Nutrient intake data collected by both dietary methods of the 24 hour recall method and the food frequency method from 538 middle school students were analysed to investigate any measurement errors occuring while using these methods. Measurement errors were observed both in terms of differences of average intake and consistancy from the two sources of data used. Wilcoxon signed ranks test was used to test the differences between the two average intakes and Speraman's rank order correlation coefficient was used to test consistancy. As a result, average intake value estimated from the food frequency method tended to be higher than that from the 24 hour recall method. The degree of overestimation varies from one nutrient to another. For instance, carotene showed not only the most significant differences in average intake but also showed the most incoisistancies between the two sets of data. This may imply the validity of nutrient intake as derived from different dietary survey methods varied from one nutrient to another, therefore the selection of dietary survey methods has to be made more cautiously in the case of certainnutrients.
Underreporting of dietary intake is common and might distort analysis and interpretation of dietary surveys. This study was designed to investigate the degree of underreporting and characterastics of under-reporting group in Korean college female students. Dietary survey of 1-day 24-hour recall method was conducted on 379 college students in Seoul and Chonan areas. Physical activity and life style were aquired from questionnnaires. Underreporting was defined as energy intake(EI) lower than 0.9BMR(based metabolic rate), since EI<0.98BMR is statistically judged as bias in 1-day 24 hour recall. BMR was calculated from Schofield's equation. Proportion of underreporting was 18.7% and it's not so different from one of American or European women. Intake of nutrients except vitamin A by underreporting group was lower than other groups(p<0.001). Proportions of subjects with nutrient intake level less than 75% of Korean RDA were more than 80% in protein, Ca, Fe, vitamin A, riboflavin, niacin, zinc as well as energy. Dietary quality of underreporting group was also worse than other groups. Proportion of subjects less than 3 food groups among 5 food group was higher in underreporting group. The number of foods eaten by underreporting group were also less than those of other groups. BMI and body weight were the largest in underreporting group(p<0.05) and the trial of weight reduction was shown higher trend(p<0.01). Different in PAC and other characteristics between underreporting group and other group were not significant. Not only dietary quantity but also dietary quality were worse in the underreporting group. Furthermore underreporting in college female students seemed to be affected by body weight and concern for weight reduction.

Critical evaluation of energy intake data from dietary studies is difficult but important. To investigate the underreporting of total energy intake, we analyzed the one-day dietary intake data collected by 24-hour recall method from 550 elderly Koreans aged 60 years or older. Underreporting was addressed by computing the ratio of energy intake (EI) to estimated basal metabolic rate (BMRest). EI : BMRest ratio was found to be 1.38 for, men and 1.33 for women, with about 14% of men and women classified as underreporters. Underreporting of energy intake was highest in men and women who were overweight, had lower family income, or no school education. For men, the most significant variables to predict the ratio of energy intake to estimated basal metabolic. rate (EI : BMRest) were weight status, members of household, alcohol consumption and age, while income and education level were most significant for women.
This study was conducted to explore portion size estimation by comparing the measurement errors of food and macronutrient intake by photography estimation and 24-hour recall from weighing method. A total of 28 female participants aged 20-24 years old were provided a meal that included rice, chard soup with soybean paste, stir-fried squid, japchae, stir-fried boiled fish paste, lettuce geotjeori, and kimchi. Each portion was measured accurately, and food intake was measured using three dietary assessment methods. For the photography method, trained researchers estimated remaining food amount by analyzing photographs using a mean of four times. The measurement errors for the stir-fried squid and japchae were larger by the 24-hour recall method, while the error for kimchi was larger by the photography method. The correlation coefficients for each food, except chard soup with soybean paste, between the weighing method and photography method were 0.77~0.99 (p<0.001). The correlation coefficients of energy and intake of macronutrients between the weighing method and photography method were 0.85~0.86 (p<0.001). The results of this study demonstrate substantially less measurement error using the photography method than the 24-hour recall method. However, further research is needed to standardize various kinds of foods, photograph angles, serving plates, and serving style for establishment of reliable and valid portion size estimation using the photography method.

Accurate assessment of nutrient adequacy of a population should be based on usual intake distribution of that population. This study was conducted to adjust usual nutrient intake distributions of a single 24-hour recall in 2001 Korean National Health and Nutrition Surveys (KNHNS) in order to determine the magnitude of limitations inherent to a single 24-hour recall in assessing nutrient intakes of a population. Of 9,960 individuals who provided one 24-hour recall in 2001 KNHNS, 3,976 subjects provided an additional one-day 24-hour recall in 2002 Korean National Nutrition Survey by Season (KNNSS). To adjust for usual intake distribution, we estimated within-individual variations derived from 2001 KNHNS and 2002 KNNSS using the Iowa State University method. Nutritionally at risk population was assessed in reference to the Dietary Reference Intakes for Koreans (KDRIs). The Korean Estimated Average Requirement (Korean EAR) cut-point was applied to estimate the prevalence of inadequate nutrient intakes except for iron intakes, which were assessed using the probability approach. The estimated proportions below Korean EAR for calcium, riboflavin, and iron were 73%, 41%, and 24% from usual intake distribution and 70%, 51%, and 39% from one-day intake distribution, respectively. The estimated proportion of sodium intakes over the Intake Goal of 2,000 mg/day was 100% of the population after adjustment. The energy proportion from protein was within Korean Acceptable Macronutrient Distribution Ranges (Korean AMDR), whereas that of carbohydrate was higher than the upper limit and that of fat was below the lower limit in the subjects aged 30 years or older. According to these results, the prevalence of nutritional inadequacy and excess intake is over-estimated in Korea unless usual intake distributions are adjusted for one-day intakes of most nutrients.

Purpose: This study evaluated the accuracy of the 24-hour diet recall method for estimating energy intakes in elderly women using the doubly labeled water (DLW) method. Methods: The subjects were 23 elderly women with a mean age of 70.3 ± 3.3 years and body mass index (BMI) of 23.9 ± 2.8 kg/㎡. The total energy expenditure (TEEDLW) was determined by using the DLW and used to validate the 24-hour diet recall method. The total energy intake (TEI) was calculated from the 24-hour diet recall method for three days. Results: TEI (1,489.6 ± 211.1 kcal/day) was significantly lower than TEEDLW (2,023.5 ± 234.9 kcal/day) and was largely under-reported by -533.9 ± 228.0 kcal/day (-25.9%). The accurate prediction rate of elderly women in this study was 8.7%. The Bland-Altman plot, which was used to evaluate the TEI and the TEEDLW, showed that the agreement between them was negatively skewed, ranging from -980.8 kcal/day to -86.9 kcal/day. Conclusion: This study showed that the energy intake of elderly women was underreported. Strategies to increase the accuracy of the 24-hour diet recall methods in the elderly women should be studied through analysis of factors that affect underreporting rate. Further studies will be needed to assess the validity of the 24-hour diet recall method in other population groups.
Pregnant women in South Korea are a highly risk group fur iron deficiency anemia. Previous studies indicated that the 24-hour recall method was insensitive in distinguishing iron deficiency anemic women from normal women. This method is also impractical to when used at community health centers where no public health dietitians are employed. The objective of this study was to develop a convenient tool to evaluate the usual iron (Fe) intake of pregnant women. The study participants were 115 pregnant women (age 23 to 37 years) at gestational stage of 13 to 24 weeks. Anemic subjects were classified on the basis of their serum ferritin < 12.0 ${\mu}$g/L and hemoglobin < 12.0 g/dL levels. Food frequency questionnaires with 46, 29, and 15 commonly consumed food items were used to measure the usual intake of iron of the subjects. Hemoglobin and serum ferritin were measured from fasting blood samples. Nutrients intake was assessed on three consecutive days using the 24-hour recall method and the food record method. The iron index score calculated using the food frequency method showed a significantly positive correlation with iron intake for the three days dietary intake. The iron index showed a significantly difference (p < 0.05) between the normal and anemic groups. However, there was no significant difference in the iron intake between the anemic and the normal women as measured by the 24-hour recall and food record method. Our study indicated that the 29-food items questionnaire could be used as a screening tool to identify poor dietary intake of iron. (Korean J Community Nutrition 8(2) : 160170, 2003)

The objective of this study is to establish outcome validity for three instruments that assess whether subjects met recommendations for daily servings of fruits and vegetables for“Stage of Change”research. A convenience sample of 294 college students was recruited from introductory nutrition classes at Michigan State University in the United States. To measure servings of fruits and vegetables, separately, three types of methods (self-rated intake, 24-hour recall and food frequency) were used in comparison to the servings from a three-day food record, the criterion used. The outcome validity was assessed based on whether or not at least two servings of fruits and three servings of vegetables were reported. Validity was assessed by sensitivity, to measure the ability to detect low intakes, and by specificity, to measure ability to detect adequate intakes. Cohen's kappa was used as well to examine the agreement between the three methods and a three-day food record. The results showed, for fruits, the 24-hour recall had the best agreement (recall 0.54, self-rated : 0.31, food frequency : 0.29) with a three-day food record for servings consumed by people in pre-action or post-action stages. Sensitivity for fruit was also best using a recall (0.81). For vegetables, however, all three methods had low agreement (food frequency : 0.27, recall : 0.21, self-rated : 0.17) with the results of the three-day food record. Self-rated intakes for vegetables had the best sensitivity (0.66) and the food frequency had the best specificity (0.73). Therefore, researcher can use the 24-hour recall method to identify people who consume inadequate servings of fruit. To detect adequate vegetable intake, the food frequency was best of the three methods. Accuracy may be improved by probing for vegetables in mixed dishes and on sandwiches. Precise and correct assessment of nutrient intake using appropriate dietary intake method is necessary to improve the nutritional status of the target people group. It is more likely so in elderly people since their dietary habits and inadequate nutrient intakes are of special concern even worse in rural areas. Two popular methods of gathering dietary intake are 24-hour recall and food frequency method (or food frequency questionnaire). In the present study, we conducted both 24-hour recall and food frequency method on 120 rural elderly people $(aged\;65{\sim}74\;years)$, 62 male and 58 female. The dietary intakes were analyzed and the correlation of the dietary intake between 24-hour recall and food frequency method to determine the reliability between two methods. Also each nutrient intake was compared to recommended dietary allowance (RDA) or nutrient reference value (NRV) as appropriate. Even correlation did not show significance between the two methods except for dietary fiber intake (0.65 at p<0.01) and energy-yielding nutrients which mostly showed similar results with nutrient intake level. These support the possible reliability between 24-hours record and food frequency method that is also shown on the cases of most mineral and vitamin intakes. Thus, the food frequency method used in this study for the assessment of nutrient intakes of the elderly people would be reliable for the assessment of the nutrient intake along with the 24-hour recall. Also, the present study results suggested that rural female elderly people would be under optimal nutriture status due to the lower food intake measured by 24-hour recall. The optimal food frequency method would be considered to be developed for the precise nutrient assessment.
To assess the nutrient intake and diet quality of Korean adults living in rural area, dietary survey with one day 24 -hour recall method was given to 2037 subjects over 30 years of age living in Yeoncho-gun, Kyungki province of Korea, together with health survey. The mean daily energy intake was 1583 kcal, with 65.4% of energy intake being supplied by carbohydrate, 15.9% by protein and 18.7% by fat. Eighty percents of total food intake were supplied by vegetable food and the rest in the form of animal food . As well as insufficiencies in calcium and iron intake, the bioabailability of calcium and iron is considered to have been low because most of those intakes came form plant origins. For most nutrients except phosporous, proportions of subjects with intake levels less than 75% of RDA was over 40% and highest in the elderly. Those proportion of low intake among female were higher than those among male. The mean adequacy ration(MAR) , an index of overall dietary quality was 0.62 for females and 0.68 for males and decreased with increase of age. The indexes of nutritional quality (INQ) were over 1 for most nutrients except 0.06 of vitamin A, 0.73 of calcium and 0.85 of vitamin C, Nutrient intake levels less than 75% of RDA may be appropriate as a criteria for insufficiency of nutrient intake. Based on these results, it is evident that some of adults in rural areas did not consume enough nutrients, especially vitamin A, calcium and vitamin B$_2$, and that the dietary intake of female and the elderly was not adequate .
