake per person per day in Korea from 1970 to 1979, based on reports on national nutrition survey, was analyzed. The average rates of population, GNP and per capita national income were 1.7, 9.6 and 536.2%, respectively. The consumption of cereals, pulses and potatoes was decreased; whereas that of fresh vegdtables, fruits, meat, fresh fish and shells, eggs, milks, and fats and oils was increased. Calorie intake was remained essentially constant, but protein and fat intake was increased by 11.6% and 52.3%, respectively, in ten years. The main sources for calcium, iron and vitamin A were vegetables. Among various nutrients, intake of riboflavin and animal protein were less than RDA.

Resistance and Survival of Cronobacter sakazakii under Environmental Stress of Low Temperature (저온 환경에서 Cronobacter sakazakii의 저항과 생존)

  • Cronobacter sakazakii has been isolated from a wide range of environmental sources and from several foods of animal and plant origin. The objective of this study was to determine the resistance of C. sakazakii (ATCC 12868, ATCC 29004, and ATCC 29544) in cold, cold-freeze thaw, cold-acid, and cold starvation-freeze thaw stress. The number of C. sakazakii decreased to 1 log CFU/mL at $5^{\circ}C$ (cold storage) for 10 days. When C. sakazakii was cultivated at a low temperature ($13^{\circ}C$), the population of C sakazakii ATCC 12868 and 29004 increased to $10^9$ CFU/mL, and the population of C. sakazakii ATCC 29544 increased to $10^8$ CFU/mL. For C. sakazakii ATCC 12868 and 29004, the cold-adapted cells ($5^{\circ}C$ 24 hr) decreased by 4 log CFU/mL, and the low-temperature-cultivated cells ($13^{\circ}C$) decreased by 0.5 log CFU/mL. In this study, low-temperature cultivation enhanced the freeze-thaw cross-resistance due to the metabolic changes in the cells. Cold stress ($5^{\circ}C$ 48 hr, $13^{\circ}C$ cultivation) enhanced the cold-acid cross-resistance. The cold-starved cells in the sterilized 0.1% peptone water enhanced the freeze-thaw cross-resistance with significant differences (p<0.05). Therefore, the increased tolerance of the cold-adapted or low-temperature-cultivated C. sakazakii cells to freeze-thaw, acid, or starvation suggests that such environments should be considered when processing minimally processed foods or foods with extended shelf life.

Nutritive Effects of Feeding Rice Diet Mixed with Barley and/or Millet on the Growth Rate and Biological Availability of Some Nutrients by Albino rats (보리와 속(粟)의 혼식(混食)이 성장기(成長期) 백서(白鼠)에 미치는 영양효과(營養效果))

  • This study was carried out to observe the nutritive effects of feeding rice diet and rice diet mixed with barley or millet, or both on the growth rate and biological availability of some nutrients by albino rats. The experimental diets were prepared on the basis of isocaloric and isonitrogenous containing 357 kcal of energy and 12g of protein per 100g of diet. The experimental animals weighing about 66g of both sexes were fed on 7 kinds of diets such as control diet, rice (100%) diet, rice (70%)+barley (30%) diet, rice (70%)+millet (30%) diet, rice (70%)+barley (20%)+millet (10%) diet, rice (70%)+barley (15%)+millet (15%) diet, and rice (70%)+barley (10%)+millet (20%) diet for 7 weeks. The results obtained are summarized as follows; 1. The gain in body weight was higher for barley and/or millet mixed with rice diet groups than rice diet group with no statistical difference. 2. Although there was no difference in the amount of food consumed by experimental groups, the food efficiency ratio was sightly higher for the miked diet groups than rice atone diet group. 3. The protein efficiency ratio was also higher for barley and millet miked with rice diet groups than rice diet group, although statistical significance was not found. 4. Apparent digestibility of protein of rice diet group was significantly (P<0.01) higher than any other diet group. Although there was no remarkable difference between mixed diet group was found, the apparent digestibility of protein tended to increase when rats were fed on the barley and millet mixed with rice diet. Apparent biological value (p<0.05) and net protein utilization (p<0.01) were also significantly higher for the groups fed mixed diet with barley and/or millet than rice diet group, and those for millet alone mixed diet were slightly lower. 5. The content of total nitrogen in the liver and of protein in serum were not significantly different among experimental groups. It may be concluded from the above results that an adequate supplementation of rice with other cereals and mixing ratio of other cereals to rice were important for the efficient utilization of protein in total diet.

Antioxidative Activity and Lipid Composition from Different Part and Supplement of Codonopsis lanceolata in Rat (더덕 부위별, 첨가수준이 실험쥐의 항산화활성과 지질조성에 미치는 효과)

  • This study was conducted to examine antioxidative activity and lipid composition from different parts and supplement flesh and skin of Codonopsis lanceolata in vivo. Forty six-week-old white Sprague Dawley rats were divided into 5 groups and fed with experimental diet for six weeks to measure antioxidant enzymes activities and lipid composition in blood and liver microsome. The activity of glutathione peroxidase in blood was high in all groups supplemented with Condonopsis lanceolata and the difference was observed in accordance with the supplemented part rather than the supplemented level. However, glutathione reductase activity and the content of malondialdehyde (MDA) in blood showed difference depending on the level of supplementation rather than the supplemented part. The content of liver MDA in all groups supplemented with Condonopsis lanceolata was lower than that in the control group. As the level of skin supplementation increased, an increase in glutathione peroxidase activity was also observed. Only in the group that 5% of Condonopsis lanceolata skin was supplemented, the glutathione reductase activity was higher than in the control group. Total cholesterol and LDL-cholesterol of blood in the group supplemented with Condonopsis lanceolata flesh or skin were significantly lower than those in control group. HDL-cholesterol in blood was high when the flesh of Condonopsis lanceolata was supplemented. Total cholesterol and triglyceride in liver of the group supplemented with Condonopsis lanceolata flesh or skin were significantly lower than those in control group. In summary, this animal test showed that the supplementation of Condonopsis lanceolata, flesh or skin, generally improved the antioxidative effect of diet and lipid composition.

Cloning, Expression, and Characterization of Protease-resistant Xylanase from Streptomyces fradiae var. k11

  • The gene SfXyn10, which encodes a protease-resistant xylanase, was isolated using colony PCR screening from a genomic library of a feather-degrading bacterial strain Streptomyces fradiae var. k11. The full-length gene consists of 1,437bp and encodes 479 amino acids, which includes 41 residues of a putative signal peptide at its N terminus. The amino acid sequence shares the highest similarity (80%) to the endo-1,4-${\beta}$-xylanase from Streptomyces coelicolor A3, which belongs to the glycoside hydrolase family 10. The gene fragment encoding the mature xylanase was expressed in Escherichia coli BL21 (DE3). The recombinant protein was purified to homogeneity by acetone precipitation and anion-exchange chromatography, and subsequently characterized. The optimal pH and temperature for the purified recombinant enzyme were 7.8 and $60^{\circ}C$, respectively. The enzyme showed stability over a pH range of 4.0-10.0. The kinetic values on oat spelt xylan and birchwood xylan substrates were also determined. The enzyme activity was enhanced by $Fe^{2+}$ and strongly inhibited by $Hg^{2+}$ and SDS. The enzyme also showed resistance to neutral and alkaline proteases. Therefore, these characteristics suggest that SfXyn10 could be an important candidate for protease-resistant mechanistic research and has potential applications in the food industry, cotton scouring, and improving animal nutrition.

Is It Possible to Prove the Effect of Prenatal Education, 'Taegyo'? (태교의 효과를 과학적으로 증명할 수 있을까?)

  • Objectives : 'Taegyo,' prenatal education, is steeped into Korean culture. Although there has been a traditional focus on providing education and care for the fetus in Korea, there is a lack of medical evidence for its effectiveness. Methods : The authors assessed the scientific basis for 'Taegyo' by reviewing the evidences. Results : 'Taegyo' in Korea began with the spread of Buddhist culture from China, and transmitted by word-of-mouth. The first 'Taegyo' book, the Tae-gyo-shin-gi, was published on 1803. Modern prenatal education is very diverse. However, only a few studies on its effect have been conducted. Development of medicine, especially obstetrics, fetology, pediatrics, psychiatry, and etc., has learned that many factors, including bad environmental conditions and maternal stress, influenced against the fetus and mother. As for the paternal side, occupation, smoking, and stress were also revealed to have consequences for the development of the fetus. On the contrary, adequate maternal nutrition, exercise, and music stimulation positively impact the fetal development and healthy birth. Conclusion : Traditional contents of 'Taegyo' were proved to have effectiveness from evidence-based medicine and animal experiments. We need further studies to explore the impact of prenatal education for the fetal development and maternal health.

Physicochemical Properties and Palatability of Pork Fed with Tangerine-Peel (감귤 껍질을 급여한 돈육의 물리화학적 특성 및 기호성)

  • This study was carried out to investigate the possible for utilization of garbage in pig feed by investigating the functional characteristics of pork from pigs fed tangerine-peels. The samples consisted of the pork loin from pigs not fed with tangerine-peel (control), the pork loin fed with 3% and 5% tangerine-peel during growing and finishing period (TP-1), and fed with 6% and 10% tangerine-peel during growing and finishing period (TP-2) there is no respective comparison here. The pH, VBN content TBARS value, bacterial counts, surface color, water holding capacity, loss degree and rheological properties of the samples were determined by physicochemical properties, and the sensory scores were evaluated. The pH, TBARS value, surface color, water holding capacity and loss degree were not different among the samples, but the VBN content and bacterial counts of TP-1 and TP-2 were significantly lower than those of the control (p<0.05). The hardness, springiness, cohesiveness, gumminess and chewiness, taste, aroma, tenderness and juiciness were not different among the samples, but the shear force value and palatability of TP-1 were the highest among the samples (p<0.05).

Nutrient-derived Dietary Patterns and Risk of Colorectal Cancer: a Factor Analysis in Uruguay

  • In order to explore the role of nutrients and bioactive related substances in colorectal cancer, we conducted a case-control in Uruguay, which is the country with the highest production of beef in the world. Six hundred and eleven (611) cases afflicted with colorectal cancer and 1,362 controls drawn from the same hospitals in the same time period were analyzed through unconditional multiple logistic regression. This base population was submitted to a principal components factor analysis and three factors were retained. They were labeled as the meat-based, plant-based, and carbohydrates patterns. They were rotated using orthogonal varimax method. The highest risk was positively associated with the meat-based pattern (OR for the highest quartile versus the lowest one 1.63, 95 % CI 1.22-2.18, P value for trend = 0.001), whereas the plant-based pattern was strongly protective (OR 0.60, 95 % CI 0.45-0.81, P value for trend <0.0001. The carbohydrates pattern was only positively associated with colon cancer risk (OR 1.46, 95 % CI 1.02-2.09). The meat-based pattern was rich in saturated fat, animal protein, cholesterol, and phosphorus, nutrients originated in red meat. Since herocyclic amines are formed in the well-done red meat through the action of amino acids and creatine, it is suggestive that this pattern could be an important etiologic agent for colorectal cancer.
