  • The effects of HPMC (hydroxypropyl methylcellulose) on instant fried noodles regarding oil uptake and in vitro lipid digestibility were evaluated according to different viscosity levels, as well as the same apparent viscosity. The oil uptake and lipid digestibility decreased with the increasing HPMC viscosity and replacement level, demonstrating that the reduced oil uptake and lipid digestibility may be caused by the high viscosity of HPMC. Furthermore, the oil uptake and lipid digestibility of noodles with HPMC at both apparent viscosities decreased with the increasing viscosity of HPMC in spite of having the same apparent viscosity. As a result, the high viscosity of HPMC on instant fried noodles was more critical factor compared to apparent viscosity for lowering oil uptake and lipid digestibility.

  • Pork cutlet is a favorite deep fat fried food item among Korean children, and an excellent protein-containing food, and as well as a simple and economical cuisine. However, the frying process adds a significant amount of calories. We added MC (Methylcellulose) and HPMC (Hydroxypropyl Methylcellulose) to the batter in an effort to reduce oil uptake in prepared pork cutlets. After additions of MC and HPMC at concentrations of 0.5, 1, and 1.5% respectively, we assessed the viscosity of batter, color after frying, the increases in moisture retention and oil uptake, and sensory characteristics, comparing each quality. The viscosity of batter with 0.5% HPMC added (w/w) was similar to that of the controls, but the viscosity of all the batter with added MC was so much higher that it was difficult to use the batter for coating at the same temperature, leading to a failure even to prepare a sample. After frying, the batter with added HPMC provided significantly less oil uptake and more moisture retention than the batter to which MC was added. Additionally, with regard to color and sensory characteristics, the pork cutlet with 0.5% added HPMC was superior to the other samples. According to these results, we concluded that when cellulose derivatives are added in order to reduce oil uptake and to raise the moisture retention of the batter of pork cutlet, HPMC is more useful in this regard than MC. Additionally, the batter with 0.5% HPMC added appears to be the best of the tested choices, for three reasons: first, the viscosity of the batter is similar to that of the controls; second, the taste is not greasy after frying as the result of the reduced oil uptake and higher moisture retention; and third, the sensory characteristics of this sample, such as, color, crispiness, and hardness were the best among samples.

  • This study examines the effects of cell size and structure on the oil adsorption by polyurethane (PU) foam. A series of oil-adsorptive PU foam has been prepared, using various molecular weight of polyether polyol (GP-1000, GP-3000, GP-4000, GP-5000), together with TDI-80, water and additives. It was found that the cell size of PU foam decreased with increasing the agitation speed and surfactant content. Oil-adsotption of PU foam increased over 2000% with the increase of molecular weight of polyol and with the decrease of cell size. Increase in the surfactant content and the viscosity of adsorbed oil also give a remarkable decrease in oil adsorption.

  • Yellow to reddish brown soil is generally referred to as hwangto and is used in various industries in Korea. Despite the fact that it is used as an inorganic pigment in dancheong, limited studies have been conducted on the properties of pigments associated with soil and on the mineralogical characteristics of hwangto. This study examines how the pedological and mineralogical features of hwangto affect pigment properties. Results indicate that reddish and yellowish soils have differences in terms of soil texture, mineral composition, oil absorption and stability under light. Reddish soil is mostly found in clay regions, whereas Ulleungdo hwangto is found in loam regions. Yellowish soil is mostly present in the clay loam to loam zones. whereas Haenam hwangto exists in the sandy clay loam zone. As a result of a mineralogical analysis, reddish soil is classified into the feldspar group and clay soil. The major minerals in the yellowish soils are similar however these soils differ in terms of clay mineral compositions. results of the characteristics of pigments prepared by the traditional method revealed that the average particle size is in the range of 10-20 ㎛, reddish soil has an average of 20 ml/100 g higher oil absorption than yellowish soil. In addition, reddish soil is more susceptible to discoloration and deterioration under light than yellowish soil. This study confirms that the soil and mineral characteristics of hwangto affect the physical properties and stability of produced pigments. These result can be used as basic data in future studies natural inorganic pigments using hwangto.

  • The purpose of this study is to analyse the properties of Seokrok and Noerok that are used for restoration of heritage and arts. Malachite is main constituent mineral for Seokrok and Celadonite is Main component of Noerok. To evaluate the physical properties of pigment, A,B-class Seokrok and heated Seokrok that are sold in market were selected. To compare this results, Noerok sold in Japan were studied. In addition, we studied the pigments of Noerok. The heat treatment had no significant effect on the physical properties, except for the color-difference. The color-difference of Seokrok is larger than that of the Noerok sold in Japan. The $a^*$ values of Seokrok specimens are horizontal distribution, so it will expand the coloring ranges. The properties that are chromaticity, specific gravity and oil-absorption of Noerok are different from Seokrok. Noerok is suggested that achromatic color because the values of $a^*$ located near zero. Specific gravity of Noerok is smaller than Seokrok, but oil-absorption is larger twice. Noerok and Amnok, although ingredients are different, it is possible to use alternative because of similar physical characteristics. The result from this study expects to be used as useful referencing data for conservation and restoration of cultural heritage and understanding phenomena of the properties.

  • Seokrog and Seokcheong are traditional pigments that have been used as green and blue pigments in Korean traditional coloring heritage. Natural minerals such as malachite and azurite are known as raw materials. Seokrog and Seokcheong are mainly imported from aborad, such as China and Japan, and some blue pigments are reported to have been produced domestically. However, considering the geologic environment where carbonate minerals are difficult to produce, the possibility is not high. Malachite and azurite ores were purchased and analyzed for their composition. The pigments were manufactured by traditional procedure and analyzed to characterize the pigments. The Seokrog pigments had an $L^*$ value of about 59-83, an $a^*$ value of less than -20, and a slightly higher saturation than commercial products. The oil absorption was 22-29 mL/100 g, showing excellent opacity of 99.2 % or more. In the case of Seokcheong pigment, the range of $L^*$ values was 35-65 and $b^*$ values were below -15, indicating relatively lower saturation than commercial products. The oil absorption was 21-26 mL/100 g, showing an excellent opacity of 99.1 % or more like the Seokrog pigment. Azurite ore contain impurities such as malachite and quartz in addition to azurite, and the impurities contained in the pigments derived from azurite ore likely influenced on the characteristics such as their color and oil absorption.

  • Oil-absorptive expanded polyurethane (EPU) was prepared with a lypophilic polyol, polypropyleneglycol (PPG) as the soft segment, and toluenediisocyanate (TDI) and $H_2O$ as the hard segment. PPGs haying various average molecular weights ((equation omitted) : 1000, 2000, 3000) were employed to investigate that the soft segment content was consequent on the oil-absorptivity and the mechanical properties of the EPUs. As (equation omitted) of PPG was decreased from 3000 to 1000, the oil-absorptivity and the tensile strength of the EPUs increased from 1460 to 3010% and from 0.26 to 0.55 $kg_{f}$ /$cm^2$ respectively. As the hard segment content ratio, ${\gamma}$ ([NCO]/[OH]) was increased from 1.0 to 1.2, the tensile strength of the EPUs increased from 0.56 to 0.95 $kg_{f}$ /$cm^2$, due to the formation of allophanate and/or biuret bondings. However, as the surfactant (S-A) content was increased from 1.0 to 2.5 pbw, the oil-absorptivity was decreased from 3634 to 3312%, due to the formation of closed cell structures.
