low grade leaves of flue-cured (N.C. 2326) and air-cured (Br 21) have been heated at $140^{\circ}C$ for 10 and 20 minutes, respectively. As heating duration increased, each contents of nicotine, total nitrogen, total sugar and free amino acid decreased in both leaves. The result obtained from this experiment are as following 1. Nicotine content decreased in both leaves. Heating for 10 and 20 minutes showed respectively nicotine decrease of 13.2% and 21.6% for Br 21 and 8.2% and 13.2% for N.C.2326. Decrease of total nitrogen and total sugar was inversely proportional to the heating duration. N.C. 2326 in the decrease out numbered Br.21 by the ratio 2: 1 for 10min.-heating, and 5:4 for 20 min.-heating. 3. Total free amino acid was decrease by 17.1% and 13.85 for N.C. 2326 and Br 21, respectively when heated for 10 min., and 25.6% and 26.5% respectively when heated for 20 min. When sucrose was added to Br 21, th decrease ratio of total free amino acid of Br.21 was increased. It is suggested that the addition of sucrose could promote the browning reaction in Br 21 leaves.

To develop a value-added anchovy Engraulis japonicus sauce, we examined processing conditions and quality characteristics of rapidly fermented, high purity anchovy sauce (RPAS) by adding 30% (w/w) intermediate salt-fermented anchovy material. RPAS had higher total nitrogen and amino nitrogen contents, and lower salinity than traditional anchovy sauce (TAS). The total amino acid contents of RPAS and TAS were 17,626.8 and 12,808.2 mg/100 g, respectively, and the major amino acids were alanine, glutamic acid, lysine, cystine, valine, and leucine. The histamine contents of RPAS and TAS were 12.6 and 25.2 mg/100 g, respectively, and the protease activity levels were 0.851 and 0.595 unit/mg, respectively. These results demonstrate that RPAS was more flavorful, and could shorten the salt-fermentation period by more than half compared to TAS, and can serve as a high-end fish sauce.
The new tridentate ligands of nitrogen donor atoms N,N-Bis(2-amino-ethyI)-benzyl-amine 2HCI(BABEA. 2HCI) and 2,6-Bis(amino-methyl)-pyridien. 2HCI(BAMP. 2HCI) were synthesized as their dihydrochloride salts and characterized by TA, IR. Mass and NMR spectroscopy. The protonation constants of the ligands and stability constants for Cd$^{2+}$, Pb$^{2+}$, Zn$^{2+}$and Cu$^{2+}$ ions were determined by potentiometric titration in aqueous solutions and compared with those of analogous ligands. The effect stability constants of ligands and metal ions for removal of heavy metals in aqueous solution were described.
A series of complexes of the type [$ML_2Cl_2$], where L=2-(o-anisylidene-2'-imino) amino benzimidazole (AIAB) and 2-(furfurylidene imino) amino benzimidazole (FIAB), M=Cu(II), Co(II), Ni(II) and Zn(II), have been synthesized and characterized on the basis of elemental analysis, thermal analysis, molar conductivity, magnetic moment, electronic, infrared, $^1H$-NMR spectral studies. The results are in consistent with bidentate chelation of ligand with azomethine nitrogen and ring nitrogen donors. All these Schiff bases and their complexes have also been screened for their antibacterial (Bacillus subtilis, Bacillus stearothermophilus, Escherichia coli and Salmonella typhi) and antifungal activities (Aspergillus niger and Aspergillus flavus).

Aqueous extraction of sea tangle at the temperature range of 60~10$0^{\circ}C$ was studied for temperature effects on soluble solids and protein yields, amino nitrogen, turbidity and viscosity of extracts. The solids and protein yield were increased as the temperature increased and most of solids and protein were extracted during 1 hour. The supernatant ratio after centrifugation showed significantly low for the extraction at 6$0^{\circ}C$. More temperature effects were found on turbidity and viscosity than yields. A significantly higher total amino nitrogen contents was obtained from higher temperature at initial stage of extraction and then the differences of them became to be narrow as the extraction prolonged further. The low values of 24.1% solids and 13.5% protein yields after 2 hours of extraction at 10$0^{\circ}C$ indicated that most of solids in sea tangle are insouble.

This experiment was conducted to investigate the effects of dietary SAA (sulfur-containing amino acids) on growth performance, nutrient digestibility and blood urea nitrogen (BUN) content, and to determine the optimal SAA:lysine ratio for growing barrows and gilts. A total of 150 pigs (75 barrows and 75 gilts, Landrace${\times}$Yorkshire${\times}$Duroc) were assigned to 6 treatments with 5 replicates of 5 pigs per pen. All pigs were fed diets containing either 1.12 (for barrows) or 1.33% (for gilts) dietary lysine with increasing SAA levels (50, 55 and 60% of dietary lysine) in a $2{\times}3$ factorial design. Throughout the whole experimental period (15 to 54 kg body weight), there was no interaction between sexes and SAA:lysine ratios on ADG, ADFI and FCR. However, increasing the SAA:lysine ratio from 50 to 60% in a diet showed a trend to increase ADG and ADFI of barrows. None of differences in nutrient digestibilities except for calcium and phosphorus were observed and gilts showed higher digestibility of calcium and phosphorus (p<0.05). Among dietary SAA:lysine ratios, there were no differences in apparent nutrient digestibility. Mean values of the essential amino acids (EAA), non-essential amino acids (NEAA) and total amino acids (TAA) digestibilities were higher in gilts than barrows (p<0.01). However, no differences in mean value of EAA, NEAA and TAA digestibilities were observed among dietary SAA:lysine ratios. Between sexes and among SAA:lysine ratios, no significant difference in BUN concentration was observed. This study demonstrated that the optimal inclusion ratio of SAA:lysine was 55% and below 50% in barrows and gilts, respectively.
A total of 120 pigs $(L\;{\times}\;LW\;{\times}\;D)$ averaged 14.16 kg of body weight were reared under six dietary treatments to evaluate the effects of amino acid supplementation on their performances. Treatments were 1) 18% CP diet (control); 2) 15% CP+0.28% Lys (B, 15L); 3) B+0.06% Met (15LM); 4) B+0.13% Thr (15LT) ; 5) B+0.06% Met+0.13% Thr (15LMT); 6) B+0.06% Met+0.13% Thr+0.05% Trp (15LMTT). Each treatment had 4 replicates with 5 pigs per replicate. The daily weight gains were statistically similar in 15LMT, 15LMTT and control groups. Threonine and methionine supplementation resulted in improved growth performance and nutrient digestibilities, while tryptophan supplementation had little beneficial effect. However, the best feed conversion was found in the control group. Dry. matter and CP digestibilities were improved in the 15LMT and 15LMTT groups. Gross energy, crude fat and phosphorus digestibilities were not affected by the treatment. Among the 15% CP groups, nitrogen digestibility showed the tendency to be increased as the more synthetic amino acids were added. Dry matter and nitrogen excretions were significantly reduced by feeding low protein, amino acid fortified diets, while phosphorus excretion was not influenced. Essential amino acids digestibility was higher in 15LT, 15LMT and 15LMTT groups and lower in the control. The 15LT group showed the best lysine digestibility, and methionine digestibilities were higher in all treated groups than control one. Threonine digestibilities higher in 15LT 15LMT, and 15LMTT than the control. The result shows that threonine and methionine should be added to the diet containing 15% CP diet, fortified with lysine to get same performance of 18% CP diet.
Conditions for processing dried condiments with powdered sea tangle were investigated. The most appropriate method for sea tangle extraction was two-stage extraction, that extracted with addition of 70% ethyl alcohol at $25^{\circ}C$ for 1 hour and residue was re-extracted with water(1:15, w/w) at 7$0^{\circ}C$ for 3 hours. The yield of soluble solids under above-mentioned conditions was 14.9%. As a result of omission tests, free amino acids were predominated in the taste compounds of sea tangle extracts rather than nucleotides, and the contribution of free amino acids and nucleotides to the taste of sea tangle extracts was remarkable. The major flavoring components of sea tangle extracts were matters of low molecular weight such as free amino acids and oligopeptides below 5,700 dalton. Contents of carbohydrate, total nitrogen and amino nitrogen in dried condiments prepared with sea tangle extracts were 64.9%, 3.7% and 2.1%, respectively. And drying yield, solubility and absorption rates at Aw 0.88 were 14.7%, 98.3% and 8.4%, respectively.
In order to investigate the organoleptic properties of rapid processed sardine sauce which was prepared using sardine autolysates and sardine meal koji, the taste endowing compounds were analysed. The chemical compositions of the rapid processed sardine sauce fermented for 15 days at $40^{\circ}C$ were $1.98\%$ in total nitrogen, $1.08\%$ in amino type nitrogen, $5,296.8mg\%$ in free amino acid, and the salinity was $13.0\%$ (W/V). the predominant free amino acid in the sauce were glutamic acid, lysine, aspartic acid, valine and leucine. Those amino acids held $53.9\%$ of total free amino acids. The content of IMP was $20.8mg\%$. The rapid processed sardine sauce was comparable to traditional anchovy sauce which was fermented at ambient temperature for one year in the distribution and concentrations of nitrogenous compounds and organoleptic properties.

Traditional Andong sikhe was produced by fermenting L. bulgaricus LBS 47 and S. cerevisiae SCS 5. The changes of nitrogen compound and amino acid during fermentation and storage were investigated. Crude protein was increased until 4days, the main fermentation period. Amino form nitrogen increased up to 37.50 mg% at the 2nd day of fermentation and the product tasted best at this time. Water soluble and salt soluble protein decreased during fermentation. Proline and aspartic acid were the two major free amino acids. The free methionine increased while the free lysine decreased in the process of fermentation. The amino acids of water soluble protein and salt soluble protin were totally 17 kinds. The major amino acids of water soluble and salt soluble protein were glutamic acid and aspartic acid. The arginine content of salt soluble protein increased as the fermentation proceeded.
