Purpose: The purpose of this study was to identify predictors of cardiovascular risk factors of type 2 diabetic patients. Methods: Diabetic patients (N=160) were interviewed from November, 2003 to June, 2004. The 24 hour dietary recall, the International Physical Activity Questionnaire, the Diabetes Management Self-Efficacy Scale for patient with Type 2 diabetes, the Revised Summary of Diabetes Self-Care Activities Measure Scale and Parma Cardiovascular Risk Index were used to measure the predictors. Data were analyzed by descriptive analyses, Pearson correlation coefficients, and stepwise multiple regression using the SPSS WIN 10.0. Results: Mean dietary intakes of the participants were protein(P) of 64.5g, carbohydrate(C) of 280.74g, fat(F) of 30g, and calcium of 511.45mg. The ratio of CPF was 75:17:8. About 45% of the participants didn't exercise on a regular basis. The levels of self-efficacy, self-care, and cardiovascular risk factors of the participants were moderate. Self-efficacy was the most important predictor of cardiovascular risk factors along with self-care, exercising for more than 6 months, carbohydrate intakes and levels of physical activities. Conclusion: The findings of the study suggest that intervention programs increasing self-efficacy on diabetic management would be more beneficial than the fractional approach focusing only on diet or physical activities.
n accordance with the National Health Promotion Act of 1995, newly designed National Health and Nutrition Survey was carried out in winter of 1998. Although this survey amended most of the problems noted in previous Nutrition Surveys, it still had a limitation in reflecting seasonal variation in food intake due to the survey period which was confined to November and December. In order to counterbalance this limitation and estimate the yearly food intake of Korean population, three seasonal nutrition surveys were taken place in spring, summer, and fall of 1999. Seasonal Nutritional survey targeted 15 households each in 60 nationwide primary sampling units(PSUS) which were part of 200 PSUS of 1998 National Health and Nutrition Survey. Therefore, total of 2,700 households were surveyed in 3 seasons. The interviewers visited each household members and carried out face to face interview on household. Daily food intake was monitored using 24 hour recall method. According to the survey results, fruits, beverage and alcohol intake showed large variation with season while processed foods showed almost no variation. And intake of vegetables and fruits were influenced by their own harvesting time and had impact on the list of foods consumed most. With the result of the 1998 NHNS, this study made it possible to estimate the yearly average food intake of Korean population. The result of this survey is expected to be used in planning food supply and setting tolerance level of contaminants of each foods at the government level.
It has been reported that cigarette smoking increases free radical generation, which can also increase lipid peroxides and deplete antioxidants. The purpose of this study was to determine whether cigarette smoking and other lifestyle choices may affect serum lipid peroxide concentrations, serum antioxidant concentrations such as tocopherol and vitamin C, and serum antioxidant enzyme activity such as glutathione peroxidase and superoxide dismutase. Dietary intakes were assessed by 24-hour recall and survey questionnaires from 48 male non-smokers and 52 male smokers. Overnight fasting blood was collected and measured for individual antioxidant status. The daily vitamin C intakes of smokers tended to be lower than those of non-smokers, and the intakes of both groups were under the Recommended Daily Allowance (RDA). Vitamin E intake was sufficient for smokers and non-smokers. Serum lipid peroxide concentrations were no difference among all subjects. The serum $\alpha$-tocopherol concentrations of all subjects were in a normal range, and they were highest in mild smokers (p<0.05). Mean serum vitamin C levels were lowest in heavy smokers (p<0.05). The activities of serum glutathione peroxidase and superoxide dismutase were not significantly different in smokes and non-smokers. In conclusion, smoking did not increase oxidative stress in heathy young men. However, it is desirable for heavy smokers to consume more vitamin C than the RDA sine their serum vitamin C concentrations are relatively low.
The purpose of this study was to investigate the nutrient intakes, nutritional knowledge, food habits, and lifestyle behaviors of moderately or severely obese children living in the Kyonggi-do area. The subjects in this study were 37 obese children with an obesity index higher than 130% in the forth to sixth grades of elementary school. Anthropometric measurements, 24-hour recall of dietary intakes, and a survey on nutritional knowledge, food habits, and lifestyles behavior were conducted in the 37 obese children (25 boys and 12 girls). The average age, body weight, BMI, and R$\ddot{o}$hrer Index were 12.4 years, 68.6 kg, $29.6kg/m^2$, and 194.9 in boys and 12.7 years, 65.7 kg, $29.8kg/m^2$, and 201.8 in girls, respectively. The percentage of correct answers on nutritional knowledge and nutritional attitude score/max score were 85.8% and 23.0/50 in boys and 87.0% and 17.5/50 in girls, respectively. Except for calcium (85.3%) in girls and calcium (62.7%) and folic acid (83.3%) in boys, the average daily nutrient intakes percentages of nutrients were greater than the DRIs values (107.9~327.3% in boys and 103.0~416.0% in girls). This study showed the existence of some problems associated with obesity, such as higher frequency of skipping breakfast, irregular meal times, unbalanced diet, lack of intake of some nutrients, low nutritional attitude, lack of physical activity, and time management in obese children. These results suggest that a systematic education program including nutritional education on balanced diet, good eating habits and behaviors, and importance of eating breakfast and meal regularity must be emphasized to improve nutrient intakes and food habits in obese children. Obese children also require a more concentrated program that includes physical activity, weight reduction, and weight maintenance strategies to improve their life habits.
The purpose of this study was to estimate the relationships between dietary factors and the stress perception levels of College students. A survey was conducted in June, 2010, targeting 332 college students in Gwangju. General environmental factors, stress perception levels, dietary behaviors, and dietary action guide performance of the subjects were evaluated by questionnaire, and food intakes was determined by the 24-hour recall method. The results are summarized as follows.: The score of frequency experiencing was $45.1{\pm}16.9$ for male students, and $47.0{\pm}16.7$ for female students. The importance scores were $50.8{\pm}18.5$ for males, and $53.3{\pm}18.7$ for females. The total score for dietary action guide performance was $39.6{\pm}7.2$ for males and $40.6{\pm}6.5$ for females. Nutrient intake levels were evaluated based on dietary reference intake (DRI), revealing energy intakes to be 68.5% EER in males and 73.9% in females. The mean intakes of nutrient were 54.2% RI for calcium, 73.6% RI for riboflavin, and 51.2% RI for vitamin C but 203.6% AI for sodium, which indicates an imbalance in nutrient intake. Analysis of the correlations between stress perception levels and dietary factors, scholarship achievements, financial problems, future problems, value senses, and family relationships revealed significant correlations with general environment factors, dietary behaviors, Dietary action guide performance, and nutrient intakes (p<0.05). The higher the stress perception levels of the students, the higher the energy, coffee and alcohol intake, which predicts that appropriate stress control in college students will lead to better dietary habits. It is expected that the results above will be used as basic data for the development of proper nutrition education programs and stress control strategies.
As an indicator of skin health, acidified skin surface pH ranging from 5 to 7 is crucial for maintaining skin barrier. In this study, we evaluated the relationship between skin pH and dietary pattern (DP) as well as nutrient or food intake in 48 healthy middle aged adults. Skin pH was measured in the skin surface of the inner arm, and blood lipid profile was analyzed. Dietary intake data were obtained using 1 day 24 hour recall method, and DP was extracted using factor analysis. Results revealed that skin pH ranged from 5.15 to 6.88 in all subjects. There was no significant difference in skin pH between males and females. When subjects were grouped by tertile of skin pH, the food intake of fruit, and the nutrient intake of omega 6 fatty acid, potassium, vitamin A, vitamin C, ${\beta}$-carotene, and riboflavin in the first tertile group with skin pH ranging from 5.15 to 5.68 were significantly higher than in the third tertile group with skin pH ranging from 6.26 to 6.88. There was no difference in blood lipid profile between the first and the third tertile group. Among 5 DP extracted by factor analysis, DP5 characterized by a high intake of nuts and fruits as well as a low intake of beverages and alcohol was inversely correlated with skin pH after adjusting for gender and age. DP5 was positively correlated with nutrient intake of carbohydrate, fiber, potassium, iron, vitamin A, vitamin C, ${\beta}$-carotene, thiamine, and riboflavin but negatively correlated with sodium after adjusting for gender, age, smoking, and energy intake. Therefore, acidified skin pH could be maintained by these DP and nutrients.
The purpose of this study was to evaluate the effectiveness of an intervention program using dietary consult and physical exercise conducted by public health center in Chuncheon city for obese adults. This study used a pretest-posttest design. The subjects were 58 out of 90 obese adults with body mass index (BMI) greater than $25kg/m^2$ who completed all education sessions for 8 weeks. Data on dietary habits, dietary behaviors, nutritional knowledge, anthropometric parameters and biochemical indices and daily nutrient intakes assessed by a 24-hour recall were collected before and after the intervention program., in order to evaluate program effectiveness. After the intervention, there were positive changes in exercise status and dietary habits and nutrition knowledge accuracy. Especially, the answer of 'I drink a cup of milk every day' were significantly improved (p<0.001), and the answer of 'I don't overeat', which is a dietary attitude question was significantly improved (p<0.05). Dietary intakes of most of nutrients were not significantly different between pre-test and post-test. But calcium (p<0.05), potassium (p<0.05), vitamin A (p<0.01), vitamin E (p<0.05), and folic acid (p<0.05) were significantly increased in the female group after the intervention. Weight (p<0.05), BMI (p<0.01), blood pressure (p<0.001), were significantly decreased after program, but changes of skeletal muscle mass, body fat mass were not significant. Resting heart rate (p<0.01), flexibility (p<0.001), whole body reaction (p<0.05), grip strength (p<0.01) and balance (p<0.01) showed positive changes after the intervention. Blood glucose level in serum was significantly decreased (p<0.001). These results indicated that dietary education and exercise program was effective not only for weight reduction but also for the improvement of physical fitness in obese adults.
The purpose of this study was to identify the differences in dietary consumption patterns according to the exercise level of Korean adults. The study subjects were the 7,370 Koreans aged 20 years and older of the 1998 Korean Health and Nutrition Survey. The dietary assessment was conducted by means of the 24 hour recall method. Data for individual exercise behavior were collected by interviews as part of the National Health Behavior Survey. Following the analysis of variances the Duncan's Multiple Range Test was used to test the differences in food and nutrient intakes among groups with different levels of exercise. Current exercise practices were reported by 22% of the male subjects and 15% of the female subjects. Unlike observations from the American and European studies, a greater amount of meat intake was observed more frequently among high exercises group than among middle and low exercisers in the case of the male subjects. This was reflected in the increasing levels of protein and fat intake in proportion to the exercise levels. However, the food and nutrient intake patterns of female exercisers were quite different from those of the males. The least intake of fatty foods was observed among the high exercisers. Energy intake from fat was the lowest among the high exercisers. These results may imply that the motivation to exercise was quite different between male and female Koreans. This dietary pattern may have a risk of undernution. Summerizing the results, whatever the motivation of the exercise, the Korean exercisers of both sexes had unhealthy dietary pattern. Therefore, nutritional education should be conducted to encourage the eating of a balanced diet along with exercise, among Koreans of both sexes, in order to promote a healthy lifestyle.
This study was carried out to prepare a copper database of Korean foods which can be used in calculating copper intake from dietary data, and to evaluate the copper nutritional status of Koran adults living in rural areas by dietary intake and serum copper concentrations. A copper database for 1,176 Korean foods was constructed (1) by analysing 112 Korean foods which are frequently consumed by Korean adults living in rural areas, (2) by adapting values form food composition databases from other countries-320 items from the University of Minnesota database, 201 items from the USAD database, and 25 items from U.K. database, and (3) by imputing values from similar foods for 518 food items. Copper intake of 2,034 Korean adults over the age of 30 living in Yeonchongun was Kyunggi province, Korea was estimated by 24-hour recall method. Mean daily copper intake of subjects was 0.98mg. Mean daily intake level of males was 1.11mg which was significantly higher than that of females, 0.88mg. There was a significant difference in the distribution of subjects by the level of copper intake and sex(p<0.05). Mean serum copper concentration was 14.8umol/1 and the percentage of subjects with low, adequate, and high levels of copper concentration were 23.9%, 69.4%, and 6.6%, respectively. The two food groups which contributed most to the dietary copper intake of subjects were cereals and grain products, and vegetables, supplying 46.2% and 12.7% of total copper intake, respectively. Individuallym, rice contributed most, suppling 31% of total copper intake, followed by soybean curd, starch vermicle, barley, etc. Plant foods contributed to 82.1% of the total copper intake. In summary, results of this study show that copper intake of Korean adults living in rural areas is low, and that dietary sources of copper are mainly plant foods. Serum levels of copper in the subjects were relatively normal. The copper database for Korean foods constructed in present study will be a valuable tool for the as-yet limited assessment of copper intake of Koreans. Such studies will contribute to the establishment of a dietary of a dietary allowance of copper and the relationship of copper nutriture and chronic diseases in Koreans.
To assess the food intake and diet quality of Koreans living in rural areas with discriminative environment, this dietary survey was conducted with 553 subjects living in five different rural areas using a one-day, 24-hour recall method. The average weight of total food intake was 1066g, with vegetable and animal food comprising 83.75 and 16.3% of total food intake, respectively. The average daily food intakes of residents in the five areas were 985g, 1005g, 1028g, 1318g, and 964g, and were significantly different(p<0.001). Residents of Ulju consumed the largest amount of food, 1318g. The total number of food items consumed was 336. The foods consumed in largest amounts were rice(223g), Korean cabbage-Kimch'i(111g), and soybean curd(41g). The foods consumed most frequently were rice, Korean cabbage-Kimchi, green onion and garlic. When investigating the consumption pattern of the major five food groups, only 5% of subjects consumed all five groups. The groups most frequently missing were dairy products and fruits. The average number of foods consumed per day was 16.8, but differed significantly by area(p<0.001). The number of major food groups (DDS, dietary diversity score) and that of food items(DVS, dietary variety score) correlated positively with NAR (nutrient adequacy ratio) and MAR (mean adequacy ratio). People with a DDS of above 4 or DVS of above 20 met two-thirds of the recommended dietary allowance for most nutrients. When assessing the dietary quality of subjects using DDS and DVS, many people appeared not to have a desirable food intake. dietary guidelines should be made considering the nutritional characteristics of different areas to improve the health of people living in those areas.
