젤리의 기계적 및 관능적 물성 (Instrumental and Sensory Characteristics of Jelly)

  • 시판되고 있는 7종의 젤리를 가지고 rheometer를 사용하여 저작실험을 한 결과 관능적 물성인 hardness 및 shortness와 가장 상관제수가 높은 기계적 물성은 maximum force로서 2900-3136($10^3\;dyne$) 범위에서 적당하다고 나타났으며 또한 stickiness는 adhesiveness force와 관능적인 물성 springiness는 기계적 물성값 springiness로 예측할 수 있었다. 그러나 종합평가와의 회귀식에서 얻은 적당하다고 계산된 값과는 약간의 차이를 나타내었으며 특히 종합평가와 결정계수가 가장 높은 기계적 물성은 cohesiveness이었다. 종합평가와 각 기계값과의 관계에서 종합평가에 가장 영향을 미치는 기계값은 cohesiveness, adhesiveness force로 이들의 결정계수는 각각 0.93, 0.89이었으며 종합평가를 종속변수로 하고 cohesiveness 및 adhesiveness를 독립변수로 하여 multiple linear regression 한 결과 종합평가=2.70+6.25(cohesiveness) -0.095(adhesiveness)의 상관식을 얻었으며 이 때의 중상관계수 0.94이었다.

쌀밥의 조직감에 대한 기기적 측정값과 관능적 측정값의 상관관계 연구 (Correlation between Instrumental Parameter and Sensory Parameter in the Texture of Cooked Rice)

  • This study aimed to find the optimum instrumental test conditions for the Texture Profile Analysis (TPA) of cooked rice in order to predict the sensory texture attributes (hardness, adhesiveness, chewiness). Sensory evaluation was performed for three kinds of instant cooked rice with university students in their twenties and the results of the sensory evaluation were compared to instrumental TPA patterns. Using partial least squares regression, the instrumental TPA results at a cross-head speed of 1.0 mm/sec and a compression ratio of 70% proved to be an excellent predictor of the sensory attributes of hardness ($R^2=0.99$) and chewiness ($R^2=0.99$). The results at a cross-head speed of 0.5 mm/sec and compression ratio of 30% provided an excellent model for the prediction of sensory adhesiveness ($R^2=0.83$). In this experimental range, sensory hardness and chewiness showed a high correlation with instrumental TPA parameters (hardness, cohesiveness, adhesiveness, springiness, chewiness) with a high cross-head speed and compression ratio, while sensory adhesiveness showed a high correlation with the TPA parameters with a low cross-head speed and compression ratio.

Sebum Absorption Characteristics of Polymer Microgel-containing Face Powder

  • In this study, poly(iso-butyl methacrylate-co-ethylene glycol dimethacrylate) [poly(iso-BMA-co-EGDMA)] microgel was prepared and used as a face powder additive. The spreading, adhesiveness, and skin reactivity of poly(iso-BMA-co-EGDMA) microgel-containing face powder II were investigated and compared with the same properties of commercially available Silica bead 700-containing face powder I. In the results, the particle size of the poly(iso-BMA-co-EGDMA) microgel was significantly swelled as a result of sebum absorption. Face powder II showed a lower primary irritation index and a higher adhesiveness than did face powder I. Face powder I showed a low sebum absorption ratio and a relatively high rate of sebum absorption, whereas face powder II, contrastingly, exhibited a high sebum absorption ratio and a low rate of sebum absorption, which properties would reduce the phenomena of facial strain and sliminess. These results indicate that poly(iso- BMA-co-EGDMA) microgel has outstanding sebum absorption characteristic and adhesiveness, and thus that it is a good candidate for use as a face powder additive.

  • The disadvantage of PMM's (polymer-modified mortars) that are currently on the market is the utilization of expensive polymer additives and also the cost of the other components. One of the possibilities how to decrease this price is the effective utilization of waste materials which are very inexpensive in spite of their good properties. The combinations of different degree in polymer adhesiveness and waste secondary raw materials - fly ash - are experimentally verified in the paper. The use of fly ash in adhesive materials for ceramic tiles is limited by unsatisfactory initial adhesiveness to sintered ceramic sherd as a result of a running pozzolanic reaction that lowers the efficiency of polymer additives. On the other hand, the use of adhesive and backfill coating materials for gluing ETICS board insulation materials has brought very good results.

플라즈마용사 세라믹코팅 피막부식재의 음향방출 특성 (Acoustic Emission Characteristics of Plasma Sprayed Ceramic Coating Layer after Salt Spray)

  • This paper was to investigate of a adhesiveness for the plasma sprayed coating materials did salt spray by acoustic emission method in tensile loadings. The powders used for the coating were nickel aluminum composite powder Ni-4.5wt.%Al and titanium dioxide powder $TiO_2$. These powders were coated on a carbon steel S45C by plasma spray method. The result solution was a 5% NaCl and the slat spray times were 2, 5 and 10 hours respectively. The salt solution penetrated into the surface of the substrate through pore of the coating layer built in the process of plasma spay. Corrosion productions formed on the surface of substrate. The adhesiveness between the substrate and the coating layer is weaken by corrosion and the exfoliation initiated chiefly at the corrosion surface of the substrate. The AE events and energy of the corroded coating specimens decreased as the salt spray times increased.

대두단백겔의 물성에 미치는 분자결합력 저해 시약의 영향 (Effects of Various Reagents on Textural Properties of Soy Protein Gel)

  • The changes in gel characteristics of soy protein as a result of various reagents that alter specific interactions which affect the formation and textural properties of gels, were studied. The reagents were added to 15% soy protein solutions prior to heat treatment. The gels were not formed with urea, indicating that hydrogen bonds significantly contributed to the formation and hardness of soy protein gel. Hydrophobic interactions and disulfide bonds compensated for hydrogen bonds and the contributions of electrostatic interactions to gel hardness are relatively insignificant. The farce primarily responsible for gel cohesiveness appeared to be disulfide bonds, because a significant decrease in cohesiveness was found only with the presence of N-ethylmaleimide. Adhesiveness decreased only with the addition of urea, and thus the contribution of hydrogen bonding to adhesiveness of gel could be concluded to be resent. However, adhesiveness was suggested to be interpreted not only wile molecular forces involved in gel formation but also with hydration properties of protein.

새로 개발한 실리콘젤시트의 물성에 대한 연구 (Comparison Study of Physical Properties between Two Silicone Gel Sheets)

  • Purpose: Silicone gel sheet(SGS) is used for preventing and treating keloid or hypertrophic scars. Because the product is weak in tear strength and adherence, it requires several replacements, which requires high cost. As a solution for this problem, we developed a new silicone gel sheet, named as Scar Clinic, and confirmed its physical properties. Methods: Tensile strength, elongation rate, adhesiveness, and water vapor transmission rate were experimentally compared between the most commonly used SGS product and the Scar Clinic. Results: The newly developed SGS showed better results compared to the existed SGS in regards to tensile strength, elongation rate, adhesiveness, and water vapor transmission rate. Conclusion: The Scar Clinic showed higher durability and flexibility. It will be a useful product for treating scars clinically.

백설기 조리법의 표준화를 위한 조리과학적 연구(II) -첨가하는 설탕의 양과 찌는 시간을 중심으로- (Scientific Study for the Standardization of the Preparation Methods for Paeksolgi(II) -for the Focus on the Volume of Adding Sugar and Steaming Time-)

  • 백설기의 기준조리법 설정을 위해 백설기의 조리과정에서 품질특성에 영향을 미친다고 생각되는 제반요인을 찾아냈고 그 요인들 중에서 가장 유의 차가 크게 나타난 요인은 첨가하는 물의 양, 찌는 시간, 첨가하는 설탕의 양으로 나타났다. 그 중 첨가하는 물의 양과 찌는 시간과의 상호작용을 제Ⅰ보14)에서 검토하였다. 다음은 첨가하는 설탕의 양과 찌는 시간과의 상호작용이 백설기의 texture와 기호성에 어떤 영향을 미치는가를 기계적 측정과 관능검사에 의하여 검토하였는데 그 결과는 다음과 같다. 1. 백설기 제조시 첨가하는 설탕의 양과 찌는 시간을 달리한 시료들의 기계적인 측정치를 분산 분석한 결과 첨가하는 설탕의 양은 hardness, adhesiveness, gumminess에서 유의적인 차이(P<0.001)를 나타내었으나 찌는 시간, 설탕의 양과 찌는 시간과의 상호작용에서는 모든 항목에서 유의적인 차이를 나타내지 않았다. 2. 백설기 제조시 첨가하는 설탕의 양이 15, 20%인 시료와 5, 10%인 시료간에 찌는 시간에는 관계없이 유의적인 차이를 보여 첨가하는 설탕의 양이 많을수록 hardness, adhesiveness, gumminess가 큰 수치를 나타냈다. 3. 찌는 시간을 20분으로 통일하고 설탕의 양을 달리한 시료들의 관능검사결과 첨가하는 설탕의 양이 15, 20%인 시료가 adhesiveness, sweetness, chewiness, overall quality에서 유의적으로 높게 평가되었다. 4. 관능검사에서 유의적으로 높게 평가된 시료들의 기계적인 측정결과는 대체로 hardness, adhesiveness, gumminess가 큰 수치를 나타냈다. 본 결과와 제Ⅰ보14)에서의 결과를 요약하여 보면 12시간 침수한 멥쌀에 1%의 소금(NaCl)을 첨가하여 분쇄한 후 10%의 물을 첨가하여 물내리기를 한 후 김이 오른 후 물내린 쌀가루에 15% 이상의 설탕을 첨가하여 20분간 쪄서 만든 백설기가 가장 바람직하다는 것을 알 수 있었다. 이 실험 중 가장 중요한 조건은 첨가하는 물의 양이 10%이며 첨가하는 당이 설탕일 경우는 김이 오른 후 설탕을 섞어 바로 쪄야 하며 설탕의 양이 15% 이상이라는 것이다. 이 조건은 대체적으로 hardness, adhesiveness, gumminess가 큰 수치를 나타낸다.

  • This paper investigates the U.S. courts'attitudes toward the legal doctrine of adhesion contracts, which have been employed as contract defenses by individual consumers who have entered into consumer arbitration agreements with businesses. Some requirements have been added to the sole adhesiveness of the arbitration clause that can invalidate the arbitration clause, including unconscionability and unreasonable harshness. It seems that the U.S. courts have moved toward a more tightened stance in evaluating the validity of consumer arbitration clauses, favoring consumer arbitration.
