열처리 및 유기산처리가 신선편이 연근의 품질에 미치는 영향 (Effect of Mild Heat and Organic Acid Treatments on the Quality of Fresh-Cut Lotus Roots)

  • 박피 연근절편의 선도연장을 위한 연구로 연근절편을 $50^{\circ}C$ 물에 열수 처리하였고, 아울러 시너지 효과를 조사하기 위해 열처리와 ascorbic acid 1%와 citric acid 1%를 각각 병행 처리한 후 $5^{\circ}C$에서 12일 동안 저장하면서 미생물수, 색상 및 관능적 품질변화를 조사하였다. 일반세균수는 열수 및 citric acid 병행 처리구의 경우 저장 9일후 그 값이 가장 낮았으며, 이를 제외한 다른 처리구들은 유의적 차이가 없었다. 곰팡이 수의 경우 대조구가 6.81 log CFU/g을 나타낸 반면, 열수 처리구는 12일 후 3.89 log CFU/g으로 유의적으로 낮았다. 연근절편 색도의 L값은 시간이 지남에 따라 점차 감소하는 경향을 나타낸 반면, ${\Delta}E$값은 점차 증가하는 경향을 보였다. 대조구가 급격히 색 변화가 일어나는데 비해 열수 처리구는 완만한 변화를 보였고 열처리 후 각각 ascorbic acid와 citric acid를 병행한 처리구는 색 변화가 거의 일어나지 않았다. 관능적 품질평가 결과, 상품성은 대조구가 3일간 유지되었던 반면 열수 처리 구는 9일간, 열수 및 유기산 병행 처리구는 12일간 상품성이 유지되었다. 전반적인 품질, 색, 조직감 등은 열처리를 한 처리구들이 열처리를 하지 않은 처리구에 비해 기호도가 유의적으로 높았으며, 그 중 열수 및 유기산 병행 처리구가 관능적으로 가장 높은 값을 나타내었다. 본 실험을 통해, 연근 절편의 열처리는 미생물과 갈변을 억제시킴으로써 연근의 관능적 품질유지에 효과적이었고, 특히 citric acid 1%를 열처리와 함께 병행하는 것이 연근의 품질유지와 갈변억제에 가장 효과적인 것으로 판단되었다.

  • 본 연구는 Y 정수장의 세라믹 정밀여과막 공정을 위한 최적의 약품세척 조건을 도출하고자 수행되었다. 세라믹 막 공정의 전처리로 오존과 응집공정이 있는 A계열의 경우 응집공정만 있는 B계열에 비해 9배 정도 잦은 약품세척(CIP)를 실시하였다. 이는 전처리 공정의 차이로 인하여 A와 B계열의 막오염현상이 다르게 나타난 근본적인 원인 이외에 막제조업체가 제시한 CIP 방법이 부적절한 것으로 조사되었다. 즉, CIP 회복률이 보정여과유속이 아니라 보정차압을 기준으로 계산되어 과대평가되었을 뿐만 아니라 구연산이 철산화물에 의한 파울링을 효과적으로 제거하지 못했기 때문이었다. 따라서 1단계 산세척 약품종류를 달리하여 CIP 효율을 평가한 결과 황산(0.1 N)과 구연산(1%)를 혼합하여 사용한 경우 회복률이 가장 높았고, 황산(0.1 N)만을 사용한 경우 회복률이 가장 낮은 것으로 나타났다. 그러나 황산의 농도를 0.3 N로 높인 결과 산세척 효율은 증가하였으나 알칼리세척 회복률이 낮아져 총회복률은 0.1 N 황산을 사용한 것과 유사하였다. 산과 알칼리세척 순서를 바꿔서 CIP를 수행한 결과 산세척을 먼저 수행시 CIP 효율이 더 높은 것으로 나타났다.

제빵에서 밀가루 Brew의 조성이 젖산균의 생육에 미치는 영향 (The Effect of Composition of Flour Brew on Growth and Activity of Lactic Acid Bacteria)

  • This study was conducted to develop optimal composition of flour brew in order to economically utilize flour brew inoculated by lactic acid bacteria as a starter(mother sponge) in bread-making. Two flour brews were prepared ; one with flour and water, the other with flour, water and NaCl. Various nutrients were added to both flour brews and Lactobacilli deMan Rogosa and Sharpe (MRS) broth to investigate the effect of them on growth and activities of Streptococcus thermophilus, Lactobacillus brevis and their mixed culture in flour brews to be tested with incubation at 37$^{\circ}C$. The growth of Streptococcus thermophilus, Lactobacillus brevis and their mixed culture was stimulated by addition of NaCl with 0.85% concentratin and more by mixed culture than by single lactic acid bacteria, resulting in 3 hrs reduction in cultivation and more by mixed culture than by single lactic acid bacteria, resulting in 3 hrs reduction in cultivation time. the addition of 3% glucose to flour brew with NaCl was observed to enhance acid productioni by mixed culture. Yeast extract greatly affected growth and activities of mixed culture of lactic acid bacteria in flour brew with NaCl and its optimum level of this additive in flour brew with NaCl was approximately 1.0%. The optimal composition of flour brew for mixed culture of lactic acid bacteria was suggested as follows; flour 100g, water 300g, NaCl 3.46g, glucose 12.48g, yeast extract 3.46g.

Effects of Aerosol Hygroscopicity on Fine Particle Mass Concentration and Light Extinction Coefficient at Seoul and Gosan in Korea

  • The sensitivity of aerosol light extinction coefficient to the aerosol chemical composition change is estimated by (1) calculating the aerosol water content and chemical concentrations by a gas/particle equilibrium model and (2) calculating the aerosol light extinction coefficient by a Mie theory based optical model. The major chemical species are total (gas and particle phase) sulfuric acid, total nitric acid, and total ammonia which are based on the measurement data at Seoul and Gosan. At Seoul, since there were enough ammonia to neutralize both total sulfuric acid and total nitric acid, the dry ionic concentration is most sensitive to the variation of the total nitric acid level, while the total mass concentration (ionic concentration plus water content) and thus, the aerosol light extinction coefficient are primarily determined by the total sulfuric acid. At Gosan, since the concentration of ambient sulfuric acid was the highest among the inorganic species, sulfate salts determined aerosol hygroscopicity. Thus, both ionic and total mass concentration, and resultant aerosol light extinction coefficient are primarily determined by the sulfuric acid level.

산성안개 환경하에서 Ni-Cr-Mo 강의 피로크랙전파거동 (Fatigue Crack Growth Behavior of Ni-Cr-Mo Steel under Acid Fog Environment)

  • To examine the effect of acid fog on the corrosion fatigue behavior in structural steel, fatigue tests under acid fog atmosphere were carried out in comparison with distilled water. The corrosive c omponents contained in acid fog pile up the corrosion products on crack face and show a crack branching and crack tip blunting. Therefore, due to these workings crack growth rate was reduced by decreasing the effective stress range in crack tip rather than under distilled water. Also the effect of sulfuric acid, which is the main component of acid fog, and testing speed on fatigue crack growth were examined. It was found that corrosion behavior was remarkably dependent upon pH and Hz rather than components of acid fog. According as pH and testing speed decrease below a specific value, crack growth was accelerated in comparison with distilled water. This reveals that due to liquid having strong acidity and slow speed of test the crack face dissolution was promoted, so crack closure was disturbed in the process of stress descent.

식이섬유의 수분결합력에 관한 연구 (Water Binding Capacity of Vegetable Fiber)

  • The water binding capacity(WC) of acid detergent fiber(ADF) was estimated. The WBC of raw vegetables ranged from 5. 1g to 24.7g water/g ADF. WBC was high in pepers and low in welsh onions. The correlation coefficients between WBC and fiber components were examined to fled which component is responsible for the deteruuning ability to bind water. The correlation coefficient between WBC and cellulose was +0.8. The binding capacity of water by fiber was affected positively by cellulose. fermentation increased in WBC of ADF. Changes of no in accordance with pH changes were evaluated at pH 2, 5.2 and 6. In all cases, WBC was high In weak acid and neutral.

해수배지를 이용한 해양 미생물의 Linoleic acid 생성 특성 규명 (Characteristics of Linoleic Acid Production by Marine Fungi in Sea Water Media)

  • 네 종류의 질소원 yeast extract, sodium glutamate, peptone, tryptone과 각 질소원의 농도 및 포도당의 초기 농도가 해양 미생물 Thraustochytrium aureum ATCC 34304의 linoleic acid 생산성에 미치는 영향을 규명하여 다음의 결과를 얻었다. 초기 당 농도를 10 g/L로 하고 질소원으로는 sodium glutamate를 사용하였을 때 균체 단위 질량에 대해 생성된 지질의 중량 분율이 최대값 0.302 mg/g를 나타내었으며, 균체에 대한 linoleic acid 중량 분율도 8%로 최대값을 나타내었다. Lino-leic acid의 생성속도는 질소원으로 peptone과 sodium gluta-mate를 사용하였을 경우 다른 질소원으로 peptone과 sodium gluta-mate를 사용하였을 경우 다른 질소원을 사용하였을 때 보다 2.5 배까지 높은 수치를 나타내었다. 초기 당 농도가 증가하면 linoleic acid의 생산성은 상승하나 당 농도 30 g/L 이상에서는 그 상승폭이 대단히 완만하였다. 초기 당 농도가 30 g/L 경우 질소원으로 peptone을 사용하였을 때는 linoleic acid의 생산량이 200 mg/L, sodium glutamate를 사용하였을 때는 130 mg/L를 나타내었다. 질소원의 농도가 증가하면 균체 내에 생성되는 지질의 양도 증가하는 경향을 나타내었다. 질소원이 sodium glutamate인 경우 농도 1 g/L까지는 지질의 함량이 뚜렷한 증가현상을 나타내었으나 농도 1.0 내지 2.0 g/L 이상에서는 질소원의 농도가 증가하면 지질의 생성량이 감소하였다.

여러가지 가열방법에 따른 채소의 Ascorbic Acid 잔존량 (Retention of Ascorbic Acid in Vegetables as Influenced by Various Blanching Methods)

  • Retention of ascorbic acid in vegetables as influenced by various blanching methods was measured and the effects of blanching time, amount of water added, and with or without lid on the retention were compared. It was found that blanching with small amount of water and without lid generally retained the higher activity of ascorbic acid. Although steam blanching showed the highest retention of the vitamin, the longer heating time was needed to blanch the vegetables. Blanching by microwave oven has revealed that addition of small amount of water did not affect the retention. From the scoring difference test for texture of blanched spinach, the samples which were indicated as best in texture by the 8-panel members have retained 73~96% of ascorbic acid and samples blanched by microwave oven for 60 seconds showed highest retention.

  • The possible use of milk factory waste water as fermentation media for the production of citric acid by cells of Aspergillus niger ATCC 9142 has been investigated. The addition of $Mn^{2+}$, $Fe^{2+}$ and $Cu^{2+}$ to a medium promoted the citric acid production steadily, but addition of another metal ion $Mg^{2+}$decreased the citric acid production. The concentrations of citric acid were marked up to 7.2g/1 and 16.5g/l in a batch bioreactor by A. niger ATCC 9142 with 50g/1 and 100g/l of reducing sugar concentration in milk factory waste water, respectively.

신장기능(腎臟機能)에 대(對)한 Acetylsalicylic Acid 의 작용기전(作用機轉)에 관(關)하여 (On the Mechanism of the Action of Acetylsalicylic Acid on Renal Function)

  • Acetylsalicylic acid, administered intravenously in a dose of 120 mg+250 mg/h, markedly decreased the urinary excretion of sodium and chloride, and slightly depressed potassium excretion, so that the ratio of urinary concentrations of potassium to sodium increased after ASA. Osmolar and free water clearances also diminished during water diuresis, and free water reabsorption $(T^cH_2O)$ decreased after ASA during mannitol diuresis. Glomerular filtration rate and urine flow rate changed little. When infused directly into a renal artery, ASA exhibited identical action on both kidneys, indicating that the renotropic action is mediated by some endogenous humoral agents or by some metabolites of ASA. A dose of 100 mg i.v. of spironolactone, a aldosterone antagonist, slightly reversed the renal reflect when given during maximum action of ASA. Ethacrynic acid could display its full diuretic action unhindered during maximum ASA action. Above observations lead to the suggestion that acetylsalicylic acid might release aldosterone and the action on electrolyte excretion may be mediated by the mineralocorticoid.
