Analysis of Microbial Community Change in Ganjang According to the Size of Meju (메주의 크기에 따른 간장의 미생물 군집 변화 양상 분석)

  • The fermentation of ganjang is known to be greatly influenced by the microbial communities derived from its primary ingredients, meju and sea salt. This study investigated the effects of changes in meju size on the distribution and correlation of microbial communities in ganjang fermentation, to enhance its fermentation process. Ganjang was prepared using whole meju and meju divided into thirds, and samples were collected at 7-day intervals over a period of 28 days for microbial community analysis based on 16S rRNA gene sequencing. At the genus level, during fermentation, ganjang made with whole meju exhibited a dominance of Chromohalobacter (day 7), Pediococcus (day 14), Bacillus (day 21), and Pediococcus (day 28), whereas ganjang made with meju divided into thirds consistently showed a Pediococcus predominance over the 28 days. Beta-diversity analysis of microbial communities in ganjang with different meju sizes revealed significant separation of microbial communities at fermentation days 7 and 14 but not at days 21 and 28 across all experimental groups. The linear discriminant analysis effect size (LEfSe) was determined to identify biomarkers contributing to microbial community differences at days 7 and 14, showing that on day 7, potentially halophilic microbes such as Gammaproteobacteria, Firmicutes, Oceanospirillales, Halomonadaceae, Bacilli, and Chromohalobacter were prominent, whereas on day 14, lactic acid bacteria such as Pediococcus acidilactici, Lactobacillaceae, Pediococcus, Bacilli, Leuconostocaceae, and Weissella were predominant. Furthermore, correlation analysis of microbial communities at the genus and species levels revealed differences in correlation patterns between meju sizes, suggesting that meju size may influence microbial interactions within ganjang.

Evaluation of Natural Antimicrobial Formulas against Yeasts in Functional Bevereges (기능성 음료 중 효모 제어를 위한 천연항균제 혼합조성 물 평가)

  • The purpose of this study was to investigate the antimicrobial activities of natural antimicrobials (10 formulas, $F1{\sim}F10$) against yeasts in functional beverages. The growth rates of yeasts were different with the ten different natural antimicrobial formulas tested. Yeasts grew for 14 days and the antimicrobial effect was observed between 14 and 18 days. Levels of S. cerevisiae, Z. bailii, and P. membranaefaciens were reduced to the limit of detection (ND) < 10 CFU/mL) after 28 days. Resistance against the antimicrobial effect was greatest for P. membranaefaciens, which grew to a level of $0.12{\sim}1.48\;\log_{10}\;CFU$/mL after 14 days and was reduced to a level of $1.61{\sim}3.55\;\log_{10}\;CFU$/mL after 28 days. The resistance of C. albicans was also high with a growth level of $0.13{\sim}1.28\;\log_{10}\;CFU$/mL after 14 days and reduction to $1.51{\sim}5.30\;\log_{10}\;CFU$/mL after 28 days. The antimicrobial effect of F10 was strongest for P. membranaefaciens. Every treatment reduced the microbial levels to $2.68{\sim}5.62\;\log_{10}\;CFU$/mL after 6 months. F2, F4, F5, F6, and F10 reduced the C. albicans level to ND after 28 days while F1, F3, F8, and F9 reduced yeasts to the ND level after 6 months. The antimicrobial activities observed here will be useful for development of natural antimicrobials.

An Analysis of Bloom's Cognitive Domain Questions in the Home Economics area of the "Technology.Home Economics" Textbooks (중학교 "기술.가정" 교과서의 가정영역에 나타난 Bloom의 인지적 영역 질문 분석)

  • The purpose of this study was to analyze the frequency, level, and location of Bloom's cognitive domain questions in the middle school home economics(HE) text books applied to the 7th curriculum. Analyzed textbooks were selected 15 textbooks per a grade produced from 5 publishing firms. The result of this study followed: First, the biggest number of questions belonged to Bloom's cognitive domain in HE: text was in 1st grade (36.9%), following 2nd(33.6%) and 3th(29.5%). Most questions the HE textbooks according to Bloom's cognitive domain consisted of those about the understanding(28.9%), application(28.3%) and knowledge(21.8%). Second, in case of the location of questions, the subcategory of Questions after Reading occupied 49.2% of all in Bloom's cognitive questions, the case of Questions During Reading was 36.7%, and the subcategory of Questions Before Reading was 14.1%. The rate of understanding questions was the highest as 43.2% in the Bloom's cognitive domain, and the application questions' rate were 28.4%. Analyzed the questions located in questions, the result showed that application-level questions in textbooks were the highest with 36.7%, Regarding to the questions located after Reading, the knowledge question occupied the highest with 33.4%, and next was the understanding questions(26.8%), following the application questions(21,7%).

Effects of Children's Interests in Mothers' Native Culture and Use of Mother's Native Language on Mother-Child Relationship Satisfaction in Multi-Cultural Families (다문화 가족 자녀의 어머니 출신국가에 대한 관심 및 어머니 국가의 언어 구사능력이 자녀와 어머니의 관계 만족도에 미치는 영향)

  • This paper examined the effects of children's interests and attitudes toward mother's native culture and use of mother's native language on satisfaction of the mother-child relationship in multi-cultural families. Data from the 2012 National Survey of Multi-cultural Families demonstrate that for children aged between 9 and 12 years, their fluency and desire to speak well in the mother's native language as well as father's encouragement for using the mother's native language at home were positively associated with satisfaction of the mother-child relationship. For those aged between 13 and 18 years, mother's nationality (i.e. Southeast or South Asia) was negatively related with mother-child relationship satisfaction. Both mother's and children' communication skills, children's interests in mother's native culture, pride for mother being a foreigner, and desire to speak well in the mother's native language were positively associated with mother-child relationship satisfaction. Therefore, there is a need for foreign wives to be educated in Korean language and culture as well as opportunities for children to learn their mother's native culture and language.

  • We find a necessary and sufficient condition for which a point star-configuration in $\mathbb{P}^n$ has generic Hilbert function. More precisely, a point star-configuration in $\mathbb{P}^n$ defined by general forms of degrees $d_1,{\ldots},d_s$ with $3{\leq}n{\leq}s$ has generic Hilbert function if and only if $d_1={\cdots}=d_{s-1}=1$ and $d_s=1,2$. Otherwise, the Hilbert function of a point star-configuration in $\mathbb{P}^n$ is NEVER generic.

  • Let M be a lattice module over a C-lattice L. Let Specs(M) be the collection of all second elements of M. In this paper, we consider a topology on Specs(M), called the second classical Zariski topology as a generalization of concepts in modules and investigate the interplay between the algebraic properties of a lattice module M and the topological properties of Specs(M). We investigate this topological space from the point of view of spectral spaces. We show that Specs(M) is always T0-space and each finite irreducible closed subset of Specs(M) has a generic point.

  • When certain general single or multiple hypergeometric functions were introduced, their reduction formulas have naturally been investigated. Here, in this paper, we aim at presenting a very interesting reduction formula for the Srivastava's triple hypergeometric function $F^{(3)}[x,y,z]$ by applying the so-called Beta integral method to the Henrici's triple product formula for hypergeometric series.

Predictors of Quality of Life among Grandparents Raising Their Grandchildren: An Ecological Approach

  • Purpose: The purpose of this study is to examine factors affecting quality of life among grandparents raising their grandchildren. Methods: This study carried out a secondary analysis of data from the 2014 Korean Longitudinal Study of Aging (KLoSA) and Statistics Korea. Data collected from 224 grandparents who reported raising their grandchildren were analyzed using descriptive statistics, independent t-test, ANOVA, pearson correlation coefficient, and multilevel regression analysis. Results: The mean score of the participants' quality of life was 62.63. Significant predictors of quality of life of the grandparents included subjective health status, last year's total house income, number of last year's travels, frequency of last year's movie seeing, and number of children's parks per 100,000 population. Conclusion: These results suggest that public health nurses in improving quality of life of grandparents focus on children's parks and formal social supports as community factors as well as regular exercise as an individual factor in order to be more effective.

Young Children's Behavioral Problems and Attention Ability by Parenting Attitude (부모의 양육태도에 따른 유아의 문제행동과 주의집중력)

  • The subjects in this study of parenting attitudes, children's behavior problems and attention ability were 111 5-year-old children and their parents. Data was analyzed by mean, frequency, percent, three-way ANOVA, and Pearson's correlation. Results showed that behavior problems and attention ability of children varied by the parenting attitude of mothers and fathers. Behavior problems of boys were higher than girls, and boys' attention abilities were lower than girls.' Interaction effects were found between parenting attitudes and gender in children's behavior problems and attention ability : fathers' autonomy correlated negatively with boys' behavior problems (r=-.47), task processing speed (r=-.37), and attention inconsistency (r=-.36). Children's behavioral problems correlated positively with attention inconsistency (r=.28).
