Effects of Starch Concentrations and Soaking Periods of Acorn on Sensory Characteristics of Acorn Mooks(Starch Gels) (조전분 농도 및 침지 시일이 도토리묵의 관능적 특성에 미치는 영향)

  • Sensory characteristics of acorn gels were evaluated as affected by acorn starch concentrations(7, 8, 9, 10 and 11%) and by soaking periods(4, 8 and 16 days) of acorn and acorn flour. The characteristics evaluated were color, clarity, firmness, cohesiveness, flavor and astringency. Panelists indicated in the scoring test that all the characteristics were pronounced as the starch concentration increased, except clarity, The result of ranking test on gels made with acorn starch soaked for 4, 8 or 16 days indicated that color, firmness, cohesiveness, flavor and astringency decreased, as soaking period increased. However, the soaking periods did not affect clarity of acorn gels.

Cryptanalysis of the Authentication in ACORN

  • ACORN is an authenticated encryption algorithm proposed as a candidate in the currently ongoing CAESAR competition. ACORN has a good performance on security and efficiency which has been a third-round candidate. This paper mainly concentrates on the security of ACORN under the forgery attack and the non-repudiation of ACORN. Firstly, we analyze the differential properties of the feedback function in ACRON are analyzed. By taking advantage of these properties, the forgery attacks on round-reduced ACORN are proposed with a success probability higher than $2^{-128}$ when the number of finalization rounds is less than 87. Moreover, the non-repudiation of ACRON in the nonce-reuse setting is analyzed. The known collision can be used to deny the authenticated message with probability $2^{-120}$. This paper demonstrates that ACORN cannot generate the non-repudiation completely. We believe it is an undesirable property indeed.

Effect of Acron Extracts on the Antioxidative Enzyme System (도토리추출물이 흰쥐의 체내 항산화효소계에 미치는 영향)

  • This study was conducted to investigate the effect of acorn extracts on the antioxidative enzyme system. Male Sprague-Dawley rats(110$\pm$10g) were fed on containing normal and high fat diets. They were orally administrated (0.02g/100g B.W) of acorn ethylacetate-extract and water-extract at the same time once a day, respectively. Net weight gain and feed efficiency ratio were increased in high fat diet groups and decreased by acorn extracts administration. The effect of acorn extracts on hepatic glutathione peroxidase(GSH-Px), glutathione S-transferase(GST) and catalase activities did not show significancy in normal fat diet groups. GST and catalase activities and lipid peroxidation content(LPO) were significantly increased in high fat diet groups and this increment were decreased by acorn extracts administration. However GSH-Px activity and GSH content were decreased in high fat diet groups but increased by acorn extracts administration. The activities of lactate dehydrogenase(LDH), alkaline phosphatase(ALP) and aminotransferase in serum were significantly increased in high fat diet group but these increment reduced in acorn extracts administration groups. These results indicate that acorn extracts could improve the liver function and prevent the metabolic diseases by hyperlipidemia.

Effect of Saccharides on Texture and Retrogradation of Acorn Starch gels (도토리 전분 겔의 텍스쳐와 노화에 미치는 당류의 영향)

  • The mechanical and thermal properties of solutions of acorn starch were investigated, to determine the effect of sucrose on the retrogradation. The contents of moisture and amylose of purified acorn starch was 9.35, 27% respectively. From the moecular weight distribution, Mw and Mn of acorn starch were 1,220,432 and 137,201 relatively and the polydispersity of acorn starch was 8.8952. The creep compliance of acorn starch with and without sucrose were decreased with increasing sucrose concentration in the short term. The temperatures of DSC curve of 15% acorn starch solution containg sucrose shifted slightly to higher temperatures with increasing sucrose content. The enthalpy change associated with the gelatinization was increased with increasing sucrose content. After 7 days storage, the creep compliance of acorn starch gel with sucrose were shown higher than acorn starch gel. Regelatinization enthalpy of acorn starch/sucrose/water system was decreased with increasing sucrose content and increased with storage time. In addition, the characteristic temperatures such as onset temperature, peak temperature and conclusion temperature was increased by sucrose addition. Retrogradation ratio decreased with increasing sucrose content, thus sucrose inhibit retrogradation in the long term. Sucrose acts as an antistaling reagents and retatards the retrogradation.

  • The purpose of study was to evaluate quality, physicochemical and sensory characteristics of acorn Sulgidduk by addition of acorn powder. Acorn Sulgidduk was processed rice powder which added 0, 5, 10, 15, and 20% of acorn powder. The moisture, crude lipid, and crude ash contents of Sulgidduk added with acorn powder was increased by addition amount of acorn powder, but carbohydrate and crude protein contents were decreased. By addition amount of acorn powder, soluble protein content of Sulgidduk were increased, but reducing sugar content were decreased. The L values of Sulgidduk were decreased by addition amount of acorn powder, but increased the a and b values. The hardness, adhesiveness, cohesiveness, springness and chewiness were decreased by addition amount of acorn powder. The sensory test of Sulgidduk added 10% of acorn powder showed the best score in overall preference. Therefore, these results suggested that Sulgidduk added 10% of acorn powder could be applied for produce of acorn Sulgidduk.

Properties of Acorn Mook with Various Soaking Conditions (수침조건에 따른 도토리 묵의 품질 특성)

  • This study was to examine the characteristics in the texture of acorn Mooks (acorn starch jelly) with different conditions to prepare acorn starch. By texture profile analysis, hardness and chewiness with 50% deformation were increased with increasing soaking days. Hardness of acorn Mook, measured by texture analyzer, showed significantly difference between the samples, and was closely related to the content of non-starchy substances and their intrinsic viscosity. The observation of microstructure through a scanning electron microscope (SEM) showed that acorn Mook showed finer and more fibrous structure than control(0-0), sample without soaking of acorn and sediments. Sensory characteristics of acorn Mook were affected by soaking treatment. The result of acceptance test on acorn Mooks indicated that the color and hardness increased with the increase of soaking days of acorn nuts and soaking times of sediments. There was a little difference between the samples in astringency taste. Their overall acceptability also increased except for 4-2 sample (i.e., soaking of acorn, 4 days; soaking of sediments, 2 times) and 4-3 sample (i.e., soaking of acorn nuts, 4 days; soaking of sediments, 3 times). As the results, the color, light brown, and the taste, a little astringency with consistency, were important factors of acorn Mook.

The Study on the Dyeing Properties of Acorn Shell Extract (도토리껍질 추출액의 염색성에 관한 연구)

  • For the purpose of standardization and practicability of natural dyeing, the mordanting and dyeing properties of Acorn Shell was studied. Appropriate extraction, dyeing and mordanting condition of Acorn Shell were determined, and the effect of mordanting method on dye uptake and color fastness of dyed fabric was investigated. The maximum absorbance of Acorn Shell solution was at 287.5nm and 294nm. The pH effect was stable in the color difference changes. The optimum temperature to extract Acorn Shell was during 1 hour in $60^{\circ}C$. The effective dyeing temperature and time of silk were $80{\sim}100^{\circ}C$, 1hour. The silk fabrics dyed with Acorn Shell appeared yellow-brown. K/S value of dyeing fabrics was increased by mordant treatment. K/S value of post-mordanting was higher than pre-mordanting. Mordanting treatment attected color change of the dyed silk. In the case of Acorn Shell light fastness of appeared more than 3-5grades by post-mordanting. Abrasion fastness of appeared more than 3-5grades. Perspiration fastness of appered more than $3{\sim}5grades$ by mordant treatment but Cu mordant treatment was $2-5{\sim}4grades$. Dry-cleaning Fastness appered more than 4 grades except Cu mordant treatment. These fastness improvement were generally effective for mordant treatment, specially Al, Sn, Cr.

A Study on the Molecular Weight Distribution of Starch (전분의 분자량 분포도에 관한 연구)

  • Purified acorn starch was obtained from alkali precipitation method. Acorn amylose and acorn amylopectin were fractionated from purified acorn starch by butanol improvement method. Gel permeation chromatography (GPC) was used to measure molecular weight distribution of acorn starch, acorn amylose, acorn amylopectin and corn starch, corn amylose, corn amylopectin. GPC measurement diagrams were obtained by each retention time. And then, we used DMSO and DMF as solvent, pullulan as standard material. We calculated the Number-average molar mass (Mn), Weight-average molar mass (Mw) and polydispersity from molecular weight distribution of each sample. As a result of estimating molecular weight using GPC, Mw of amylose has small value than Mw of amylopectin. From this fact, the molecular structural aspects of amylose and amylopectin were predicted and it was in good agrement with the tendency of polydispersity by GPC. The polydispersity of starch had big value than amylose and amylopectin, from this result, it might be known that the range of molecular weight appeared broad by heterogeneous properties of two components. The viscosity of purified acorn starch, amylose, amylopectin seperated from acorn starch, was decreased by increasing the shear rate and raising the temperature exponentially. Acorn starch solutions exhibited pseudoplastic power law fluid behavior.

  • Tannin from acorn was identified by TLC and gallic acid in the tannin was determined by HPLC. The tannin extracted with methanol-butanol was not dissolved in ethanol, methanol for HPLC and water, while the tannin extracted with acetone-ethylacetate was so pure that it could be used for HPLC-running. The gallic acid showed a Rf -value of 0.39, the digallic acid of 0.21, the trigallic acid of 0.09, and the gallotannin of 0.00 respectively. The content of gallic acid in the tannin from acorn powder was 3.04%, from acorn starch, 0.90%, and from acorn starch gels, 0.64-0.86% respectively. The effect of tannin contents on the viscosity of acorn atarch was also studied. The maximum and cooling viscosity of the starch were decreased as the contents of tannin increased.

Study on the Rheological Properties and Effects of Tannin components of Acorn Starch Gel (도토리 전분 묵의 Rheology 특성과 Tannin성분의 영향에 대하여)

  • The rheological properties of acorn starch gel were investigated in region of small and large deformation. The properties were compared with those of potato and wheat starch gel. On the physical characteristics and the effect of tannin contents of acorn starch were examined. RESULTS : 1. X-ray diffractogram of acorn starch showed C-type and its granules swelled gradully with heating. 2. Hardness, brittleness and both small and large deformation of the acorn starch gel were remarkably large, also the concentration dependence of the acorn starch gel could be recognized in small deformation and hardness. 3. The Young's modulus of Hookean body in small deformation and the rupture stress in large deformation differed obviously from the parameters of rheological properties in various gels. 4. It was found that the selling power, viscosity and rhelogical properties were affected obviously by the tannin.
