Effect of packaging conditions on the quality changes of fermented soy paste and red pepper paste (포장조건에 따른 한국전통 된장과 고추장의 품질변화)

  • 180g of fermented soy paste and 150g of red pepper paste were packaged in glass jars of 232 mL with different conditions of active packaging and then stored at $13^{\circ}C$ for about 170 and 128 days, respectively. During the storage, package atmosphere, surface color, pH, acidity and microbial flora were monitored to see the effect of packaging conditions. Test packaging conditions include package equipped with $Ca(OH)_2\;as\;CO_2$ absorber, package with pinhole and closed control one. Closed control packages of soypaste and red pepper paste showed the increased $CO_2$ partial pressure, the decreased $O_2$ partial pressure and the constant $N_2$ partial pressure to produce high pressure buildup with storage. The paste packages with $Ca(OH)_2$ maintained relatively low $CO_2$ partial pressure and thus the package pressure close to normal atmospheric pressure for initial storage period of 70 days. The packages with air pinhole channel had the partial pressures of $O_2\;and\;N_2$ decreased with storage time, while $CO_2$ partial pressure first increased to a maximum and then slowly decreased thereafter Without any pressure increase the packages with pinhole gave the lowest quality changes possibly due to the effect of package atmosphere, but it had problem of mold contamination and growth for soy paste after 120 days. There were no difference in microbial flora between the packages after about 70 day storage.

Properties of Saeu Jeotgal (Shrimp Jeotgal) Prepared with Different Types of Salts (다른 종류의 소금들로 제조한 새우 젓갈의 특성)

  • Saeu (shrimp) jeotgal (SJ) was prepared by mixing with 25% salt with different types: purified salt (PS), solar salt aged for 1 year (SS), and bamboo salt. SJ was fermented for 22 weeks at $15^{\circ}C$. Bacilli and marine bacteria were detected throughout the entire fermentation period, and marine bacteria were present in the largest numbers. Lactic acid bacteria (LAB) were detected only during the first 8-10 weeks, but yeasts appeared at the sixth week and later. Archaea were detected in low numbers only from SS-SJ during the first 8 weeks. BS- SJ showed higher pH and lower titratable acidity (TA) values than other SJs because of strong alkalinity of bamboo salt. Amino-type nitrogen (ANN) contents of SJs increased during fermentation, especially, after 2 and 6 weeks. SS-SJ showed the highest ANN content from the beginning to the end of fermentation. Ammonia-type nitrogen (AMN) contents also increased like the amino-type nitrogen during fermentation. The highest volatile basic nitrogen (VBN) was also observed in SS-SJ. Salinity was kept constant after 4 weeks. SS was better than other salts for SJ fermentation in terms of protein hydrolysis.

Acid rain in Kwangiu, Korea (Precipitation intensity and persistent time) (남한의 광주광역시에서 산성비에 관한 연구)

  • The analyzed results of observed precipitation and its pH in Kwangiu for 262 days from fan. 1, 1991 to Dec. 31, 1995 are as follows. The annual mean pH was 5.7, and the monthly mean pH values of January-May and November were less than 5.6 in Kwangiu. The ratio of acid rain for these periods was about 48.1%, almost half that of the total observed days. In March, the pH was 5.4 and the ratio of acid precipitation was 69%, an especially serious situation. In the spring, the pH value was 5.5, thus weakly acidic. The pH of precipitation tended to decrease with greater precipitation. The relation between persistent time and pH of precipitation is variable, but if the persistent time is long, the pH is constant and low. It is fortunate that there is an increasing trend of pH in interannual variation, but it is thought important that the amplitude of variation of pH in 1995 was high and the pH value was 4.1 in October and November. Because heavy and persistent precipitation effects the accumulation of acidity, more concern about acid rain is needed.

Quality Characteristics of Aralia continentalis Kitagawa Leaf-Kimchi as Affected by Storage Time (땅두릅 잎김치의 저장기간에 따른 품질특성)

  • The study examined changes in the quality characteristics of Aralia continentalis Kitagawa (AcK) leaf-kimchi during storage prepared with different seasonings. The result exhibited practically no significant differences in pH, acidity, and salinity among the various samples made with three different combinations of seasonings. In AcK leaf-kimchi, lightness and redness increased slowly at the early period of storage and then decreased rapidly after four months when the lactic acid bacterial count reached the highest level with fermentation, whereas yellowness increased. The total bacterial count and the lactic acid bacterial count increased slowly reaching the highest level after four months, then decreased and maintained at a constant level. Hardness of AcK continuously increased and then decreased after attaining maximum value during ripening. The sensory characteristics of the AcK in the whole period of storage was highly acceptable in terms of color, smell, bitterness, texture, and general preference regardless of the suggested combinations of seasonings.

Nodulation and Growth of Trifolium subterraneum Cultivars as Affected by pH (Subterranean Clover 의 근류형성(根瘤形成)과 생장(生長)에 대한 pH의 영향(影響))

  • Little information is available on the effects of low pH on nodulation and growth of subterranean clover cultivars. Plants of 11 cultivars were inoculated with an acid-tolerant strain of Rhizobium trifolii and grown for 28 days in continuously flowing nitrogen-free nutrient solutions maintained at six constant pH values from 4.0 to 6.5. At pH 4.0, 4 cultivars failed to nodulate and the remainder formed only a few nodules; nodulation was delayed by 2 to 3 days in this treatment. All cultivars nodulated at pH 4.5 but, with the exception of cv. Dwalganup, nodule numbers were significantly less than at $pH{\geq}5.0$. Only in cvv. Clare and Woogenellup were nodule numbers significantly greater at pH 6.5 than at 5.0. Whole plant dry matter yields were strongly depressed at pH 4.0(21 to 33% of maximum). At pH 4.5, relative yields of all cultivars except Dwalganup were significantly depressed without significant reductions in nodule dry weights, suggesting that nodule function was inhibited by acidity. These results are consistent with the view that nodulation and growth of plants dependent on symbiotic nitrogen fixation are much more sensitive to low pH per se than is host plant growth in the presence of adequate mineral nitrogen.

Takju Brewing Using the Uncooked Germed Brown Rice at Second Stage Mash (2단담금에서 무증자 발아현미를 이용한 막걸리 제조)

  • In general cooked rice would be used as a major raw material for making Takju. In this case quality, taste and storage time of Takju were not fully satisfied. Fermentation conditions for Takiu mash were examined by using the germed brown rice in this study. In case of the germed brown rice on 2nd stage mash, alcohol was slowly generated in comparison with the cooked rice. Reducing sugar was slowly produced and the amount of reducing sugar was low. The sugar content was created at a uniform rate. The pH was shown to be higher in mash of the germed brown rice than that of the cooked rice. Acidity change showed a similar inclination to pH change. The degree of yeast growth on the mash of the germed brown rice was revealed to be slightly lower than that of the cooked rice. Temperature of mash was kept to be constant after 3 days from fermentation. Fusel oil produced from the mash of the germed brown rice was less gernerated in comparison with the cooked rice. Amount of amino acid in case of the germed brown rice was indicated to be higher. Takju made with the germed brown rice was shown to be 1.3 times in overall taste, 1.5 times in refreshing as compared with Takju made with the cooked rice. However there are no differences between them in flavor and color of Takju. In overall acceptance Takju made with the germed brown rice was shown to be 1.3 times as compared with Takju made with the cooked rice. In conclusion the germed brown rice was expected to be able to be better in Takju quality.

Physicochemical Properties of Dextran Produced by Leuconostoc mesenteroides SM according to Concentration of Yeast Extract and its Modulation of Rheological Properties (효모 추출물 농도에 따른 Leuconostoc mesenteroides SM에 의해 생산된 dextran의 물리화학적 특성 및 물성개량)

  • Dextran was produced by $Leuconostoc$ $mesenteroides$ SM with various contents of yeast extract and its rheological properties were modulated, via an addition of hydroxypropyl methylcellulose (HPMC) of different viscosities. The conversion yield reached 90% after adding 3% yeast extract, which remained constant, thereafter. The acidity of the cultures was approximately 1.4 and 0.9% after fermentation for 24 h at 25 and $30^{\circ}C$, respectively. The total dextran content (107.3 g/kg) was the highest in the presence of the 3% yeast extract. Under the same conditions, the consistency, viscous modulus (G"), and elastic modulus (G') of the cultures were $37.6\;Pa{\cdot}s^n$, 38 Pa, and 50 Pa, respectively. The rheological properties of the culture were changed drastically by the fortification with HPMC of higher concentration and viscosity. The addition of 10% HPMC (4,000 cp) resulted in a significant increase in G" to 1,950 Pa. Furthermore, adding HPMC to a viscous culture resulted in a remarkable increase in both hardness and firmness.

Manufacturing of Korean Traditional Rice Wine, Makgeolli, Supplemented with Strawberry and Its Physicochemical and Microbial Properties during Fermentation (딸기를 첨가한 막걸리의 제조와 발효 과정 중 이화학적 및 미생물학적 특성)

  • To develop a functional strawberry Makgeolli, we produced Makgeolli using strawberry as an additive and then investigated its physicochemical properties. Among 7 different alcohol-fermenting yeasts, Saccharomyces cerevisiae JSK104 produced 17.4% ethanol on the 7th day of fermentation and was selected for use in the brewing of strawberry Makgeolli. Changes in physicochemical properties, numbers of yeast and lactic acid bacteria, and antihypertensive angiotensin-converting enzyme inhibitory activity were investigated during the fermentation of strawberry Makgeolli. The pH tended to decrease and the total acidity increased as the fermentation period elapsed. The ethanol content reached about 17% on the 7th day after fermentation, and the numbers of yeast and lactic acid bacteria reached a maximum on the 1st day of fermentation and then maintained a constant number. The antihypertensive angiotensin-converting enzyme activity reached a maximum after 5 days of fermentation and then was not significantly changed afterwards.

Color Measurement of Kimchi Juice for Quality Evaluation of Korean Cabbage Kimchi during Fermentation at Low Temperature (저온발효 배추김치의 품질평가를 위한 김치액의 색상 측정)

  • For quality evaluation of Korean cabbage kimchi during fermentation at $4^{\circ}C$ for 45 days, color change of kimchi juice was measured instrumentally. Chemical analyses of the kimchi juice showed that the kimchi has reached pH 4.2 and titratable acidity of 0.63% together with the highest vitamin C content, those values being obtained under the optimum ripening period, after 30 days of fermentation. The volume of kimchi juice increased until day 30 and was constant thereafter. The CIE-1976 $L^*$$a^*$$b^*$ color values increased until day 30 and then decreased. The ratio of color value $a^*$ to $b^*$ was 0.82 in the beginning, 0.98 at the optimum ripening period, and 0.94 under the over-ripening periods. The quality of kimchi could be estimated by using the $L^*$, $a^*$, $b^*$ values or the ratio of $a^*$ to $b^*$, alone or in combination with the juice volume.

Quality Characteristics of Traditional Kochujang Adding Pear Juices during Fermentation (배즙을 첨가한 전통고추장의 숙성과정 중 품질특성)

  • In order to improve qualities of traditional kochujang, pear juice was added to kochujang, and the physicoche-mical and microbial characteristics of pear-added kochujang were investigated for 2 months of fermentation at 30$^{\circ}C$. Moisture contents of pear-added kochujangs increased except of 9$\%$ pear-added kochujang and crude protein contents of them decreased as the fermentation proceeded. Total sugar contents of pear-added kochujangs did not change during the fermentation period, and reducing sugar contents of them increased remarkably from early stage of fermentation. The pH of pear-added kochujangs decreased and titratable acidity of them increased during fermentation. Amino-nitrogen contents of pear-added kochujangs increased remarkable after 45 days of fermentation. Viable cells counts of yeasts in pear-added kochujangs increased to 2.2$\∼$2.9$\times$$10^{3}$CFU/g, and bacterial cell counts were in relatively constant range of 2.1$\∼$2.9$\times$$10^{7}$CFU/g at the late stage of fermentation. Color of pear-added kochujangs had no difference and 'a' value decreased slightly during fermentation. The result of sensory evaluation showed that 6$\%$ pear added kochujang were more acceptable than others.
