Historical Study of Beef Cooking -V. $\{ulcorner}Roasted Skewered{\lrcorner}$- (우육(牛肉) 조리법(調理法)의 역사적(歷史的) 고찰(考察) -V. $\{ulcorner}$산적(算炙, 散炙)${\lrcorner}$-)

  • The purpose of this study is to survey various recips of the roasted skewered beef (Sanjuk) with twenty three classical cookbooks written before 1943 in Korea. The recipes of the roasted skewered beef are found thirty times in the records, which can be classified into six groups such as the palm-type skewered beef (Sulhamyukjuk), little finger-type skewered beef, mixed skewered beef, juice skewered beef, little finger-type skewered internal organs, and wide-cut skewered internal organs. The palm-type skewered beef and the mixed skewered beef most frequently appeared in the records. The 'Sulhamyukjuk' in the 17th century were inherited while changing its name to 'Sanjuk' in the late 18th century, which is the origin of 'Bulkoki'. There were two types of the roasted skewered beef, the palm-type and the little finger-type; and the palm type preceded the little finger-type. They were used with no change until the 19th century. Actually the roasted skewered beef existed even in the 16th century, but were put down in the early 17th century. In the cooking of 'Sulhamyukjuk' the process of dipping shortly into cold water in the midst of roast seems to absolutely disappeared. Some recipes of the roasted skewered beef were lost, but most have been inherited in the similar way with simplification including little use of internal organs. The main ingredients consisted of parts of cattle such as fresh meat, intestines, heart, liver, omasum, tripe, head, sweet bread, and lung with various vegetables and mushroom. And the main seasonings were mixtures of oil, soy sauce, sesame seed powder, scallion stalk, pepper, sesame seed oil, and salt. And sometimes wine, vinegar, ginger, garlic, and sugar were added.

A study of the classic Sijo(時調) concerning the productive life (생활 표현의 고시조 연구)

  • The main industry of the Chosun dynasty was farming, which was related to the people's lives in every respect. By the end of the Chosun dynasty commerce was a new industry becoming increasingly more beneficial. I study how these two industries were being expressed in the classic Sijo. The classic Sijo is a main literary genre created by the upper-class. Even though industry was very important for sustaining the Chosun dynasty, Confucian scholars and government officials(members of the upper class) didn't actually work in the industries of farming and commerce. But sometimes they returned to their rural hometowns, because they owed large amounts of land which they let the servants farm for themselves. As the main composers of Sijo were these Confucian scholars and government officials, I study a collection of their Sijo which expresses the life of industry. In order to achieve this goal, I analyze several sides of the classic Sijo : for example, its writers(along with their personalities) throughout different periods: the point of view of persona; and the specific life of industry and the way it is expressed in the Sijo. First, I look at the writers of the different periods and their personalities. During the fourteenth century to the seventeenth century, the main writers of Sijo on the life of farming were Confucian scholars and government officials. During the eighteenth century to the nineteenth century, the main writers of Sijo on the life of farming were Confucian scholars, government officials, and also commoner singers-the unnamed writers. Second, I look at the point of view of persona. During the fourteenth century to the seventeenth century, the personas were the country man(one's lord and master) and the farmer, who was of two kinds of people : i.e., those trying to work together and those really working together. During the eighteenth century to the nineteenth century, the personas were the country man, who was satisfied with his rural life as overseer to farming, and two kinds of farmers : those who farmed very hard by themselves, or those who criticized the failed tax system. Third, I discuss the specific life of industry and the way it is expressed in the Sijo. During the fourteenth century to the seventeenth century, the writers of Sijo expressed, in a general way together in one Sijo, different kinds of work for example, plowing a dry field and a rice field, picking wild vegetables, and cutting rice and weed. During the eighteenth century to the nineteenth century, the writer of Sijo expressed different kinds of work in a more specific way, each in its own Sijo : for example, buying and selling, bringing land under cultivation for farming. weaving, digging for water, and heavy taxation. I look at three aspects of Sijo concerning industry, but there still remain several aspects of Sijo to study, such as those concerning worship of the king, and those concerning high officials, the common people, and the being of things.

A Study on the Assignment and the Procurement Method of Wood Works' Craftsman in Royal Tombs Constructions in the Late Joseon Period (조선후기 왕릉 조성 시 목공사 장인의 배정과 조달 방식)

  • The purpose of this study was to comprehend the assignment and the procurement method of wood works' craftsman through the Salleung-dogamuigwes in royal tombs constructions in the late Joseon period. Following conclusions have been reached through the study. First, Carpenter and other nine craftsmen were introduced in carpentry works. The craftsmen were put in by occupation to maintain the quality of the government building construction by wood processing area. It was distinguished by frame member, Sujangjae, window framing wood, decorative member. Second, sawyer showed a sharp increase in the latter half of the 18th century and declined since the middle of the 19th century. This is closely related to the increase in demand for building materials and the growth of civilian wood products. As a maximum of 300 people have been assigned to the craftsmen in the woodwork, it can be seen that the work has been divided by the process. Third, the national carpenter was difficult to procure from the 17th century to the beginning of the 18th century. From the middle 18th century, the system procuring national carpenter was stabilized. In the 19th century, the input ratio of the national craftsmen seems to have decreased significantly and seems to have kept it at the minimum level. Forth, sawyer were procured through Seongonggam from the late 18th century through the mid 19th century. That means that the role of the sawyer had become important. Since Jogakjang is not a necessary manpower, it usually has civilian artisans.

The Plan Types of Excavation Remains during the Mid to Late Joseon Period around Jong-ro in Seoul (서울 종로 주변 발굴유적에서 보이는 조선 중·후기 건물지의 평면형식)

  • The purpose of this study is to analyze the plan type of excavation remains during the Mid to Late Joseon period around Jong-ro area in Seoul. 523 building remains were selected in accordance with plan type could identified through the excavation investigation report. Among these, 276 building remains were verified to the $15-16^{th}$, 145 and 102 building were verified to the 17-18th and the $19^{th}$ century. By classifying excavation remains, four dominant plan type of the each century came out. First, -shape was the most common plan type took nearly 50 percent. In a considerable proportion of cases, this plan type seems an annex of main building. However, -shape plan type also seemed to be used for main building in some cases. ㄱ and ㄷshape plan type took the second and the third. In most cases, these types seemed typical plan used for a main housing building. For the last, ㅁshape plan type identified the most unusual. This plan type merely took under five percent but, these cases are meaningful because it shows the plan alteration from ㄷshape to ㅁshape plan type. Existence proportion between each plan types of the $15-16^{th}$ century were continued to the $18-19^{th}$century without small changes between -and ㄱ types in $17-18^h$ century. By examining selected excavation remains, installing front Toi space on ㄱ, ㄷ and ㅁshape plan type stand out clearly compared with -shape plan type. From this tendency, it could be considered that plan type became a significant factor influenced installing Toi space. Similar to periodical tendency of plan type was not changed dramatically, the rate of installing Toi space in the $15-16^{th}$ century was not changed much until the $18-19^{th}$ century. It also shows the close relation between plan type and installing Toi space. In some excavation remains, floor type in the $15-16^{th}$ century also verified. There are some points of similarities on installing typical location of On-dol, Ma-ru and Bu-eok in these excavation remains with later period housing type such as Ut-Bang-Gguk-Oem-Jib and Ddeul-Jib.

  • In this paper, I focused on analyzing Yeoheon Chang Hyeon-gwang's literary theory and his prose in the genealogy of Confucian scholars in Chosun. Through this study, I would like to examine the trend of concentrating on 16th century when we treat the literary tendency of Confucian scholars. With this goal, I tried to seek the direction which was pursued by Confucian scholars who lived during the 17th century. Yeoheon tried to construct the spirit of humanities cosmically as an aim of his life, study, and literature. And he had a new understanding of human independence by suffering from Japanese invasion in the late of 16th century. He insisted that only human can realize the spirit of humanities on a cosmic base. He also thought that the morality(道) could be settled only by literature(文). We may interpret this concept as a progressive idea about literature comparing to the former Confucian scholars. On the other hands, Yeoheon tried to accept the literary theory of former scholars such like Park Young, Cho Sik, and Seong Woon who embraced Taoism. Yet he erased the color of Taoism in the field of topic, and he also tried to keep his distance from them in the field of literary form. This concept actually came from Lee Hwang's opinion, while Yeoheon tried to rouse scholar's independence. Through above, we may realize that the Confucian scholars of 17th century were not just imitators of 16th century. They tried to examine the former study and also tried to renew the theory.

  • In this paper, I review the origins, activities, and influences on the future mathematical development of the Analytical Society of Cambridge. The story of the late 18th century Scotland mathematicians and the early 19th century Cambridge mathematician such as Woodhouse, and the Analytical Society's history show that the Analytical Society wasn't a completely new and reformative meeting. This article reveals that the new analytical studies developed characteristically in Britain's specific intellectual and social context of the late 18th century and the early 19th century.

Also, England had their industry, political unity, finance and trust, the marines, liberalistic principles, a geographical merit of being an island which can be defended well and the 20th century America has their cosmopolitan culture, supernational communication, the capacity of the economy, science technology, military strength, alliances, liberalism international formation. But in the 21st century culture and art will prevail over the information age where technology and knowledge was the key, and it is predicted that this will be the source of power for a strong country. Rolfe Yesson, the head of The Copenhagen Research Center for future studies said, "Information age has ended and in the future Dream Society will arrive which focuses on making distinctions by delivering dreams and emotions to consumers". As cyberspace gradually substitutes reality, cyberspace has become more than an information search engine and has become a place where people fulfill their desires and exchange culture. And as a medium for diffusing culture, the importance of the digital dress-up avatar is predicted to increase gradually.gradually.
