In order to investigate the effect of dietary fatty acids on lipids metabolism in adipose pads and superficial pectoral muscle of chicks, the present, experiment was carried out using signle comb White Leghorn male chicks fed a fat-free diet and diets containing margaric, stearic or linoleic acids. Total lipids of tissues were extracted with a chlorofrom-methanol solution. The lipid components were fractionated by thin layer chromatography and the fatty acid distribution of lipid fractions was determined by gas liquid chromatography. The neck adipose pads contained 34-62% total lipids, in which triglycerides, were dominant, being 97-98%. Margaric, stearic and linoleic acids were distributed at a relatively high rate in the adipose tissue when the corresponding acids were fed, and margaric acid feeding lowered palmitoleic acid distribution and linoleic acid feeding elevated stearic acid distribution. The wet superficial pectoral muscle contained 1.3-1.7% total lipids, of which 77-79% was phospholipids and 11-13% was free cholesterol. When margaric acid was fed, margaric and heptadecenoic acids appeared in the muscle lipids. When linoleic acid was fed, this acid was significantly highly distributed in every muscle lipid fractions, whereas, when stearic acid fed no elevation of stearic acid distribution was observed. In the muscle phospholipids, oleic acid was significantly highly distributed in the stearic acid fed chicks, and the linoleic acid feeding signigicantly lowered the distribution value of palmitic and oleic acids, but elevated the distribution value of stearic acid. And the linoleic acid feeding lowered the distribution value of eicosatrienoic acid and elevated the distribution value of arachidonic acid.
This study was carried out to investigate the effect of ultrasound treatment on the quality, amino acid and fatty acid composition of fried chicken meat The moisture content of raw chicken meat was higher than fried chicken meat, but the crude protein and fat were lower than those of fried chicken meat The moisture and crude fat of ultrasonic fried chicken meat were higher than those of control. The crude protein of breast meat was higher than leg meat, but the moisture and crude fat were lower than leg meat The ultrasonic treatment did not affect on calorie of the fried chicken meat The pH of leg meat was higher than breast meat, and the fried loss of breast meat was higher than leg meat Frying loss of the leg meat was higher than that of control when ultrasonic treated The Hunters $L^{\ast}$ value of ultrasonic treated breast meat was higher than control, but the leg meat were not significantly different between ultrasonic treatment and control. The $a^{\ast}$ value of leg meat was higher than breast meat, and $b^{\ast}$ value of breast meat was higher than leg meat And the $b^{\ast}$ value of ultrasonic treatment was higher than control. The glutamic acid and aspartic acid were major amino acids in chicken meat The palmitic acid $(C_{16:0})$ and oleic acid $(C_{18:1})$ by fried were decreased, and the linoleic acid $(C_{18:2})$ was increased But the fatty acid composition by ultrasonic treatment were not changed.
A vinegar was prepared from uncleaned rice by two step fermentation, alcohol fermentation followed by acetic acid fermentation. The contents of alcohol reached to 10.8% during the alcohol fermentation of uncleaned rice with nuruk, and acidity reached to 5.78% during the acetic acid fermentation. Acidity and pH of vinegar of two step fermentation were higher than those of commercial vinegars. 'L' value(Light) of the vinegar was lower, 'a' and 'b' value were higher than those of commercial vinegars. The contents of acetic acid, malic acid, citirc acid and tartaric acid were hish in organic acid of vinegars. The content of each ofganic acid in vinegars was remarkably different. The content of free amino acids was 2199.7${\mu}\ell$/ml in the vinegar produced by two step fermentation which is higher than that of others.
Some Physico-chemical properties of korean red pepper seed oil were evaluated to find available method to utilize red pepper seeds used as useful cooking oil resources. Samples of red pepper seeds used as oil meterials were native, improved species and they were named such as NS (native spicies dried under sunlight), IS (improved spicies dried under sunlight), NF (native spicies dried by heating), and IF(improved spicies dried by heating), respectively. Moisture, ash, crude protein and crude fat contents of all red pepper seeds were 6.6%∼7.7%, 3.3∼3.5%, 18.25∼19.4% and 26.8∼27.5% in all samples, showing the specially high crude fat and crude protein content in NS. Capsaicin contents in crude red pepper seed oils were shown from 0.06 to 0.08% but after refining process, capsaicin contents were mostly tossed as 0∼0.006%. The types of tocopherol found in crude and refined red pepper seed oils were ${\gamma}$-, ${\alpha}$-, $\delta$-analogues, the amount of total tocopherol in IF was 2.10 mg/g oil which were the highest value of all red pepper seeds. In all red pepper seeds oils main fatty acids were linoleic acid (68∼70%), palmitic acid (14∼16%), oleic acid (10∼11%), and linolenic acid were extemely small amounts. The specific gravity (SG) 0.916∼0.919, refractive index (RI) 1.4724, acid value (AV) 0.26∼0.36, peroxide value (POV) 0.73∼1.19 and Iodine value (IV) 134.35∼134.92 were measured in all red pepper seed oils.
The effects of anti-oxidant of ether extract of red pepper peel were studied to compare with butylated hydroxyl toluene (BHT), citric acid and ascorbic acid. Peroxide and acid values of magarine irradiated with the sunlight were detected. The results were as follows: 1. The extract of red pepper peel influenced as antioxidant of magarine. But the extract was lower anti-oxidative effect than that of BHT at the same concentrations. The anti-oxidative effect increased with the concentration of the extract applied. 2. There was no synergistic and anti-oxidative effects, when the extract was used together citric and ascorbic acids. 3. The peroxide value of fermented magarine was controlled by the addition of the extract and BHT. However acid value of it was not controlled as much as peroxide value.
This study was performed to investigate 172 samples of fried food in fast food store. The free fatty acid value of 22 samples exceeded standard of fried-food. These samples were 10 fried chickens, 6 fried potatoes and 5 fried onions. Fatty acid composition differed from each company. The correlation between free fatty acid value and double bond index was very low. New standard of fried food in fast food store is needed for thorough hygiene management, because of being not existed standard. The fried potato containing many carbohydrate and fat appeared higher calory than fried chicken containing many protein. The fried food had high fat comparatively, so that attention in regard to excess intake is demanded. The trace materials were included Mg, Ca, Mn, Fe, Zn, Cu and Cr in order of quantity, and the harmful heavy metals-Pb, Hg and Cd- were included small quantity.

This study was carried out to investigate lipid content, melting point, refractive index and fatty acid composition of commercial chocolate and imitation chocolate. Fifty-eight samples for test were 45 of domestics and 13 of foreign in Seoul. The results were as follows ; Mean value of lipid content was 35.1% in chocolate and 31.9% in imitation chocolate, and foreigns were lower than domestics. In melting point of lipid, chocolates and imitation chocolate were 26.4$^{\circ}C$ and 27.4$^{\circ}C$ as mean value, respectively. Mean value of refractive index of lipid was 1.4560, imitation chocolate of domestic were lower than another. The fatty acid compositions were chiefly consisted of {{{{C_18:1 , C_18 , C_16, C_16:1 and C_18:2. }} The ratio of SFA : MUFA : PUFA in chocolate and limitation chocolate were 8.2 :6.9 :1.0 and 3.1 : 4.3: 1.0 , respectively.
The objective of this study was to investigate the physicochemical characteristics of gelatin extracted from pork skin under soaking in various acid solutions (lactic acid, acetic acid, and citric acid). Gelatin sol was extracted at 8$0^{\circ}C$, frozen at -2$0^{\circ}C$ and lyophilized it for 3 days to be completely dried in freeze drying unit. In the evaluation of gelatin quality, gelatin soaked in citric acid showed higher L- and a-values than those of any other gelatin (p<0.05). Gelatin treated by acetic acid showed the highest gel strength, cohesiveness, and brittleness. The content of hydroxyproline amino acid in gelatin treated by acetic acid was larger than one of gelatin treated in lactic and citric acid in order. From the experimental results, the highest quality of gelatin in all of period, which was soaked in acetic acid and lactic acid, has a more good quality than gelatin soaked in citric acid.

This study investigates the quality of strawberry jam containing different quantities of strawberry. Strawberry jam was prepared by the addition of 70-30%(w/w) strawberry puree, Sweetness, pH, total acidity, color, anthocyanin and pectin content, texture, free sugar, and organic acid content of the samples were measured. Decrease in the quantity of the strawberry puree led to a decrease in the following: total acidity(significance value p<0.05), anthocyanin, pectin, total free sugar, frutose, glucose, sucrose, and, organic acid content, namely oxalic acid, citric acid, malic acid, succinic acid, and formic acid. A texture profile analysis showed reduction in the hardness, gumminess, and chewiness of the jam. At the same time, decrease in the puree quantity also led to an increase in the sweetness, pH, L-value, a-value and b-value(significance value p<0.05) of the jam. These results promote, the consumption of fruit that are high in fruit, low in sugar, and do not contain any chemical additives.

The purpose of this study was to compare and evaluate the quality of beef jerky made with Korean beef meat, Korean beef cattle and imported beef meat from Austria and New Zealand. The beef jerky qualities were evaluated by sensory evaluation, measurement of crude lipid, fatty acid composition of lipid, and acid value and peroxide value, and of surface observation with a microscope. According to the preference test, whereas beef jerky made with Korean beef meat showed the highest score in color, glaze, palatability, and softness, while that of made with New Zealand beef meat did received the lowest score. The crude lipid content of jerky made with Korean and Austrian beef meat was higher than that of made with Korean cattle and New Zealand beef meat. Surface of jerky made with Korean and Austrian beef meat was gappier than that of made with Korean cattle and New Zealand beef meat, and the. The acid value of jerky made with Korean and Austrian beef meat was lower than that of made with Korean cattle and New Zealand beef meat. The peroxide value of jerky made with Korean cattle meat showed higher peroxide values from the initial storage time. However, the peroxide value whereas that of jerky made with Austrian beef meat was the lowest at initial storage time, it increased remarkably with storage time and showed the highest value after the 15th day of storage. We found that the change in quality of jerky made with Korean and Austrian beef meat was less than that those made of Korean cattle and New zealand beef meat. And it could be suggested that Korean cattle and New Zealand beef meat are not suitable in making jerky.
