In this study, silk fabrics was dyed with sappan wood extracts fermented for 5 and 15 days, respectively, and then the dyeability, durability and the functionality of the dyed silk were investigated. Before dyeing, the silk was pretreated with chitosan-acetic acid solution or chitosan acetic acid and illite blend solution. Thereafter, UV-Visible transmittance, color, fastness, antimicrobial activity, and the FIR emissivity were analyzed. As a result, the K/S value was higher in the samples that were not pre-treated or fermented. Regardless of fermentation, the lightfastness was not significantly different. The color fastness to washing was slightly better when the samples were pretreated with chitosan-acetic acid and illite, and then dyed with extracts fermented 5 days. In addition, all samples showed high antimicrobial activity of 99.9%, regardless of the fermentation. Far-infrared emissivity was confirmed to be slightly increased by the illite and chitosan-acetic acid solution treatment compared to the untreated sample.
In other to produce vinegar using Schizandra chinensis Ballon(omija), acetic acid bacteria(AAB) were selected from several conventional vinegars, and total 30 acetic acid bacterial strains were isolated. Among the isolated strains, a strain was selected from medium containing omija juice which showed the highest productivity of acetic acid. The strain was identified as Acetobacter sp. C5-1b. Optimum conditions for acetic acid production of Acetabacter sp. C5-1b were involved with 30t: of fermentation temperature and shaking culture. The acidity of culture medium was reached to 5.3% after 8 days shaking cultivation at 30℃.
The effect of acetic acid formation deficiency on recombinant E. coli fermentation was investigated using a mutant strain deficient in acetic acid formation. A mutant strain which does not grow under anaerobic conditions was isolated. The acetic acid production in this strain was negligible in aerobic batch fermentation. The cloned-gene expression in the mutant strain was higher than the wild-type strain. Fed-batch fermentations with controlled specific growth rates were carried out in order to compare the cloned-gene expression between the wild-type and the mutant strains. The expression decreased along with the specific growth rate in both strains. The cloned-gene expression in the mutant strain was 60% higher than in the wild-type strain at the same specific growth rate.
Physicochemical changes of refrigerated chicken legs treated with acetic acid and trisodium phosphate (TSP) during storage at the temperature of 1$\pm$2。C or 4。C. Chicken (average weight of 500$\pm$30 g) legs were treated with 2.5-10% (w/v) TSP and 0.5-2%(v/v) acetic acid soluions at exposure times of 10 min. pH values of chicken legs treated with 2.5-10% TSP significantly (P<0.05) increased at initial days compared to control, which were consistent with the results of treatments of 5-10% TSP solutions fur storage of 8 days at retail levels. Thiobarbituric acid (TBA) values of chicken legs treated with 2.5-10% TSP or 0.5-2% acetic acid solutions significantly increased from initial days to 4days of storage compared to controls. pH values of chicken legs treated with 0.5-2% acetic acid significantly decreased at initial days compared to control, which were consistent with the results of treatments of 1.5-2% acetic acid solutions for storage of 16 days at 4。C. Chicken legs treated with 0.5-2% acetic acid solutions were a significantly different Hunter color L$^+$ values during storage of 4 and 8 days compared to the controls. Chicken legs treated with 1-2% acetic acid solutions were a significantly different Hunter color a$^+$ values during storage of 16 days compared to the controls. Chicken legs treated with 0.5-2% acetic acid solutions were a significantly different Hunter color b$^+$ values during storage from 4 to 12 days compared to the controls.
This study was carried out to evaluate the growth characteristics of Lactobacillus acidophilus KCCM 32820 and Propionibacterium freudenreichii KCCM 31227 and the production of propionic and acetic acids in 5% and 10% whey broth by mixed culture of L. acidophilus KCCM 32820 and P. freudenreichii KCCM 31227. Exponential phase of L. acidophilus KCCM 32820 was in the range of $6\sim12$ hrs and P. freudenreichii KCCM 31227 was in the range of $36\sim108$ hrs. In the mixed culture, production of propionic acid was shown to be greater value in the 10% whey broth than in the 5% whey broth and to be greater value in the low temperature for a long time than in sterilization by autoclave. Maximum production of propionic acid was 8.88 mg/mL in the 10% whey broth fermented at 120hrs. Production of acetic acid was revealed to be greater value in the 10% whey broth than in the 5% whey broth. The production quantity ratio of propionic acid to acetic acid was shown between $2:1\sim3:1$ during the fermentation process.

Six reagents (water, citric acid, phosphoric acid, oxalic acid, acetic anhydride and maleic anhydride) were evaluated for their effectiveness is degumming rice bran oil. All chemical reagents tested were found to be significantly more effective than water in removing phosphatides from crude rice bran oil. Especially acetic anhydride and phosphoric acid were effective in reducing phosphorous levels (92.5% and 93.3% removeal, respectively). Nonhydratable phospholipids, lysophosphatidyl choline, were removed more effectively by the chemical reagents than by the water degumming. The major phospholipid(PL) components were phophatidyl choline. Oleic, linolieic and palmitic acids were the major fatty acids of PL in rice bran acetone insolubles(AI). The AI recovered by acetic anhydride degumming produced the most stable emulsions. However, the AI obtained from phophoric acid or oxalic acid treatments had very poor emulsifying properties.
This study was carried out to investigate the distribution of V. parahaemolyticus in Incheon adjacent sea, and anti-microbial effect on growth of V. parahaemolyticus in organic acid. The detected strains were compared for geography, months and sample types. V. parahaemolyticus was detected form 28.5 percent of 287 samples collected from Incheon area, and 34.7 percent of 91 samples collected in the months of July through September, and 24.7 percent of 279 shellfish samples respectively. The minimun inhibitory concentration(MIC) of organic acid in V. parahaemolyticus were 1,250ppm at propionic acid, citric acid and acetic acid, 2,500ppm at vanillic acid, respectively. MICs of combined treatment of acetic acid and vanillic acid, citric acid and vanillic acid, propionic acid and vanillic acid were 1,250 ppm. MICs of combined treatment of citric acid and acetic acid, propionic acid and acetic acid, propionic acid and citric acid was 12.5ppm. The antimicrobial effect of organic acid in V. parahaemolyticus was confirmed from the result of this experiment.
In order to study the effect of Korean ginseng (Panax ginseng C. A. Meyer) components on acetic acid fermentation, ginseng extracts, sucrose, total can de saponins were added to the basal niedium respectively and surface culture was carried out at 30$^{\circ}C$. Lag ime, total acidity of the fermentation broth inhibitors and the degrees of inhibition were determined in tile course of fermentation . 1. Acetic acid fermentation was not inhibited by the addition of less than 1.93% of sucrose but the degree of inhibition was increased slightly by the addition of sucrose more than that. 2. Ginseng extract inhibited acetic acid fermentation slightly, and the degree of inhibition was similar to that of sucrose. Lag time was about 72 hours when a 20% of ginseng extract was added to the basal medium while that of the control was 22hours. 3. The free saponins inhibited acetic acid fermentation considerably, and the degree of inhibition of the saponins was about 400 folds of that of ginseng extracts. An increase of total acidity of the broth which contained 2.905% of the saponins was not observed even after one month. 4. It was presumed that some other components except saponins and sucrose in ginseng extracts counter the inbition effect of saponins on acetic acid fermentation

To produce acetic acid from Mume (Prunus mume Sieb. et Zucc) fruits, fermentation conditions were optimized by a response surface methodology (RSM) using the fractional factorial design with 3 variables and 5 levels. The coefficient of determination ($R^2$) of response surface regression equation for acetic acid production was 0.9462. Optimum conditions for acetic acid production were involved with 8.76% of alcohol content 26.27$^{\circ}C$ of fermentation temperature and 8.42% of sugar content. Finally, predicted level of acetic acid production at these conditions was 3.23%.
The autoignition temperature (AIT) is crucial combustible characteristics which need attention in chemical process that handle hazardous materials. The AIT, also to as minimum spontaneous ignition temperature(MSIT), is the lowest temperature of a hot surface at which the substance will spontaneously ignite without any obvious sources of ignition such as a spark or flame. The AIT may be used as combustion property to specify operating, storage, and materials handling procedures for process safety. This study measured the AITs of n-propanol+acetic acid system from ignition delay time(time lag) by using ASTM E659 apparatus. The AITs of n-propanol and acetic acid which constituted binary system were $435^{\circ}C$ and $212^{\circ}C$, respectively. The experimental AITs of n-propanol+acetic acid system were a good agreement with the calculated AITs by the proposed equations with a few A.A.D.(average absolute deviation). In the case of n-propanol and acetic acid system, the minimum autoignition temperature behavior (MAITB), which is lower than the lower AIT, is shown among the two pure substances constituting the mixture.
